The recipe for ham and potato hash can be found below all the following guff. Long time readers know that when I start talking about a holiday…well, I tend to go on. Before we get started on the actual travels, the exciting part – this was a complete surprise for Paul. We weren’t planning on taking any holidays after Corsica and Iceland being so close together, but I was driving home from a first-aid course when an advert for Expedia came on espousing cheap deals to New York. I drove on for another mile or so mulling it over, pulled into a layby, booked the time off work and emailed Paul’s lovely boss to get clearance. I left the small detail of actually booking the holiday until a few days after. I’ve mentioned before how easily led I am by advertising – thank fuck an advert didn’t come on for haemmorhoid cream else I’d have squatting down in a bus-stop feverishly applying Preparation H to my bumhole in the manner of a man spreading butter on a crumpet. Having managed to secure the time off for the both of us and after many, many “trips to ASDA” for poor Paul to get him out of the house so I could use the computer, I found a really decent deal with British Airways staying in a nice central hotel for six nights. Booked it there and then. Paul then had to endure ten days of me looking at him excitedly and dropping ‘a big secret’ that he probably thought he was getting divorce papers in the post. As if! I’m saving the divorce papers for when he’s paid off his half of the car.

That’s clearly a joke – I’d never divorce a man so perfectly squashy and who turns the shower on for me every morning so I don’t have to stand for a moment in a chilly bathroom. You might think he gets the shitty end of the stick (depends how careful he’s been with the old douche-bulb I guess) but read the above paragraph and think again!

Going to America always necessitates a full-on panic about travel insurance for me – I don’t want to fall ill in America, find out my travel insurance is void because I didn’t inform them someone once hurt my feelings in 1996 and then bankrupt my friends and family as they try and pay for my hospital treatment in a country which, for god knows why, doesn’t have decent free healthcare. Listen, I know my family, they’d just send someone out on an economy flight to fill my drip-bag with Cillit Bang and stop my heart. Fuckers. I spent a good hour on the phone to a very helpful lady at Coverwise who went through my various worries – do I declare heart palpitations four years ago? Yes. Do I declare obesity? Only if I need help getting in and out of bed – not quite there yet. My hair is thinning and I look like Steve McDonald drawn Castaway-style on a beach ball – apparently I don’t need to declare that. She then proceeded to take my payment but accidentally deleted all the details we had just decided upon, so we had to do it all again. Great times.

The night before the holiday I told him we were going away somewhere mysterious and to pack a suitcase. Naturally, Paul, being a keen and conscientious worker, immediately started fretting about meetings and out of office nonsense, until I told him it was all fine and that I’d been masterminding this scheme right from the off, like an evil Judith Chalmers. All he had to do was pack some clothes, find his passport (I told him we’d need it for car hire within the UK so he didn’t twig we were going abroad) and get to bed, as we had an early train in the morning. He sensibly did the right thing, although we did have a minor panic when we realised that I need a new passport very soon – thankfully, we were just within the limits for USA travel. I’ll be sad to see that passport go – it’s about the only ID I have where the picture doesn’t look like it should have a caption underneath saying ‘…jailed for eighteen months for public indecency’. Doubtless when I get a new passport I’ll be back to looking like a sandblasted puffer-fish. I’ll definitely need to get my hair cut before that day comes – the last time I want happening is someone at easyJet saying ‘Aaah Mr Trump, we’ve been expecting you’.

Off to the train station at ridiculous-o-clock then. This necessitated a taxi drive with the world’s most vocal taxi driver, who had an opinion on everything from my suitcase (“not very butch” – fuck off mate, if anyone can make a four-wheeled suitcase work, it’s me) to Uber. Uber, he took pains to tell me, was a danger because “anyone can drive them, they’re not vetted” (which was rich, as he looked like the type of man for whom Incognito Mode was the default status on his browser) and that “their cars aren’t checked, they could be death-traps”. This one really struck a chord with Paul, who texted me to point out that the driver’s rear-view mirror was gaffer taped to the roof of the car. I pleaded with him not to say anything lest we got bundled out at high speed on the Seaton Burn roundabout. Instead, we just spent the journey nodding politely and making ‘hmm’ and ‘mmm’ noises until, after seemingly taking us via Darlington, we arrived at the station and boarded our train.

What to say about the train journey that I haven’t covered before? It was entirely uneventful. I was given a cup of tea that had cleaning products in (thank god for the travel insurance!) but luckily, I spotted, or rather smelled, the problem before it had a chance to burn through my throat and cascade down my chest, ruining my nice shirt. The train had to take a long diversion at some point and the trip ended up taking five hours, but it was quiet, comfortable and, with it being first class, we had more biscuits than is possibly decent. It does vex me a little that they take the meal service off in first class during the weekends – frankly my train journey isn’t complete unless I’m eating something microwaved and slopped on a plate. Paul got up to go for a poo at some point and disappeared for twenty minutes. Naturally, I was so concerned it was all I could do to put down my iPad, pause the Youtube of the Crystal Maze that I was watching, and glance down the corridor. Had he alighted at a passing station, tired of looking at my angry face across the table from him? Had my still-awake-but-really-comfy-snoring angered him so? No. Turned out, being a wonderful husband, he’d walked/stumbled to the other end of the train, bought us two double gin and tonics each and a grilled cheese sandwich. As delighted as I was with the nourishment and booze, I couldn’t mask the alarm in my eyes, but he reassured me that it had only cost around £780.45 for this little treat. Good old Virgin!

On the train I told Paul we were going to Heathrow, so he knew at that point we were off abroad. We transferred onto the Heathrow Express, arrived in plenty of good time to nip into the terminal, buy some wine gums and play on the fruities before climbing inside those automatic toilets that whisk you around to various parts of Heathrow. Our destination? Why, the wonderful Thistle Hotel of course, which you may remember we weren’t particularly overtaken with joy with last time (by the way, that links to one of our favourite recipes, too)? Listen, it’s convenient and Paul loves that POD system, so that’s why we chose it. Naturally, our room was the size of a small shoebox and I had to spin around in the shower to get wet, but eh, it’s a bed. We had a Dominos and watched Vera. Vera is very much a guilty pleasure for us, although I can’t tell you what it looks like because I spend most of the time wincing against her attempt at a Geordie accent. Very few people in Newcastle actually substitute ‘pet’ where a full stop would normally go, but by god she does it. They were filming around where we live a few weeks ago so I fully expect a shot of her solving crime whilst my filthy car drives past in the background with me squinting to see what’s going on. I should have shouted ‘HERE MAN VERAH PET HAS THERE BIN A MOORDA PET HAS SOMEWURN HAD THEIR HEED CAVED IN EH’. Authentic!

I revealed to Paul that we were off to New York as we approached the ticket desk in the morning (well, it would have been tricky when she asked where we were going and he said he didn’t know his final destination) and of course, he was delighted. As we were in Terminal 5 it felt altogether too busy and crowded for a ‘thank you’ bit of bum-fun, so we just settled for oral instead. I’m kidding, we’re not that raunchy. It was a handjob. OK enough. We were given our tickets and the old problem of finding something to do early in the morning at Terminal 5 reared its head. We settled for an expensive, tasteless breakfast, a good poo and an hour of aimlessly wandering around smelling aftershave I wouldn’t use to clean a litter-box and avoiding a rather excitable woman who was determined we ‘sample her Baileys’. I noted with relief that we weren’t flying on a Dreamliner, which I was absolutely sure was the plane that had come up when I’d checked. I texted a friend to explain that I wouldn’t be making an unscheduled, on-fire stop in the Shetlands and boarded.

The flight was lovely. Smooth with no turbulence, aside from a moment of panic on my side as we were taking off and it felt as though the plane was struggling. It wasn’t, of course, but naturally my anxiety around taking off qualifies me as a fully-trained aeroplane pilot and I felt I had to tell Paul we were clearly going to crash. We’ve only flown British Airways once before and the last time was ruined by having a stewardess whose only regret in life was not being born into the Schutzstaffel, but the crew were amazing on this flight. Seats were comfortable, drinks were plentiful to the point I had seven miniature bottles of gin sitting on my table, and when they were taken away, the big bear steward, clearly feeling the rainbow connection, bought us four more. We dozed and watched movies (I watched Spectre, Paul watched bloody Ghost) and, aside from a moment where the inconsiderate oaf behind us decided to use the back of my chair and my hair to hoist himself up, it was lovely. He apologised, though I think my surprised shriek probably put me on a watch-list somewhere. We landed in JFK.

American security though, jeez. I’ve done it plenty of times to know that you don’t crack jokes and that they aren’t exactly forthcoming with the charm, but this was a whole new level. When he asked me to put out my fingers for scanning I honestly expected him to rap me on the knuckles with a wooden ruler. I’m here to spend money in your wonderful country, please don’t greet me like I’ve shit in your dinner. Don’t get me wrong, I’m not expecting an elaborate song and dance routine or a free cake with every stamp of my passport, but haway. Of course, by writing this, I’m sure I’ll immediately be put on a list that means the second I land in the USA I’ll be greeted by someone shining a light in my face and sticking a gloved finger up my bum. Listen, all I ask is that you tweak my nipples a bit first, get me going.

ham and potato hash

to make ham and potato hash, you’ll need:

  • one large white onion
  • one large green pepper
  • one garlic clove, yes, you guessed it, minced using a fabulous little mincer I know
  • three decent sized potatoes, preferably something waxy
  • pinch of salt and pepper and a tiny pinch of dried thyme
  • four thick slices of ham

to make ham and potato hash, you should:

  • cut the potato put into dice-sized chunks and boil them until they’re soft and fluffy but not mushy – drain and set aside
  • meanwhile, cut up the pepper and onion and soften them in a dab of oil or a few squirts of squirty oil on a medium heat
  • once they’ve softened, add your minced garlic, salt, pepper and thyme
  • cut your ham into chunks and throw them in
  • add the potatoes
  • stir – you’re not trying to create one large mass of potatoes so just be gentle
  • stick under the grill to toast it off – hell, you could even add a bit of cheese as long as you take it from your healthy extra

This is remarkably easy to make and tastes lovely – try and keep all your chunks the same size for uniformity. We served ours with a side of sticky sprouts, the recipe for which I’ll put on soon! No more typing. I’m tired! Enjoy.

mince and mash (not our porn names)

Sorry, been away – busy attending to a personal issue. All sorted. 

Fireworks night. Yak. I’m a right miserable sod, because I don’t enjoy fireworks night. It’s not that the colours don’t amaze me or the bangs excite me, it’s just I spend the whole time wincing and thinking ‘oooh but what could you have bought with that money?’. It’s the Geordie in me. Plus, everyone else’s fireworks displays are always a bit crap, aren’t they? They certainly are around here – the sky being full of Aldi bangers that pop apologetically 12ft off the ground with less bang and smoke than what my thighs make when I move quickly. We go to the Hexham display, and that’s alright, but I find it’s invariably full of children getting in the way and crying. Honestly, why people don’t just shut them away in a cupboard is beyond me. Perhaps that’s why I can’t have children (well, ethically I shouldn’t, but biologically I can – nothing wrong with my gentleman’s relish, thank you very much). Perhaps we’ve been spoilt – we’ve experienced the fireworks at Disney Orlando, where you experience such a visual and aural overload that you don’t even notice them dipping their hands in your pockets to make absolutely sure you have zero money left. It’s certainly the first and only time I’ve developed sunburn from a fireworks display.

Mind, not that I’d see much now – my eyesight is dreadful. Don’t get me wrong, I can still see Paul if he so much as ventures anywhere near my wallet, even when I’m at work and he’s at home* – but I’ve been finding that my eyes are just getting worse. Nothing exciting, don’t worry, I just use a computer a lot and I’ve been putting off going for an eye-test for ages. See, any kind of test is a minefield when you have health anxiety because an anxious person makes all kind of crazy medical leaps. Eyesight getting worse? That’s because there’s a tumour the size of a rugby ball pressing my eyes flat. Tickly cough? That’ll be polycystic ovaries. Since I’ve adopted a mantra of ‘only worry if it gets worse’, I’ve put off the eye-test for long enough. 

* funny fact for you. I have a lovely picture of Paul and I lying on a bed together when we first started ‘going out’ (oh how I hate that term, but see it’s more polite than putting ‘rutting like dying pigs’). We both look content. My eyes are fixed on the camera I’m holding in front of us. Paul’s eyes are very pointedly and determinedly staring at my wallet, just on show on the table. How I tease him about this even now – if he married me for the money then he’s really done quite poorly. 

Anyway, on Monday, I bit the bullet. I actually went for an eye-test. That might not seem like a lot, but you have to remember how much I hate eye-tests because I’ve had nothing but terrible experiences with them. Take my last one at Boots Opticians, where the whole test was done almost in silence save for the sound of the skin on my cheek blistering under the assault of the opthamologist’s stinky breath. I’m sorry, but if I had a job that routinely involved me getting so close to people that I could give them stubble burn, I’d make damn sure my breath didn’t smell like an sewage outlet. Hell, it’s one thing I’m genuinely paranoid about – I hate the thought of having the type of breath that makes people audibly wince when I yawn or ask me if I had enjoyed the faeces I’d clearly had for dinner. If I know I’m going to the dentist or for an eye-test I spend a good three days beforehand brushing my teeth, swishing mouthwash and sucking menthol mints until it gets to the point where I can’t have a glass of water without my breath freezing it solid like that shrill tart from Frozen.

I have to say though, for once, it was altogether very pleasant, with the good staff at The Big Opticians in Byker putting me at ease. Can’t recommend them enough, and not just because I told the lovely lady serving me all about the blog. I’ve come away with a new pair of Paul Smith that are slightly more rounder than normal (I asked what was suitable for a “fat face”, and such bluntness seems to have worked wonders) and I’m not half as poor as I thought I’d be. Excellent. I asked Paul what he thought and he said I looked like Dame Edna, then immediately backtracked and said they were lovely. That was lucky, because how I would have been chuckling over the divorce papers later on. So that’s my eyes sorted, now I just need to do my hair.

I’m at that difficult stage now where I have to either commit to shaving off all my hair or going for a haircut. And I hate haircuts. It amazes me that they can actually cut my hair given I retreat my head back below my shoulders like a shy tortoise. I can’t stand people touching me, I can’t stand small-talk and I have as much style as a troubling fart, so going to a hairdressers is just awful. I’d sooner get a colonic in the middle of Boots with a group of students grading the look of my bumhole. I get asked what I want ‘doing with my hair’ and I struggle to reply with anything other than ‘cut’. It doesn’t help that I always look great when they whip off the blanket and show me the back of my head, then I blink and my hair immediately looks like something someone’s used to shift a particularly difficult scuff mark off a strip of lino. But I do need to do something with it, given I’ve been told I look like Donald Trump. From a loved one, no less. I know someone who’s not getting anal for at least two weeks. I sometimes wish I had that slightly stereotypical gay trait of being able to look good in any old outfit, but honestly, the only thing that looks put-together and stylish in my wardrobe are the built-in shelves. 

Sigh. Ah well. Tonight’s recipe is a little different. I’m calling it Paul’s Very Special First Meal because it’s a slightly more refined version of the very first meal he ever cooked – mince and mash. Apparently it’s a delicacy where he’s from (Peterborough, not, as you might think, the Eastern Bloc) and his mum used to make it often, though hopefully his version contains less Benson and Hedges ash and more meat. When Paul originally made this for me, it consisted of mash made from potatoes (and not a jot more) served with cooked mince and onion. With nothing else. It looked like something you’d get served for misbehaving in a Turkish prison. Still, I married him, and he’s the one who does most of the cooking now, so it all balanced nicely. This is a dinner that can be infinitely customised – add any old veg you like. We use it to go through all the scabby tins of peas and carrots that we buy on a whim. 

Incidentally, if you were looking for a nickname for the two of us, and twochubbycubs doesn’t quite cut it, ‘Mince and Mash’ should do the trick.

to make mince and mash, you’ll need:

for the mince:

for the mash:

  • however many potatoes you usually use for your mash, but choose a good, buttery potato – or use sweet potato, or use carrots, or use a mixture, or even chuck in some broccoli with your mash – but don’t bloody skin the potatoes
  • a tiny dash of milk
  • lots and lots of pepper

and to make mince and mash, you should:

  • finely dice the onion and garlic and sweat it down in a couple of squirts of spray oil – proper stuff mind, not bloody Frylight (though I mean, use Frylight if you want, but why would you when you don’t need to?)
  • chuck in the mince and cook it quickly until your meat is browned
  • add in the chopped tomatoes, peas, carrots, green beans, cat, TV Times, anything at all – crumble in the stock cube, bit of Worcestershire sauce if you fancy, and leave to simmer away merrily while you make the mash
  • I say make, all you need to do is boil your veg and then mash it roughly, so you get nice chunks and bits of potato peel – you’re lining your stomach with it, not plastering a ceiling, so lumpy is good

Paul prefers his mince watery, I like mine thick enough to leave my spoon standing up straight. Paul also likes to eat this dish with a teaspoon for god-knows-why, although it really just means he spills it down his front and I can’t eat my dinner for tutting and clucking.

Listen, I know it looks like a proper rubbish dinner, but it’s delicious and warming. Having typed it up, I realise I’ve just made a shepherd’s pie, only with the two layers side to side. BLOODY PETERBOROUGH.

Before I go, good news. We’re going to be doing a slow-cooker week starting next Sunday (I think). So, if your slow-cooker is sitting at the back of the cupboard collecting dust, dig it out. If you’re a fan of your whole house smelling like someone’s been farting non-stop for eight solid hours, or you like your dinner almost pre-chewed, you’ll be in your element.

No, sadly not breakfast muffins that are full of blueberries or chocolate that you already slick around your mouth, causing embarrassment. Honestly, have a word. These breakfast muffins are savoury and apparently perfect for breakfast on the go. That’s an alien concept to me, not least because I’d hate to get into the lift at work with parmesan in my beard and four eggs on my breath. It’s one thing I’m always paranoid about – being smelly. There’s so little excuse to honk of BO or to have breath that can bleach hair, and I’m always going to great lengths to avoid that. I’ve got mouthwash in the car for example so after lunch, I give myself a quick rinse and let everyone on the office think I’m a secret alcoholic. But, if perhaps you’ve got your breakfast routine down pat, you’ll enjoy these muffins.

Posting very early today as we’re about to go out and deliver leaflets, after I somewhat rashly promised my consultant that we’d deliver 400, forgetting that on a weekend the amount of exercise Paul and I do amounts to exactly diddily-fucking-squat. I only said I’d deliver them because a) I like my consultant and b) I absolutely love nebbing in people’s windows and gardens. I drove past our old house in Gosforth just a couple of days ago and I was pleased to see that the shit landlord had yet to fix the drainpipe that hung over the window or even taken the space invader that we stencilled onto the front door. To be fair, we got revenge for his absolutely abysmal upkeep of the property and taking advantage of two young, naïve lads – we always used to put our cigarettes down the drain by the back window. By my calculations, given we were both on twenty a day, I reckon that’s at least four thousand little Swan filters blocking his pipes and tainting the water supply. No wonder the water used to run brown. I’ve given up now, mind. What-am-I-like. Don’t feel too bad for him, he was an absolute monster and a fibber who didn’t look after his properties. I had never seen load-bearing black mould until then.

So yes, the recipe!

slimming world breakfast muffins

to make breakfast muffins, you’ll need:

  • four large eggs
  • your HEA of any cheese you like, but the stronger the better
  • 300g of fat-free cottage cheese
  • good pinch of salt and pepper

That will make the basic muffin mixture – it’s not an exact science, either, just combine a bit more cottage cheese if it’s looking slack or crack another egg into it. You can chuck anything into these, so just use what you have – I added:

  • chopped baby leeks
  • chopped peppers
  • chopped bacon (leave out for veggie)
  • chopped tomatoes (if you’re using tomatoes, squeeze out the seeds first – just use the flesh)
  • chopped enokitake mushrooms

Really though, this is a good opportunity to use up all that shite cluttering the bottom of the fridge. I can’t really do a recipe because it’s genuinely just mix everything into a bowl, put into muffin cases and cook until they’re nice and firm and brown. I often find that with Slimming World muffins/quiches they come out as though someone’s cooked them in the sea – over-salted and wetter than Jordan checking into a Premier Inn with a footballer. If you cook off anything with a lot of moisture, like mushrooms or leeks, you’ll be OK. I cooked mine for around forty minutes on 180 degrees, just keep an eye on them to make sure they don’t catch. Also, if you’re using muffin cases, you’ll need to give them a spray first with Frylight or olive oil. If the egg leaks, it’ll dry like cement. They’ll cheerfully keep for a couple of days and they freeze well.

honey and heat noodles

We’re out tonight – so PREVIOUSLY SAVED RECIPE ACTIVATE. We won’t let you down! We’re aiming hard not to miss the 85 recipes a day before Christmas but sometimes, life overtakes us! Seems fair enough though. If you’re busy and you want something quick and easy, this will do nicely. I know some people find spices difficult – if that’s the case, you could omit the noodles and just dress them with sesame oil, but you’ll need to syn that. Add some quorn for an even better big meal!

This dish takes less than five minutes to prepare.. It’s as simple as this – spices mixed with honey and oil then used to dress noodles. I mean honestly, even you can’t mess that up. This often does us for a quick lunch if neither of us can be arsed to cook – surprisingly often! Just make sure you put it into a decent Tupperware box where the oil won’t leach out and stain the container! You could dress this up by adding some stir-fried vegetables or other such nice things, but honestly, keeping it simple will really pay dividends!

to make honey and heat noodles, you’ll need:

  • whatever dry noodles you enjoy, as long as they’re syn free
  • 1 tsp of sesame oil (three syns)
  • 1 tbsp of honey (two and a half syns)
  • 1 tbsp of worcestershire sauce
  • 1 tbsp of rice vinegar
  • 2 tbsp of low sodium soy sauce
  • a tsp of peri-peri mix and a 1/4tsp of ground chilli
  • pinch of paprika

to make honey and heat noodles you should:

  • mix together everything but the noodles
  • cook the noodles
  • mix the noodles in with the spices
  • serve!

Christ I’ve got a cheek calling that a recipe but really, it’s quick and tasty. You could bulk it out with tomatoes, onions, meat, anything, but just in its pure form it’s really very nice!

syn-free pizza

I’m in a huff. I left work at 5pm and it took me two hours to get home, saying as every single person in the world decided in unison to drive towards Alnwick on the A1. Bumper to bumper traffic and even though I took a diversion seemingly via Northern Ireland, it was still all very stressful. I’ve mentioned so many times about poor drivers that this barely needs a mention but a big FUCK YOU to the tagnut in the Audi behind me all the down the A1, who despite being stuck in EXACTLY the same traffic-jam as I was, spent most of the time bellowing at me in the mirror like he was trying to put out a fire with swearwords. Apologies that my DS3 doesn’t come with a fucking flight pack, you stupid sunset-coloured packet of shit. Oh and whaddya know, when he DID manage to get past, did he indicate? Did he buggery! Audi drivers: you DO have indicators in your car – there’s a big knob in the car to operate them. 

AND BREATHE.

At least when I managed to turn off and the traffic calmed down I was able to take in a bit of scenery and stop for one of those fantastically freeing extravagant pisses that only men can have by the side of a road or tucked down a layby. Admittedly my knowledge of foofs isn’t exactly shit-hot but it’s my understanding that it’s far more difficult for ladies to have a quick tinkle without having to take everything off or risking falling into a nettle patch with a froth of piss around your ankles. Here’s a fun fact for you though – it doesn’t matter how discreet a bloke is, no matter how carefully he parks his car and how far into a bush he goes to have a wee, the very second urine leaves his helmet a car will promptly appear full of children and nuns, leaving him with the unenviable choice of carrying on and causing offence or having to reverse the flow, which let me tell you now, BLOODY HURTS. It’s like trying to fit a washer to a gushing tap. I bet even Neil Armstrong up on the moon nipped behind the lander for a quick Jimmy Riddle only to be met with a rocket full of Russians gazing balefully at him the moment he ‘pulled the cord’. Anyway, it seems fair that men have the upper hand when it comes to weeing, given ladies can have so much fun with their bajingo. If I was a lady, anything I owned that was even slightly cylindrical would have a very glossy patina to it, let me tell you.

I had to go for an x-ray this morning on my shoulder. Nothing exciting I assure you – I’ve got a trapped nerve or something which is making my neck ache and my fingers tingle unnecessarily. Explain to me this – how comes I arrived at 9am for a 9.30am drop-in session only to be met with a veritable sea of lightly shaking old ladies all ahead of me. How? What time did they turn up for that to happen? I mean I appreciate getting an x-ray might be a day out but if they were anything like my nana, you could hold her up to a bright light and see Mint Imperials through her papery skin rattling around her body at the best of times. Ah nana. I tutted and moaned and then remembered they’d fought in the war for me. So I upped the volume of my tutting knowing the shellshocked amongst them wouldn’t be able to hear for their ringing ears.

Actually, it was a very pleasant experience – pulled into a room, told to remove my shirt, complimented on my beard and then blasted with radiation, which before I met Paul was pretty much my average night out. They did give me two heavy bags to hold to ‘pull my shoulder into the correct position’ which, judging by the fucking weight of the bags, was somewhere in Aberdeen. Of course because it was a big brute of a bloke talking to me, I didn’t want to lose face and drop the bags so I had to stand still, grimacing and squinching my eyes together in pain. I bet he told everyone when I left that I was absolutely dying for a shite. Can’t fault the NHS though – doctor told me I needed an x-ray yesterday and it was done by this morning. That’s almost as good as when I went for a private MRI a few years back, where I paid a billion pounds just to leaf through a copy of Home & Country in the waiting room and be called Sir by the receptionist. Actually, thinking about it, two MRIs and two x-rays in however many years…that surely means I’m overdue a superpower or something? I’d be a crap superhero. Captain Mince. The Anal Intruder. Barry Beige. All possible names.

I’ve got to be careful when I’m visiting the doctors or having anything done, because invariably my anxious mind tries to default to the worst case scenario. I was sitting cross-legged watching the TV before and when I got up to discover my left leg had gone to sleep, well, that was it, I’d diagnosed myself with motor neurone disease (and please, I know it’s an awful disease, that’s why I’m scared of it). I’ve already resigned myself to the fact I’ve probably got a spine like a packet of Ritz crackers that someone’s kicked up a flight of stairs, but really, realistically, I’ll have just pinched a nerve swimming and my body is acting accordingly. Oh it is awful being neurotic.

Anyway, only a little entry tonight because it’s time for The Apprentice. I know, I know. I don’t know why I watch it either. I don’t like Karen Brady, I don’t like Alan Sugar and Charles Littner may as well come out in a cape twiddling a moustache to complete the ‘villian’ role. At least Nick was gentle in his absolutely devastating, soul-destroying cutdowns. Charlie Brooker said it best when he described Alan Sugar as looking like a water-buffalo straining to shit in a lake. I still watch it though, so really, who’s the mug?

Tonight’s recipe is a nice simple idea for pizza without the syns. It’s also without the crust and using a giant mushroom – but at least you’re not having to let your trousers out after. We seem to have had quite the run of vegetarian recipes lately. to make a syn-free pizza, you’ll need:

  • four BIG portobello mushrooms – the bigger the better
  • some tomato based sauce that you’ve made – I just sweat (NOT swear) down tomatoes, onion and a bit of garlic and blitz
  • whatever cheese you want
  • whatever veg you want
  • whatever toppings you want
  • whatever you want
  • whatever you like
  • whatever you say you take your money you make your choice

Remember to weigh your cheese etc for HEA and if you’re adding things like chorizo or olives, syn them!

and to make your syn-free pizza, you should:

  • take the stalks out of the mushrooms and scrape out the gills (the little tiny labia like bits around the outside)
  • put in the oven for 5 minutes on 190 degrees to dry out a bit
  • get rid of any excess moisture
  • top however you want
  • bake for twenty five minutes or until it’s golden brown, texture like summer

no fussin’ tomato soup

Watching old episodes of 999 instead of doing what I’m supposed to do tonight, and I love this classic bit of British understatement. A chap who was a passenger in a stunt plane had a calamity when, at 10,000ft, during a loop-de-loop, his chair worked loose and he FELL OUT OF THE PLANE. He survived, and the show cut to him talking to camera where he says ‘I realised something had gone wrong when I wasn’t in the plane anymore’. You think?! Jeesus. If that was me you’d have been able to spot me across three countries as my carcass, and the stream of faeces where I’d shit myself, fell to Earth.

A friend in our facebook group pointed out something today – we’ve been going for OVER A YEAR. We started this blog on September 20, 2014 – quick, go back and look at our lack of humour and earnest WE WILL LOSE WEIGHT THIS TIME prose. The first post is right here. Looking at the blog stats, we’ve published 250 posts and I’ve had over 2,000,000 views – that’s averaging over 5,000 views a day, and recently, it’s been sitting around the 7,000 – 8,000 mark. We’ve got twenty two thousand followers on Facebook, 7,000 or so in our group and over 3,800 folks who have actually signed up to let me enter their inbox on a daily basis. If the average post is around 1,000 words which is what I am for, that means I’ve sat here and typed out 250,000 or so words about us two fat buggers who don’t really do anything at all. 

To me, that is absolute fucking insanity. I’ll tell you why. 

We never see anything through. Our house is a shrine to unfinished projects, passing interests and enthusiastic but ultimately pointless endeavours which have bubbled away to nothing – for example, we have:

  • a £200 GPS receiver which we bought to go geocaching and then put in a drawer when we realised we didn’t have the batteries for it – never been used;
  • ten disco caches – essentially kooky little containers that we were going to hide all over Newcastle…and didn’t;
  • a second computer which we bought to help us enter competitions faster when we were going through our comping phase;
  • a £450 stand mixer when I was going through my ‘baking’ phase (although to be fair, I’d love to bake, it just makes me too fat);
  • two wonderful pairs of walking boots which still have the tags on;
  • see above, but with wellies;
  • see above, but with trainers, gym kit, a gym bag;
  • a scrapbook which contains two Metro tickets and a receipt for M&Ms;
  • a year long contract with David Lloyd which we used for a month – though in our defence we quickly grew tired of pipe-cleaner men strutting around the place looking at themselves in the mirror;
  • a pair of brand new bikes;
  • jigsaws, after Paul saw a nice one in a dentist’s reception and thought he’d give it a go;
  • a full suite of decent DIY equipment, which we studiously ignore…

…and so on. We started the blog with the aim of rattling off a few recipes and giving me an outlet to practice my writing (I used to have another blog about health anxiety called shake, rattle and droll, a title I was so proud of it was almost a shame to cast off my health anxiety and thus stop using it), and here we are a year later with over 200 recipes and lovely folk all around the UK, and indeed outside the UK, sending us lovely messages and reading about Paul’s helmet on facebook. It’s a mad world. 

Anyway, the reason for all this babble is just to say – thank you. Seriously. I’d write and chuckle away to myself even if no bugger in the world read what I wrote but the fact that so many do really cheers my butter-filled heart. I might come across as a brassy, bolshy, confident tart on here but I’m actually quite shy. Put me in a lift with strangers and I’d prefer to stick my finger in the exposed wiring than make ‘polite conversation’. So each comment, each like, each share, each thank you – that makes it worthwhile. OH GOD I’M WELLING UP.

to make syn-free tomato soup:

  • as many ripe and squishy tomatoes as you can get – go to a market at the end of the day and you can pick up crates of the buggers for next to nowt;
  • one strong onion;
  • one small potato;
  • two cloves of garlic

And that’s it! All you need to do is to slice the onion, fry it in a little oil, add the cubed potato and grated garlic and then chop up all the tomatoes and throw them in a pan. You don’t need to add stock, the tomatoes will have enough liquid in (if they are ripe) to make a soup – and leave to cook low and slow for as long as you can. Better it takes four hours on a low heat than one hour on a hot ring. Haha, ring. Just keep an eye on it. When it comes to serving, just blend it with a stick blender and if you’re boring or you don’t like your poo to look like a sesame bun, sieve it to get rid of the seeds and skin. By adding nothing but simple things, it tastes so much nicer.

courgette and turkey meatloaf balls

Well, howdy. Just a quick post tonight as we’re both feeling pretty lousy for a myriad of different reasons – all rather banal and a bit wimpy but will be solved easily with some trash telly and a cup of tea on the new sofa. Which, I have to say, is divine. I don’t know how we existed before we had a reclining sofa. My ankles have never been so unswollen!

This recipe comes courtesy of the latest ASDA magazine and tweaked a little bit to make it Slimming World friendly. I hate those magazines, I really do. They’re always full of gap-toothed kids doing something cutesy-poo whilst some yummy-mummy type looks on. Blechh. So, anyways, here it is – courgette and turkey meatloaf balls. This is a great recipe to make from whatever’s left in the cupboards at home – turkey mince can always be found in our local supermarket reduced so we’ve got a freezer full of it, and all the other bits are probably floating around in your kitchen. And now you’ve finally got a recipe for that softening courgette you’ve all got in your fridges…

Here’s what to do:

to make courgette and turkey meatloaf balls, you’ll need:

  • 1 courgette, grated
  • 500g lean turkey mince
  • 2 spring onions, sliced
  • 1 clove garlic, crushed
  • 1 egg
  • 1 tbsp worcestershire sauce
  • 1 wholemeal roll, made into breadcrumbs (HEA)
  • 2 tsp mixed herbs

and then to make the courgette and turkey meatloaf balls, you should:

  • preheat the oven to 200°c
  • squeeze as much liquid as you can from the grated courgette and then place in a bowl with the spring onions, garlic, egg, worcestershire sauce, breadcrumbs and herbs
  • line eight muffin tins holes with greaseproof paper (or spray with frylight)
  • divide the mixture into eight, roll into neat balls and plop into the holes
  • bake for 25 minutes

and that’s all there really is to it. Easy! We served ours with some mashed potato and baby turnips but you do whatever you like. The only uses 1/4 of a healthy extra so go to town, why not throw in some syns as well?

sausagefest: musclefood sausages v slimming world sausages

Now look here. I wasn’t going to do a post tonight because my eyes hurt and I’m too busy putting together a lamp (so manly) but the word sausagefest came into my mind and I just had to use it. So, with that in mind, I’m going to dash off a very quick review of Slimming World sausages and Musclefood’s chicken sausages. We’re working with Musclefood to sort out a deal for you lot and I’ll post that nearer the time.

Before that, because you know I can’t go a day without some toe-curling moment of embarrassment, well, as I’ve documented a couple of times before, we spend a lot of time hiding away all the sex paraphrenalia in our house whenever a tradesperson comes to visit. I fear there is something off-putting about trying to do some plastering whilst a big black plastic willy winks away at you in the corner like a worm having a stroke. Well see the downside of doing this is that you invariably forget where you’ve put stuff and then it appears at a dramatic moment. Like today, with our alarm man (who was lovely and very charming) who opened our rarely-opened alarm cupboard, took the latch off the alarm case (which doesn’t work, so we just use it to hide stuff) only to be confronted by a black prostate tickler that we had squirreled away many moons ago.

Now he had the good grace not to say anything but given I have a slight ping-ding about the fact he might be travelling on the same bus as Paul and I, he totally knew what it was. What could I do? I couldn’t reach across him, grab it and pretend it was a novelty cigarette lighter, because knowing my luck he’d have been a smoker, asked for a light and I’d have to spend five minutes flicking the ‘hook’ end and lightly buzzing the end of his Silk Cut Ultra. 

So that’s that. Anyway, back to sausages. We’re massive fans of sausages (and I’m not even using sausage as a euphemism for a cock there, because if I WAS trying to come up with a euphemism for a penis, I’d of course use Spurt Reynolds) but they are tricky little things. Most of the low-fat sausages have as much taste as a roll of loft insulation, and anything with a bit of moisture is normally so bad for you that Margaret’s blue WKD bottle would shatter in her clenched fist if she so much as heard them sizzle in your pan. So we’ll cover two: Slimming World sausages and Musclefood’s chicken sausages.

Quorn sausages are a bust as they look and taste like something that’s been shat out of a poorly cat, so I’m not even going to mention them. I’d get more taste and enjoyment from sucking my thumb and hell, I know where my thumb has been. No wonder my nails are always filthy. 

We cook our sausages in an Actifry. If you’re on the fence about one of these, bloody get one. You’ll never look back, seriously. Above everything else, it’s the thing we love most in the kitchen. 

You can buy an Actifry from Amazon right here. They’ve lopped £70 off the bigger Actifry too. It’s in grey, but well, you don’t look at the cooker when you’re heating your sausage.

Slimming World sausages

Firstly, apologies for the lack of picture, but I rather thought that six sausages on a plate wouldn’t exactly set the blogosphere alight. I was right. These sausages are £3 from Iceland so they immediately lose a point for the fact you have to fight your way through masses of prawn rings, candied kangaroo mist and Peter fucking Andre. I remember when Iceland launched their Slimming World range and there were groups of people cracking the pavement camping outside the shop, like the answer to all of their prayers in life lay in some watery tomato sauce. Anyway, by the by. These are syn free so perfect for the diet.

They cook well enough – we chuck ours into the Actifry on top of chips and let the mouse’s tear sized bit of fat in them coat the chips. We tried grilling them but they came out looking like a dead dog’s dick, all wrinkly and misshapen. Not good. 

However, they’re tasty enough, with a bit of herb coming through after around forty minutes of chewing. They’re very tough, almost like they’ve been encased in the rubber ring from the bottom of a condom rather than a normal sausage casing, but they do taste good. Yes, they’re not quite sausage like, but they’ll certainly do well for a quick meal and chopped into a pasta salad, they’d hit the spot. They’re also very, very dry (how dry you say? Drier than a popcorn fart), but again, like any good sausage, once you coat them in a bit of sauce you’ll find they’ll fill your hole much easier.

Musclefood chicken sausages

DISCLAIMER: we received these for free to try from Musclefood, but that’s not going to twist our review. Nope. 

A chicken sausage, you say? Paul balked at the very idea, until I reminded him he used to exist on Smart Price sausages in tomato sauce, and if they’re not made out of homeless people, disappointment and the ash leftover from the Foot and Mouth crisis I’ll eat my fucking hat. It’d certainly taste better. Somewhat relunctanctly, he agreed, and we tried them last night, again putting them into the Actifry on top of the chips so everything cooked together, removing the need for me to bend down in the kitchen to load the dishwasher, which is always a good thing because I invariably end up smacking myself in my face with my own titty. MUST LOSE WEIGHT.

Facts, then. Musclefood’s chicken sausages come in at half a syn each, which is nowt in the grand scheme of things but more than Slimming World’s. They’re also a bit pricier, coming in at £4 for a pack of six. However, it’s only chicken breasts and the various odds and sods you find in sausages, as opposed to the mysterious ‘pork’ you find on SW’s variety. 

These look much better when cooked – you could almost believe they were ‘proper’ sausages, although the sausages we tend to buy when we’re being naughty normally have an oil derrick poking out the top they’re that greasy. Plus neither sausage sizzles, which is sad – you can’t beat the sound of a sizzling sausage.

How do they taste? Good! Again though, so bloody firm – I’ve never had to soak a sausage overnight before I ate it (well, I have, sort of)…no they’re not that bad, but I reckon it must be a theme with ‘healthy’ sausages that they must bounce. The chicken meat comes through and they’re a lot more filling than other sausages – they certainly fared better on their own than other sausages. They’re also a decent size – I mean, you wouldn’t be dashing to the bedroom to put it to a better use, but they’re certainly big enough to satisfy us. 

They’d be good in our breakfast wrap found here or in a sausage casserole. I reckon they’re the better out of the two – they certainly sit better on the belly, and they look appetising. If the cost puts you off, fair enough, but don’t let the syn value be the decider – it’s worth spending your syns on decent food. Remember to live, people.

budget week: loaded turkey chilli jacket potatoes

Today, we ended up in a sex shop, thanks in no small part to my dear mother. If you’re prudish, scroll down to the recipe.


See, you may recall me whingeing that our ongoing hunt for garden furniture was bearing no fruit? The situation remains the same, so my mum helpfully pointed out a place she’d found in an industrial estate by the banks of the Tyne which ‘might have’ sold charming garden furniture. Paul and I duly set off after a quick stop to IKEA to have an argument and walk around in a HÜFF like 95% of the other couples there. Hell, we didn’t even stop to buy a hotdog, that’s how severe the argument was. All was forgotten by the time we got back to the car, of course. I reckon they pump testosterone through the vents at IKEA to cause all the discord. So off we went to find the garden furniture place.

Well honestly. We ended up on a bleak, wind-swept, pretty much derelict industrial estate – the very type of place where someone is taken on TV to get shot in the back of the head by a bent copper. I didn’t dare stop the car in case a load of chavs came dashing out of the river to steal my tyres. We drove around and around until we eventually found the place but given a) it was closed and b) there were three balding, shirtless old men smacking an old fridge with a wrench in the courtyard, we sharp left. It was only after four or so miles of air-conditioning and Radio 4 that I stopped talking like I was an extra from Kes.

But listen, we at twochubbycubs don’t like to miss an opportunity for shenanigans, and we soon spotted a way to liven up our afternoon – a visit to a sex-shop. Yes, this dystopian wilderness offered up the opportunity to peruse all sorts of erotica and, following the tasteful roadsign signs promising cocktails and sex-toys, we were in. Previous visits to sex shops have always been awful – Paul was once served (not serviced) by someone who had his cock slapped on the counter like a discarded buffet sausage roll the whole time, and I got stuck behind someone roughly the size and shape of a reversing coach loudly bellowing about her desire for a ‘clit ring’. I almost blurted out ‘have you tried a hula-hoop, you brash beast’ but instead chewed my lips in restraint. 

Now, neither of us are prudish about sex. I think it’s absolutely smashing and can heartily recommend it. But some of the things on show in there made my eyes water (and only the top two, mind). A 20″ latex fist to pop up your bottom? 20″! What are you hoping to do, scratch the back of your teeth with the fucker? What if you’re too rough and a giant black rubber cock comes bursting out of your stomach like that scene with John Hurt in Alien? There was also the terrifying named ‘arse-lock’ which was essentially something that looked like a trainspotter’s flask made out of rubber combined with a stretchy rubber hoop, the idea being that it keeps ‘everything locked down from bumhole to ballsack. SOME MIGHT CALL THAT MARRIAGE, AM I RIGHT? I spent a couple of minutes trying to figure it out until I realised how pervy it looked and quickly backed away to look at mouth-gags. 

The whole experience wasn’t helped by being stared at the whole time by two middle-aged ladies who I thought I faintly recognised from my school-dinner days. What did they think I was going to steal? It’s not like you can make a quick getaway with a dildo the size of a roll of carpet hidden in/on your person, is it? I did try cracking a joke – pointing to a fire extinguisher on the wall and asking how much it would be for that model – but their stony faces sharp put paid to my ribald humour.

Tell you what hasn’t changed a bit though – pornography, though I was somewhat startled to see so many erect cocks winking at me from the shelves – I felt like I was operating a gloryhole in a hall of mirrors. It’s all so hilariously naff, especially the attempts at gay porn where the ‘lads’ are supposed to be straight / butch. I’ve certainly never known many ‘scallies fresh out of borstal’ who wear lipliner and purse their mouths whilst they’re getting bummed. And I’ve known a fair few.

However, the award for most awkward went to the DVD of porn that catered for those with a wheelchair fetish. Let me make something clear – I’m not ripping the piss out of the fact that disabled folk have sex, not one bit – it’s the fact that this DVD was so, so, so, so distasteful. The DVD had a big ‘blue badge’ on it like the one that gives you free parking and plastered on the middle was a randy old bugger who was the absolute double of the caretaker from the Harry Potter movies, with a full bonk-on and his hand on some passing girl’s clapper. It gets better – they’d mapped flames on the wheels of his wheelchair. But even that’s not it – it was the fact it was called The Handi Man. I love a bit of wordplay but I’m not convinced I’ll be sending that in to I’m Sorry I Haven’t A Clue. Good lord.

We didn’t buy anything, by the way. Again, not because we’re prudish, but rather sensible folk buy their toys and kit from places like lovehoney.com. Honestly, the things that have come through our letterbox…

 

Now, back to the blog. I know budget week has been a bit hit and miss, but that’s really because of the bad timing – we’ve just got too much going on to really focus on costing up our recipes, so we’re going to re-run the budget week with a bit more vim later in the year. For now, we’re going back to basics, with good, decent diet food all synned up and lovely. That said, if we spot that one of our recipes can be done on the cheap (and, be fair, it’s not like we’re using caviar and steak in every meal), we’ll point it out. We’ve got three or four more ‘budget’ recipes to post first though, so you’re still getting plenty. Jesus.

Tonight’s recipe is a turkey chilli. The joy with chilli is simple – you can chuck anything into it veg wise that you have sitting in the fridge. You can bulk it out with more beans, lentils, butter beans, rice…so one small portion of meat can easily serve eight if you’re savvy.

This recipe made four big portions and we served them with jacket potatoes.

to make turkey chilli you’ll need:

  • 250g of turkey mince (you can buy it at Tesco and it’s cheap)
  • one can of mixed beans
  • one can of baked beans
  • one can of red kidney beans
  • two onions
  • one stalk of celery
  • one grated carrot
  • couple of mushrooms
  • one carton of passata
  • one tin of chopped tomatoes
  • pinch of salt
  • good pinch of hot chilli powder
  • one beef stock cube

Like I said, add in any old shite.

to make turkey chilli you should:

  • chop up and sweat off the onion, celery and mushrooms
  • add the turkey mince and brown it off
  • add absolutely everything else and allow to simmer gently for a couple of hours – in fact, the longer you leave it to simmer the better. If you can make it the night before you want it, even better
  • serve with potatoes and your healthy extra of cheese

This isn’t the most exciting recipe, no, but it’s quick to make, cheap and very filling – exactly what you need on Slimming World! Get it down you.

budget week: yellow ginger pickled eggs

Our carpet is down!

I can’t begin to tell you the satisfaction saying that brings me, not least because the house no longer looks like a knockoff Dignitas clinic. I’ve never known someone match their carpet to the interior of a used commode before. The carpet was fitted by a pair of carpet fitters who had clearly just finished a shift as runway models for Abercrombie and Fitch – one was so good-looking I almost told him to go outside as he was smoking inside the house. Boom. Not our type – Paul and I prefer a more rugged/lazy look, but Christ it must be nice to be blessed with natural good looks. That’s definitely not me, I’ve got a face that would make an onion cry, but eh, I get along in life.

Part of preparing the house ready for the carpet involved moving all of our furniture into the bathroom, like a game of Hoarders: Tetris Addition. I took the opportunity to get rid of the giant media unit we have which holds the TV and Sky box and all the usual technological accoutrements that litter a living room. Bear in mind that wasn’t some fag-burned bit of Formica, it was a decent, solid piece of furniture in excellent condition – well, one of the little knobs was a bit loose, but what more would you expect in our house? Overcome with a pique of philanthropy (and partly because there was no way we were going to get it into the DS3), I rang a local ‘community charity’ company who collect secondhand furniture to furnish the houses of the disadvantaged – people who’ve been smacked about or smacked up. Great cause.

They promptly turned up, ran their fingers over the wood and told me ‘it wasn’t appropriate for their clientele’. Seriously now, I’d understand if it had a giant plastic cock stuck on the side or spent condoms plastered on the underside like smutty papier-mâché, but no!

I asked him why and he wheezed out that ‘it would just sit in the shop collecting dust’. Well heaven forbid! I feel it had more to do with the fact he couldn’t be arsed to lift it. I sent him away with a flea in his ear, and, in a proper huff, took it outside and smashed it into matchsticks with a sledgehammer. I know I could have stuck it on freecycle but I find that whole business very stressful – I once put an advert in there for a Nintendo 64 to take away and I got so many illiterate emails in barely-legible English that I thought I’d been hacked by a Russian Johnny 5. The art of please and thank you are seemingly lost on those who are desperate for stuff to fill up their car-boot sale table for furniture. I did, somewhat meanly, follow that up with an advert for a spare Xbox 360 and then replied to each email who didn’t say thank you or please with a ‘you were the first to reply, but your lack of manners have cost you dear’. Oooh, what a sanctimonious arse. But I do so hate bad manners.

We once used freecycle to pick up a landline phone a few years ago – we went (on the bus, those were the days) to pick up a little answerphone machine only to find that when we got there that a) the tattooed wardrobe (who had clearly never used the phone to book a dentist appointment) who answered the door wanted twenty quid for it and b) it was so lacquered with years and years of nicotine that I didn’t dare dial a number longer than the speaking clock for fear of contracting emphysema.

Anyway, back to the carpet. It’s marvellous – the last big bit of DIY that we needed to do before we buy lots of nice things to fill the house up with. However, it’s not without problems. See, a new carpet needs a bloody good vacuum (yes it does, it’s an old myth that you don’t hoover a carpet) to get all the fluff off it. Grand, no problem, we’ve got a fancy Dyson Digital. Problem is, the Dyson Digital only lasts about six minutes on full suck (just like Paul) and needs emptying out after two minutes of vigorous vacuuming. I’d no sooner hoover one third of a room when it would turn off, needs emptying, switched back on and then beep – out of battery. You’ve never seen anyone hoover so fucking quickly – all I needed was Philip Schofield bellowing at me from behind a sheet of plexiglass and it would have felt like I was on The Cube.

But the carpet still looks lovely so it was worth it, right?

Now, because we’re pushed for time, I’m going to post a recipe for a budget snack idea – you might boke at the idea of a pickled egg, but trust me, when combined with a raft of fancy spices, you’ll be laughing. BUT THAT’S NOT BUDGET. Perhaps. But since joining Slimming World, we’ve got more jars of spices than we do individual atoms in our bodies, and I’m going to hazard a guess that you’re the same. I found this recipe ages ago and put it down in my notes, but not the actual source – so in the interest of full disclosure, this is someone else’s recipe and I thank him/her for it, but hell, it’s a pickled egg.

Three things first:

  • buy your spices at Asian supermarkets – so, so much cheaper. Even if you can’t find an Asian supermarket near you, the ‘world foods’ aisle in Tesco generally has the spices there as well as the usual spice place, so look in that aisle and SAVE’;
  • you don’t NEED a fancy ferris wheel spice rack…but if you want one like mine, you can find it on Amazon…I’ve helpfully made this sexy picture a link if you want to go find one… 51cjvcZkfpL._SX425_
  • this is an excellent way of using up eggs that are about to go on the turn; and
  • no lies – these taste and look amazing, but they’ll give you farts that could skin an elephant from half a mile away. I’ve never had a fart physically climb out of my bum before, but these were that powerful. Enjoy!

This is going to sound so pretentious but fuck it. I served the eggs with shredded chicken, homegrown tomatoes and rocket and podded peas. All from the garden! I had the gardener pick only the best.

to make yellow ginger pickled eggs, you’ll need:

  • 175ml of white wine vinegar (80p in Tesco and you use half a bottle – 40p)
  • 150ml of water
  • five thin slices of ginger (remember: you should be freezing your knob of ginger, or if you will, a ‘Sheeran’ of ginger – do this and it’ll last bloody ages) – 4p
  • a tsp of sugar (any, but brown will do) (don’t use sweetener – better doing without)
  • 1 tsp of turmeric (85p in Tesco, use 5p worth)
  • 1 tsp of mustard seeds (85p in Tesco, use 5p worth)
  • 1/2 tsp ground cardamom (85p in Tesco, use 5p worth, just smash them with a rolling pin or your husband’s face if you can’t find ground)
  • 1/2 tsp salt
  • black pepper
  • you’ll also need a jar (sterilise it)
  • however many spare eggs you have (I’m not counting these, but you can buy 12 for £1.75, so go mad)

To sterilise jars, the BBC say:

Heat oven to 140C/120C fan/gas 1. Wash the jars in hot, soapy water, then rinse well. Place the jars on a baking sheet and put them in the oven to dry completely. If using Kilner jars, boil the rubber seals, as dry heat damages them.

then to make yellow ginger pickled eggs, you should:

  • set your eggs away boiling – ten minutes or so normally does it, and when cooked, plunge into cold water (the eggs) and when cold, shell the buggers
  • tip all of the above into a pan and bring to the boil
  • reduce, and allow to simmer for around six minutes
  • place a couple of eggs into your jar, add a bit of the liquid, and carry on until the jar is filled up
  • you’ll need around five days for the colour and the flavour to really sink in, but these are delicious and plus, they’re eggs – they’ll fill you right up!

to gussy it up:

  • use quail eggs
  • have jeeves boil the eggs for you
  • add chilli 

to cheapen the deal:

  • you can buy a jar of pickling spices from most shops – cheaper than buying the individual spices, but you’ll get the use out of most of the above so it’s a worthwhile investment
