I bet you’ve stumbled here expecting caramelised Vietnamese pork and rice? Makes sense, given the title, and look, you’ve only have to scroll through a few paragraphs to get there. Can I share something that I’ve learned over the weekend? There’s nothing quite as stressful as trying to give a cat medicine that he doesn’t want to take. I’d sooner run into a burning building and have a boxing match with a drunk Hartlepudlian woman than go through this again. He needs to take it because he’s had an allergic reaction to something and is pulling out his fur, the poor bugger. Naturally, because we’re caring sorts, we rushed him to the vets, handed over a billion pounds to the absolutely dishy trainee vet behind the counter (oh! to be a cow in difficult labour!) and were given a course of tiny pills to give to the cat, who would ‘eat them with no fuss, all cats do’.

Like hell they do. I’d have more luck getting Bowser to learn to tap-dance. This is a cat who shat in his own cat-box to stop us taking him to the vets to stop his own sickness. He was foolish, we just bundled him in with his sister and they spent twenty minutes tumbling around in the back of the Smart car until we arrived at the vets and had to pull them apart like old Velcro. Sola is fine, she just spends her day showing off her fanny in the window or sleeping anywhere where we’ve put down clean clothes. I don’t know what it is to own a shirt that doesn’t look 80% mohair.

First we tried the obvious route – slid out a packet of finest Whiskas Bumholes-‘n’Ash and hid the tiny pill inside. He ate every last bit, bar the atom-sized piece of cat-food with this pill on it. There was a haughty arrogance to his walk as he strutted off, dropping hair everywhere he went. Next we tried luring him in with good ham – Sainsbury’s Extra Special Ham, no less – and despite him usually wolfing this down so fast he manages to take your fingernails with him at the same time, he completely ignored it. I gave it to Paul instead, telling him to man-up and spit out the cat-hair afterwards.

Next came the nuclear option – Dreamies. Have you ever seen a cat around Dreamies? I can only assume they contain whatever the cat equivalent is of crack-cocaine because I swear, my cats would be out turning tricks in the street if they knew there was a packet of Dreamies to be had. They’ve been known to get inside our kitchen cupboards just to push the little pot onto the floor before. This time we used our brains, secured the tablet to a Dreamie with a bit of spit, and hid it in amongst a pile of other Dreamies.

Yep, he ate all but one, then went back to furiously licking his willy. He did the same with tuna fish, he did the same with cream and he’ll do the same with whatever suggestion you lot have for me. In the end we had to find a video on Youtube on how to pill your cat and I swear, our relationship will never be the same. He looks absolutely fucking furious – and this is what he usually looks like:

Paul had to hold him and I had the unfortunate job of prising his mouth open to drop the pill in – then he spat it out – so rinse and repeat. Ah well. Only thirteen more to go. I would have genuinely preferred the vet had given us suppositories at this point.

So, aside from pushing pills on the cat all weekend, what else have we done? Finally organised our bloody spice cupboard, that’s what! Anyone else on Slimming World knows the pain of their spice cupboard – a mysterious Null full of eight jars of ground ginger and dried sage that was last wheeled out for the ‘GOODBYE DIANA 4EVA IN OUR HARTS’ vol-au-vents. The amount of times we’ve bought stuff in Tesco only to find we actually had several bottles of it already cluttering up our kitchen, man, it beggars belief. So we emptied it out, like so:

Then, with a quick trip to IKEA and the purchase of all these pretty magnetic jars for the side of the fridge, we now have this:

Pretty right? They’re nice and sturdy so they’ll stay on there until the cleaner knocks the turmeric to the floor with her Henry Hoover and ruins our carpet. But that’s OK, we’ll cross that P45 when we get to it. I posted this online last night and people went wet with delight, which I wasn’t expecting given it’s just jars, but if you’re wondering:

caramelised Vietnamese pork and rice

to make caramelised Vietnamese pork and rice you will need:

  • 500g minced pork
  • 1 onion, diced
  • 2 tsp grated ginger (save your fingers and invest in one of these – great for garlic too!)
  • 2 garlic cloves, minced
  • 1 bird eye chili, deseeded and finely chopped
  • 2 tbsp maple syrup (4 syns)
  • 2 tbsp fish sauce
  • 2 spring onions, finely sliced
  • rice or noodles (whichever you prefer)

to make caramelised Vietnamese pork and rice you should:

  • cook the rice or noodles to however you like it – the main bit doesn’t take long so you can probably cook both at the same time
  • meanwhile, heat a little oil in a large frying pan over a medium-high heat
  • add the onion, garlic, ginger and chili to the pan and cook for 2 minutes
  • add the mince and cook for another 3-4 minutes, until it’s cooked through
  • add the maple syrup and the fish sauce and stir it in only once
  • leave it to cook, untouched, for about 2 minutes – this helps it to caramelise
  • stir, then cook again for another thirty seconds – and then do two more times
  • remove form the pan and serve over the rice or noodles
  • sprinkle over the spring onions and eat

When you last left us we were just sliding off a sweaty bus like how corned beef slides straight out of the tin, with an oozing plop. My shirt had been ruined by the blood and brain matter leaking from my ears and Paul was about one sassy remark away from stabbing someone in the eye with a Snickers bar. I’ve never been happier to leave a bus – we could have been touring a fat rendering factory and I’d have skipped off that bus with less relief.

Cadbury World, then. You’d think that as two confirmed fat bastards we’d be walking around a chocolate factory with tented trousers and a quickening heartbeat, but it was crap. It was your typical British experience – far too expensive, far too many people, duff displays, every opportunity to shake some more money from your pockets gladly taken. Our bus arrived for the 1.30pm entrance in good time but we still had to wait for over an hour in a queue full of fractious children and beetroot-necked adults. I asked how long we’d have to wait but realised it looked unseemly pressing for quick entrance to a chocolate factory.

We decided to nip over to the gift shop – I’d heard such wonderful things about this place – that the chocolate was super-cheap, that they practically force-feed you chocolate and other sweets, that you get tugged off using a handful of Crunchies, but no, it was entirely meh. Don’t get me wrong, things were cheap, but I’ve got a Cadbury’s outlet within stroke distance of where I live and it’s cheaper there and I get to look disdainfully at all of the reprobates buying their court suits from the Burtons outlet. We bought a tiny Bertie Bassett doll and a painted plastic duck, handed over altogether too much money to a cashier who didn’t so much look bored as pig sick of her life, and rejoined the throng.

I should make it clear – one good thing – we didn’t have to troop around the factory with the rest of the coach trip. We successfully managed to distance ourselves, although not by the 300 or so miles I would have liked. We could still hear a lot of them quarrelling and snarling in the distance, like chavvy Langoliers.

The queue finally moved forward and we were given four chocolate bars each to be getting on with, with an extra one to apologise for a ‘closed exhibit’. More on that a bit later. I did ask whether we could have a bag only to be met with a look that would stop a clock. Apparently such a thing was beyond the wit of man unless I paid something silly for a fancy tote bag. I don’t want a tote bag, I don’t do yoga. We were left to stuff the chocolate into our pockets (along with the gifts we bought earlier) which meant, given we’d been superheated on the coach, everything immediately melted and made putting my hands in my pockets a terrifyingly shitty experience.

We wandered around the jungle bit which explained where the cocoa came from, we enjoyed the god-bless-them-they’re-trying acting parts and hell, we were both glad of a sit down in the little theatre. Again, though, because we were packed in there like level 999 tetris pieces, it was hard to relax. There’s a bit with big scary signs saying ‘people with heart, back or neck problems should stand up’ which got us both quivering with excitement and hypertension but it amounted to nothing more than the ‘pews’ shaking a bit and making our tits jiggle. You just know there’s hidden camera footage somewhere on xtube of this.

Then…that was it, really. There’s a whole section where you can see the factory and machinery which makes and packages the chocolate but er, it was all closed down. So you’re left squinting at some dusty machines trying to figure out if they splurted the yellow bits into creme eggs or packaged up the Love Hearts. It’s about as exciting as I’m making it sound. Both Paul and I are massive geeks when it comes to production lines and factories, we find them endlessly fascinating, which is lucky as our TV is seemingly permanently tuned to How It’s Made. Nuclear war could be declared and we’d be oblivious, though if you needed to know how they mix paint we’d be cooking on gas.

We kept walking in the vain hope we’d find something to do. There’s an outdoors bit with a big 4D cinema, which I’m sure would have been just amazing only there was a massive queue (gasp) and we needed to be back on the Boat of Charon by 4pm. So, that was that. We queued up to experience the Cadabra (a little too close to cadaver if you ask me, although that seems fitting given we were bored to death) ride where you sit on a little guided car and experience the thrills of 90s animatronics whirring by. It was like being at Disney, only not at all. We deliberately pulled the most miserable faces we could when the camera went off which at least gave us a chuckle when we bought our photo at the end of it (£10, which I was overjoyed to pay).

Now, here’s the thing. I’m kvetching about the cost of stuff here because it’s a blog post and we have to try and be faintly entertaining, and the moaning about money is part of our schtick. But we hide it very well when talking to staff or other people because christ, no-one likes a proper moaning minnie. The reason I mention this is because we ‘made a friend’ –  the very second we gave up and sat outside to wait for the bus, another traveller made a beeline for us with his face full of woe. He then spent the next five minutes moaning at us about what a waste of money the trip was, how ripped off he felt, how it was the worst thing he’s ever experienced in his life. You know when someone looks as though their face hasn’t seen a smile for a good few years? This was him. The type of guy to complain if you hung him with a new rope.

Oh and I just couldn’t be arsed. Let me put this in perspective – if he paid anything like us, the whole journey – bus travel, hotel stay, dinner, breakfast, a trip to Cadbury World and a trip to a safari park would have cost less than £80 for the whole weekend. The way he was going on you’d think the driver had co-signed him on a fucking mortgage and made him buy the bus. I feigned explosive diarrhoea and we left him to his sobs. I can’t abide it. I know I’m a negative nancy but by god I put a good fake face on when needed. The fact that we had to hide from him meant that we had to hide in the toilets for a good twenty minutes and then, when 4pm rocked around, we sprinted onto the bus before he had a chance to give us the old watery-eyed gaze.

The hour long trip to the hotel was as bad as the six hours that preceded it. Kids screaming, this time sugared off their tits. Parents arguing. The couple in front continuing to give me enough reason to contemplate running screaming to the front of the bus, grabbing the steering wheel and driving us straight into the Gas Street Basin. Thankfully, we pulled into our hotel before I completely lost control. There was more awed oohing that I can ever imagine has happened before as our eyes fell upon the Birmingham Airport Holiday Inn.

We all checked in, moving like cattle at the slaughterhouse. I asked about dinner, expecting a couple of hours window forus to drift downstairs and get something to eat, only to be told that all of the coach party would be eating in the same place – a meeting room away from the main restaurant at 6pm sharp. I retorted whether they expected us to wear an orange jumpsuit to complete the prison feel but it fell on uninterested ears. We slinked to our room – perfectly pleasant – and had a lie down until 6pm. We decided to brave it.

We lasted less than a minute. We opened the door to the meeting room, saw everyone sitting in rows like Hogwarts: The Borstal Years, was pushed out of the way by someone with more make-up than sense carrying four blue WKDs, then we turned on our heel and fucked off. No way was I going to top the day by listening to people smacking their lips and clacking their teeth as they snaffled from the trough.

Stuck with nothing to do and no change of clothes for a decent night on the town, we decided to spend the rest of the night in the room watching Eurovision on the tiny television, which was shite. We ordered room service: a burger, a pizza, some dips, a bottle of Coke and a bottle of house white wine. £75. I hadn’t realised that I was paying someone to press the fucking grapes. Our room grew steadily hotter thanks in no small part to the air-conditioner which couldn’t have blown the froth off a cappuccino and at 11, we called down for a fan. Nineteen years later a small fan was brought to the room.

Naturally, the fan had a fucking blade missing, meaning it was unbalanced and when turned on it clattered and scattered all over the table. It would have been quieter to build a wind turbine. I asked for another fan, another was brought – this one didn’t work. Didn’t switch on. I called down for a third fan and finally a working fan arrived. Pfft.

We spent the night tossing and turning in the sticky heat and, at around 4am, we both kicked off the duvet, sat upright in bed and decided we were going to go home. We would hire a car in the morning and drive back in air-conditioned comfort. Soothed by this thought, we fell into a fitful sleep.

In the morning we went down and told the driver that we had been called urgently back to work – he was really quite lovely – but even seeing the coach sent Paul into violent tremors. Once we knew that we were free the morning became all the more sweeter. We went for all-you-can-breakfast in the hotel restaurant which was very tasty and marred only slightly by the fact there was a bodybuilding competition on at the hotel and thus it was full of preening peacocking men strutting around in vests and mooing on about egg-white omelettes.

Paul and I enjoyed a bit of mischief when this very well-to-do fart sat down on the table next to us and started harrumphing about our giant stack of food. He was, but of course, a Daily Mail reader, so we sat and exaggerated our liberal viewpoints – going on about how wonderful immigration is, how terrific Corbyn will be as a leader, how they should fund the NHS until money pours from the drip stands – and he went more and more red in the face as we continued. Paul kicked me under the table when I started waxing lyrical about how fantastic Europe is lest it proved too much for the poor chap and he pitched forward angrily into his beans.

Full, we Ubered our way to Birmingham Airport, made our way to the Hertz exchange and picked up a Qashqai. The lovely lady (and I’m not being sarcastic, she was charm personified, especially when faced with our dour faces) wouldn’t let me haggle though, even when I worked in a ‘family death’ and ‘having to cut our holiday short’. Bah. We drove back in no rush, enjoying a good singalong, and realised that our holidays will only ever work when it’s just us vs the world.

Coach trip, done. Now let’s never talk about it again. Common decency prevents me mentioning the company we used but actually, they were the only part of the holiday that worked well, so fair play.


Right, shall we get to some spicy szechuan beef, then? A doddle to make, low in syns and you can add all sorts of other veg in. The recipe makes enough for four. Let’s do this.

to make spicy szechuan beef you will need:

  • 400g beef (steak, diced or strips will do you just fine)
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tsp cornflour (1 syn)
  • 2 tsp chilli flakes
  • 4 garlic cloves
  • 1 green pepper
  • 1 red pepper
  • 1 large carrot
  • 500g rice noodles
  • 3 spring onions, sliced

for the sauce

  • 1 tbsp sriracha (½ syn) (it’s hot sauce_)
  • 2 tbsp soy sauce
  • 4 tbsp water
  • 1 tbsp honey (2½ syns)
  • 2 tsp cornflour (2 syns)
  • 1 tsp sesame oil (2 syns)

Our hampers have beef strips in – but actually, here’s a switch: you can now choose what you want to go in your hamper – so if you’re not a fan of beef, say (unlike me), hoy some more chicken in there. to make spicy szechuan beef you should:

  • make sure the beef is sliced into thin strips – if you’re already using stir fry strips they’re fine as they are. diced beef will be best cut in half (it also makes it go further!)
  • place the beef in a large bowl
  • mix together the soy sauce, rice wine vinegar, chilli flakes and cornflour in a bowl and pour over the beef – allow to marinade while you prepare the rest of the ingredients
  • thinly slice the red and green pepper and garlic (or just use the chopped stuff if you can’t be arsed) and pop into a bowl
  • peel and grate the carrot and place in the bowl with the peppers and garlic
  • next, mix together all of the sauce ingredients together in a jug
  • cook the noodles according to the instructions, drain and then rinse with cold water to stop them cooking – keep aside until you need them later
  • next, heat a large frying pan over a medium high head and add a little oil
  • add the beef and cook for a few minutes until only a little pink remains
  • add the peppers, garlic and carrots to the pan and cook for a few more minutes
  • add the sauce to the pan and cook until thickened slightly and everything is well coated
  • add the noodles to the pan and stir to mix (bit of a faff-on, mind – use a couple of forks to pull the noodles apart and get it well mixed)
  • serve and sprinkle over the spring onions

Only a quick word from us tonight – I won’t lie to you, we’ve got a giant Ritter Sport from the local Lidl to get through and an episode of 24: Legacy to watch. I know, we’re so cosmopolitan. If it makes you feel any better Paul will be massaging and ped-egging my feet whilst we watch TV until it looks as though it’s been snowing on our black settee.

a life of losing weight – by Dave

I have been on a diet since I was 5!  It was the School Nurse who started it. Her main duty was as Nit Nurse; “Nitty Norah – The Bug Explorer” they were universally named, and their job was to hunt out headlice. We did not have the BMI in those days and I don’t even remember having a weighing machine. She took one look at me, towering above the rest of Primary 1, dug out the three children hiding behind me and issued me with a letter to take home. It was just a folded piece of paper but I would no more have looked at it than I would have complained had Nitty Norah pulled hairs out by the roots. Which she did. I think she wanted more than one outcome for investigating the fat kid. Oh, wait a minute, we did not have “outcomes” in 1950’s health care so she must have been the sadistic old biddy we thought she was.

Letters were scarce in those days too, especially those scrawled in green crayon on a sheet torn from an exercise book (jotter to my Scottish fans) so my mother took it and clipped me round the ear as a note from school must be about bad behaviour, and proceeded to scrub my head with Derbac, and then crippled any surviving lice by tugging the nit comb through what hair remained. Of course I did not have nits but a note from a nurse warranted the full treatment. She then sat down with a fag and a cup of tea to read the note.

Without a word about the epistle, next day she accompanied me to school to find out the meaning of “David is obese”. Another thing about the 50’s was without the internet and with libraries being designed and run to keep the working classes AWAY from books the use of the term “obese” was surrounded in medical mystery. After having the diagnosis explained she was advised to make me drink a large glass of water before each meal and that would reduce my food intake. No advice about “healthy diet” or “calories” as these were only invented in the 60’s when we had “never had it so good”, in the words of our then Prime Minister, Harold McMillan. That was the era we abandoned vegetables that needed to be boiled for hours to have any prospect of successful mastication. Does anyone remember ‘woody carrots’?  Not a music hall performer but carrots had a core like firewood that did not respond to boiling.  We now had “Mother’s Pride, white sliced bread. Processed to rid it of all those Nasty nutrients. Better access to butter and cheese.  Money to be able to indulge in toasted tea cakes and milky coffee at Ibbotson the Baker and ice cream with red sauce at Meschia’s Ice Cream Shop.

The water trick might have worked for that shrivelled old stick Nitty Norah but not for a growing boy. Add to that mix, mother’s history of seven years in hospital with TB. Tuberculosis was seen as a disease of poverty, neglect and general poor parenting. None of those applied to my mum but the shame of TB was akin to that of AIDS in the 1990’s and as doctors always knew best any protestations were meaningless. So mum was determined her boys were not going to be hungry or dirty. Therefore the growing boy just continued to grow.

Another diagnosis of the time was the infliction that was “a phase”, so friends assured us it was just “puppy fat” that I would shed as I aged. “Phase” was applied to my chronic pain, sexuality, religion and move to Scotland, all of which I am still waiting to grow out of, 65 years on.

My next diet I undertook at 16 and 24 stone when I entered the world of work in a dairy laboratory , became friends with a fat girl and found everyone at work was on the magical Yoghurt Diet. Yoghurt was a new part of “having it so good”, it was also very sour to our tastebuds so it needed three spoons of sugar per pot to get it down. So the Yoghurt Diet failed. As did the next great discovery of the 70’s – the Grapefruit Diet. On that you ate what you wanted but provided you had a grapefruit that gobbled up all the fat. Grapefruit was really sour, four teaspoons of sugar.

It was around this time that calories made their way to the north of England in the form of the 1000 calorie diet. So everyone had a wee book in which one could look up the calories and try to assemble three meals and supper out of your 1000 calorie allowance. This time, with deprivation and starvation I shed 6 stone and the tailor-made lab coat that I wore everywhere to cover my bulk. It was WHITE, we still had not discovered how to hide fat with dark colours, vertical stripes and a coat worn open at the front to fool everyone into thinking you were only the width of the gap between the buttons.

I learned that only a dedicated masochist or catwalk model could keep to this diet. I think that must have been when the “Kleenex and Capstan Full Strength” diet was born so the weight went back on.

Over the ensuing years I followed “The Cabbage Soup diet”, “Canadian Air Force diet”, “Raw Egg and Milk diet”, “Atkins”, “Paleo”, “Caveman”, “GQ”, “Vogue” “Autotrader” etc., etc. ad nauseum. I have applied creams to cellulite, suffered hypnosis and acupuncture, worn electric pads, tight cords, rubber suits (no, hang on, that was fetish, not weight loss) but as it all comes under the heading of sadomasochism I am still counting it. It has all WORKED, I have lost the combined weight of everyone with the KY4 post code. And put it back on again!

Fast forward, or for fellow fatties – proceed at your best pace. Mine is on a pair of exercise pedals so I don’t get far, it is now 2016 and my latest cruise left me feeling hot and uncomfortable when squeezed into my penguin suit. As I am fairly immobile these days it is all to easy to have biscuits and coffee to alleviate boredom which, added to an activity log spanning Holly and Phil, through Judge Rinder, ending in a vigorous watching of the late night Holly City is not a recognised diet. I am well prepared for fluctuations because as a regular cruiser I have penguin suits in various sizes. In fact, my wardrobe goes from French flares to a Mumu. The various sizes allows me to glare with righteous indignation at other men in their DJs who claim they are still wearing the suit they bought for their wedding. They do not appear bothered by the fact that the trousers now fasten at the pubes and the bow tie is draped round an open neck shirt in the belief that they will resemble Hugh Grant while they perspire their way through the late night buffet.

So, time to shed the pounds and try to gain control of my blood sugar as my medication has crept up to 9 tablets a day yet without the required control. My brother had just lost four stone with Slimming World and his daughter also lost three. I was surprised when we enjoyed a cruise together at just how simple it seemed and how much he could eat. I had never been much for groups, particularly slimming clubs as I knew I was a fat frump and did not need to be shamed by the fact. That would DEmotivate me. But in the course of my work I met so many people who enthused about Slimming World. So in desperation, and in secret, I crept into the Kelty group. Having taken the step I did not want anyone to know in case they tried to undermine me, either by running down the idea of a group or of trying to feed me up. I am sure you have all experienced “on a diet? you don’t need to diet!” or “go on, I am sure you can allow yourself a treat!”, “you are on holiday, diet when you get home!”

I was immediately impressed that newbies met in a small group while the “losers” were getting weighed. Alun, our consultant, was a gift. So unassuming, engaging, encouraging (I won’t say much more as he blushes easily). There were four of us joined that night so we had a bond and at least knew a couple of names. I work with “group theory” so was very aware of how difficult it can be for new people to join an established group. No worries, everyone was friendly and encouraging and we had a laugh. Some nights we were almost sick with laughter. One particular group, one of ladies, late 70’s was dismayed the week she did not lose. “But I have been so good, I kept to the plan, I even had my legs waxed!”  Well it went from bad to worse, ribbing about how hairy her legs must have been if she was hoping it would  add to her weight loss, jokes about Brazilians, etc.  That became the pattern for groups, lots of fun, great support and regular activities to keep us connected. Inventive “quizzes ” about speed foods, super foods and syns, food tastings, awards and what SlimmingWorld group would be complete without “stickers”.

Alun has a wee army of half a dozen volunteers, each one just as cheerful, friendly and willing to share experience and give encouragement. They run the shop, do the memberships, records, weigh in and sell tickets for the weekly raffle. The raffle income provides for free tea and coffee and the raffle prize, always a selection of foods and equipment related to a SW recipe for the week. The pop up shop sells SW books, magazines and SW snack bars.

Alun is a frustrated showman. Every group is a performance as group members egg him on and always manage to find new ways embarrass him. It is all in good sport and no one is ever personal or cruel. This week he was trying to convey the message that when a woman is at a certain part of her menstrual cycle she may appear to retain or put on weight but will still lose over time.  This to a group of worldly wise women but with Alun trying to avoid saying period, menstruation, time of the month or cycle. We are all very fond of him and would like to adopt him 😉

So I started my journey ten weeks before Christmas at something over 20 stone. I managed to lose 22lbs in that time and have never eaten so well and so varied. I began to feel great, move better and get my blood sugar under control with only TWO tablets per day. So by the cruise leaving New Year’s Day my clothes were fitting comfortably. Now, cruise officianadoes will tel you that you can expect to put on one pound in weight for each night of the cruise.  So this was a seventeen night cruise – 17lbs on. When I got back I went to Group with a bit of foreboding as I had eaten so well on the cruise but as far as possible had kept to the SlimmingWorld plan. I lost a further 2lbs!  I tried my best to convince Alun that I should be credited with 19lbs the 2 I lost plus the 17 I did not put on. He might be charming but he is tough so I did not get more stickers.

So I have signed on for another 12 weeks. I am not far of my 2 stone and hope to pass 3 by April. So to anyone who is swithering I would totally endorse SW and say when you join, please, if you can, stay to Group. Many people just come to weigh in but Group helps keep you on track and in between meetings we have this Facebook group.


Thanks to Dave for that, even if he did give me a run for my money on the old word-count-a-meter – we don’t often get the male side of things mentioned when it comes to Slimming World. The magazine entries are always the same, full of charming young men who have lost 15 stone and are pictured holding their Farah slacks out in front of them with a ‘I SHIT YOU NOT’ expression on their face. Then invariably we’ll get the paragraph about it being daunting stepping in front of loads of women. Pfft. I walk into every class singing like Cilla at the start of Surprise Surprise. Articles for men usually involve some po-faced guide on checking your balls or sticking a finger up your arse to tickle your prostate and frankly, it’s hard enough to eat a Rocky Road Hifi bar without that streaky image in my mind.

Right, let’s do the recipe, shall we? I’ve seen chicken satay before done with sweetener and powdered peanut butter and I just think, why bother? Use proper ingredients, a few syns, and have a dish that is worth writing home about. You’re on a diet, not doing time for manslaughter. Enjoy your food!

Slimming World chicken satay

to make amazing Slimming World chicken satay stir fry you will need:

  • 4 chicken breasts, sliced thinly
  • 2 tsp bicarbonate of soda (optional)
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • handful of sliced spring onions

for the seasoning

  • 1 tsp coriander
  • 1 tsp cumin
  • ½tsp turmeric
  • ½tsp chilli powder
  • 1 tbsp curry powder (any will do – used Tikka)
  • ½tsp salt
  • ½tsp pepper

for the satay sauce

  • 2 tbsp reduced fat peanut butter (8 syns)
  • 2 tsp honey (2 syns)
  • 2 tsp light soy sauce
  • 1½ tbsp rice vinegar (cider vinegar will do)
  • 1½ tbsp sriracha
  • 150ml light coconut milk (7.5 syns)

to make amazing Slimming World chicken satay stir fry you should:

  • tip the sliced chicken in a bowl and sprinkle over the bicarbonate of soda (it helps to tenderise it – it’s what the takeaways do!) and leave it to do it’s thang for 20 minutes
  • meanwhile, mix together in a bowl all of the ingredients for the seasoning and set aside
  • do the same in a separate bowl for the satay sauce and set aside
  • sprinkle over 2tsp of the seasoning mix over the chicken and mix it all in so the chicken is well coated
  • pour the rest of the seasoning mix in with the satay sauce, add 125ml of water and stir well
  • heat a large pan over a medium-high heat and add the onion and garlic, cook for a few minutes
  • add the chicken and stir fry until cooked
  • reduce the heat to medium and pour in the satay sauce and cook for another few minutes until it thickens
  • serve (rice is nice with it) and sprinkle on the spring onions

Porky Light anyone? Mahaha. My facebook is awash – nay, alight – with posts about the fact that it looks like those delicious Slimming World half syn sausages called Porky Lights might be 4.5 syns as opposed to 0.5 syns. You know what? GOOD. It’ll serve all those folks right who went out to ASDA and bought pallets of the bloody things as though each sausage came with £100 and half an hour of cunnilingus from a man with three tongues. That isn’t forward planning, that isn’t taking advantage, it’s sheer bloody greed, and the way they paraded their hauls like it was something to be proud of just made my teeth itch. Of course there’s the odd reason to legitimately bulk-buy (perhaps you live far from a supermarket) but doing it just because you saw some other immoderate slattern stockpiling makes you an absolute arse. So yeah: boo bloody hoo. I just hope the next revelation is that Fibre One bars give folks a Tom Selleck moustache and tits like two fighting ferrets. I can’t stand bloody greed.

Anyway, hiiiiiiiiii. How the hell are you? You’ve literally never looked better. Have you been away? No? Well, given we have more holidays per Thomas Cook, we have been away on our second holiday of the year. Remember this?

Our first holiday was a few weeks ago but I didn’t take my iPad with me, so I’ve got long handwritten notes to type up. I know, I’m so old school. I feel like Angela Lansbury tip-tapping my way at the keyboard! So let’s pretend this holiday is the first one and the first holiday will be the second holiday, and so on. I know, I don’t understand it either. So: take a seat and enjoy the first entry of our holiday in gay Paris.

Well, it certainly fucking was when we minced off the plane, anyway…

Paris, then. Why Paris? Because, like Billie Piper, we want to. Actually, that’s a lie right from the off – when I first suggested a lovely romantic weekend in Paris Paul shot me down with protestations of how rude everyone is and how we’re simply not cultured enough to get by, as though my idea of sophistication is being fingered in a bus-shelter by the sea. Which is a cheek, because I know some lovely shelters with some beautiful views. Tsk. I talked him round by reminding him that there’s delicious pastry everywhere and good food is the law.

I’ve been to Paris several times over with mates and have done the usual suspects – Arc de Triumphe, Eiffel Tower, four million art galleries, being tutted at by all and sundry, and so we were keen to avoid going over old ground, though we’d revisit a couple of the classics because why not.

We drove up to Edinburgh Airport, stayed overnight in the Ibis Budget Hotel by the airport and took the early morning easyJet (7.00am) flight down to Charles de Gaulle. We stayed for three nights in a deluxe room at the 5* rated Hotel Square, a ten minute theatrical flounce from the Eiffel Tower and pretty much almost in the Seine.

The days before our trip were filled with weather angst, as the news became increasingly full of grim warnings of massive storms and the ridiculously hyperbolic weatherbomb. Weatherbomb for goodness sake. That sounds like a crap movie you’d get on the SyFy channel. The Daily Mail took a break from demonising the poor, gays, ethnic minorities and Jeremy Corbyn to froth at the gash about travel disruption, impassable roads and widespread mayhem.

Naturally I managed to work myself in such a tizzy that I was allowed to leave work early (they were probably sick of me standing looking mournfully out of the window like a sailor’s widow gazing at the sea) in the hope of being able to leave Newcastle before dark, imagining some frozen tundra we’d need to navigate like Nanook of the fucking North just to get to Edinburgh Airport, where we’d doubtless find planes dropping from the skies like snow.

Well. Does it surprise you to know that the most eventful incident to hit our travels was Paul spilling an entire bag of Poppets over the floor of my car? The roads were clear, the wind mild, snow nowhere to be seen. Dolly was literally a storm in a teacup and I was furious to be swept up in the hysteria.

We arrived at the Ibis Budget Hotel in good time after a brief but exhilariting accidental turn onto the Edinburgh Tramline – Paul had to wrest controls from my hand as I was too busy doing Alan Bradley jokes to realise what had happened. In my defence they really ought to make the big red light a bit bigger. I mean, honestly. We were checked in by a scarily efficient and pleasant chap who pressed the room card into my hand with slightly more touching that I’d expect and then we were off to the room, a vending machine Toblerone clutched in our sweaty hands.

It turned out that Paul, for reasons entirely unbeknownst to either of us, had booked us into a hotel room with a tiny main bed and a bunkbed over the top. I was terrified, not least because he hurled his not insignificant frame into it like one would leap from a burning building. I’ve made the joke about metal screaming before but honestly, it sounded like when the Titanic snapped.

Once we’d had holiday shenanigans (normal anal but you use Piz Buin rather than lube) Paul retired to the bed above. Well. That was it. No chance of a good  sleep when I have the sure and certain knowledge that at any second Paul’s ample gut would prove too much for the fixtures sending him, and the metal bed, cascading down onto my head.

As it happens, we did survive the night (obviously: imagine if this was part of my last will and testament), though by the time Paul climbed back down the screws of the bed had been pressed into diamonds. We tidied up, took as many small towels as we could fit under my coat and stole away into the clear, crisp morning. Storm Dolly my big, windswept arse.

For once we were experimenting with not turning up at the airport eight years before we were due to fly, and what a difference. There was no sitting around in a Wetherspoons smiling wanly at stag do knobheads, nor did we need eight toilet visits just to pass the time. I did get stopped at security for a pat-down by a big, burly, bearded Scottish brute. He rubbed my legs, my thighs, my arms and my shoulders. Once he was satisfied I wasn’t smuggling anything but a throbbing erection, he let me go. I promised to call but you know how holiday romances are. Paul, meanwhile, was struggling with our carry-on, the passports, my iPad, his belt and shoes and my giant coat. He’s a dear.

Due to Doris causing havoc the day before, our flight was full and we were encouraged to check our carry-on into the hood in exchange for speedy boarding, which we duly did. I like to think we have a nice gold star for being “helpful, polite” on our easyjet profile. It’ll be next to the cholesterol soaked heart for “fat bastards, ensure sitting next to skinny woman”. Speedy boarding was smashing though, I couldn’t believe the speed and efficiency that we descended fifteen steps and then stood packed into the boarding stairs for twenty minutes.

Nothing to say about our easyjet flight, you know how much we love them and this flight was no different. I’ve never met a member of easyjet staff who haven’t been wonderfully polite and helpful. As a bonus, I went for a wee mid flight only to stand next to the pilot – outside the loo I mean, he wasn’t letting me shake his drips off for him (this isn’t Emirates, you know). The guy looked about sixteen, I almost went over the tannoy to ask if someone had lost a child. I’ve never felt so old. He must have been a boy racer though because we landed in Paris twenty minutes ahead of schedule with a landing as smooth as the pilot’s face.

Our good spirits at successfully surviving another plane journey were soon dashed by the snaking queue at immigration. Almost four hundred people waiting to dash into France and put sticky fingers all over their shiny art and culture and what do they have? One very bored, very angry young man checking each passport individually. One person. One. A queue to enter a house fire would have moved quicker. After eighteen years we finally reached the front and the cheerless arse made a big point of looking at my passport photo, then at me, then back to my passport, then to my face again, then to a watercolour approximation that was being painted of me whilst I stood there, then back at my face. I tried to explain that since joining the queue I’d celebrated two birthdays and grown a ZZ-Top beard but that was hardly my fault, but my French failed me. Paul had a similar experience – I wanted to apologise for bringing such beauty to his world but the security guard had a gun and I like my lungs unperforated.


Now, that seems like a good enough place as any to leave it, I think. I’m prone to waffle for too long on our holiday entries so I’m trying to be a bit more concise. You’ll notice, of course, that I’ve spent 1,600 words and we’re not even through security yet. Ah well. Do you have somewhere you need to be? This black pepper steak stir fry makes enough for four, served with rice! Yum.

to make black pepper steak stir fry you will need:

  • 400g beef strips (beef chunks will do – just slice in half)
  • 2 spring onions, sliced

for the marinade

  • 1 tbsp rice wine vinegar (cider vinegar will do!)
  • 2 tsp light soy sauce

for the sauce

  • 4 tbsp light soy sauce
  • 4 tbsp rice wine vinegar
  • 2 tsp dark soy sauce
  • 1 tsp honey (1 syn)
  • 2 tsp cornflour (1 syn)
  • 2 tsp ground black pepper
  • ½ tsp salt

for the stir fry

  • 1 onion, chopped
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 2 teaspoon minced ginger
  • 4 cloves garlic, minced

Don’t like your fingers smelling like a shoe? Then mince your ginger and garlic using a fine microplane grater and live like a queen – remember you don’t need to peel your garlic or ginger when you’ve got one of these, and it’s so cheap too!

to make black pepper beef stir fry you should:

  • mix together the marinade ingredients, pour over the beef, mix and marinade in the fridge for fifteen minutes
  • meanwhile, mix together all of the ingredients for the sauce in a small bowl
  • in another bowl, mix together the onion, yellow and green peppers
  • heat a large frying pan over a medium high heat and add a few sprays of oil
  • add the beef and let it sear for 1 minute, then start to stir until both sides are browned but it’s still pink in the middle
  • reduce the heat to medium and transfer the beef to a plate – set aside
  • add a bit more oil to the pan and chuck in the onions and peppers and stir, cook for a couple of minutes
  • tip the vegetables onto a plate and set aside
  • add a bit more oil to the pan and add the ginger and garlic, give a quick stir and then add the sauce mixture and stir continuously, allow it to come to the boil and keep stirring to make sure there aren’t any lumps
  • add the beef and vegetables and give a good stir
  • serve – rice is good, noodles would work well too
  • sprinkle over the spring onions

hot and sour slimming soup – don’t be put off by the title!

Hot and sour slimming soup? But of course! However, I demand your attention for a minute more.

I mentioned previously about a family situation that was taking up our time – my uncle died yesterday after a long, brave fight with various issues. Now, I’m not mentioning that because I want people to send me messages wishing me well or that they’re thinking of me, which is sweet, but death is death, it comes to us all, and I’m dealing with it in my own way.

It’s been on the cards for a couple of years – we’ve had that many premature dashes to the hospital as ‘he won’t last an hour’ that I’ve actually been half-tempted to throw a blue light on top of the Smart Car and pick up patients on the way. Actually, the Smart Car would make for a shit ambulance, wouldn’t it? Unless it was a dwarf needing a corn plaster we’d be buggered.

No, the reason I mention it is because, like I’ve said so many times before, I wanted to praise the NHS. Every single person – with no exceptions – that I have dealt with (and I know the same goes for my mother) at Newcastle’s Royal Victoria Infirmary has been an absolute delight. Cleaners full of smiles and chatter at 2am in the morning, nurses rushed off their feet but never too busy for a smile, doctors making sure that the terminally ill shuffle off with comfort and compassion. For the last two weeks my uncle has been in the Critical Care or High Dependency Unit fighting for his life and not once has anyone shown us anything less than courtesy and good humour as we visited. Even my black-as-pitch jokes about nipping shut his oxygen tube to save the NHS’s strained budget were met with laughter, rather than cold looks and being asked to step outside by a stern consultant.

We are so, so, so lucky to have an NHS, and we’re luckier still that the folks serving the public – from the very top of the ladder to the very bottom – have their hearts open and pure dedication running through. They were tremendous when my nana died and they’ve been wonderful this time around as well. More praise is needed. And more money. Lots more money. To the folks that make the difference.

One day last week Paul and I were in that hospital on ‘dead alert’ (as it were) from 10am to 4am the next day. Let me tell you, that’s more than enough time to think about things. Hell, we spent long enough in the little room where they sit the relatives in case of ‘bad news’ that I can recreate it wholly in my head. You know when Sherlock Holmes (modern) visits his mind palace? I’m like that now, only with more leaflets about pressure sores and Alzheimers fluttering across my vision. That’s perhaps one thing they could improve – the waiting room has those awful pleather sofas that invariably make a big sucking farting noise when you hoist yourself up and everything is painted that slightly diseased yellow so favoured of the old NHS – weirdly, it’s the colour of the white ceiling immediately above Paul’s mother’s favourite chair. The ‘nicotine lacquer’ effect, I believe.

It was a very sad room made worse by the fact that we were joined, for what was the longest hour of my entire life, by a chap who just wouldn’t shut the fuck up. He entered the room just as I had laid down on the sofa to try and fall asleep on Paul’s lap (what can I say: I find the smell of chaffed thighs and knobs soporific). He exclaimed loudly and backed out the door, clearly thinking he’d interrupted me mid-blowjob. Because, yes, who doesn’t get aroused in the ‘is he dead yet’ room? Nothing gets me more rigid than posters urging me to think F-A-S-T in case of stroke. Anyway, once he was sure that we weren’t indulging in some grief-based fellatio, he took a seat. And that was very much that: no further chance of sleep.

I heard about his maladies, I heard about his travel to the hospital, I heard what was wrong with the NHS, I heard about his taxi driver friend who had just had a heart attack, I heard about the price of fuel and I can faithfully recount details of the last seventeen passengers he had picked up in his taxi. He didn’t pick up on my social cues – my polite but firm nodding, my glazed eyes, the fact that I’d stuffed my ears with pages from a 1997 copy of Take a Break from the reading rack. I did have a titter at someone’s answer to the arrow-word – (NAUTICAL TRANSPORT (9) was answered as M-O-T-E-R-B-I-K-E) – I rather thought it had to be one of my nana’s old issues where instead of thinking things through she’d just jam any old word in as long as it had roughly the right amount of letters. Even, sometimes, when it didn’t: MURDERERER was a favourite of mine. Anyway, sensing this chap was one of those dear fellows who could talk underweater if he had to, we moved downstairs.

A&E at 1am in the morning is an interesting place, isn’t it? A waiting time of four hours and I reckon 70% of the people waiting were smashed out of their face. Lots of bloodied noses, black eyes, bust lips. How I pity folk having to deal with all that dross. I can’t bear being around drunk people when I’m sober, I’d be Harold Shipman-ing the lot of them before anyone could say ‘check for an air bubble’. We spent the rest of the evening drinking piss-poor tea and staring moodily at our phones. I played Super Mario Run until my already boss-eyes went awry. A very long night.

Ah well, it’s all over now. Like I said, no need for sympathy, we’re fine, it’s very sad but nowt that can be done. Life goes on. Well, mostly.

Right, let’s get to the hot and sour slimming soup. Why slimming? Dunno. Something to do with the vinegar! Can I make a plea with you? Don’t be put off by the appearance of this dish – give it a go, it’s a really tasty, quick soup full of nutrients and taste. This makes enough for four full bowls so although technically it should be 0.75 syns, you can bugger off if you think I’m including the quarter syn. Half syn per portion!

hot and sour slimming soup

to make hot and sour slimming soup, you need:

  • 6 shittake mushrooms, sliced
  • 2 chicken stock cubes
  • 1 tbsp soy sauce
  • 60g bamboo shoots, cut into matchsticks (that’s half of a small tuna-sized tin, drained)
  • 2 pork chops, all visible fat removed
  • 100g firm tofu, cut into matchsticks
  • ¼ tsp white pepper
  • 4 tbsp white vinegar
  • 3 tbsp cornflour, mixed with 4 tbsp water (3 syns)
  • 1 egg, beaten
  • 1 spring onion, chopped

to make hot and sour slimming soup, you simply must:

  • chop the pork chops into small strips about half an inch long, and quarter of an inch thick, and set aside
  • in a large saucepan, bring 1.2 litres of water to the boil, crumble in the stock cube and stir until dissolved, and then add the soy sauce
  • add the bamboo shoots, mushrooms and pork to the pan, reduce the heat, cover and simmer for about three minutes
  • add the tofu, pepper and vinegar to the pan and bring to the boil again
  • stir in the cornflour mixture and keep stirring until the soup has thickened a bit
  • turn off the heat and pour in the beaten egg, stirring gently but continuously so it doesn’t scramble into one big manky lump
  • pour into bowls, sprinkle on some spring onions and eat!

zingy basil chicken – a perfect Slimming World fakeaway dish!

Do you ever have that moment of horror that you absolutely shouldn’t have done something the very second that you’ve just done it? I’m experiencing that now. We had Chinese takeaway for tea last night and there was some leftover egg foo yung. We like to kid ourselves that we’re being healthy by ordering what is essentially an omelette, as if that cancels out the shredded beef and duck pancakes and chicken balls that we gorge on. Anyway, I only realised there was leftover egg foo yung when I was clearing the kitchen down from last night (I know, that’s terrible, leaving a mess all day, but we were tired) and spotted we hadn’t opened one of the containers – the one that had the egg foo yung in. So I’ve been nibbling away at that this evening whilst I fart about clearing up and just as I took the final swallow, I realised that I was eating an omelette that has been sat on the side of our warm kitchen all day after its perilous journey in an overheated car last night from a takeaway who I genuinely can’t bear to check their hygiene star rating because they’re so cheap and quick. On top of that, I can’t be entirely sure that the cats won’t have had a good lick at it too.

In short, I’m fucked, aren’t I? My belly is already doing a cancan of revolt and I have waves of nausea rolling over me like a sulphuric tsunami. I don’t know who is in for a rougher night: my nipsy, Paul’s nose or our toilet. Wish me/him/the good folk at Armitage Shanks good luck.

To be fair, I didn’t have a very good start to the week either, given I spent most of it filing my tax return. Who would have thought that the Little Blog That Could would require me to declare my income? I did ask an accounting friend if I could write off gin as an expense for anaesthetising me to deal with all the nonsense but apparently not. Still, it felt good submitting my taxes like a Good Citizen and knowing that I’m keeping Theresa May in leather. Brrr. I’ll say this though: the entire process, once I’d got my unique number, my special log-in, my paper treasure map, stool sample of eight wise men and temporary membership of the Freemasons, it was all very simple and easy to follow. If any blogs out there need some advice on submitting their tax returns, I’m happy to answer questions…

We’ve solved another mystery, by the way. For a good two weeks our cat has been steadfastly refusing to use his cat-flap. We thought he was just being stubborn – he’d sit by the front door looking strained and fractious and keen to be outside but completely blanked the cat-flap. Paul, soft as shite as he is, would always hasten to the door to let him out. I, however, refused to be a bloody bellboy to my own cat. It’s bad enough that Paul made me drive thirty miles back home the other week because he had forgotten to put the cat’s water fountain on, I’ll be damned if I’m going to be a bouncer too. Anyway, no amount of cajoling or puss-pussing or gentle toeing of his rump with my boot (I’m kidding) could get him near that cat-flap and tonight, finally, we know why. I was busy reading the post in the kitchen and waiting for The Archers to come like the old-before-my-time-fart that I am when suddenly there was an explosion of hissing, clattering and yelping. I didn’t immediately react – I’m used to such noises from Paul if I eat the strawberry creams from the Quality Street tin – but then my attention was demanded by Cat 2 who, startled as she was, had leapt claws-out up my leg. It was a proper farce. Turns out Cat 1 was engaged in a fierce and swift battle with a random cat who had poked his head through the cat-flap, presumably to try and sneak food, only to be met with Bowser Balboa going at his face like Sweeney Todd. You’ve never seen a more clumsy fight than two cats fighting through a cat-flap – one face would disappear only to be followed by a unsheathed paw, then half a cat would appear again only to get smacked, all the while Cat 2 is trying to get at the bone marrow in my leg through sheer fright.

The whole debacle only lasted moments but my ears are still ringing and I have no feeling below the knee on my right leg. It came to a halt when I, in that very manly way you’d expect from me, threw a leaflet for Sky television at Cat 1 with a shriek. What do I do here? I can’t shoo the other cat away, it might be starving, but I can’t have a cat who refuses to go outside. Thoughts on a postcard, please. Also, if anyone has an industrial sized drum of Savlon and enough plasters to wrap an Egyptian king up, I’d be most grateful.

Finally, before we get to the recipe, drum-roll please (don’t worry: you can just slap your gunt against your lap, though I imagine that’ll be more of a squelch than a rat-a-tat-tat sound)…

How pretty, right? That took me four months in Illustrator. Well, no, it felt like it. I wish I was one of those stylish people who can fart about designing on a Mac for a living like those achingly hipster bellends you always see looking bored on The Apprentice whilst five suited arseholes bellow at each other about Pantone colours. But I’m not. I can write but design is beyond me. Anyway, the plan is to squeeze in twelve holidays in one year – short breaks doing different things, all in the name of funny blog stories and seeing a bit more of the world. People seem to enjoy our travels and you know what, why the hell shouldn’t we? Life’s too short. We have no vices so we need to spend our money on something. It’s worth noting that we’ve set a budget for each of the twelve trips and anything we don’t spend will be going onto the next holiday! Mind, it won’t trouble the normal running of the blog, we’re still going to be posting our nonsense and recipes as we go along – just with a bit more travel stuff before the recipes as and when we remember! Once I can be arsed, I’ll create a proper travel section of the blog where our recent trips to Cornwall, New York, Corsica, Switzerland, Peterborough, Berlin, Glasgow and Scotland will be in one handy place! Eee I know, we spoil you. We’ve set some targets and rules too:

  • find a geocache at each venue, preferably in an unusual place
  • try the regional dish of the place we’re staying
  • make a Slimming World friendly version of that dish for the blog
  • diet like hell between the holidays but eat and drink what we like when we’re away
  • buy a tacky bit of nonsense for our Room of Tat
  • buy a second tacky bit of nonsense for our Box of Tat which we’ll give away at the end
  • aim for places we haven’t done before and types of holiday that don’t automatically appeal
  • save as many Avios points as we can to pay for the flights of the 12th holiday – we will go as far as our Avios can take us (in business class, we’re too fat for long-haul cattle unless they strap us to the underbelly of the plane)

It isn’t going to all be abroad either – if you can think of somewhere unusual or lovely in the UK, or indeed, if you think of anywhere or any type of holiday that could be fun, let us know!

I do want to stress, because I know there’s going to be a lot of you picking fretfully at your pinnies and thinking we’re giving up the blog to do this – we aren’t! It’ll just give us more excuses to write! Let’s get to the recipe then, eh?

zingy basil chicken

It’s worth noting that we served ours with boring old white rice – you could flesh it out a bit by adding some speed veg or having it with noodles, but for a very quick, easy dinner, this can’t be beaten.

to make zingy basil chicken you will need

  • 4 chicken breasts, cut into chunks
  • 1 shallot, diced
  • 3 garlic cloves, minced (use a microplane grater, save your fingers and don’t bother taking the skin off – here’s a cheap one!)
  • 2 tsp soy sauce
  • 1¼ tsp sriracha
  • ½ tbsp fish sauce
  • 1 tsp cornflour (½ syn)
  • 1 tsp chilli flakes
  • handful of basil leaves, chopped

Now, it’s been a while since we mentioned it, but you may know that we have a fabulous range of deals with Musclefood, including a couple where you get twenty four (or so) big breasts as part of the deal. Don’t worry, the fish sauce doesn’t taste fishy. It doesn’t even smell like a tramp’s foot, which is what I had always assumed. It just adds a nice note to the dinner, if you’ll forgive me such a froufrou term.

Oh and I know there’s half a syn in the entire dish. But that’s an eighth of a syn per serving – it serves four. If you want to syn it, have a good hard look at your life and ask yourself if you’re living it to the full.

to make zingy basil chicken you should:

  • in a small bowl, mix together soy sauce, sriracha, fish sauce, cornflour and chilli flakes along with 1tsp water
  • heat a large pan over medium-high heat, add a couple of squirts of spray oil and cook the diced shallot and garlic for about thirty seconds
  • add the chicken and keep stirring frequently until cooked
  • when the chicken is cooked, add the sauce to the pan and cook for a further minute, making sure the chicken is well coated
  • remove from the heat and stir in the basil
  • serve

carrot, mint and ginger salad – a quick and easy Slimming World lunch

Here for the carrot, mint and ginger salad? Can’t wait to get chomping? Well, haud yer wheesht, because as ever, we have some flimflam.

You know what I hate? Facebook’s Timehop service. Those whose internet experience amounts of replying positively to Nigerian Kings and typing ‘dancing jesus website lolz’ into google may be unfamiliar with it, so let me explain, as it’s very simple. Every other day Facebook will find a photo of you from many years ago and show you it in the vain hope you’ll go AAAH HOW LOVELY and post it. Not me. No, all I see is my youthful looks staring back at me accusatorially, demanding to know what Present James has done with his life to warrant wrecking Past James so horrifically. Occasionally the brightness of the iPad is bright enough that I can see my own current face reflected back on my young previous face and I feel like Dorian looking ashen-faced into his portrait in the attic. I know we all change (“We all change, when you think about it, we’re all different people; all through our lives, and that’s okay, that’s good, you’ve gotta keep moving, so long as you remember all the people that you used to be“) we all age, but I swear I’m not ageing so much as I am melting into a hairy, gelatinous landslide of fat. It’s like the slowest Doctor Who regeneration ever – only I’m turning from James van der Beek into Chewbacca’s stunt double. Paul would be Billie Piper, he has the three-cock-gob. So yeah, Timehop can fuck right off.

I did something yesterday which I haven’t had to do for a long time – no, it wasn’t fumbling my way around a vagina and nor was it paying my driving test examiner to pass me despite the blood congealing on my frontbumper – no, I had to learn something. See, I’ve plodded on in my job for many years (and thoroughly enjoy it, mind you) (that one’s for HR) but recently they’ve very kindly agreed that I can broaden my responsibilities and have sent me for training. This means lots of revision and travelling and attending training. Fine for most people, but I struggle to concentrate – I get distracted and tired mid-piss, for goodness sake.

Nevertheless, I gamely headed to London yesterday, making sure I get in as many people’s way as possible as I farted about trying to find my way to Canary Wharf. Unusually for me, I managed to get there without much difficulty or upset, and I took my chair as the lecture began. I’d bought myself a nice new notebook and Paul’s Christmas present to me, a fancy fountain pen. I can’t write in Biro because we were forced to use ‘proper pens’ at school – you can imagine how difficult that was for me as a left-handed eejit. Every essay I wrote was a collection of smudges, stains and wrist-stamps. I had that much black ink on the side of my hand that my doctor thought I had frostbite. I’ve mastered the art now and as long as I take my time and don’t over-excite myself, I can write coherently.

The one thing I didn’t have was a wee desk. This made the whole thing quite difficult – try writing notes whilst you’re balancing a slides handout, A4 notebook and colour examples on your knee, especially when you have to write all cack-handed anyway due to being all sinistra (did you know that was the latin root of sinister, so, left-handed people are evil? Makes sense, I had no compunction about breaking wind on the escalators on the Tube yesterday). On top of that I have the anxiety of not wanting to write too much but also not missing anything, and every time I set my pen down, the lady next to me immediately started writing. It was like that duelling banjos scene from Deliverance, only with a far less troubling outcome. In the end I managed to pay attention and have six beautiful pages of notes to coo over. After the lectures, the worst part of all: networking.

I can’t network to save my life. I know it’s an acquired skill but, despite the three years of this blog, I hate talking about myself and have a bit of an inferiority complex when it comes to talking about what I do. I had it in my mind that I’d make up a bewildering, breath-taking back-story, but instead I spluttered my tea and stumbled my words. I must have looked like a simpleton. It didn’t help that whilst I was talking to the vert first victim I’d picked to talk to, I dunked my cookie into my tea only for it to fall in, meanly I had to gamely drink my tea with floating crumbs bobbing around on top whilst they chatted about what they do. Next time I’ll just pick up a cookie and go hide in the toilets like everyone else.

Ah well. I might as well be remembered as the cookie guy as opposed to the heavy-breathing-notes-taking man, I suppose. Networking finished, I realised that I had three bloody hours to kill at Kings Cross before my train, thanks to my penny-pinching ways of buying a non-transferrable ticket. I couldn’t even get into the First Class lounge as you’re only allowed in there two hours before your journey. It was rush hour, there wasn’t a single place to sit anywhere in the station, my bag was too heavy to go anywhere exciting, so I just sat outside and people watched.

I know it’s an unoriginal thought, but Christ, London is so busy. Where do all these people, scurrying about like ants on a sugar pile, live? Where do they work? I like to imagine all the threads of their lives crossing over this way and that, all in one giant tangle, and then my head starts hurting so I move my thoughts back to thinking about chips. I spent 30p to have a pee, which I still think is outrageous even now – if I have to pay to piss, then surely I should have the option of saving my money and being allowed just to piss on the tracks instead? Bastards.

After an hour or so I attempted to make my way to the First Class lounge only to be caught up in a giant mass of people all thundering for a train whose platform had just been announced. You know in old cartoons when they’d start fighting and disappear into a comedy smoke bubble with flailing limbs popping out? It was like that, only with a lot more cheap aftershave and hooraying. I was deposited out five minutes later all dazed and confused and, after a brief interlude where I was pushed around Little Waitrose by a heaving queue of focaccia buyers, stumbled into the First Class lounge.

I wish I could say there was respite to be had but no. It was busy, as you’d expect, but that meant it was full of the type of businessmen who need you to know how important they are by bellowing loudly into their phones. On top of this, I kept getting icy stares and extremely loud sighs and harrumphs from an older lady who seemed to take great offence to the fact I’d sat next to her in the only spare seat in the lounge. I didn’t let her know that I took great offence to the fact she’d seemingly put her make-up on four times over, so why was she giving me such cold looks? She soon stopped when I stared right back. I was tempted to do that thing of putting two fingers on my lips and flapping my tongue through but I didn’t want to be bundled out before I’d managed to secrete as many free bags of crisps as I could into my bag. As it happens, I decided to leave soon after I came in as it was all so very stuffy. I people watched for a while longer, made my way through the 5kg of Corkers crisps I had in my bag, and then got the train. Aside from having someone who was clearly unwell jibbering away across the aisle and the train being delayed thanks to ‘problems with the tension’ (I presumed it was sexual tension from seeing me dashing aboard in my Jacamo coat and sensible shoes), it was an entirely uneventful ride home. Job done. Until the next time…

Final thought – Paul has been raving at me about an online internet station that plays all the old nineties music we like without any crappy DJ linking the songs together. I mean, seriously, he hasn’t shut up about it, but I kept dismissing his bold claims because his Spotify playlist consists of Tracy Chapman, more Tracy Chapman and Now That’s What I Call Amyl Nitrates. However, he left the SONOS player open and I stuck on the previously played tracks – and they’re all brilliant. I mean, haway, the song that is playing right now is Ain’t No Doubt by Jimmy Nail, a man who is nothing more than a steel-capped workboot given a tongue and lips. The station is Pride Radio 90s. Yes, the rainbow face made my eyes bleed too, but we can overlook the trivialities, can’t we.

Proper final thought – can you lot calm the fuck down over these Fiber One bars? Jesus Christ man. I’ve seen so many fights and arguments with grown women calling each other worse than child-murderers for having the temerity to buy a few boxes of these in the supermarket. Why? They taste shite, they’re tiny, they’re full of chemicals and you’d get more flavour sucking on the doormat. I swear it’s very much a Slimming World thing – something gets ‘recommended’ on facebook by a couple of people and then hundreds of adults start storming the supermarkets like the boxes came with half an hour of cunnilingus by Tom Hardy. I’ve seen photos where people have bought 30 or 40 boxes and I just think, Christ, have some bloody dignity. It’s not about ‘saving some for other people’, you have as much right to buy them as anyone else, but you’re only buying them because you’ve seen others doing the same. Don’t be a bloody sheep, especially not one who is brawling in ASDA and calling others ‘fukin greedee slags’ all for the sake of a shit bloody brownie.

BAH!

Right, with all that out of the way, let’s get this recipe done, eh? You might be thinking that a carrot salad is boring, but if you’re a fan of carrots, I can guarantee it’s worth a go. I made this for a lunch but you could easily use it as a side on one of our dishes that don’t have the third speed in it. You could add cooked noodles into this to bulk it out, if you wished. You know how Slimming World have launched those little salads in Iceland that you can have for your lunch? Think of this like those, only fresher as you’re making them yourself. Yes, it has a couple of syns, but absolutely worth it. We used two packs of Marks and Spencers rainbow carrots (£3 for two packs) but you can use bog standard carrots if you want. We won’t tell. This makes enough for three hearty portions.

carrot, mint and ginger salad

to make carrot, mint and ginger salad, you’ll need:

  • around 400g of carrots, baby ones are better, peeled
  • two shallots
  • fresh mint (or dried, but fresh always better)
  • a little knob of ginger (about half an inch), peeled and grated
  • tablespoon of mustard seeds
  • juice of half a lime
  • tablespoon of olive oil (6 syns) (you could use lemon flavoured oil here, be lovely)
  • good pinch of salt and black pepper

to make carrot, mint and ginger salad, you should:

  • chop your carrots into strips or, even better and far quicker, julienne them using one of these – much easier and you’ll get nice uniform strips
  • thinly slice the shallots
  • it’s much nicer if you toast off your mustard seeds – chuck them in a dry pan on a medium heat for a minute or two, just until you get the scent of them, and then take off the heat
  • grate your ginger nice and fine (yep, I know, predictable, but please, buy a mincer for your ginger, then just freeze a big lump of ginger and grate it as and when you need it straight from frozen!
  • mix everything together in a bowl and top with fresh mint and give everything a good tumble with your fingers

This can go a bit watery if left after a while, that’s fine – just dress it when you want to eat it. You could add sliced peppers and noodles, remember. This would work very well as an accompaniment to curries!

marinated duck salad and james’ new year’s resolutions

Marinated duck salad, if you don’t mind! I know, in these times of tight purse-strings and even tighter gusset-elastic, duck may seem like an extravagant choice. And it is. If you want to swap it out for chicken, I’ll never tell. If you want to swap it out for that chicken they sell in Iceland that looks like those polystyrene packing noodles that your parcels from Amazon get shipped in, you go right ahead. What price dignity? Anyway, we’re only having duck because our friend thoughtfully gave us a load of freshly killed meat from when he’s been out hunting. Listen, I’m not a hunter myself, but I don’t want to upset anyone who turns up on my doorstep covered in blood shouting about THE BOOORDS. He asked if I liked duck – I replied that actually, I prefer a cockatoo – and I bet he’s still chuckling now at my lightning wit and horrendously dated jokes. Either that or he’s shot himself in the face.

Now I touched yesterday on New Year’s Resolutions, didn’t I? Here’s an odd thing – I could have sworn I typed up our resolutions last year and I was going to update you on how they went, but look, if it is easier, I’ll just print out our Jacamo order history – another X has managed to sneak onto our clothes labels. Our order forms look like a Spot the Ball competition in a busy bookies. Pretty soon we’ll need to buy two 2XL shirts and just stitch them together round the back. Still, we haven’t taken up smoking or hard drugs, so at least we’ve got that going for us, eh? Without a moment more of hesitation, here’s my resolutions:

To be more sociable

This is such a hard one for me. I’m not agorophobic or enochlophobic (I’m trypophobic and hydrostructuraphobic at best) but see I just hate everyone. Perhaps that’s a smidge too far. Hate is a strong word. Dislike, maybe. Yes, everyone starts out being disliked by me but once they reveal themselves as warm, lovely humans, I’m alright with them. As a result, I struggle with being social. I like staying at home with Paul, sitting in my comfiest underwear, cock and balls sticking to the leather on the settee, eating crisps and watching TV. I’m happy in my own company. Whenever I do force myself out I always have a great time but it’s just getting there. My saying no is as much of a reflex action as my knee kicking out when tapped with a hammer or me ignoring the pains in my left arm as I shovel more food into my gob. But yes: will try harder.

Who knows? Maybe a twochubbycubs meet-up could be on the cards?!

It isn’t, by the way. You’d all be so disappointed. You’d spend all night wondering who had let two cows into the pub only to realise it was us, waspishly drinking our ale and looking furious. We were once stopped in ASDA (the glamour!) by someone asking if we were the chubby cubs (probably assumed we were by the giant marrow and bottle of Astroglide in our shopping basket) to which we stuttered, went red and just said ‘yes but we’re just here for some hummus’ – eee, they’ll be talking about that for years to come I’m sure.

To be less fat

Goes without saying, doesn’t it? I’m tired of all my clothes only-just fitting. I’m tired of the cats looking at me with ‘don’t you think you’ve had enough’ eyes every time we crack open a new tub of Ben and Jerry’s. They’re a fine pair to judge my eating habits, given they both spend a good half-hour licking away at their bumholes of a morning. I don’t know what’s in Whiskas Bite and Chew but they should make a bloody lip-gloss out of it. I know we’ve said so many times before that we need to lose weight but hell, we both feel so old and immobile – and we’re only in our early thirties for goodness sake. I’m not kidding when I say Paul has taken to having a nap before he goes to bed.

How to do it? I do think if we stuck at Slimming World 100% we’d get there, because the diet works. But see, I have strong reservations (which I’ve often voiced) about stuff like avocados being synned, and as a result, I’m going to have to tweak my own take on the diet to get by. Don’t worry though: our recipes will still be 100% Slimming World friendly, nothing is changing on that side. The main thing for us is to get moving: there are days when I get up, drive to work, sit at my desk, drive home and sit on the settee and don’t move a bloody muscle. That’s not good! I can’t pretend we’re going to end up at the gym every night or lifting weights (unless 1kg of chocolate counts) but I’m at least going to try and get my step count into four-figures.

To take up a bad habit

You know that bit in Grease when Rizzo does that impression of Sandy, saying how she doesn’t drink, or swear, or rat her hair, and that she gets ill from one cigarette (cough cough cough)? God, that’s me at the moment. Don’t get me wrong, I’m not going to undergo a transformation like Sandy does at the end – not least because if I clad my body in skin-tight leather I’d look like part of the DFS sale – but I need a bad habit. I don’t class drinking as a bad habit, more a necessary evil. Drugs fuck with my dicky-ticker and I gave up smoking (for the most part) many years ago thanks to Allen Carr and the shocking site of a year’s worth of cigarette ends billowing up from the drains outside. Oops. Paul bought me membership to a cigar lounge in Newcastle so perhaps that can be it – I think I’ve tipped into the age-appropriate level to carry off the look.

Now, in the interests of keeping the blog entries slightly more manageable and a bit shorter for folks, we’ll cut it there – we can talk about Paul’s resolutions tomorrow, once he has had them cleared and approved by me. HA. Let’s get to the marinated duck salad!

marinated duck salad

to make marinated duck salad you will need:

  • 1 tsp cider vinegar
  • 1 tsp honey (1 syn)
  • 1 tsp soy sauce
  • 2 duck breasts (skin removed)
  • 400g noodles (we used somen but any will do)
  • 5 spring onions, sliced lengthways
  • 1 cucumber, deseeded and julienned
  • 2 carrots, peeled julienned
  • 3 tbsp hoisin sauce (3 syns)
  • pinch of sesame seeds (optional – 25g is 8 syns, but we used such a tiny amount we counted it as only 1 syn) (what are we like?)

Can’t be arsed clitting about julienning the carrots and cucumber? Do you think life is too short to be standing over a carrot making it into tiny matchsticks with a knife? With YOUR reputation? Please. Get yourself a £5 julienne peeler and be done with it. It makes your food look pretty!

to make marinated duck salad you should:

  • in a small saucepan, mix together the cider vinegar, honey and soy sauce and add 100ml of cold water
  • bring to the boil, stirring continuously, and then remove from the heat
  • allow the marinade to cool
  • meanwhile, slice the duck breasts diagonally and pour over the marinade, and leave for at least an hour (but overnight is best)
  • prepare the cucumber, carrots and spring onions and set aside in a large bowl
  • cook the noodles according to the instructions, refresh under cold water and set aside
  • heat a little oil over a high heat in a large frying pan, take the duck out of marinade (use a slotted spoon) and pour away the marinade that’s left over
  • cook the duck for about five minutes in the pan, stirring frequently
  • mix together the noodles and vegetables along with the hoisin sauce and serve, topping with the duck slices
  • sprinkle over a few sesame seeds (if using them) and enjoy!

the best chicken stir-fry and noodles that we’ve ever done

Before we begin, I warn you that this is going to be a long entry. But I say that to all the boys. The recipe for our best ever chicken stir-fry and noodles is right at the bottom but, you know, do have a read, it’s worth it.

Firstly: a huge, colossal, massive thank you to everyone who has sent us cards, gifts, notes (we do read each one, Norah!), kind words, homemade cards, pure filth and even cat treats and butter. We expected a few cards and were grateful to receive them – but we’ve come back from a week away to over 150 new cards, each one with a thank you and a charming story about how we’ve made you laugh or helped you with your weight loss. Neither of us anticipated such a response and I genuinely can’t thank you all enough – you truly have made us happy. It seems insufficient and galling not to thank you personally and it is only the volume that is stopping us doing that, but please, if you have sent us a card, know that we have read it, loved it, laughed at it and are immensely pleased by it. Even our cats got several mentions and treats – they’d thank you but you know how cats are, they’d still hate you even if you put them out whilst they were on fire.

Yikes, that all got a bit saccharine didn’t it? I expect I’ll get told by some frothing-at-the-mouth shirtfiller that I need to syn my own opening paragraph now. But yes: thank you! Oh my. We told you a lie. Well, not really a lie, more an omission – see, we’ve been away on holiday, but we didn’t want to announce it on here before we go because I’ve read enough tragic stories in Take a Break in which Wotsit-coloured thugs come back from glassing people in Benidorm only to find their house broken into. How did the burglars know they were away? Because the vacationers been posting ‘~*~*~ OMGUD 1799 DAIS UNTIL HOLIBOBS U FUKIN JELUS COW ~*~*~’ on Faceache since the moment their gunt crossed the threshold at Thomas Cook. I didn’t fancy returning home to an upturned Christmas tree (I’d just jab myself in the cock putting it right) and a freshly cleaved dump on my living room rug (we have enough of those concertinaing from our angry cat’s bumhole, thank you), so we didn’t mention it.

So where have we been? Switzerland! I had a nice fancy banner all designed ready to go but then I forgot to save it amidst all the excitement of packing, so you’ll need to make do with this shit joke instead:

Why Switzerland though? If I’m honest, I have no idea. A few weeks ago Paul and I decided to have a cheap holiday away at Christmas after Iceland and Germany previously. We did a cursory glance on skyscanner and found that easyJet not only fly there but do so from our local airport AND relatively inexpensively. We booked there and then thinking it would be a cheap holiday only to realise that it’s actually the most expensive place to visit in not just Europe but the whole fucking world. That’s not typical Geordie hyperbole (pronounced: HY-PURR-BURR-LEE in my native tongue) but an actual fact: see? Worth noting that the second most expensive country in the world to visit is the United Kingdom, but see that’s because it costs £87,455 to park the car at Lands End for two hours. Near the top of that list is Iceland (been), Denmark (booked) and Norway (also booked).

I’m going to have to put Paul on the game at this rate. If any of you ladies fancies paying him £10 to get him to ring the Devil’s Doorbell for five minutes or so, let me know. He’ll be brilliant at it, he’s got a slight tremor now from eating too much Swiss chocolate.

Our research into Switzerland, once Paul had brought me round with a sniff of poppers and a jumpstart of my heart, was scant indeed. We decided to take a full week, taking a couple of days in Geneva then taking a scenic train over to Bern. Our hotels were markedly different in what they offered but I’ll get to that. Even after a bit of reading, we knew very little about Switzerland save for two interesting, related facts. In the event of war being declared all the residents of Switzerland can easily fit into the various fallout shelters dotted around the country – in their mountains, under their barns. I could almost hear the sound of twenty thousand metre-thick steel doors being slammed shut forever as Paul and I lumbered our fat arses up the steps of our Geneva-bound easyJet plane. Even their underground car-parks, so clean and pristine and icily efficient, can be sealed off at a moment’s notice to provide shelter for the quivering populace.

Second – perhaps a shade more sinister – if that aforementioned war was ever declared then the bridges, tunnels, railway lines and main motorways into the country can be destroyed by way of explosives that are already wired into the infrastructure, sealing the country off from possible invaders (or at least making it far more difficult). I find that terrifying – I can barely be relied upon to operate a hole-punch without a trip to A&E and a full page in the accident book – imagine having the button to blow up a motorway bridge just sitting on your desk. It would be less than two weeks before I’d knocked over my cup of tea with a stray moob and short-circuited the detonation board for the eastern railways. Brr.

The day before we were due to fly I suddenly remembered that we needed to sort out health insurance. You can imagine how complex that is given my health anxiety – I have to declare everything I’ve ever fretted about with the doctor. There’s a team of crack actuaries working at American Express insurance working full-time on calculating my risk. I let Paul take care of that – and remember that for later. I also, with the hilarious optimism of the unprepared, exchanged £200 into Swiss francs at our local Bureau de Change, served cheerily as I was by a handsome grandad who all but reached over the counter and gave me a reacharound whilst he deposited Switzerland’s exceptionally colourful money into my hands. I have this animal magnetism – it scares me sometimes. We dug out our passports (still in our suitcases from last time, what-are-we-like) and set about packing our new tiny cabin-friendly luggage.

Here’s what normally happens on our holiday: we pack six pairs of jeans and wear one. Eight shirts and only two get worn (though we wash them). We take enough underwear to cover ourselves four times over and more shoes than is entirely decent. No more! In our drive to save money we weren’t going to take luggage that needed to be put in the hold and therefore it was tiny suitcases from Amazon for us. Well, readers, we managed it – I’m not sure if it has been our many, many years of being committed gayboys but we’ve got skills when it comes to cramming lots into a very small space. You get to a point where you think you can’t get any more in, but then if you get a stocky bloke to come and sit on it, you can always get a bit more in. Try it, you might like it.

Normally at this point in our holiday stories we’d have a couple of paragraphs about the two of us driving up to Edinburgh or taking the train to Heathrow and staying in some awful airport hotel but no! This time I can say this: we popped out of bed at 4.45am, had a shower, a dump and a shave, then made our way smartly to Paul’s demi-car for a quick drive to the airport. This is true, save for the fact that I made him turn the car around so we could unplug the Christmas tree lights (on a timer) and then again because I’d forgotten to set the alarm the second time around. Oops. Listen, I know my Christmas tree is just waiting to burst into flames, I don’t want to give it any encouragement.

We paid for a week’s worth of parking at Newcastle Airport and the cost of putting Paul’s car on a scabby bit of tarmac to be scratched, shat on and probably driven around by someone more acne than man was actually more than the cost of safely flying one of us 1,800 miles to Geneva and back in a metal cylinder full of fuel. There’s something wrong with that, isn’t there, especially as you could actually park Paul’s car in the glove box of a normal car. Surely we ought to get half-rates at least. Nevermind.

We didn’t need to check in as being the techno-savvy couple that we are we’d already done so and had mobile boarding passes, meaning our phones were a lurid easyJet orange for a good couple of hours. With no bags to drop off we minced over and through security into the departures lounge. It’s worth noting that the lass who was watching the x-rays of our bags had the haunted look of someone who had absolutely given up on her job. I got the impression I could have smuggled seventy thousand Regal King Size (known in our family as ‘Mother’s December’) and a pair of nail clippers through and she wouldn’t have batted an eye.

Paul did get stopped, actually – I only noticed when I turned around to ask him if he’d ever seen so many bottles of Cheryl Cole’s perfume in one place only to find he wasn’t there and was in fact getting patted down. Apparently his bag sets off the ‘explosive’ check. Knowing Paul he’s probably stitched a load of those bang-strips from cheap Christmas crackers into his rucksack just in the hope of getting roughly touched up by someone with a beard and a hangover. The slut.

Newcastle Airport is awful. There, I’ve said it. The staff are lovely – each and all – but the actual airport is a shitpit. You know how Heathrow has Gucci, Harrods and a champagne bar? Newcastle Airport has a branch of JD fucking Sports. Why? Who feels the need to dress like they’re stumbling out of a magistrates court just before they get on a flight? There’s also a Greggs in the departures lounge just in case you don’t feel like your holiday is complete without grease on your fingers and pastry crumbs billowing out from under your chins. It’s awful. You’re shepherded through the giant duty free shop with no chance of escape or quiet solitude and everywhere was full of tomato-faced bawling children getting ready to be flown to Lapland, sadly on return flights. Well, it is Christmas, I suppose.

We schlepped into the only bar that looked faintly promising and ordered a strong coffee. We were given a cup of what looked like watered down dishwater and pointed to a jug of milk that was gently heating on the end of the bar. For this we were charged almost £8. I checked fitfully out of the window to see whether we’d already landed in Switzerland at this point and thus the rip-off prices made sense but no, I could see the luminescent giant ‘M’ of Newcastle’s Metro station and realised that it was just another example of shitty-price Britain. No wonder we’re number two! Along those lines we had to pay £1 to get a sandwich bag to put our toiletries in prior to security. I know we fly enough to know better but a bloody quid! I buy a roll of the fuckers from Costco for £2. They must be bloody raking it in.

After enjoying our coffee (enjoying pouring it away, that is) and having a quick crap because well, you’ve got to do something to fill the time, we were called to our gate. It was full, of course, and when the young lass at the front announced boarding was starting, everyone rushed forward as if they thought the plane was going to fuck off without them. Why? Every single flight: why? The captain’s not going to have a fit of the vapours and decide to power up and away early just for shits and giggles. This isn’t a Black Friday sale, you’ve got a seat, calm the fuck down. We let everyone else puff and bluster their way to the front and then boarded behind them, casual in the knowledge that we had no-one sitting next to us and indeed, the plane was only half-full.

The captain came on after we’d all settled and informed us that, due to freezing fog in Geneva, we’d be delayed in taking off in Newcastle. I did think that was some fog indeed but I suppose we couldn’t circle Geneva indefinitely like we’re in The Langoliers. Paul immediately fell asleep leaving me to entertain myself by picking at his ears and looking mournfully out of the window like Sandra Bullock in Gravity. The captain then came back on the tannoy to let us know we would be free to move around and sit in the empty seats if we so desired but we weren’t to do it until we were in the air lest it upset the take-off balance. I noticed that the stewardess gave me a somewhat pointed look at this point, as if the sheer act of me leaning forward to open my bottle of water would send us helplessly into a nosedive. Mean. Paul snored on.

Eventually, after much polite tutting and shared looks of well-I-never we set off, thundering down the runway at a rate of knots. As you know, I’m fine with flying save for that thirty seconds or so when you lift off. I like it, don’t get me wrong, but I also like a margin of error, and if anything was to go wrong with the plane I’d like it to happen so the pilot has enough time to zip himself back up and wrest control back from the autopilot. I distracted myself by seeing if I could spot our house – probably ablaze like a bonfire thanks to the B&M Christmas lights, but couldn’t. We were soon into the clouds and Geneva-bound, and Paul slept on.

The flight itself was wonderfully uneventful. I watched a bit of Rick Stein, drank my water and looked out of the window. As you may expect at this point, Paul dozed all the way, only opening his eyes when he heard me trying desperately to eat a Crunchie without him waking up and thus having to share. They weren’t kidding about the fog mind – we went around and around in the holding pattern. I waited as long as I could but then I had to dash to the toilet for a quick wee – only no sooner as I had started my flow that I found myself canted at a severe angle, causing me to piddle on the floor and then have to scrabble around with the tissues trying to soak it all up. Where does all this piss on the toilet floor come from? Do the cleaners slosh some on the floor before take-off? Goodness me. I emerged from that toilet flustered and damp, so invariably everyone on the plane probably thought I was joining the Mile High Club: Solo Aviator Division. Brilliant.

Finally the plane descended through the clouds. The fog never seemed to stop and I kid you not, it was about two seconds from the moment we emerged from the fog to when we were on the ground. Flying never ceases to amaze me. Don’t get me wrong, I’m never going to be idiotic enough to clap hysterically when we land, but I always genuinely thank the pilot and humbly apologise to the stewardess for making such a frightful mess of my seat-pocket as I disembark.

That seems like a good place to leave it for now, given that, as per usual, I’ve managed to get to almost 3000 words and we’ve only just stepped off the plane. Sorry, folks.

I do just want to say one more thing, actually. As I’m typing this the news is coming in that there’s been another terrorist attack, this time in a Christmas market in Berlin. People are dead, it’s fucking terrible. But you mustn’t let fear stop you from holidaying and visiting these wonderful places. I’ve never felt at risk anywhere and the way I look at it, if someone wants to be a c*nt and stop my clock to prove a shitty, misguided and utterly wrong point, at least I’d be going out somewhere beautiful without any regrets. Berlin is a beautiful, electric city and so worth a visit. so is Paris. So is Nice. So is Zurich. So is Brussels. That last one isn’t strictly true, I almost actually died in Brussels from terminal boredom, but you get my drift. Don’t let terrorism win. Just tell it to fuck right off and live your life.

Let’s get to the best chicken stir-fry and noodles that we’ve ever done, then, shall we? It’s sort of Rick Stein’s recipe only he uses pork belly. Naturally, we can’t do that without some SW official kicking down our door and torching our computer desk, so we’re using chicken. We got the idea from Hello Fresh and adapted it slightly for SW. Because why not? This makes enough for two.

to make the best chicken stir-fry we’ve ever done, you’re going to need:

As usual with our stuff, feel free to swap stuff out, mix up ingredients, add your own twist. We won’t tell. For your garlic and ginger, get them minced using one of these fancy things. You know we recommend them all the time but that’s because they bloody well work.

to make the best chicken stir-fry we’ve ever done, you should:

  • get a pan of hot water bubbling away
  • chop your chicken breast up into thumb sized chunks and put them into a bowl with the chinese five spice, rubbing it into the meat as best as you can, then put to one side
  • slice your red pepper and red onion and then chop the spring onion nice and fine
  • mince your garlic and ginger
  • drop the egg noodles into the water and cook for as long as they recommend – once that’s done though, drain away the water and run them under cold water so they stop cooking
  • whilst they’re cooking away you can get your wok or large frying pan ready with a few spritzes of decent olive oil or, god forbid, bleurgh, frylight – but why do that to yourself?
  • cook off the chicken strips until nice and well, cooked, then remove them and throw the pepper and onion into the pan and let them cook for a few minutes until softened
  • add the chicken back in, together with the ginger and garlic, and cook for a minute or two – then add the noodles, soy sauce and hoisin sauce and cook everything through until it’s lovely and hot
  • serve on a plate with chopped coriander and spring onions on the top.

kung pao chicken meatballs with dressed spaghetti

Hello! Here for the kung pao chicken meatballs? Well you’re in luck – there’s no time for a long ramble today as lots to do but you know, I think you deserve a treat. So we have the kung pao chicken meatballs recipe coming up in a moment but first, look at our tree!

Isn’t that a beauty? But let me tell you: blood was almost shed. Let me paint you a picture. There’s me, in the bath, luxuriating / basking in a sea of Molton Brown bubbles and The Archers omnibus playing in the background. Paul was in the living room fussing about the tree like a make-up artist at a wedding. I could hear the occasional shout and strop but hey, the bath was lovely. After an hour or so a plaintive cry came from the living room for me to come and help – his tiny Nick-Nack legs didn’t quite afford him the height needed to pop our furry star on top of the tree. Fair enough – the tree is 7ft and Paul drives a Smart-car.

I clamber out, the bubbles caressing my every curve. It was exactly like the bit in Casino Royale when Daniel Craig emerges from the sea in his little blue knickers, only with far more heart disease and loud straining. I mince into the living room and exclaim at how pretty the tree is before immediately fretting as to whether our Dyson Digital can cope with the quarter-tonne of pine needles that already litter the floor. Completely nude, I lean into the tree to make the final adjustment, to adorn it with the shiny star of Christmas, and how was I rewarded?

With a fucking pine needle right down my hog’s eye. My beef bullet was speared by the cold fingers of Christmas present. I know that a lot of you ladies out there will have been through child birth but honestly, that would have been like ripping off a wet plaster compared to this. I don’t like to exaggerate but it was literally the worst pain in the world. There’s places that nothing should ever venture and a gentleman’s scrotum-totem is one of these. I since looked it up on the internet only to find it’s an actual fetish, with people putting all sorts of things down there. Internet: what is wrong with you?

Anyway, you’ll be relieved to know that he’s fine and still in working order. Phew, right? Let’s get straight to the meatballs, apropos of nothing. This makes enough for four and yeah, it looks like a bit of a ballache to make, but it’s worth it – something different to that boring old SW meatballs in the freezer! Plus you could make the balls and freeze for later.

kung pao chicken meatballs

to make kung pao chicken meatballs you will need:

for the spaghetti

  • 500g spaghetti (or noodles!)
  • 4 cloves of garlic, minced
  • 3 spring onions, sliced
  • 160ml soy sauce
  • 150ml chicken stock
  • 75ml shoaxing rice wine (4 syns)
  • 2 tbsp red chilli paste
  • 2 tbsp rice vinegar
  • 2 tbsp cornflour (2 syns)
  • 1 tbsp sesame oil (6 syns)

for the meatballs

  • 500g minced chicken (or turkey)
  • 1 onion, finely diced
  • 1 egg
  • 35g porridge oats (1x HeB)
  • 1 tbsp sriracha sauce (1/2 syn)
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 garlic cloves, minced

You know when we say mince ginger or garlic? Use a microplane grater. It’ll stop your fingers smelling, as long as you stop picking your bum. But seriously, don’t fart about peeling ginger or garlic, just grate it as it is – it’ll be perfect. Click here for our recommended mincer! 

for the sauce

  • 4 tbsp soy sauce
  • 1 tbsp sriracha (1/2 syn)
  • 1 tbsp red chilli paste
  • 1 tbsp honey (3 syns)

to make kung pao chicken meatballs you should:

bit of a fuck on this, but I promise it’s worth it.

  • firstly, preheat the oven to 200 degrees
  • then, make the meatballs – spray a non-stick baking sheet with a little oil
  • mix together all of the meatball ingredients, roll into about twenty meatballs, plop onto the baking sheet and cook for twenty five minutes, and whilst that’s going on, do the other bits
  • next, bring a large pan of water to the boil and cook the spaghetti (or noodles) according to the instructions – try and time this so that the spaghetti will be finished at the same time as the meatballs
  • meanwhile, in a bowl whisk together all the other ingredients for the spaghetti, except for the garlic, and keep to one side
  • add a little oil to a large frying pan and heat over a medium-high heat
  • add the minced garlic and cook for about thirty seconds
  • pour in the reserved sauce, bring to the boil and then reduce to a simmer for a few minutes, until slightly thickened
  • add the cooked and drained spaghetti (or noodles), toss well until nicely coated with the sauce
  • in another bowl, whisk together the sauce ingredients
  • when the meatballs are cooked, toss them gently in the sauce
  • serve the spaghetti onto plates, and top with the meatballs
  • sprinkle over the spring onions
  • we added a few chopped peanuts as well for a bit of crunch (if you’re doing the same, remember to syn them)

Serve! The oats really bulk the balls out. Mahaha!
