Gosh, I love a Saturday – the traffic to the blog spikes like crazy and we always get a swell of new people joining. Hello one and all, don’t forget to tell your friends. That was the deal. Don’t make me Princess Di you, I’ve got access to a Fiat Uno. You’ll find a link to all the recipes at the top of the page, together with an FAQ for new members of Slimming World and some other flim-flam.  Tonight’s recipe is for slimming world smash scones, and tomorrow’s Slimming World Classic is salt and pepper chicken, but we’ve jazzed it up just a smidge. The recipe that we found out was ‘fry chicken, add salt, add pepper’ which isn’t a recipe at all. Their other recipes included ‘elegant tannin slurp’ (boil kettle, add milk, add tea-bag). Knobbers. Maybe I made that bit up, you’re not the boss here.

Anyway, back to Ireland, where you may remember we were spending an awful amount of time driving around and being snotty about craft shops? Well rest assured that this continued unabated. But first, an observation. See, Paul and I have the type of marriage where we can openly discuss other good-looking men without one of us throwing a paddy and waving a pair of blunt scissors at the other’s cock, and as a result we were looking forward to seeing plenty of rough-hewn Irish farmer types with bushy beards and big soft eyes strutting around. Well, pfft. For a start, everyone was about 2ft tall. Seriously, they’d have blinded themselves if they’d pulled their socks up. Plus, weedy – apparently despite only having shops that sell Daniel O’Donnell tat and Guinness fiddle-faddle the men have found somewhere that sells those bloody awful Abercrombie and Fitch hoodies and tiny pin-leg jeans. THAT’S NOT MANLY. I even saw a man-bun (and you may remember how I feel about that) on someone serving diesel in the last petrol station before civilisation ended. I bet if we go back in a year there will be burgers in brioche buns and someone drinking out of a watering can. Pissheads. Scotland has the best blokes – then England, then Wales, then Ireland.

That’s what we got. GOD-DAMN IT IRELAND.

We visited a chocolate factory. I say visited, Paul barely had time to register the words coming up on the turn-off sign before I had swerved the car across the road and into the car-park. I swear I was inside at the tasting station before he’d even unsuckered the sat-nav from the windscreen. MIND. It was a bit of a stretch to call it a chocolate factory, given it seemed to consist of a few lovely Irish ladies melting chocolate nips and scattering orange peel into it. That said, we still stocked up, ostensibly on gifts for our co-workers, but I’m not exaggerating when I tell you that we had one of the giant chocolate slabs open before we’d even pulled out of the car park. We rationalised it by thinking that, as we’d seemingly shored up Ireland’s deficit by buying so much chocolate, the decent thing to do would be to enjoy it. Plus, they’d been a bit stingy with the ‘free tasting’ considering the amount of money we’d spent – I can remember even now seeing Paul’s watery eyes and downturned mouth when she went to put away the tray of free chocolate.

We also visited the “Most Beautiful Cliffs in Kerry” – which I personally think lived right up to the name. It’s a strong, bold claim and we almost didn’t get to see it. Not because of bad weather, or the access being closed…no, because we were so full of chocolate that we drove straight past when we saw ‘only a five minute walk from the car-park’ on the side.  Isn’t that mortifyingly lazy? But I’ve been each and every person reading this has done something similar. I mean, it was just so warm in the car, and a cliff is a bloody cliff…right? We drove on for another ten minutes before we had to turn back around and go see the bloody cliffs, so ashamed were we by our own bloody laziness. Actually – glad we did, because look…

Isn’t that amazing? Despite the two minute walk being more like a ten minute gentle stroll up a gradient that a marble would struggle picking up speed rolling down, it was more than worth it, even if Paul did struggle with the defibrillator at the end. My sense of injustice was piqued by the gypsy (genuinely, I’m not just being racist) who charged me €4 to park the car and gave us a ticket to view the cliffs, but I didn’t fancy arguing with someone who had colour-ordinated his brown change purse with his nicotine-lacquered teeth.

We visited an immeasurable number of beaches, and by god I’ll never forget them, not least because I’m still pouring out a good half of them onto my living room carpet at the end of the day. One afforded us the chance, thanks to a stern warning that we simply mustn’t go on the rocks (which we immediately did), to reinact that bit where old Jelly Belly Harold Bishop fell into the sea and Madge was left shouting HAAAAARULD at the crashing waves after she found his glasses in a rockpool. Remember that? Twochubbycubs do.

Seriously, every day with us is full of nonsense like this. If we’re not re-enacting famous soap deaths – I’ve done Jim Robinson before, complete with quacks and a rolling orange, we’re yelling Titanic quotes at each other. Plus, we left behind some free advertising.

Subtle, right? Here, one final thing. The cottage had an amazing cottage but clearly attracted the sort of people who were braggarts and fancydans when it came to their wine, to the point where each person staying had placed an empty bottle of their best wine on top of the kitchen cupboards (quite a task, given how high up they were – I had to really stretch and I’m tall enough to be continued). And oh lord, people had signed them too – and the names read like a Vegan’s Anonymous meeting, all Cressy and Johnathanial and suchlike. So, in the sense of causing mischief, we added our own. Can you spot it?

Haha, I’ve never drank blue WKD in my life, I don’t think. It’s like wearing Lynx, once you’ve actually had sex, it should be beneath you. Anyway. I tell you what’s below me? My feet. My feet which aren’t cheesy. But I tell you what IS cheesy? These Smash scones! Yeah alright, that was a shit link, so sue me, it’s late. LOOK AT THEM.

Before I get started, let me just put this in here.

TWEAK

Yes, this is definitely a tweak. If you don’t tweak, just skip on. If you’re comfortable tweaking, crack on! These are delicious and perfect to make as a snack. Not sure what tweaking is? My previous rant explains it…click here for that (lots of people seem to really enjoy that article…!)

to make cheesy smash scones, you’ll need:

100g of plain Smash, 2 eggs, 300g of low-fat cottage cheese (make sure you get the syn free cottage cheese, I use the Tesco low fat version), 30g of hard extra strong cheese, chopped chives (we have them growing in the garden – for goodness sake, get yourself a pot, bit of compost and one of the growing pots from Tesco for a quid, they almost grow themselves), paprika for the top, garlic salt.

to make cheesy smash scones, you should:

nothing to this one – you blend the egg and cottage cheese together with a hand-blender, add the Smash, cheese, chives and garlic and shape into a dough. It should feel dry and not very sticky, you can always work a bit more Smash in. You don’t actually need to blend the egg and cottage cheese first, but I like it smooth. Shape it into whatever shape you want, drop them into a frylighted oven tray, sprinkle with paprika and cook for 25 minutes on 190 degrees (check on them after 15 minutes).

Done!

syn free cheesy garlic bread

I can’t begin to describe the absolute cuntnugget that I happened across yesterday. I was queued up in Subway awaiting my usual lunchtime trough of food (plain chicken, all the salad bar onion, double gherkin, double pickle, honey and mustard, no drink, cheers yes, haha) when in walks some twat wearing a top-hat. In Newcastle, in Subway, with a waxed pointy moustache to boot. It gets worse – when he got to the counter, he actually came out with ‘So how on Earth does this work, then’. I was filled with irrational hatred. All I could think about was dashing back to the counter, pushing his face through the glass sneeze-guard and holding his head down in the pickles container until he stopped struggling for life and the police arrived to take me away. He was singularly the most achingly try-hard hipster twat that I’ve ever had the absolute displeasure to orbit.

It is, without doubt, the worst ‘subculture’ that exists right now. Zip backwards fifteen years ago and it was easy (at our school at least) – you had normal kids, then on either side of those you had chavs or Goths. And mind, these Goths were the starter Goths – none of this professional goth/emo whatever you see around town. They all had knock-off coats like Neo from the Matrix and a Livejournal account for photos of their self-harming. I had long, black hair for a good portion of my later school years but I was never a goth, not least because I was too fat – there’s nowt worse than a tiny muffin-top popping out over a pair of New-Rock boots. One of my exes told me he was a goth before we met up but that only extended to have long hair – I’m not sure how gothic giving someone Enya’s A Box Of Dreams on a first date is.

Chavs on the other hand are less tolerable but I just put most of that down to being thick. It was the time of coke-can fringes and Kappa tracksuit and for the most part, given it was a fairly posh school I went to, we’d only really see them out and about in the wild, their tracksuits rustling in the breeze. As I get older I find myself growing more contemptuous of a subculture that seems to revel in stupidity and an ability not to throw a trampoline on any square of dog-shit littered grass bigger than a postage stamp, but that’s by the by – it’s hipster that draws my true ire.

It’s just so loathsome, so affected, so nonsensical. Every year – including going backwards and forward through time, no doubt – it’s the same. Newcastle becomes awash with students all trying to outdo each other on the poncy twat stage. Instead of the booming Geordie dialect ricocheting around the streets of the city centre, you’ll hear trust-fund rah-rah knobheads, whose idea of living dangerously is a quinoa salad on a terrace in Jesmond, stumbling around in their lollipop trousers and 1920s make-up. We have bars opening up all over the town catering to such predilections, all copying the ‘trends’ that London washed its hands off three years earlier – a drink served in a jam-jar? Oh outrageous. And I fucking hate it.

I don’t hate garlic bread, mind, but being a fat twat means I can’t have it. Sniff. But I can have this…

This photo doesn’t really do it justice, I must say. I had to hurry through the kitchen like Electra from the Starlight Express whilst Paul juggled three separate courses at the same time. This tastes almost exactly like cheesy garlic breadsticks you get from the takeaway, with the exception that it’s healthy!

This will make about eight breadsticks – enough for two.

to make syn free cheesy garlic bread you’ll need:

one cauliflower (or 600g-ish defrosted cauliflower florets), one egg white, 2 cloves of garlic, 40g grated cheese (2x HexA), salt, pepper, oregano

to make syn free cheesy garlic bread you should:

preheat the oven to 190 degrees (gas mark 5). Cut the cauliflower into florets and bung into a large food processor. Blitz until it has a ‘rice’ texture with a few bigger chunks. Spread out onto a baking tray or Pyrex dish and bake in the oven for about 20 minutes. Allow to cool for about five minutes. Tip the mixture into a dry, clean tea towel and pull the corners together. Squeeze the ball of mixture as much as you can (if it’s still too hot, let it cool down for a bit more). This will take about ten minutes of squeezing, until it has quite a dry, crumbly texture. In a bowl, add garlic and egg whites to the cauliflower with 10g of grated cheese and mix well. Tip onto a baking sheet lined with parchment paper and shape until it’s about half a centimetre thick. Top with the remaining cheese and bake in the oven for about twenty minutes, and grill for about three. Cut, and enjoy!

Don’t be put off by the cauliflower – yes, it does taste a little like cauliflower but if you’re not a fan of you really won’t mind – it gives a great ‘doughy’ texture. Make sure it’s nice and firm when it’s cooked so it’ll hold it’s shape for dipping. If it sags a little, bake for a few minutes more.

On a final note…

TWEAK

This uses half a cauliflower each as a base. Some might consider it a tweak and therefore requires synning, but given that half a cauliflower isn’t an extravagant amount of veg to have in one go and you haven’t magically deep-fried it in lard as you moved it from the oven to the tea-towel I haven’t bothered. You can if you wish.

syn-free houmous four-ways

Only a small post today as it’s mother’s day (so I need to go visit Ripley) and I’m ‘on-call’ for work, with the expectation that I’ll be expected to work into the wee hours again. Fingers crossed this doesn’t happen but it’s not as if I could just turn my phone off…

I am very lucky to have a mum (and dad) like I do. They handled my being a back-door-deirdre with sensitivity and aplomb, which aren’t words you’d immediately associate with our family. I always felt incredibly supportive and they even put up with the various boyfriends that I brought up like a cat with a dying mouse without too much commentary. They even let my ‘friend’ stay for two weeks at a time during the summer holidays. Such a memorable summer. I know a few other gay lads who weren’t so lucky with their parents – I’ve mentioned on here before about the guy who, enthused about being gay since I broke him in, rushed home to tell his parents the good news only for his dad to throw him against a wall and hold a screwdriver to his throat. Good old religion! My parents came through then too – they let him stay at our house and ‘hid him away’ despite his parents turning up in the village where we lived and asking on doors if people had seen him! Crazy times. I think I’ve managed to grow up well-adjusted and happy in myself thanks to my parents and I love them very much for it.

Anyway, enough bloody treacle. In honour of dear old Mother, here’s a rare picture of me and the good lady on a night out. Don’t we look glam?

Here’s a recipe to tide you over:

syn free slimming world houmous

to make syn-free houmous four-ways:

I love how this looks in a photo, and all four varieties of houmous taste different and fresh in their own ways. All syn free too! They’re just variations of the same basic houmous recipe, below:

  • lemon and garlic (add an extra couple of garlic gloves, a squidge more lemon juice and decorate with finely grated lemon peel) (don’t take the pith, literally, as that is very bitter – just the top layer, please)
  • basil and parmesan (10 torn basil leaves, 10g of shaved parmesan, bit of salt) – up to you if you want to syn such a tiny portion of parmesan but bearing in mind you’ll be getting what, 2.5g of it, I wouldn’t bother)
  • pickled red cabbage (just a few chunks of pickled red cabbage and some of the pickling vinegar added to give it colour)
  • paprika and sun-dried tomato – I chucked in 1tbsp of sundried tomato paste (1.5 syns, but again, through the laws of dilution, it’s up to you if you syn it)

The basic houmous recipe is simple enough – for enough to fill one of those little square bowls above, you’ll want to use one small tin of cooked chick peas (syn free), a nice round tablespoon of fat free cottage cheese, a garlic clove, pinch of sea salt and some lemon juice. Blend it together, adding a little more lemon juice if you like it runny or keeping some back if you prefer it chunky. It’s up to you.

You may remember Delia Smith banging on about these when she wasn’t pissed off her nut. They’re genuinely amazing and it’ll make just the right amount of houmous to fill one of the bowls above. I use it all the time.

BUT OH NO:

TWEAK

Before the Tweak Police are on the phone to Margaret and she’s clambering into the back of a battered Ford Transit with a sock full of batteries to take me out, FAIR WARNING. This could technically be considered a tweak on the Slimming World diet. Is it? Is it bollocks. You’re not eating more chickpeas than you could reasonably eat, and this filled us up enough to skip our evening meal, so kiss it! I’ve done a whole article on tweaking which, if you’re new to this site, you’ll probably get a right good kick out of. It’s here.

Serve with pitta chips (one WW 50/50 pittas (branded as love fibre) is a HEB – toast it and cut it up) and all sorts of superfree slices – cucumber, red peppers, carrots, tomatoes. World is your oyster.

spiderweb eggs and Paul’s random stream of nonsense

So, we finally managed to track down an Iceland in the local area today that still had some ready meals in stock. I went to the one in Gateshead which fortunately was stocked all the way to the top, even though someone who looked like a post-menstrual imagining of Pauline Quirke was circling nearby like a stinking,shuffling Belgrano. Not a bad selection either, so I got plenty of sausages and meatballs and a few tikka masalas. In a strange coincidence, James did exactly the same thing and flounced into the Cramlington one on his way home, so now our freezer is dangerously overstocked and I daren’t open the door because it feels like I’m stuck in a hall of mirrors with Wor Margaret.

But anyway, I digress. Tonight – Tikka Masala and Rice. I’m rather looking forward to it, I don’t mind a good curry and the spicier the better. I was going to make a ‘Grecian Pizza’ – I called it Grecian because it had Feta and Olives on it and that’s all I know about Greek cuisine. It was going to be the ‘ring’ pizza you see in the Fakeaways book with a fancy salad in the middle, but could I hell get it to roll right. I tried everything but it was just wasn’t going to happen. A shame, really, because I was an absolute natural when I worked at Domino’s Pizza in my teen years (best job in the world. No, really) and could whip up a thick, thirteen incher in seconds (still can on a good day and with a good breeze behind me). But because I was in a huff I just rolled out a misshapen slab and flung it into the bin when I couldn’t get the shape right.

I absolutely love Greek cuisine, and anything Mediterranean. I’m trying hard to convince James that we need a holiday around there, just so I can vacuum up my own bodyweight in Feta. Travelling is one thing that we absolutely love doing. It’s only really been in the last few years that we’ve gone anywhere that exciting, mostly due to a lack of money or something coming along that is more important (we had to cancel a trip to Iceland to buy a new kitchen instead. Booo!) so a holiday in the sun is well overdue. I still get like a giddy schoolboy at holiday time. I’m sure James slipped me a wobbly egg or two (a la Shannon Matthews) when we went to Germany because I just couldn’t stop flapping my hands like a kid with ADHD. I always had crap holidays as a kid. We once went to Benidorm in the early 90’s which was absolutely fantastic but since then they were just dreadful. You know it’s bad when a few wet weekends at Butlin’s Skegness is a highlight.

The worse one though was to Ireland. No rolling hills, leprechauns or culture for us. Oh no. We went to stay with my then stepfather’s family in a run-down part of Downpatrick where the spirit of The Troubles was still well and truly alive. There were no fewer than eight of us crammed into a tiny two bedroomed house, and the kids were all bundled two-a-piece into three-storey bunkbeds made from pallets and chickenwire. You think I’m joking – I’m really not. The house was wall-to-wall Virgin Mary and that bloody awful picture of Jesus doing a Goatse to his chest. You know the one I mean. I was handed a rosary by an elderly woman and had no idea what to do with it, so I wore it round my neck for the whole weekend. I thought I looked fabulous, personally and never resisted an opportunity to strut around with it.

In the evenings we had to secure the house against the IRA (or was it the Police? I can’t remember what side they were on). It meant some elaborate traps had to be set by the front door in case it was kicked in. It looked like a fancy laser matrix but out of skipping rope. I got a smack across the head from someone who earlier had pissed against the bedroom wall because when I went to get some squash during the night I set off some trap that meant a radio fell into the hallway and set some picture frames cascading down the stairs like a paramilitarian game of Mouse Trap. It was all so surreal! Fortunately we never went back. I think if it had been suggested I would have seriously considered putting myself into care.

The worst part of the whole time we were there was the food – not that it was that bad, but because we were only fed once a day. ONCE. And it was at some weird time like 3pm. Not quite lunch, not quite dinner, but far too far away from what would be breakfast. A nightmare for a fatty like me. Give me waterboarding any day over that absolute horror.

And, for some reason, I came away with ABBA Gold on tape.

I’m glad to say that was a definite low point and they only ever got better since then. To be honest I don’t think I could have tolerated anything worse without doing some sort of spazz-out on the whole lot of them and that most certainly wouldn’t be pretty.

One place I’d really love to go though is the Far East. I’d love it! I love the whole culture and Western mysticism about it all. China, Japan, Singapore – I’d do all of it, and chow down every last crumb of chow mein I could find. I’d probably whinge that it wasn’t like a ‘proper Chinese’ you get from some foul-smelling grotty shop in Blyth like I’m used to. Top of the list is North Korea but the food there is shit so I might not bother unless I can get away with smuggling in a Matheson’s sausage.

TONIGHT’S RECIPE – Chinese tea eggs. No I don’t know either, but James thought they looked cool and who I am to deny my baby his pleasures? I half wondered whether I’d heard him wrong and he was going to fire them out of his bottom like a Taiwanese hooker, but no. They are pretty. He’s called them spiderweb eggs because he’s feeling deliciously random.

to make spiderweb eggs, you should:

recipe – nice easy one this! These eggs are lovely for a snack or putting into a salad – they take on the taste of the sauce around them and so easy to do. Fill a pan with enough water to boil six eggs and a tsp of salt and boil for two minutes. Keeping the hot water to one side, plunge them into cold water for three minutes and then, when they are cold, crack them all over with a teaspoon. Don’t hit them with the spoon like a nun hitting an erect willy – you want them to crack but not shatter. Doesn’t matter if a bit of shell comes off.

Add into the hot water two black tea bags, four star anise, black pepper, salt, a cinnamon stick (or powder) and a big old glug of dark soy sauce. Pop the eggs back in once they’ve been cracked, and simmer very gently for three hours. After this, all you need to do is put the eggs, still in the sauce, in the fridge for 24 hours. Then shell and eat!

I know it sounds like a clart on but this can all be done in one pan and the effect is lovely – perfect for something different! Just like us, right?

balsamic roasted sprouts

For week four, we’re going to…Belgium! Well, sort of. I’ll come to that later…

Admit it, you’ve missed us. I’ve got visions of people wailing and rocking, waiting for the update that just didn’t appear. Well, to be frank, I’m disappointed that there were no Princess Diana-esque walls of flowers created, or that no-one doused themselves in petrol and set themselves on fire on our front lawn. Honestly, people. No, the unglamourous truth was that we’ve both been a little under the weather – and I was out on the piss on Friday night – and needed yesterday to recover.

Now see here, I’m not a big drinker – I tend to be an all or nothing sort of guy, so if I start drinking, I’m on it until I’m bundled into a taxi / arrested for lewd behaviour / do a Winehouse and choke on my vomit. It was supposed to be a civilised night, actually, and it certainly started off that way, with champagne in Hotel Indigo. That civilised chatter lasted about fifteen minutes before talk about bumhole waxing, black fluff and ‘dripping’ got underway and then the night never really got the glamour back. Brilliant night though, even if my mate did end up telling some poor, haggard looking woman with eighties hair and a very cats-arse-mouth (she was tutting at our conversation and rolling her eyes) that she looked like Enya. Taxi!

I like to think I’m a pleasant enough drunk – I’m certainly not an angry drunk or – worse – the moaning, miserable sort – if anything I just become way too affectionate towards Paul. In the interest of full disclosure and to try and prove a point, here’s a screenshot of my texts to Paul on Friday. Bearing in mind I’m the type of person who will chew through his trousers with his own bumhole if someone so much as uses a LOL in a text message to me, I certainly let my standards slip after four bottles of champagne.

God he puts up with a lot, doesn’t he? Look at those times though, I was clearly hammered pretty quickly. In my defence, if there is one, my phone has a smashed glass screen so it’s hard to type properly. Yeah, that’ll be it. I can’t remember anything from after Paul bundled me into the Micra, though he tells me:

  • I kept falling asleep / passing out on the twenty minute drive home, intermittently burping and slouching over onto his shoulder, meaning he had to keep jerking the car to the left at high speed to tilt me the other way;
  • I spent a lot of time telling no-one in particular to fuck off; and
  • when I got home, he opened the car door and I went tearing out like my arse was on fire because I was about to have a technicolour yawn, went headfirst straight into the side of the shed – and then was sick all over our front lawn.

Tell you what mind, I felt right as bloody rain on Saturday after Paul cooked me a low-syn breakfast. Weigh in tomorrow and I think I’ll have put on, but hopefully Paul will have lost. But remember what I always say – we’re aiming to lose weight slowly, so if it goes up or down, it doesn’t matter. I’m certainly in credit. We spent today walking Lester from the cat and dog shelter, but he was clearly Hooch from Turner and Hooch!

Aw. OK, finally, tonight’s recipe. I’ll make a confession – we totally forgot to think of a European recipe this week, so this is a little last minute. It’s a snack idea using brussel sprouts, which to be fair were cultivated in Belgium. We may revisit this one but actually, the sprouts are delicious hot or cold as a snack!

to make balsamic roasted sprouts you will need:

a tablespoon of olive oil, a bag of brussel sprouts, balsamic vinegar, salt

 

to make balsamic roasted sprouts you should:

top and tail a bag of sprouts (take outer leaves off, cut the stem off the bottom). Get a tablespoon of decent olive oil (6 syns) and a good few glugs of balsamic vinegar. Mix them well and put onto a baking tray and sprinkle with some salt. Into the oven on 180degrees for twenty minutes, give them a shake and then cook for another twenty. Serve hot or cold and keep the windows open, because your bumhole is going to be backfiring like an old car. This easily served us twice over, so the two syns in the picture above could actually be lower (I decided that a serving was 1/3 of a bag of sprouts). Enjoy!

For some reason, Jehovah’s Witnesses have taken to standing around outside of Eldon Square of a lunchtime, thrusting copies of The Watchtower at me as I shuffle past with my headphones in and trying desperately not to catch their eye. I feel like I can’t be mean to religious people in the same way I often am with chuggers – I usually just point at my ears and pretend I’m deaf, and I once told someone collecting for Alzheimer’s Research that she’d spoken to me just a few minutes before, didn’t she remember…she called me a very unsavoury name, and perhaps rightly so. But the JWs are a bit creepy – too earnest with the smiles, too keen to stop people and try and engage them, too comfortable with being told to fuck off. Perhaps tomorrow I’ll rock up to them and ask what they can do for me, as a blood-giving (sssh), civil-partnered sodomite who believes in abortion and hard living.

I’ve never been a religious person – the only time I went to church growing up was at Easter to get a free Easter egg (although it was always a Spar special egg, dead cheap with white bloom on the chocolate) or Christmas for the same reason, substituting egg for a chocolate jesus. It didn’t help that the guy delivering the sermons had an almighty lisp, which as a child was immensely hilarious. I know, cruel, but there you go. Actually, unusual disability seems to have followed me around through religion – our RE teacher in middle school was amazing (used to let us watch South Park rather than read the bible) but he had a tremor in his left hand, which combined with his hand all clawed up through arthritis, looked like he was wanking all the time. Awful I know, but that also used to cause much hilarity during lessons – teacher twittering on about God whilst calling him a wanker with his left hand.

I haven’t had much experience with other religions either, sadly. As part of a cultural exchange, our class had to go and visit Newcastle Hindu Temple – the idea being our minds would be broadened by their lavish food, colourful buildings and pleasant atmosphere, whereas young Hindu children would get to come and sit on the rock hard pews and listen to a man in a frock lisp his way through All Thingth Bright and Beautiful. Well see it was all going swimmingly until we had to sit cross-legged on the floor and listen to the brahmin explain Hinduism – champion. Except I, coming from an environment where the only spice I consumed belonged to Ginger, Baby, Scary, Sporty and Posh, was having a bad reaction to the pakora we had been given at the start and, genuinely accidentally, let out a fart that, pushed between my flabby schoolboy bumcheeks and the hard, polished floorboards, was ridiculously loud. And long. Once it was coming, there was no stopping it – at least ten seconds easily of earth-shattering, hair-burning fart. It sounded like the police helicopter was hovering overheard, it truly did. No-one believed me that it was a genuine accident and I got made to stand outside, although to be fair that was probably to give my nipsy a chance to cool off in the autumn air. I got detention and summarily bollocked for that little incident. It’s no wonder there’s so much tension these days – if only there’d been a bit more tension in my sphincter, eh.

Whilst I’m talking about religion, a quick comment on the upcoming Pegida march through Newcastle. I find it shameful, utterly shameful. People say it isn’t racist but you’ve only got to look at the comments on Facebook to see the true colours. I’ll say only one thing – people bleat on and on and on about what asylum seekers get given – but they base it on hearsay and what they read in the paper. Take a moment, do some proper research – they get next to nothing. I worked for a charity for over a year and the state of some of the properties that these asylum seekers were living in would make you weep. It really would. You’d hear stories of what they went through, what they’d seen, and you’d know straightaway why they tried to get away. Awash with benefits? Absolutely not. And do you know, it was always, always, ALWAYS the same type of person complaining about foreigners getting this that and the other – bone-idle, lazy bastards who had never worked a day in their life, or even intended to. Give me 1000 asylum seekers over just one of those type of people each and every time. That’s all I’m saying – don’t like to tubthumb on a funny blog, but it boils my piss.

Anyway! Let’s move on. Tonight’s recipe is these lovely falafel burgers, served with tzatziki dip.

Assume you’re using your bun as your healthy extra, this is syn free. Admittedly I had two, but ssh.

to make falafel burgers you will need:

1/4 chopped onion, three cloves of garlic, a good handful of parsley (or rocket), 2 tsp cumin, pinch of smoked paprika, salt and pepper, 1 tsp of lemon zest, 1/2tsp of baking soda, pinch of pepper. You’ll also need 250g of chickpeas but NOT the tinned version, no, get dried and soak them for around 36 hours – just cover them, leave, drain and dry. I chucked in some shredded chicken that I had in the fridge but you don’t need to.

to make falafel burgers you should:

blend everything together, gently – you want a coarse, grainy paste, nothing too smooth. If you need to dry it out a little, add breadcrumbs (6 syns for a wholemeal roll). Shape into four burgers and put in the fridge for 30 minutes. Bake on 180 for thirty minutes, serve with tzatziki in a wholemeal bun!

to make tzatziki you will need:

mix 200g of finely chopped cucumber, a small red onion finely chopped, 200g of fat free yoghurt, a bit of garlic finely chopped, 1 tbsp of lemon juice and salt and pepper. Season to taste and put in the fridge until you need it.

For week one, we’re going to…ARMENIA…

Ar-bloody-menia indeed. We put all 50 countries into a randomiser and that’s the first bloody one it spits out. We know nothing about Armenia! In fact, most of our European knowledge comes from Eurovision – for example, I did know that Armenia did very well last year, and a quick gaze at Wiki reveals they came in fourth. We don’t mind admitting that we love Eurovision – the spectacle, the nonsense, the screaming gay men – and that’s just us in our living room. We’d love to go, but the desire to go to Eurovision is always tempered by a slight hint of embarrassment and the fear of being broadcast in full HD on BBC One wobbling about in the crowd with our bumholes blaring from all the amyl nitrates in the air. Plus, I can’t dance. I really can’t. I was going to come up with a funny euphemism for my dancing but in all honesty, it’s been described as a fat bloke trying to dance – all tilting and grand shifts of weight. Just awful. It’s like my body is sponsored by Mathmos. I’m like the Herald of Free Enterprise leaving dock. Oh I managed to get my euphemisms in after all!

A little tale that made me titter yesterday – my parents have been in The Gambia building schools and granting wishes and introducing the good Gambian folks to the joys of Lambert and his Butler, and it just so happens that my dad’s (Chris) birthday fell when they were over there. My mum arranged for a cake to be made and iced and it was brought out to much fanfare and stifled hilarity – iced on the top of the cake was HAPPY BIRTHDAY CHRIST. Now my dad HAS had a few nails put through his hand but that’s through lapses of judgement during DIY, not out of Christian malice. Parents did say it was absolutely amazing seeing people with so very little being happy. I’m sure there is a moral lesson in there, but as I’m a bourgeois pig, I don’t see it. Anyway…

Tonight’s recipe is Armenian Bulgar Salad – and I never know how to pronounce bulgar so I always have to whisper it in hushed tones in the supermarket lest people think I’m being tasteless. It’s delicious, like a tomatoey variant on my tabbouleh recipe from a while back, and would do lovely for a lunch. As long as you don’t mind your breath smelling like a hot fart later on.

to make syn free tomato bulgar salad, you’ll need:

ingredients: simple. A tiny drop or two of olive oil, a large chopped red onion, 1 tbsp of tomato paste, 1/2tsp of cumin, 1tbsp of chilli sauce, tin of chopped tomatoes, 250g of bulgar wheat and a bit of salt. I also added spring onions because I’m crazy-mad. Parsley for sprinkling.

to make syn free tomato bulgar salad, you should:

recipe: saute the onion until it’s nice and soft. Take your time here. Add the cumin, puree and hot sauce and stir. Add the tomatoes and salt, then stir for three minutes on a simmer. Try the sauce – if it needs a bit more acidity, chuck in some lemon juice. Now take it off the heat, throw in the bulger wheat, stir, add chopped spring onions and then put the lid on. After 30 minutes it’ll have swollen and dried a little – and trust me, it’s bloody delicious. Serve it with chops if you like but it works just as a lunch.

tip: this freezes very well – stick it in a freezer bag portioned out and then take it out when you need it. Or, more realistically, you’ll put it in there and forget about it forever.

extra-easy: well – no, not on its own, but if you served it with a salad of superfree food you’d be alright. Mind it does have tomatoes and onions in there…

So pleased! Remember last week when I said all I wanted to do was maintain this week? Well, smashed it! I’ve had popcorn, Nandos, sweets and all sorts this week too – but balanced it out by having low syn meals and judicious use of my healthy extras. Paul is content with his weight loss too – as well he bloody should be – he always loses weight slow and steady, but see if he loses 1lb a week it’s still 3.5 stone by the end of it. I need to lose more, hence my 2lb a week target! CHUFFED.Also, I only went and got Slimmer of the bloody Month. Well that’s not what they put on the sticker but perhaps they should – I’d love to see a rawer version of Slimming World without all the cutesy-poo guff – I reckon they’d do well to write a few recipes with fuck this and balls to that in there. Paul was second in the Slimmer of the Month queue, so he’s getting anal tonight.That’s right, no matter how clean I get this house, he wants it tidier.I totally pinched that joke from Family Guy. But then they pinched it from the earlier nineties so that makes us even.So, as is the norm on a Monday – we’re having a night away from the computer, watching TV, but I couldn’t leave you empty-handed, like I did with that beggar who wanted a fiver off me not so long ago. No, because I’m the gift who keeps on giving (me, a giver? Well that answers one possible question…), here’s something ridiculous.

But of course it is. It’s a sad eyed little chick, ready to be turned effortlessly into poo by my efficient digestive system. It knows what’s coming and it’s not afraid. HEB your toast discs though. Obviously you don’t need to fanny about with the carrot and seeds but it makes it look pretty. Pretty ridiculous. 7 minutes gets you a hard-boiled egg with a lovely runny yolk. If the egg is a big bugger, it might scream when you cut into it, but persevere. I got the idea from the infinitely more talented dosirakbento who is truly a wonder at these things.Cracking breakfast, no?Tomorrow’s dinner? butternut squash macaroni cheese

It’s lucky I don’t have a gambling problem. Well no, it’s lucky I’m Geordie enough to be so tight I wouldn’t DARE have a gambling problem. TV is absolutely awash with ads for online gambling sites, and they’re such utter, utter bollocks. Invariably, they’ll have some drooling slab of beef watching some whizzy virtual reality site flash by, gambling with hilarity and a big shit-eating smile on his face, all the while chucking a few £1 bets on and watching the money roll in.

Well let me tell you this isn’t the case. I make quite a bit of pin money on the side by gambling for ‘free’. and I’ll come to that later, but a good part of that comes from having to play online bingo. Online bingo is the antithesis of fun. Put simply, you’re paying good money to watch a pen automatically dab off your numbers in the hope of winning a crap jackpot against thousands of others. However, there’s more – in the adverts you’ll see sprightly young ladies giggling away and typing supportive messages to one another in the chatrooms, whereas all I’ve ever seen is punters with one good set of teeth between them and usernames like ~~!!!PIXIE_DUST_ROFL~~!!! and TISHMAM4LIFE desperately trying to outdo each other’s bad spelling. Even the photos of the winners are invariably harsh – all slack-jawed, light-bendingly dense landmasses with terraced chins and poor taste in acrylic outerwear holding their cheques for £667 like they’ve won La Primitiva. Bleurgh. When even I can’t eke a little fun from reading people’s chatter, you know there’s a bad job.

Anyway, the free gambling thing. I use Quidco, which is a cashback site, so if you’re doing online shopping you would go through Quidco, it tracks your purchase and offers you a small amount of cashback which gets deposited back into your bank account at the end of the month. You pay £5 a year and it’s very safe. There seems to be a intrinsic distrust of these sort of websites, which is fair enough, but this is a massive site used by thousands and I’ve never had a problem with it. Even old motormouth Martin Lewis recommends in. So – on Quidco are lots of offers for new customers on gambling sites, and they normally have a higher return than investment. Looking on there right now, William Hill Bingo is offering £30 back for new customers who spend £10. Obviously they want you to spend more than £10 but don’t. If you go for the offer and only spend £10, you’ll eventually get £30 back from Quidco, and you’ve made £20 right there. It takes a few weeks for things to track but there you go.

Of course, if when you spend the £10 on William Hill, you actually manage to win some money, that’s even more profit right there, but DON’T accept any of the introductory bonuses or little catches – just play with your own money, and stop the very second you’ve gambled whatever it is they ask you to gamble on Quidco. ANYWAY enough about that shite. Here’s tonight’s recipe – bloody lovely macaroni cheese!

to make butternut squash macaroni cheese, you’ll need:

ingredients: 1300g butternut squash, 300ml chicken stock, 250ml almond milk (1 syn or HEA). 200g macaroni, 
2 teaspoons garlic salt, 1 teaspoon Worcestershire Sauce, 115g grated cheddar cheese (4.5 syns or HEA – remember this serves four). 

to make butternut squash macaroni cheese, you should:

recipecut up the butternut squash into cubes, add the stock and almond milk into a nice big pan, and chuck the squash in. Bring it to a boil and then reduce to a simmer under the squash is tender (about fifteen minutes). Blend this mixture in a decent processor or use a stick blender and really go at it – the smoother the better. Add the garlic salt and Worcestershire sauce. Add the cheese to the sauce and put it back onto the heat on a medium heat. Now you have a choice – you can cook the macaroni in a separate pan, drain and add to the sauce, or just chuck the macaroni into the sauce and cook it all in the same pan – this will help thicken the sauce because of all that tasty starch! Once the sauce is thickened, serve hot!

extra-easy: yep! here, you’re either using your cheese or your milk as your HEA on your serving. All that butternut squash makes this VERY high in superfree food and it just tastes wonderful, trust me. You can use up the rest of your HEA allowance (if you chose milk) throughout the day, you can have a fair bit on EE!

rainbow quiche and octogenarian shenanigans

Well, that was an exciting afternoon. The parents have decided to spend a bit more of my inheritance and have buggered off to the Gambia for a week or two, leaving Nana Dearest in the care of me and my sister. She’s very independent but it’s good to check in on her every day just to make sure she hasn’t rolled a seven and shuffled off the mortal coil. So, fatty and I piled into the car today at half one and drove the thirty miles over to her house – in the ice and snow – to see that she was up and about and dutifully forgetting to take her tablets. Got there to find her curtains still shut in the bedroom and the door locked. At 2pm, and us without a key. The dog was scratching on the other side of the door. No amount of knocking and shouting got a reply. Naturally, we raised the alarm buggered off to do our weekly shop at Tesco with a view to coming back and trying again at half three. Still no reply. I had no key, remember. How do you attract the attentions of an eighty eight year old woman whose hearing aid would merely register a muffled bump if a plane crashed in her garden?

Well, here’s how – you get a clothes prop from the garden. For those of you who aren’t living in the 1940s, a clothes prop is a very long, very thin bit of wood that Geordies use to hoist their clothes line high up in the air so that villagers in another parish altogether can cast disdainful looks at the skidders on your knickers. It looks like this:

Of course, it would be altogether too easy for my gran’s prop to be a strong, metal affair like the one pictures – no, hers was a manky old bit of wood that had been sitting in the snowy mud since the Battle of the Somme and was dangerously rotten. Nevertheless I pressed on and hoisting the bendy, rotten, 14ft prop into the air like a fucking pole vaulter and standing on the tops of my boots, I rapped it smartly against her window, tap tap tap, whilst Paul brayed on the front door, with each ‘tap’ of the stick leading another muddy print against her window. After ten bloody minutes, a wispy bit of white hair appears followed by a bemused face, then the window opens and she tells me off for leaving mud all over her window frame. Turns out she had gone to bed the night before and only just woken up at 4pm, which frankly sounds like my idea of heaven. Pills dispensed and a cup of tea later, she turns to me sagely and says ‘You could have just rang the doorbell, you know’. I almost turned the one hobnob (well, Aldi equivalent of a hobnob – a notnob?) (3.5syns) I’d allowed myself to dust in my balled up fists. She’s a dear, an absolute dear, but unless I had rung the doorbell with the front of my fucking car she really, really wouldn’t have heard.

Still, how Paul and I laughed as we made our way back home, our shopping defrosting merrily in the boot. I’d do it all again though.

The shopping I just mentioned will be turned into the following meals for the week ahead:

  • pulled pork, leek and mature cheese pizza;
  • spinach, basil, broccoli and kale soup;
  • macaroni cheese – with a twist;
  • roast beef dinner;
  • beef and broccoli;
  • spaghetti and hotdogs; and
  • chicken, beans and rice.

All healthy, all tasty. All low syns. I’m going to make a bit more of an effort to create rollover recipes – recipes which use the leftovers from another one I’ve done in the week. I thought it might help those trying to keep costs down. So in that vein, tonight’s recipe is a very quick one using up the remainder of the veg that we didn’t use on our Judy Garland Special Pizza (thank you Ms Savage!). The joy of a slimming world quiche is that you can chuck any old shite in it and it’ll taste good. Here it is – I left it in the oven ten minutes too long because I was too busy outside scratching my foot on the brick wall of my herb garden. It’s so satisfying!

No need for a full recipe for this rainbow quiche – this really is just all the leftover veg we chopped up, combined with four eggs and 300g of cottage cheese, lots of salt and pepper and chucked in the oven. Syn free of course and absolutely stuffed with superfree food, so it would be perfect for a work snack. Well, a slice or two – you don’t need to eat the whole bloody thing at once for goodness sake.
