What an alluring name! But my any old shite salad is so called because I literally dice up and chuck in any old shite that I have lying in the back of the fridge. I’m on a bit of a drive to stop wasting so much food – something that is quite difficult when running a food blog given how many new recipes we have to come up with. Plus, I spend £3 a day on Subway for my lunch and thought this would be cheaper, plus I don’t have to stare angrily at the back of some poor lad’s head whilst he umms and aaars his way through the choices.

As an aside, do I win Pickiest Subway Salad award? I get double plain chicken, no cheese, half lettuce, cucumber, no onion or olives, double gherkins, double jalapeno, tomatoes (with a pinch of salt), honey and mustard dressing but the dressing has to go on before all the salad so the leaves are wet. I know, I’m a terror, but I think I get away with it because I’m so unfailingly polite and I bought them a box of Celebrations at Christmas. I’m not convinced the guy behind the till speaks a lick of English – and alas, my Latvian is a little rusty – so he could be calling me worse than muck under his breath and I wouldn’t know. Ah well, them’s the breaks. I prefer to live in blissful ignorance.

Oh, I once got thrown out of a Subway in Southend after getting steaming drunk in Colours in Basildon with my ex who looked like Granitarse from Knightmare and storming in demanding a chicken ticky-licky sandwich and crying when they didn’t understand what I meant. Look, it had been an emotional evening, my ex’s then-partner had caught us…what a slut. I’m not usually such an arsehole when I’m drunk, I hasten to add. I’m not.

Right, anyway, no diversions, we weren’t going to post tonight as we’re in the middle of decorating our bedroom and getting jizz off the ceiling takes a great deal of determination. So: the any old shite salad.

I’m not going to treat you like a moron and tell you how to prepare any old shite salad, but here’s what is in mine:

  • sliced baby cucumber with the seeds cut out
  • a variety of cherry tomatoes, chopped, salted and drained
  • a handful of baby corn, sliced
  • a fistful of sugarsnap peas
  • a baby’s mitten of gherkins, sliced
  • a cat’s sneeze of new potatoes, diced
  • an extravagant wave of tiny soup pasta
  • a perfunctory sexual act of tiny pickled onions
  • a discarded cigarette packet of olives (which I don’t syn, not the pitted black ones, and that’s not because I’m racist)
  • a blushing smile of tiny pickled red peppers
  • a knee-slapping chortle of broccoli
  • an angry drunken confrontation of asparagus tips
  • a thought of mint leaves
  • a carpet sample of ham – leave out for a veggie option
  • an uprising of chopped red and green pepper
  • a don’t-tell-Margaret-HEA (X2) of crumbled feta cheese
  • an after-coitus-dribble of fat-free dressing (I make mine from balsamic vinegar, a tablespoon of dijon mustard and some lemon juice – I don’t syn the mustard either, it’s a tiny amount, but you can go for it)

You can surely tell from my piss-take amounts that there’s no set rules when it comes to amounts. Make as much as you like, vary the ingredients, take out what you don’t like and add stuff you do. I like to cram as many different textures and tastes into each salad because it keeps things interesting. I make enough on a Monday night to fill four large lunchboxes and this carries me through to the end of the week. It keeps well in the fridge because you haven’t saturated it in dressing and actually, the less moisture in the salad, the fresher it seems to stay.

See, I might have called it any old shite, but it’s a bloody good idea for lunch!

Oh, as a little extra, I made some pickled red onion slices a couple of weeks ago when I made those fancy eggs – nothing special, just a load of very thinly sliced red onion (this is where one of these comes in handy – and ooh, it’s almost half price on Amazon – buy one and you’ll use it lots, I promise), stick them in a sterilised Kilner jar, top up with rice vinegar with a teaspoon of sugar added (heat the vinegar, add the sugar so it dissolves, then take off the heat), throw in some black peppercorns and leave in the jar in the fridge for as long as you need them. Everything goes a pretty colour, as you can see. Up to you whether you syn the sugar – if you do, it’s 1 syn per tsp, but really, it goes into the vinegar and well, you’re not going to eat all the onion in one go). This is lovely on a burger but even better mixed into your any old shite salad!

crunchy cheesy steak bites and perfect onion rings

Steak bites and onion rings? Good heavens I know. Because this is going to be a super quick entry I’m giving you two recipes at once. You can manage it. Just bite down and push out.

GOOD NEWS: Samsung have been and fixed the hob, hooray, meaning we can bring back proper food to the blog as opposed to food you have to eat with your fingers. Tonight’s recipe was going to be a delicious pork and potato hash but when I went to photograph it, it looked like the top of a burnt knee. I’ll figure out a way to make it work and stick it on next week.

GOOD NEWS: We haven’t given up on the gym just yet. You know what’s sad though? We tend to go at around 11pm and the gym is full of the type of folk who are too shy to exercise with the skinny-minnies and the ultra-fit. I don’t see why and it makes me feel a bit sad. Admittedly, the music volume has to be doubled to counter the sound of the treadmills being splintered under hefty foot. Come on fatties, don’t be shy. You’re still doing better than anyone else just by being there. 

BAD NEWS: I’ve picked up the most annoying verbal tic, and I blame it all on a work colleague, who uses the ‘eh’ sound like one might reasonably use a full-stop. She makes me laugh all day long so I can quite forgive her but after doing it back as a joke, it’s now fallen into my daily rotation and I find myself saying EH really loudly mid-sentence. My dad is an absolute bugger for this – Paul swears my dad once interrupted himself mid-sentence by asking himself eh – and it seems I’m destined to follow in his footsteps.

Emma and I are engaged in a fierce game of pranks – I poured a load of red glitter into the seat of her office chair, meaning every time she sat down she coated her arse in red shiny glitter. She responded by leaving me a telephone message that a Mr Kipling called with an urgent message and to call a number which turned out to be the Mr Kipling cake factory. No wonder the receptionist seemed a little cross when I insisted I had an urgent message from the boss. As revenge for that, I stole the ‘e’ from her keyboard, so she filled my man-bag (murse?) with almonds. I retaliated by filling all of her coat pockets with the tiny bits of paper from inside a hole-punch, so she stuck watermelon post-it notes all over my desk when I was away logging off.  I’m not sure what happens next but I’m a bit worried this is going to escalate into her torching my house for a laugh and me holding her children hostage. Still, makes the wheel of the working day spin that little bit faster, and like I said, she’s an absolute love.

Anyway, the recipe please, gentlemen.

onion rings and steak bites

to make crunchy cheesy steak bites you will need:

to make crunchy cheesy steak bites you should:

  • bring the steak to room temperature
  • meanwhile, turn up the oven to 180 degrees
  • spread the pumpkin seeds out onto a baking sheet or ovenproof dish, spray with olive oil spray and sprinkle over a pinch of paprika
  • bake in the oven for ten minutes and allow to cool, and then grind in a pestle and mortar or chop them up with a big knife
  • mix together the salt and pepper and spread out onto a chopping board
  • gently dab each side of the steak cubes into the spice mixture and set aside
  • heat a large pan over a high heat and chuck in some sprays of oil
  • throw in the steak cubes and cook on each side for no more than 30 seconds – if they don’t sizzle, yer pan isn’t hot enough
  • take out of the pan and onto a chopping board and gently balance a mozzarella cube on top
  • quickly grill under a high heat until the cheese has melted
  • sprinkle on the pumpkin dust and serve

Not a fan of pumpkin seeds? Don’t need to add them. We won’t tell. We found a really nice smoked mozzarella in Tesco which we used and oh god, I’ve bored myself to death.

You can use panko for the next recipe. You’ll find panko, a type of dried breadcrumb, in most Asian supermarkets or in that ‘funny bit’ of the supermarket you don’t go into. You should. It’s a world of wonder and taste, although I did feel a bit Gary Glitter as I pushed my bottle of ‘Healthy Boy Sauce’ through the self-checkout. Don’t have panko? Just use an ordinary bun whizzed up, you common harlot.

to make onion rings you will need:

  • one big fuck-off onion sliced into rings
  • lots of black pepper
  • 1 egg, beaten
  • 60ml skimmed milk
  • 25g panko (5 syns)
  • 25g breadcrumbs (use half a HeB bread roll)

 

to make onion rings you should:

  • preheat the oven to 230 degrees and line a baking sheet with greaseproof paper
  • you’ll need two shallow dishes for this bit – the first one should have your egg and milk and pepper mixed together, and in the second mix together the panko and breadcrumbs (you could use all breadcrumbs if you wanted, but panko is much tastier, and if you use all panko all the better)
  • dip each onion ring into the egg and then into the panko – drag it around a bit so it gets nicely coated
  • place on the baking tray and spray with olive oil spray
  • bake in the oven for twenty minutes but keep an eye on them – you’ll know when they’re ready!

Growing up we had chickens when I was a wee’un but they mysteriously went to live on a farm when we moved house. What was even more weird was the fact we had roast chicken for dinner eight nights on the trot and I remember the meat being particular succulent, but I suppose that’ll have been the tears splashing down on it.

Thinking back, we’ve had quite the menagerie – our first pet was a giant rough long-hair collie called Shannon who I have two single memories of – one of our cousins came to stay for the summer and, whilst walking up the lane to our house, was met with the sight of a dog twice as big as her who tumbled her over and bit her on the arm. Ooops. Don’t worry, it’s not as bad as it sounds, we added a bit of Listerine into the dog’s water and he was fine. I jest I jest. The other memory is a sad one though (sob) – poor Shannon got loose into the back fields and suffered a nasty chemical burn and was put down. What can I say, living in Bhopal was tough. Nah, it was some weird pesticide, the poor bugger.

We had cats a-plenty – Smokey with the loudest purr who lived a happy life until he decided that the A69 at rush hour was an appropriate place to stop and lick his balls. There was Cleo (went missing) and Tabitha (attacked by foxes). Listen, we grew up in the countryside, these were hard cats but nature always prevails. We did manage to have two cats make it to dotage though, thankfully, despite the efforts of God himself. Salem was my favourite as he was quite genuinely the laziest cat as could be. He had masses of long black hair (hence Salem) and would never clean himself, which, when combined with his tendency to download his Whiskas all over the place without bothering to see if had tangled into the hair on the back of his legs, meant many a fun evening for my mum and the cat hairbrush. She used to throw half a cat’s worth of matted poo-hair onto the coal fire and Christ, you’ve never smelled anything like it in your life. Even now if I take a deep breath I can still smell it.

Speaking of cat-fires, I was watching a film one night when a spark from a crackling log leapt out of the fire and nestled neatly on the cat’s flank. By the time I’d untangled myself from my blanket and leapt as only a fat man can do from the sofa, there was quite a considerable amount of smoke rising from him. Just as I bounded over he rose to his feet more akin to a cat stretching on a summer’s day and barely looked bothered as I beat his sides to extinguish the fire. He had the same expression as I lowered him into a cold bath to ensure he hadn’t been burnt. He had a great life mind, as all countryside cats do, and died at 15, buried in the garden for ever more. I reckon by now he’s nothing more than bones and a few giant clumps of matted poo-hair.

Salem was joined by Misty a little into his life, and she was an entirely unremarkable but lovely cat who spent most of the time outside, deigning only to visit us when she was hungry, when she was cold or, once, alarmingly, when she was pregnant. We had no idea she was up the cat-duff and it was only when a load of tiny squeaking started up behind an armchair that we realised she was having kittens, and even that was after ten minutes of my dad trying to adjust the telly because he thought the sound on You Bet was playing up. She also lived a long and happy life and padded off around 14 years.

Shannon the dog was replaced by Bracken, who was a discarded greyhound who leapt into my mum’s car on her way back from the Spar shop. We tried giving him away to a farm (he was too athletic to be a house-dog) but apparently the nicotine withdrawals from not passively-chain-smoking 40 Lambert and Butlers a day meant he had to come back. I’ve never seen a dog with a yellow fringe before. Oh christ before I get the RSPCA on the phone (although let’s be honest, they’d only be ringing to ask me to donate to their new director’s Bentley fund), the dog was given away and finished out his days running around chasing chickens. That’s not even a fib I was told to make me feel better, he went to the farm a few doors down!

Bracken was replaced by Oscar, a ginger border collie who was thick as mince and the bane of my life (though I loved him dearly). When I used to take him for walks over the fields and let him off, he’d immediately turn around and belt for home. Every. Single. Time. This would invariably lead to me trying to run (bear in mind I’m fat) after him and catching him just the moment before my ankles snapped. He did calm down a bit and could be trusted to run on his own after a while, but as soon as he heard one of the many bird-scarers go off in the fields away he’d be again, destined for home. It’s a wonder I was so fat as a kid given I spent so much time chasing him.

He wasn’t just dense outside the home, either, oh no. He used to try and shag Salem, the aforementioned tom-cat, who would be wearing the same non-plussed expression noted above even when he had a 20kg dog thrusting its lipstick up and down his back, smearing his back like a slug. My parents thought it was horrible but looking back, what a terribly progressive household we had. I should start a Tumblr about it.

My favourite memory of Oscar was something he did all through his life, though – we would let him out into the garden for a poo, and, after ten minutes of turning around, sniffing, shaking and finally doing that thousand-yard-stare-whilst-defecating, he’d crimp one off. He’d then go absolutely bloody manic, hurtling back into the house and round and round the sofa, almost literally running along the walls like a motorcyclist in a Wall of Death, with the biggest dog-grin you can imagine. I don’t know whether it was sheer relief at passing a stool he was feeling, but Christ, my mother was feeding him Pedigree Chum, not ball-bearings and cement. He did that up until the date of his death at 15, where the poor little bugger had a heart-attack on my parent’s bathroom floor.

To be fair, I grew up walking into the bathroom after my parents, I’m not surprised he had a bloody heart-attack.

Naturally, we had a range of hamsters (Boris, Truffles, Snowy, then we stopped naming them as they invariably escaped and disappeared into the walls) and rabbits. We used to build massive runs for the hamster from Lego until one hamster started filling his cheeks with Lego bricks which put paid to any future construction. Hell, if it hadn’t been for that hamster I could have been the next Frank Gehry. Still, if ifs and buts were sweets and nuts, we’d all have a lot to eat.

Which, after that colossal diversion, brings up back to the pickled eggs. Remember, even if you’re not a fan of pickled eggs, you can make these a week before and take them to taster night where everyone will ooh and aaah whilst shoving the free food in their mouths with giant meat-hands. It’s quite difficult to make a pickled egg look alluring in a photo, so I’ve made it into an open sandwich here. Gives you an idea of something to make for a light snack – take your HEB of bread, some sliced ham, cottage cheese, cress and two pickled eggs, and enjoy.

to make beetroot pickled eggs, you’ll need:

  • 12 eggs (or really, as many as you like)
  • a jar of pickling vinegar (I use the Sarson’s malt pickling vinegar you can buy, the big 1 litre jar, as you can then use the jar afterwards)
  • a pack of cooked beetroot – the vacuum packed ones that still have a lot of juice in them
  • a pinch of black peppercorns
  • a tablespoon of sugar (3 syns – but – this is between 12 eggs and the sugar goes into the vinegar, so you won’t be eating it all, and anyway, are you really going to sit and eat 12 eggs? If so, quarter of a syn per egg)
  • a star anise, if you have one sitting about

to make beetroot pickled eggs, you should:

  • hard boil your eggs – normally about 12 minutes for me but do your research
  • peel and put them into cold water
  • heat up all the vinegar in a pan with the peppercorn, star anise and sugar
  • add the juice from the beetroot packet into the vinegar and then grate one of the beetroots into the pan (oooh, messy!)
  • heat it everything through
  • put the eggs into your jar and, once it has cooled a little, pour over the vinegar mix – you want the eggs to be able to move around a little to make sure they’re not touching each other
  • lid on nice and tight and into the fridge – these seem to keep for ages but take about three days to get that deep purple

They taste lovely – a little like beetroot but with the tang of vinegar. Easy! Also, a good way of using up eggs!

caprese frittata – syn free

I was going to post this caprese frittata yesterday, but I couldn’t be fucked on typing it all up after spending the day smacking my head against various walls at the result. We’re already looking at moving to Iceland, so I hope you’re ready for recipes of súrir hrútspungar (sour ram testicles) and delicious gellur (cod tongues). Anyway, busy day ahead, so let’s bang out a breakfast recipe. Due to our lack of hob we had to use a wee little camping hob which was an absolute comedy of errors, I can assure you.

I have to confess, I’m not a huge fan of anything omelette/frittata – I don’t like the way eggs squeak when they are cooked, but I saw this recipe online and thought it would be worth a go. It was delicious. Plus, my parents are now keeping chickens so every time I go over I’m gifted eighteen eggs, and well, our arms hurt from hurling them off our exes’ windows. I joke. We just shit in their flowerbeds. Right no time for words, recipe!

to make caprese frittata you will need:

  • 8 eggs
  • 250g cherry tomatoes, sliced
  • 2 garlic cloves, minced (yes, using one of these...)
  • handful of basil leaves
  • 60ml skimmed milk (that equates to a tbsp of milk per person – syn it if you want to, but we didn’t!)
  • 170g baby spinach
  • 90g ball of reduced fat mozarella, sliced (HeA)

Remember, if you buy a basil plant from the supermarket, keep it in its pot and stand it in water, it’ll last all summer long. UNLIKE OUR ECONOMY AM I RIGHT OR AM I RIGHT.

to make caprese frittata you should:

  • preheat the grill to medium-high
  • heat a large oven-safe pan over a medium-high heat and add a little oil or Frylight – if you’ve got a decent pan, use it, if not, be a bit liberal with the spray oil
  • add the garlic and cook until golden brown, texture like sun
  • add the tomatoes and basil to the pan and continue cooking until the tomatoes become mushy and blistered
  • meanwhile, whisk the eggs in a bowl with the milk and a pinch of salt and set aside
  • when the tomatoes are ready, remove half from the pan and set aside on a plate
  • pour the egg mixture into the pan and stir around the tomatoes to get it all mixed together
  • reduce the heat to medium-low and add the spinach and lay on the mozzarella slices
  • cook in the pan until the eggs are almost set – it’ll take about ten minutes, but don’t rush it
  • remove the pan from the hob and place under the grill and cook until the top has browned and it has puffed up
  • remove from the grill and spread the reserved tomatoes and basil mixture on the top

You can add any old shite into this – peppers, mushrooms, bacon, car engines, I don’t care. It tastes good with the trio of basil, mozzarella and tomato, though. This will freeze well and can be eaten cold the next day. If you’re looking for more breakfast ideas, click on the icon below.

rainbow peppermint meringues – taster night idea

Was it the mention of my rainbow peppermint meringues that brought you here? You’ll find them just below. But first, a word from old Gobshite McGee – me.

Oh, before we start, I haven’t put a plug in for our books for bloody ages. We have two! Here’s an odd thing. There seems to be a rash of people posting pictures of themselves in dresses on facebook and then asking total strangers how they look, only with the caveat of ‘no nasty comments’ but ‘honest replies please’. How does that work? For a start, don’t ask strangers how you look because frankly, there’s too many arseholes out there who will be cruel just for the sake of it. But, if you are going to seek the validation of strangers you’ll never meet then at least be prepared to accept that some people will have different opinions and that they aren’t the Devil Incarnate for saying your dress is a bit tight under the gunt.

Personally, I couldn’t give a flying toss what people think I look like – I described my own body as looking like a landslide of hairy Trex just the other day – and it’s a very liberating place to be. I spent years hidden behind a giant black coat like the Scottish fucking Widow when I was younger because I was ashamed of my man-boobs and having to buy my school clothes from the adult section in BHS. But life’s too short to care – no-one ever, in the throes of death, turns to their loved one and says ‘yes, but Suzanne from Warrington thought I looked fab-hun-xox in my Primark bikini‘, after all.

That said, I did have a rather mortifying moment the other night when Paul, in his haste to get all of our holidays photos on Facebook, accidentally uploaded a completely nude photo of me getting into an outside bath in Cornwall which sat in our photo albums before the sound of retching from all around the North East finally reached us and I hastily deleted it. Not because I’m ashamed as such but really, I could do without my friends and co-workers knowing that my arse-cheeks look like someone stood on a pumpkin and rolled it in cat-hair.

Not that such privacy is everyone’s concern, though. I had to remove a couple of distant friends from my facebook because every nuance of their tedious lives was played out via passive aggressive memes, hospital check-ins and barely legible statuses about ‘standin on mi one agin’. The hospital check-in is the most baffling – big status about waiting in A&E or ‘PRAY FOR MY LITTLE MONIQUA-MARIELEIGH’ then, when people invariably comment asking what’s wrong (whts up hun??) they are either ignored or worse, the old ‘inbox uz hun‘. I hate it – mostly because it’s just attention-seeking, but also because I’m incredibly nosy and not finding out leaves me massively unsatisfied, like being interrupted by someone coming home unexpectedly just as you reach Batter Splatter Point. One for the gentlemen, that.

God, I miss the heady days of logging in and out of ICQ (3536698204, oh yes*) to get someone to notice you, or changing the MSN Messenger tagline to some kind of meaningful lyric to really show you meant business. Such innocent times indeed.

Anyway, enough reminiscing. I wanted to do something with a rainbow theme as it’s Gay Pride month and well, after my post last week was followed up by the absolutely awful events in Orlando, I thought it might be a nice idea. So many lives lost because some knobhead couldn’t handle the fact he liked a bit of cock. Great work, you callous shitbag. I hope the 72 virgins waiting for you are all rough, hairy powertops with vein-canes like those snake draught excluders nanas used to put under the door.

Actually, you know, it’s shit like that that reinforces what I was saying about not caring what others think of you – life’s too bloody short. You never know what’s coming round the corner.

OK. I have no idea how to segue onto my recipe here so let’s literally draw a line under this post.


There we go. Right, I’ve used this rainbow painting thing before to make macarons and they looked amazing, but saying as Margaret Elnett doesn’t like us having flour, I thought I’d swap it for the lighter meringue. Also, when I took a moment to look into making ‘lighter’ meringues I happened across a very unusual substitute for egg whites that I just had to try out – chickpea water! You know when you buy a tin of chickpeas from the supermarket and all the chickpeas are sitting in that weird pre-cummy chickpea water? Don’t slosh it down the drain – oh no – use it for this recipe!

Of course, if you wanted to, you can use egg whites. Also, I have a feeling that these could be made with Stevia or whatever that fine granulated sugar is and therefore possibly syn-free, but fuck that. If you’re reading this thinking OH MY GOD I COULD USE SWEETENER well, take yourself to the foot of the stairs because that won’t bloody work. They come out looking like loft insulation and taste like anus. Use your bloody syns – so much better to have a little bit of something good than it is to have a tonne of something disgusting. Not that some people take that on board given the amount of ONE-SYN LEMON MERINGUES I see that look like something I’d use to scrub the grout in the shower with. Anyway, sssh. The original recipe for the chickpea meringues came from another blog, right here, so credit to them!

rainbow peppermint meringues rainbow peppermint meringues

to make rainbow peppermint meringues, you’ll need:

  • 125ml of chickpea pre-cum (i.e. the water from the chickpea tin) (real name for this stuff is aquafaba, fact fans!) or the whites of three large eggs
  • 6 tablespoons of caster sugar (18 syns)
  • a teaspoon of lemon juice
  • a pinch of salt
  • a few drops of peppermint essence, but don’t go mad
  • food dyes (see my note below)
  • an icing bag or a strong sandwich bag
  • two trays with greaseproof paper cut to fit

This recipe makes around 40 little meringues so for the sake of argument, we’ll say that each meringue is half a syn each.

A couple of notes:

  • I didn’t actually use peppermint essence – I used two drops of rhubarb and two drops of custard flavouring that I had from my cupcake days – feel free to experiment but don’t add too much extra liquid in
  • this won’t work with liquid dyes, they’ll all run – you need gels. You can buy these from supermarkets but I buy mine online right here – they are used for colouring massive amounts of icing and are very strong – use sparingly!
  • you can use a hand mixer or a stand mixer (this is the beast we have – fancy, right?)

to make rainbow peppermint meringues, you should:

  • preheat the oven to 100 degrees celsius – you’re cooking low and slow
  • get a decent bowl out of the cupboard or your mixing bowl ready – make sure the bowl is absolutely spotless, dry and grease-free – if you’re not sure, cut a lemon in half and run it around the inside of the bowl before giving it a good dry – the meringue will not form if there’s even a speck of grease or wet on there
  • tip in the chickpea water / egg whites, pinch of salt, lemon juice and whatever flavour you want and start mixing until it starts looking foamy
  • add half the sugar and keep mixing until soft peaks form
  • add the rest of the sugar and keep mixing – it will take a while but eventually you’ll be left with thick, glossy white peaks that stay put even when you remove the mixers
  • the old trick is to hold the bowl upside down above your head which is fine if you want anyone passing to think you’re a bellend
  • put the bowl to one side and concentrate
  • before you start with the colours, get your trays, put a dab of meringue between each corner of the greaseproof paper and the tray just to hold them in place whilst they cook
  • get a large glass or something to hold your icing bag (because we’re careless with money and buy any old tat, we actually have an icing bag holder – right here – take a look so you know what I mean) – you want to make it so you can paint the inside with dye and then tip the icing in, so anything that will hold the bag open will do
  • using something like a long piece of uncooked spaghetti, dip into the different food dyes and paint a stripe of dye up the inside of the bag – not a massive stripe, just a thin stripe – then repeat with whatever colours you want to use, leaving space between the stripes
  • DON’T WORRY – it’ll look crap at this point, but the finished effect is great, just make sure the stripes are spread out and go as far into the bottom as you can
  • gently fill the icing bag with the meringue then lift out, cut the very tip off the bottom of the bag, twist the tip to stop it leaking out and to push the meringue down the bag
  • gently squeeze the meringue out – onto the trays in small, gentle dollops – finish each with a little flick of the wrist to get the peak, and remember to leave a bit of space between them, though they don’t need much
  • pop in the oven for an hour or so then after an hour, unless they are soft to the touch and need longer, just turn the oven off and leave them in there until they’re completely cool

Serve!

Listen, that recipe sounds complicated but it’s an absolute doddle – the key is to paint stripes on the inside of the icing bag (or sandwich bag, whichever you’re using), cut a tiny bit off the bottom and pipe. You’ll cock up a couple of them, so what? Don’t go too mad with the colour though – discreet swirls look better than a psychedelic pigeon shit splattered on a tray.

You can either save these for yourself (tasty!) or take them along to taster night and make poor Sandra from Warrington look ashen-faced as she puts her Slimming World quiche down next to your wonder!

Here for the six slimming smoothies? Of course you are. But first…

It’s too hot. It’s too hot for a long post so damn it, I’m going to post the recipe for the six smoothies and go lie down in our air-conditioned bedroom, wailing and calling for Paul to turn me away from the sun.

I hate the hot weather. I really do. I can’t be done with it. I’m sweating like Josef Fritzl on Through the Keyhole / a nun picking cucumbers / a cat burying a shit on a concrete floor. Yes, that’s tasteful enough to put in. You should have heard the three I didn’t put in. I’ve always been envious of those folk who can seemingly bask in sunlight and thoroughly enjoy it. You have no idea how much I want to take my shirt off and eat ice-cream in the centre of town, but I genuinely think it would cause a riot. Whilst I’m not a huge fan of the type of bloke who goes topless the very second the ice warning dings off in his car, it must be a nice feeling. Perhaps I should get a copperplate-writing tattoo on my neck and turn my shoulders red. It ruins every aspect of anything enjoyable – good hearty stews get pushed to one side and replaced with salad, more salad, salad with a bit of salad on the side and salad-salad. I can’t face toiling in the kitchen for hours – even by proxy, given Paul is the one who does the cooking – so meals tend to get repetitive. Sex becomes a chore with everything sticking to each other like pulling warm bacon rashers apart. The roads become full of stupidly big cars trundling along at 25 miles an hour with a big plastic shitheap being towed behind them. I know it’s terribly fashionable to hate on caravans but look, they’re bloody ugly things and almost (unless YOU’RE a driver, you’re fine) always pulled by the type of people you know read the Daily Express, furiously circling the word immigrants in thick red pen with spittle on their lips. The men who are more nose-hair than bellend.

Pub gardens become full of braying donkeys taaaalking like thaaas and coughing at people for having the temerity to light up a fag. Beaches become awash with badly parked Dacia Dusters, dog poo and poorly buried Poundland BBQs with a half-life longer than Tellerium-128 just waiting to slice your foot open. You can’t open the windows because all of the neighbours are cutting their grass to the exact millimetre meaning the air is so thick with pollen I’ve only got to sniff daintily at it to make everything inside my face swell-up and turn me into John Merrick’s fun-house reflection. Birds singing from 3am in the morning until 2.58am the next day means only one thing – endless half-chewed birds being dragged through the cat-flap and deposited somewhere where I’m absolutely guaranteed to stand during the night when I get up for a piss. You’ve never known revulsion until you’ve felt half a sparrow crunch under your toes in a twilit bathroom.

But you know what really fills me with unbridled fury? When people say ‘OH BUT YOU’LL MISS THE HEAT WHEN WINTER COMES’. No! No I absolutely fucking won’t. I have never turned around in December and said ‘well yes Marie, this Christmas vista is quite charming but it could only be improved with the top of my head being sweaty, extensive chub-rub on my legs and sinuses like cocktail sticks’. I bloody love the winter! If I’m cold, I can put a jacket on. Well no, I’m Geordie, so I might deign to put a thin t-shirt on if the ends of my fingers turn black. There’s nothing you can do when you’re too hot except gripe, moan and whinge about it, even when you say you’re not going to do a long post. But god it felt good getting all that off my chest.

Let’s get to the six slimming smoothies, shall we?

BEFORE WE BEGIN – and partly because I’m feeling all bolshie from my moan about the heat – it’s up to YOU whether you decide to syn these smoothies. I don’t. Slimming World’s argument is that you should syn fruit if it is blended but there are no syns if you eat it raw. Ostensibly this is due to ‘changing the filling factor of the food’ or creating a situation where you might over-eat calories. Fine. That rule applies if you want to make orange juice – you couldn’t sit and eat eight oranges but you could easily neck the juice of eight oranges in one go. I keep reading from people in SW groups who say that blending releases the natural sugars, as though the strawberry is a spirit level bubble filled with syrup. Pfft. Perhaps that’s true. I don’t know. All I know is this: none of these smoothies use any more fruit than you could cheerfully and comfortably eat in a fruit salad. If it makes you feel better, don’t blend the fruit in a Nutribullet or similar, push it all in your mouth with your sausage-fingers and frantically chew it up before spitting it into a glass. Technically, according to SW, that makes it syn-free. PFFFFT. I’ve covered my thoughts on this tweaking nonsense before, too.

Anyway, because I’m a kind, loving blogger, I’ll give you the syns option IF you think you need them. These smoothies are lovely for a quick breakfast and full of health and wonder. Plus, they make a pretty range of colours! Let’s get started.

All of these smoothies have the same basic ingredients – half a small banana (2 syns), a few tablespoons of fat-free yoghurt and some ice. They make a delicious, thick smoothie. If you want it a little runnier, add almond milk (100ml is 1 syn, usually) or milk from your allowance. Adjust to taste. I’ve been very generous with the amount of fruit too below, so chances are the smoothies will come out lower syns anyway. Plus, you know, it’s fruit. There’s absolutely no bollocksy way that a HiFi bar is a better option at 6 syns. Bah! Remember: it is YOUR choice to make, not mine! Why not have the odd smoothie and see if it troubles your weight loss?

So, left to right, the six slimming smoothies are:

strawberry, cherry and raspberry – a handful of strawberries – (50g is 0.75 syn), a handful of raspberries (50g is 0.5 syn) and a handful of cherries (50g is 1.5 syns) = syn total including the banana is about 4.5 syns

peach, carrot and apricot – one apricot (50g is 0.75 syns), one peach (50g is also 0.75 syns) and one carrot (free) = syn value overall including the banana is 3.5 syns

mango and pineapple – 50g of mango is 1.5 syns, 50g of pineapple is 1 syn = syn value overall including the banana is 4.5 syns

spinach, mint and choc chips – 25g of dark chocolate chips (we used Dr Oetker which are 6 syns, so 1.5 syns a serving), 80g of uncooked spinach, 40g of mint leaves = syn total overall including banana  is 3.5 syns

blueberry – pretty obvious, chuck in a whack of blueberries (75g blended is 1 syn) = syn value including the banana is 3 syns

beetroot and blackberry – 0.5 syn for 50g of blackberries and I threw a tiny wee pre-cooked beetroot in there. Tell you what mind, don’t be alarmed when you go to the netty later and it looks as though you’re bleeding. You’re not. Promise. Syn value including the bloody banana is 2.5 syns.

Enjoy! I reckon these are a much easier way of getting fruit in at breakfast.

Work’s been super busy and I make no apology for the lack of posts. It’s all I can do not to tear my car into the central reservation of an evening. Sometimes I think I’d like to give up working and stay at home wearing the same underwear for four days on the trot (you know the type, male readers – change them when you’ve got to fold them with a karate chop) but I know it would end in ruin, not least because I couldn’t possibly be one of those people who prepare dinner for their husbands and push the hoover around inbetween arguing on Facebook in barely-English and playing Bejewelled. I watched fifteen minutes of Jeremy Kyle the other day and it was eye-opening – at least, eye-opening in the sense that I almost held open my eyes and poured hot metal into them rather than watch the show. I just can’t understand it. Going on TV all cankles-blazing to yell incoherently to your other half whilst some smug envelope-ripper alternates between blowing spittle in your face and cowering behind his security guards, who stand on the stage like they’ve fallen off the back of a lorry in a blizzard of creatine and can’t remember the syllable for ‘HELP’. It’s repellent. If you thought your partner was pounding himself into your sister / mother / crudely-drawn approximation of a vagina sprayed on the side of a bus shelter, why go onto national TV to get ‘the troof’? Is the lure of a night’s stay in a Travelodge with all the Taybarns’ beige food and Bellabrusco you can manage really so strong? It must be!

Oops. Side-tracked. Anyway, some GOOD NEWS for you readers. We finally managed to get around to updating our recipe page. This might not sound terribly exciting until you remember our previous bank of recipes was just a giant list and made for a rubbish read. So we put our thinking caps on, loaded up photoshop to make some snappy graphics, and split all the recipes out via their key ingredients. This means if you’re stuck for inspiration on what to do with your pork (PUT SOMETHING ON THE END OF IT) or your breasts (PUT THEM AWAY, THEY’RE FRIGHTENING), you can see at a glance what to make. Tonight’s recipe is a bit fancy but hey, if I can’t let my early onset male pattern baldness down once and a while, what can I do? It uses wild garlic which is growing abundantly outdoors at the moment. Take a walk into any woodlands and you’ll find, amongst the spent custard-catchers and dog muck, strong scents of garlic wafting up from the ground, also known as ramsons. They have big, smooth flat leaves and right about now, tiny white flowers. They’re distinctive but still, be careful – don’t be picking anything you’re unsure of, I can’t have anyone’s death on my conscious, not least because I don’t want my facebook feed full of wailing and ‘SHARE IF U MISS HER IGKNORR IF YOUR GLAD SHE DEAD’ pictures. Do step away from the well-worn paths so you’re not getting a plant with a lacquer of dog piss too. You can find more information here on the BBC website, which includes the fact it’s also known as Stinkin’ Jenny. Which let’s be honest, would totally be my drag name if I ever went that way.

Now look, if you’re not a fan of stumbling about in the woods looking for plants and risking life and limb in the search of a few leaves, then you can swap it out for spinach and some grated garlic, and we won’t tell. You can even lie and still tell your other half that you’ve been out hunting for pleasure in the woods, although you might want to clarify that this doesn’t mean you want to be back there later in the evening bent over a Vauxhall Astra’s bonnet whilst a barely interested plumber tries to fluff himself to half-mast. Is it just my world that requires these clarifications? Good lord. It really is worth hunting out the wild garlic though – for one, it’s free, which will appeal to all those misers who are tighter than two coats of paint, and secondly, it’s so very tasty! Admittedly, be careful not to do what I did when I was a young’un. Buoyed with the excitement of a walk in the woods, I filled a carrier bag with wild garlic leaves and flowers and took it into school to show my teacher, who, with all the enthusiasm of a teacher one week away from seeing the devil children out of the door for the final time, told me to stick it in my locker and stop showing off.

Showing off? Christ I know we were a poor family but I think even I could have done better than some bloody garlic on Show and Tell. I could have brought in my Kerplunk with the sticks missing, for example. Short game.

Anyway, it stayed in my locker for eight weeks, heating up nicely in the summer holiday, then rotting down into a putrid, gloopy mess which slicked down between the lockers and out onto the carpet. When they re-opened the classroom a couple of days before school came back the smell was so overwhelming that they had to put the classroom AND the adjoining classroom out of use for a week or so to air it out. It’s amazing, even then I had the ability to befoul a room with my odours. Anyway, who’s laughing now? Not the teacher, she smelled like a freshly cut dump for two weeks whilst the residual smell permeated her every pore. WHAT AM I LIKE. So yes: by all means pick the garlic, but don’t bloody store it anywhere you wish to breathe the air of. Oh, and if you’re concerned that a diet of flowers, leaves and garlic is going to leave you skinnier than a vegan’s dog, throw some plain chicken in there. It’s that easy. This makes four servings. It assumes that you’re using 4 x HEA (i.e. one per person/serving).

spinach and wild garlic pesto pasta

to make spinach and wild garlic pesto pasta, you’ll need:

  • 200g of spinach
  • a clutch of wild garlic leaves, washed, and a bunch of the flowers from the top
  • enough pasta for four people
  • 180g of ricotta (90g is one HEA, who knew?)
  • two tablespoons of good olive oil (12 syns)
  • 60g of parmesan (2 x HEA)
  • salt and pepper
  • chive flowers if you have them

to make spinach and wild garlic pesto pasta, you should:

  • cook up your pasta
  • boil your spinach and garlic leaves for a minute or two – you want it softened but not mush
  • blend the spinach and leaves together with the oil, pinch of salt and pepper, together with 50g or so of the parmesan
  • you don’t want it looking like soup – keep a bit of texture
  • add the ricotta and stir it through
  • stir into the pasta
  • decorate with chive flowers and garlic flowers and a bit more parmesan

This keeps really well for a lunch the next day.

Come on man straight in there with a bloody meringue joke, there’s literally one meringue joke in existence and that’s it. I’m not even sorry!

Tonight is a super-quick post because it’s Friday, I want to sit back, put my cankles up and rest my weary hide. I’m lucky in that I enjoy my job, god knows what it must be like if you hate it. Paul watches a lot of How It’s Made on the TV (really getting the use out of our Sky subscription, because who doesn’t want to know how pencil sharpeners are made or how they deliver 24,000 cherry bakewells a day?) and you’ll often see, amongst the fantastic machinery and wonderfully clever mechanical systems some little old dear spending eight hours troubling her sciatica and screwing toothpaste caps on or holding over a sheet of pastry. I’m not knocking anyone’s job because well, a job is a job, but goodness me, how do they do it? I get bored if I have to type the same word twice – I treat my emails like a round of Just a Minute. No repetition, hesitation or deviation.

I confess myself a little ticked off because I went to fill the car and promptly filled it full of Supreme Diesel. My car is diesel, so what’s the problem? Well, it offends my meanness to pay extra for something that I can’t see the benefit of. Nevertheless, I went in, handed over my monthly pay and the cashier, clearly sensing my distress, offered me a free copy of the Sun. He was clearly having a bad day. I took one, but only to be polite, the way someone at a buffet may take a spoonful of potato salad that the host has made only to drop it into a plantpot when their back was turned.

What a rag, though. Read what you like, it’s your life, but look at the front cover today – it’s not filled with the sad news that a plane crashed into the Mediterranean killing 66 poor buggers in what could be another frightening turn of terrorism, oh no, it’s got a mock-up of an olive-oil filled paddling pool with the frothy headline ‘The Day Free Speech Drowned’ and a couple of subheadings about how it goes against common sensibility. That should tell you everything you need to know about this shitrag.

We all know who it is, so please don’t be a funny bugger and comment on this saying ‘OMG ITZ THINGY’ because, well, don’t. What I can’t fathom is why anyone cares. The visual is troubling enough but can anyone genuinely say that the fact some happily married man and his husband had sex with another man? Why is it news? No-one was hurt (although they’ll be smelling like a greek salad left out in the sun for a few days), no laws were broken, it wasn’t even a Boy George whoopsy-daisy-chained-an-escort-to-a-wall moment. Some mouthbreathing anus from (I think) The Sun was on Radio 4 on this morning saying that it’s in the public interest because this artist is in the public eye. Well, here’s the thing, unless he’s felching someone out on my front lawn, I couldn’t give a toss – and even then I’d only mind because he’d be flattening our new grass. The journalist went on to say ‘AND HE HAS KIDS’ like having kids immediately renders it illegal to have sex and fun with your partner, which is ridiculous, and there was more than a hint of the kids being exposed to their seedy lifestyle.

Of course, the media printing the name of the children’s fathers and explicit, in-depth detail of their olive-oil-orgasms isn’t exposing them, oh no no no. That’s in the public interest. 

Honestly, they’re a bunch of twats. Feel free to print that, you Tiddler-Riddler-haired witch.

Oops! So yes, let’s get to the lemon meringue overnight oats, shall we?

to make lemon meringue overnight oats, you’ll need:

  • 40g of Quaker or store-brand oats – we use Quaker because we like them
  • fat free natural yoghurt
  • one lemon
  • 2  lemon mini meringues from Marks and Spencers – it’s 7 syns for the whole 35g packet and you get about 14 in there, so let’s hedge our bets at 1 syn for 2, feel free to add more, I don’t care, go wild in the aisles darling
  • lemon curd (1 tsp is 1 syn, I used two)
  • a pretentious serving jar or any old container

to make lemon meringue overnight oats, you should:

  • finely grate the lemon – not all of it, into the yoghurt – for once, this is something I can really say a microplane grater is great for – you get all the rind without all of the pith! Buy one here, you’ll use it lots and lots!
  • it’s really just a case of layering – lemon yoghurt on the bottom, then half the oats, then a spoonful of lemon curd, a crushed up meringue, yoghurt, lemon curd, oats and meringue
  • I like to squirt some of the lemon juice into the yoghurt because I’m a rebel, plus I’m used to the taste of sour yoghurt splashing on my tongue
  • once you’ve taken a picture, cooed over it and thought well isn’t that a treat, mix it all up and put in the fridge for the morning OR, eat it straight away like I did

Today’s post isn’t going to be played for laughs because something is on my mind. The NHS. Yes, today we’re not going to so much as wander off the path as set camp in the forest. See, I was driving home listening to Professional Chode Jeremy Hunt gabbling away in that smug, shit-eating way of his about reaching a deal with the junior doctors. I can’t abide the man. You know when someone is described as making your skin crawl? He makes me turn inside out like a salt-covered slug with shyness issues. I’m unapologetic in my view. He represents the very worst – perhaps second only to George Osborne, a man so smug that he probably has a Fleshlight designed in the vision of his own face delivering bad news – of what is wrong with who is running the country. But that’s another rant for another time.

See, I love the NHS. I truly do. I’ve mentioned before that I’ve had previous bouts of health anxiety and whilst that’s under control, it’s also meant I’ve had many trips to the doctors in my time. I’ve also got a dicky ticker to boot. Every single time I’ve been into hospital I’ve been treated with the utmost respect by all of the staff, who wear their smiles wide and work hard to bring reassurance and comfort to all. I was in there this morning for physiotherapy on my Klicker-Klacker neck. The doctor who I saw was wonderful, knew about my anxiety, took the time to explain what the problem was (and more importantly, what it wasn’t!) and even had the good grace not to recoil when I took my shirt off. I wasn’t rushed, I wasn’t made to feel like I was inconveniencing them, and I was told just to call up if things got worse. 

I hasten to clarify something – I’ve only been into hospital when I’ve actually had something wrong – I’m not a timewaster (though I’ll say this – don’t dismiss anyone with health anxiety as being a timewaster – take a moment to ponder what it must actually be like worrying and fretting that they’re dying). I’ve never had a single bad experience with the NHS, and it breaks my heart (just what I need) to see the systematic dismantling of it coming in via the back door.

And listen – I normally love things coming in via the back door. Of course there could be improvements, but what massive organisation can’t stand to lose a little fat? Plus if I have to sit through one more ‘GO YOU’ video in the waiting room where positive messages are beamed at me by someone more tooth than human I’ll cut myself. Least I’ll be in the right place. I’m going to hand over the typing to Paul, who can put our feelings in much better terms. Over to you, Fatty.

All we ever really hear about the NHS is that it’s awful, things are going wrong, mistakes are happening – I can only disagree with that entirely both with my own experiences and those I’ve seen of others (as a spectator and a cog in the machine itself). 

It’s pretty amazing to think of this giant institution being there in the background which we all take for granted. Can you imagine having to dole out some cash every time you wanted to see the doctor? I had a taste of it when we last went to Florida and suffered from a simple perforated eardrum. It cost nearly £500 for ten minutes with a mardy quack and a Tiny-Tears bottle of ear drops. £500! James started clutching his heart until I reminded him we’d need to mortgage the house to pay for the defibrillator. We paid it because I needed it – I was in agony and due to fly back, and fortunately had some travel insurance to cover it, but to imagine having that sort of thing drop into my lap on a normal day beggars belief and needless to say would mean I’d probably have to self-medicate with whinging and attention-seeking, and probably some Ben & Jerry’s too. 

This whole idea of the value of the NHS hit me today just as I was sorting out our diary – I’ve got a few medical appointments coming up with my GP and at the hospital (we’re at that age, you know) that are for things that are all down to my fatness, and James had a quick rub-down by the physio today for his wonky neck. I did a quick bit of googling about the subject and to have all of these things without the NHS (i.e. like in America) would have cost nearly £3,000. Isn’t that astonishing? I know there’s insurance and various schemes but overall, what a mess. 

Isn’t it great that all these services are offered for nowt, all because of our NHS. Now, I know – I annoy myself with these things – all this treatment is entirely my own fault and completely avoidable, and I am a little ashamed to have to be using up the resources of the NHS on me being too greedy, but on the other hand what a fantastic public service it is – to know that all of us, whoever we are, where we come from, what we do, can have the most fundamental thing – our continued survival – at our disposal. And, what a thing it is that we can be so lucky to have something so grand and wonderful that we take it for granted.

So I made myself a commitment today – to look-up to the NHS and champion it, and also defend it. James will be rolling his eyes at this (he hates it when I get political) (James edit: no I don’t, I just find it hard to get it up when you wear your Thatcher wig and flat shoes) so I’ll maybe soften it a bit – but we ALL need to defend it from those that want to take it away. It is OURS and we must keep it OURS and so we must all do what we can to cherish it, use it, and make sure it’s there for others in the future. So, from today, I’ll continue my weight loss journey so that I can get healthy but also reduce the strain on the NHS in the future – today it’s a fatty liver but if I keep on at the rate I am there will be all sorts of obesity-related conditions that come knocking at my creaky door (and knees – and I need them for….things…), and make sure I do all I can to protect and defend the NHS when I can. Not just in a rabble-rousing way but also to defend the very essence of the NHS and the culture that comes with it, because god knows we’ll miss it when it’s gone. 

Phew. All better. 

Let’s do the recipe, then. This salad more than filled us up as a main meal – we served two paprika chicken breasts with it, the recipe for which you can find here – but it would do as a side too. Plenty of speed and more importantly, plenty of taste. This makes enough for four people as a big side dish.

peanut broccoli salad

to make peanut broccoli salad, you’ll need:

  • 1 or 2 large broccoli, cut into florets (or use 600g tenderstem/purple sprouting broccoli like we did)
  • 1 tin of chickpeas
  • 3 spring onions, sliced
  • 2 tbsp reduced fat peanut butter (8 syns)
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp honey (2½ syns)
  • a drop of sesame oil (½ syn)

If you’re serving with chicken, use the Musclefood chicken. Not saying this to push the product because we get paid commission (although we do) – we forgot to defrost some chicken and had to buy a couple of breasts from the supermarket. They went in looking swell and tasty, they came out shrunken and dry as a dead dog’s dick. Musclefood’s chicken is tasty, doesn’t shrink and isn’t full of gristle that makes eating your dinner the equivalent of chewing on the ring of a condom. And look – yes you use syns, but this dish works out as 11 syns for the lot. I’ve divided it into four at 3 syns each, so I’m actually being over-cautious there. Don’t sack it off because it uses syns, that’s what they are there for. 

Finally, the inspiration for this recipe came from gimmesomeoven – we’ve taken it and made it SW-friendly.

to make peanut broccoli salad, you should:

  • reheat the oven to 200°c
  • drain the chickpeas well and place on a single layer on a baking sheet and dribble Worcestershire sauce over them – give them a shake to get them coated
  • bake in the oven for about 30 minutes – you don’t want them at full teeth-shattering level but a bit of crunch is a good thing
  • meanwhile, in a bowl mix together the peanut butter, rice vinegar, soy sauce, honey and sesame oil, loosen with a tablespoon of hot water if it’s too thick, until you reach your desired consistency
  • bring a large pan of water to the boil and add the broccoli
  • cook for a minute or two, or longer if you like it softer (amateur)
  • drain and place in cold water
  • when ready to serve, drain the broccoli and in a large bowl mix together with the peanut sauce
  • serve and sprinkle over the roasted chickpeas

I’m not surprised you want inspiration, nothing seems to strike fear into slimmers at Slimming World more than ‘we’re having a party next week, bring something along‘. Well, perhaps the words ‘let’s split the room in half, someone keep points, we’re going to do group activities‘. God I hate that. I’m too antisocial at the best of times but being forced to come up with a witty team name and shout out speed foods makes my throat hitch. For those not in the Cult of Mags, a taster night is where everyone is expected to bring along some food to share with the rest of the class and usually results in about twenty quiches and a box of grapes bought from the Co-op over the road by the lady who forgot it was on.

I struggle with taster nights because, as previously mentioned, I don’t like eating food when I don’t know how clean the kitchen it’s coming from is. Luckily I’m in a class now with people who do look familiar with a bottle of Ajax, but Christ, some of the sights I’ve seen in other classes, well I wouldn’t eat what came out of their kitchens even if it contained the antidote to a life-threatening poison I’d accidentally ingested.

Oh! A quick word. When a buffet is served up in class, try and allow the meek amongst us access to the food. A couple of years ago, in a class in Wakefield no less, Paul and I didn’t get any food because half the class – not the better half – dashed forward as soon as the ‘party’ began and formed one giant body of impassable bulk. It was like the Berlin Wall, only smelling faintly of chips. I’ve never seen food shovelled and devoured with such ferocity and I’ve seen Sicilian wild boars being fed. All I wanted was a (nothing-like-a) Ferrero Rocher and a few ‘JUST LIKE DORITOS’ crisps that I could have planed a door with. I had my revenge anyway – the wasabi peas that I put on the table thinking they were syn-free were actually about eight syns a handful. What can I say? My knowledge of the Mandarin language is a little rusty.

So, with all the above in mind, we decided to do a post on snacks, also fuelled by the fact it was Eurovision last night and we like to have a trough of food to work through whilst we watch our entry get annihilated. Before anyone says the UK will never win because ‘it’s too political’ and ‘no-one votes for us because of the war’, that was relevant maybe ten years ago and certainly isn’t now. Russia almost won it and well, that Putin’s been a bit of a tinker this year, has he not? We don’t win because we send absolute shite – po-faced, dreary, period-pain music with insipid staging and crap tunes. No doubt that Aldi Jedward can sing a tune and strum a guitar but they lost a singing competition where literally tens of people voted for someone else to be a winner. Why would that translate to success in the Eurovision Song Contest? EH? We need to send something amazing, with a massive chorus and an uplifting melody, not a song that would barely make its way onto the second CD in the Now That’s What I Call White Noise 87 compilation.

Anyway come on now, let’s get to the recipes, shall we? This is the spread.

Three caveats that I’m going to throw in before we begin:

TWEAK

  • some of these recipes are ‘tweaks’ in the truest sense of the word – especially the crisps – and it’s up to you whether you follow the rule of synning them or not – tweaks being when you use an ingredient in a way it isn’t intended to be used, such as slicing a sweet potato to make crisps. I will mention it where appropriate. My own view (which you can find here) is that it’s better to be eating something made from a healthy ingredient than a processed packet of crisps. It boils down to this – 100g of sweet potato is around 85 calories, 100g of Walkers crisps kicks in over 550 calories. I’ll be fucked if I’m synning sweet potato crisps at the same rate as normal crisps. If you feel the need to be all frothy and leave a comment castigating me for my temerity, please save yourself the finger strain, wipe the spittle from your lips and simply don’t bother – personal choice;
  • a couple of these recipes you’ll have seen before if you’re a long-time follower, but I thought it would be handy to put them all in one place; and
  • as usual, I’ve given syn values for a normal portion and I’ll mention when it uses up a HEA/HEB. If you’re eating the entire buffet, you’ll need to think about how many HEB/HEA’s you’re using! It’ll make sense as we go along. Basically, each recipe stands on its own. Right? Right.

taster night ideas #1: sweet potato crisps with four different types of houmous:

to make the sweet potato crisps, you’ll need:

  • a couple of big sweet potatoes
  • spray oil – a few squirts of Filippo Berio’s olive oil is only half a syn, and that’s all you need
  • chinese five spice

to make the sweet potato crisps, you should:

  • to make the crisps, use a microwave, it’s much easier
  • get a big old sweet potato and cut it to uniform thin slices – this is where having a mandolin slicer comes in very handy, because it’ll take no time at all to do the slices – buy one here and never look back, not least because it makes your food look great when it’s all uniform
  • arrange the slices on a plate, squirt with some spray oil, dust with chinese five spice (or indeed, any flavouring you want) and rub it in
  • microwave on full power – it usually takes about six minutes, but keep checking every couple of minutes, and once they start to look dry, turn them over
  • keep a proper eye on them mind, because they can burn easily once they dry out
  • once done, take them off the plate, set aside, and do the next batch

to make the four way houmous, you’ll need:

  • a few small tins of chickpeas
  • garlic cloves
  • fat free cottage cheese
  • a lemon or two
  • sea salt

to make the four way houmous, you should:

  • the basic houmous recipe is simple enough – for enough to fill one of those little square bowls above, you’ll want to use one small tin of cooked chick peas (syn free), a nice round tablespoon of fat free cottage cheese, a garlic clove, pinch of sea salt and some lemon juice. Blend it together, adding a little more lemon juice if you like it runny or keeping some back if you prefer it chunky. It’s up to you. You will save yourself so much time if you get yourself one of these little express choppers that Delia Smith was always going on about between tumblers of Scotch – you can find one here – it’ll make houmous in no time
  • to make the different variations, you just add a few ingredients:
    • lemon and garlic (add an extra couple of garlic gloves, a squidge more lemon juice and decorate with finely grated lemon peel) (don’t take the pith, literally, as that is very bitter – just the top layer, please)
    • basil and parmesan (10 torn basil leaves, 10g of shaved parmesan, bit of salt) – up to you if you want to syn such a tiny portion of parmesan but bearing in mind you’ll be getting what, 2.5g of it, I wouldn’t bother
    • pickled red cabbage (just a few chunks of pickled red cabbage and some of the pickling vinegar added to give it colour
    • paprika and sun-dried tomato – I chucked in 1tbsp of sundried tomato paste (1.5 syns, but again, through the laws of dilution, it’s up to you if you syn it)

Easy! Of course, if you don’t want to fart on making the crisps, just chop up some peppers, carrots and cucumber and use them instead to dip into your houmous. If you want our little serving dish, you guessed it, it’s on Amazon!

This makes enough for 36 sticky teeny tiny teriyaki tasters (fnar fnar), if you make them bigger, adjust the syns per ball. There’s 12 syns in the overall recipe.

  • in a large bowl mix together the pork and the beef mince with the egg yolk
  • using a tablespoon, scoop out a spoon-size ball and roll into meatballs – do this for all of the mixture (you’ll need about 36 – if you want, you could weigh out each ball at around 27g each…but life’s too short)
  • heat a large pan over a medium high heat and add a couple of squirts of spray oil or, urgh, Frylight, bleurgh
  • cook the meatballs until browned all over and cooked right through – you WILL need to do them in batches
  • place cooked meatballs onto a baking sheet and place in the oven to keep warm whilst you cook the rest
  • when done, mix together the soy sauce, white wine, sherry, honey and ginger in a small jug and pour into the same pan you used to cook the meatballs and reduce the heat to medium
  • cook for a few minutes until the sauce has reduced and thickened
  • add the meatballs back into the pan and stir carefully to coat – I find it easier to tumble the meatballs in and then pick up the pan and gently slosh them around rather than trying to stir with a spoon
  • serve on cocktail sticks and sprinkle over the seeds – don’t sweat it if you can’t find these, you could easily leave them off and that brings the syn count to 1 syn for six – even better – but they look so pretty with the seeds on

  • 500g turkey mince
  • 1 onion (grate half of it, chop the other half)
  • 1 carrot, grated
  • 3 spring onions, finely sliced
  • 2 cloves garlic, minced
  • 2 tsp fish sauce
  • 2 tbsp soy sauce
  • 2 tsp of sriracha, (1 syn) (you can use any old hot sauce)
  • 1 egg
  • 25g panko (4.5 syns) (or use breadcrumbs from your HEB allowance)
  • ½ cucumber, thinly sliced
  • 5 radishes, thinly sliced
  • 1 tsp rice vinegar
  • 100g quark

to make Bánh Mì balls with a spicy dip, you should:

  • preheat the oven to 200 degrees
  • in a bowl, mix together the turkey mince, onion (grated and chopped), carrot, spring opnions, garlic, fish sauce, soy sauce, 1 tsp of sriracha, egg and the panko until combined
  • roll into 1″ size balls and place on a baking sheet lined with greaseproof paper
  • cook in the oven for twenty minutes
  • meanwhile, in a small bowl, mix together 1 tsp rice vinegar, 1 tsp sriracha and the quark to make a dipping sauce
  • slice the radishes and cucumbers as thinly as you can and skewer one of each onto a cocktail stick with the meatball

No need for a full recipe here, really. Take whatever bread you want from your HEB – we use Kingsmill Crustless Wholemeal bread, which you can have three slices of. Cut nice circles out of them, remember you eat with your eyes.

  • for the egg salad, boil up four eggs, break them up with a fork, add a tablespoon of quark, lots of black pepper, a chopped tomato and some spring onions
  • for the tuna – well, we’re old school, we just like tuna mixed with vinegar and served with cucumber. You could splash out and add a bit of Quark to bind it, I suppose…

to make baked new potatoes, you’ll need:

  • 1.5kg small salad-type potatoes
  • 100g fat-free fromage frais
  • 30g parmesan (1x HEA)
  • 4 rashers of bacon, all visible fat removed
  • 4 spring onions, sliced
  • chives

to make baked new potatoes, you should:

  • preheat the oven to 200 degrees (or an actifry with the paddle removed is just as good – Amazon are selling them for £125 at the moment too!)
  • prick the potatoes with a fork, spray with a little frylight and bake in the oven (or actifry) for about 45 minutes
  • grill or dry-fry the bacon until crispy and chop into small pieces
  • mix together the fromage frais, parmesan and spring onions and set aside
  • when the potatoes are cooked, leave to cool for about ten minutes
  • make a cross in the top of each potato and squeeze the bottoms to open them up
  • spoon in a little of the fromage frais mixture and top with bacon pieces and chives

Please note: that’s an old photo, it’s actually now 4 syns for all the balls, but you’re not going to eat them all yourself anyway, surely? I’ll nip back in time and change the photo later.

Not worth making a full recipe breakdown for this, because it’s so, so easy. I use two packets of Ainsley Harriott’s spicy sensations couscous, which come in at 2 syns per pack made up with water (so don’t be adding butter, you cheeky buggers). Add the appropriate level of water (whatever it says on the pack) and leave to absorb. Fluff with a fork. Beat an egg and mix it into the couscous, then squeeze as many balls as you can out of the mixture. Pop onto a tray and stick it in the oven on 150 degrees for an hour or so – you want to ‘dry’ them out. Cooked low and slow, you’ll be laughing. For a dip, make tzatziki – greek yoghurt (I use Tesco Finest 0% fat – no syns) mixed with cucumber cut into tiny cubes and mint. Stir, chill, eat.

Again, no need for a full recipe. We mixed 25ml of gin with a glass of diet tonic, poured it into a cheapy ice-lolly mould like this £3 from Amazon and added a slice of cucumber. Between six, it’s half a syn each. Of course, it’s easy to customise this, put your pint of whisky in, add lime, add fruit, don’t add alcohol, do what you like!
