perfect syn free egg fried rice

Tonight’s recipe is syn free egg fried rice – I’m working tonight, alas, so it really is just a recipe for you – but what a recipe! Paul can’t cook rice for the life of him. He just can’t. There’s not many things he can’t do, but we can safely add cooking rice to other items such as bending over without tipping over and climbing more than two flights of stairs without his Fitbit melting off his wrist. We have tried many times to perfect this rice dish but each time it’s ended up soggier than a submarine’s number plate. The amount of times we’ve hurled white mush into the bin and brought out good old Uncle Ben, you have no idea. So, research was needed, and after a bit of digging on the internet it turns out you have to use bone-dry and cooled white rice. Who knew? We chucked in a load of veg and we were on our way! Think of us next time you need a side dish, won’t you?

syn free egg fried rice

to make syn free egg fried rice, you’ll need:

  • however much white rice you want, cooked and cooled all the way through
  • a big handful of peas
  • a carrot, julienned – we discovered this wee thing on Amazon which GASP makes tiny strips of carrot – so easy!
  • one large red pepper – cut into tiny chunks about the size of the peas
  • two eggs – beaten
  • one red onion, sliced fine
  • one bog standard cheap-ass onion, chopped
  • any leftover broccoli you might have, also into tiny chunks
  • a tiny knob of ginger about the size of your thumbnail, minced using one of these bad boys 
  • two cloves of garlic – see comment above
  • LOW-SALT soy sauce
  • a couple of rings of pineapple if you really want to push the boat out

Oh and BONUS, you can cook it in one pan.

to make syn free egg fried rice, you should:

  • prepare all your veg as instructed above, taking only a moment to wipe your brow and buy a grater, mincer or julienne peeler
  • get your big pan nice and hot and squirted with a few sprays of Filippo Berio or other spray oil – I add a few drops of soy sauce here too
  • throw in your eggs and scramble them – really go at them with a wooden spoon
  • once they’re nearly cooked, remove them as best you can into a dish, and throw in the onions, garlic and ginger (not finger, as I originally posted, otherwise you’ll get a spicy grot-slot) and allow to gently soften
  • throw in the rest of your veg and pineapple and a good glug of soy sauce and allow to soften
  • add the rice, stir, and warm it through completely
  • once everything is hot and mixed, add the scrambled egg, and stir well!

Serve topped with some cut spring onions. Easy. The key to this recipe is getting everything a nice uniform shape and making sure everything is cooked through.

brussels sprout and bacon risnotto

Ah yes, good old brussels sprout and bacon risnotto – it’s our way of making risotto without having to stand over your pan stirring furiously and blinking back hot tears of lament over what your life has become. For me, life is just too short to stir stock. Who else is going to sit simmering with rage at another advert with a twee vocal cover version of a song? Bloody Battersea Dogs’ Home and their I Only Want To Be With You shite. Bah!

No time for length tonight as it’s been a long day sorting out presents for Old Mother Hubbard. 

Actually, my poor mother gets a lot of stick on here, but she’s really quite wonderful. Helpful, pleasant, decent haircut – all words that she’s used to describe me at times. We’re not one of those families that sit around over dinner every Sunday laughing gaily and talking about the neighbours, but we’re close and I couldn’t do without either of them. So: mother, I’ll put this on here because you’re too tight to buy your son’s book – happy mother’s day. Enjoy it, and remember to smile, for it is I who chooses the care-home.

Tonight’s meal uses a much-maligned vegetable – the sprout. It’s a shame these little balls of farts don’t get more love – they’re great for you, cheap to buy and very versatile. Yes, they smell like a church cushion when they’re cooked and admittedly, they look like the Jolly Green Giant’s haemorrhoids, but still, make do. If you’re not a fan still give this dish a go – it doesn’t taste like sprouts, but their nutty flavour seeps into the dish. 

This recipe very easily serves four. You’ll need a decent pot to cook it in though, or at least a good non-stick pan. I’m telling you, buy a Le Creuset casserole pot. Yes, they’re expensive but we use ours every single day and it remains entirely non-stick and wonderful to cook with. Plus, lifetime guarantee AND you get to be a Barry Big Bollocks when anyone comes around. What price can you put on that? Actually, £110, reduced from £170, right here at the time of writing. It’s quite honestly the best thing in our kitchen.

to make brussels sprout and bacon risnotto, you’ll need:

  • 250g of peeled brussels sprouts (we just buy them ready done from Tesco, oh the extravagance!)
  • eight medallions of bacon (did you know you get fabulous, lovely bacon in our Musclefood deal? Why not have a look? No seriously, come on, look!)
  • one large white onion
  • one minced garlic clove
  • as many peas as you dare
  • 350g of risotto/arborio rice
  • 900ml of chicken or vegetable stock
  • pepper and parmesan (taken from your healthy extra at the end)

to make brussels sprout and bacon risnotto, you should:

  • prepare the sprouts by slicing them thinly, whether you use a knife, mandolin slicer or a food processor
  • slice the onion and bacon into small chunks
  • tip the onion, bacon, sprouts and garlic into a good, solid non-stick pan and put on a medium heat, allowing everything to cook and sweat nicely
  • once your onions are golden and the bacon is cooked, tip in the peas and the rice
  • stir the rice through the juice of the onions and bacon, but don’t over-stir, you’re mixing delicate flavours and good wishes, not cement
  • pour in the stock and immediately cover the pan – cook for twenty minutes on a medium heat (8 on our induction hob, which goes to 15) – don’t lift the lid to peek, don’t cheat
  • after twenty minutes take a look – if you feel it needs a bit longer, go for it, but remember it’ll cook away for a bit without any heat
  • serve with pepper and parmesan
  • if we’re feeling particularly filthy, we’ll stir in our HEA allowance of soft cheese or a good dollop of mustard

one-pot sausage gnocchi bake

Recipe for sausage gnocchi bake below. You’re going to love it.

OK, so only a quick one tonight – and I’m not entirely sure we haven’t already posted this. But look, it doesn’t matter. It was wonderful, and frankly you can forgive me any old shite when I’ve covered it in melted cheese. Half of  our dishes come out of the oven looking like a burnt knee, but through the wonders of careful photography and judicious cropping, you just never know. Perhaps if I presented it on one of those fancy Slimming World plates you can buy, where someone has scribbled all over a nice white plate with some felt-tips to show ‘what you should eat’ – a concept immediately defeated when you then proceed to cover the plate with your dinner, I presume. I don’t understand the concept of drawing out ‘what I should eat’ on my plate. It’s the foodie equivalent to scratching the TV guide into the glass of your television screen.

Actually, I saw one of these plates advertised on a facebook group the other day and asked what she meant by ‘for show only’, given I was envisioning someone having it on their mantlepiece like a decorative clock or one of those god-awful ‘jumping dolphins rendered in plaster of paris’ statues that everyone had in the nineties. She advised me that it meant it couldn’t be washed or indeed, eaten off. To me, that breaks the two fundamental rules of a plate. It’s definitely not something you’d keep for best. 

Before anyone starts, I’m not knocking the lass for being entrepreneurial and flogging a few plates – all the very best and good luck to her! Nothing but chipperness for those who make their own way in the world.

But honestly, Paul, if you’re reading this, I’m telling you now: if I get a decorated plate, bloody chalk-heart board or a food diary with a cupcake and twattish inspirational message on the front for Christmas, I’m going to bite your cock off and set it on fire.

Speaking of nonsense items that I’d sooner throw into the sun than have in my house, we seem to be locked in a battle of wills with our local Kleeneze distributor. Every few weeks he pushes a tatalogue of nonsense through our door with the passive aggressive note that he’ll be back within a few days to pick it up. We immediately put it somewhere out of sight so we don’t succumb to temptation and end up buying all manner of plastic shite for the kitchen or a portable urinal. A portable urinal for men. Haway. The WORLD is a portable urinal when you’re a guy. Fair enough a shewee allows a lady to have a dainty tinkle instead of grunting around a ditch squatting like a shitting rhino, but a male version? I once, in my more athletic and skinny days, pissed out of a moving car because we were late for a ferry. Don’t worry, we weren’t boarding the ferry at the time. And I wasn’t driving. Dangerous when I think about it – an errant branch whipping into my knob at seventy miles an hour could have really changed how my life turned out. 

Anyway, he always ends up knocking on the door and asking for his tatalogue back, and thus begins a hunt for the offending item and a request that he doesn’t deliver to us anymore. But he never listens. Each time we spend a bit longer looking for it, but he still doesn’t get the message. I’m not enough of a bastard to rip the catalogue up (plus our shredder is on the blink – I wonder if Kleeneze sell those awful scissors with four blades that ‘replace a shredder…maybe I should look…just once) – after all, it’s someone’s business, but I’m telling you now, if it continues, I’ll be putting a VERY passive aggressive terse note on their facebook page. It’s the very British thing to do. He needs to be careful – remember we’re always naked in this house (seriously, it’s like the video for Sweet Harmony by The Beloved viewed through a heat shimmer), next time he does it I’m going to put the offending tatalogue in my bumcrack and poke it around the door.

 

Ah well. Listen, here’s tonight’s recipe, before I get carried away. This makes enough for four if you’re serving it with a side, or two geet big fatties like us.

sausage gnocchi bake

to make sausage gnocchi bake you’ll need:

  • 6 sausages, casings removed (you can use the Slimming World sausages if you MUST, but why not save them for what they’re really for – sucking every last bit of moisture from the air and summoning evil? Bloody awful things. GO TO MUSCLEFOOD INSTEAD MAN)
  • 400g gnocchi (6 syns, so between four, 1.5 syns)
  • 1 garlic clove, minced
  • tin of chopped tomatoes
  • 1 tsp mixed herbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 75g Quark
  • 140g light mozarella ball (HexA x 2)

to make sausage gnocchi bake you will need:

  • heat a large non-stick frying pan over a medium-high heat, using a bit of oil or your Frylight
  • add the gnocchi and fry gently until the sides are golden – keep them moving though, they can catch easily. This will take about eight minutes or so, then remove from the pan and set aside 
  • in the same pan, add the garlic and the sausage meat and cook until browned – remember to keep breaking it up (a masher works well for this) and then remove from the pan and set aside – I like to put it in the same bowl/plate as the gnocchi to keep it warm
  • in the same pan again add the diced tomatoes, mixed herbs, salt and pepper and cook for about seven minutes, stirring occasionally until it’s thickened down
  • reduce the heat and add the quark to the pan, as well as the gnocchi and sausage meat and stir well to mix
  • scatter the mozzarella over the top and keep on the heat until it has melted – you can also put it under the grill for a little bit if your pan can handle it to get it nicely browned and bubbling
  • serve

I’ve just received a bastard speeding ticket from Corsica! We went in bloody September. You can imagine that I’m impotent with rage, although, fair dues, I was speeding – 78km/h instead of 70km/h. I’m tempted to appeal against it on the grounds that there was no possible way the car we hired could get anywhere near 78km/h – it struggled backing us off the driveway let alone speeding through the Corsican roads like we’d stolen it. Bah.

The last time I got a speeding ticket was for doing 53mph in a 50mph zone and it was all very British – slightly apologetic letter, strong grounds of appeal, nip along to a speeding awareness course and don’t do it again. This French ticket was full of French disdain – every last word in French, four different sheets of A4 in tiny writing with lots of aggressive red underlining – I can imagine that some paunchy-faced chief in an administrative office in deepest Roubaix scoffing at my infraction, spitting a wad of Gauloise-laced phlegm into a bin and ringing AVIS demanding my credit card.

Ah well. I was the one speeding, so I’m the biggest arse of them all. That’s one thing I can never get my head around – people who moan about getting caught speeding. You’re speeding! We all do it – I’m terrible for it – but you can’t complain about getting caught when you’re actively breaking the law. It’s not like taking an extra biscuit from the packet – you do run the risk of turning an old biddy into human jam on the front of your bumper if you lose control.

The speed awareness course was surprisingly good fun, though. The car-park outside was rammed full of Vauxhall Insignias, Audis (shock!) and various shittily-modded Acne Carriages belonging to the chavs. Don’t get me wrong, there are certainly better things to do on a Thursday morning than sit in a hot room in a Holiday Inn with a load of chavs and salesmen, but the course itself was interesting enough. I thought I was going to have three hours of being told I’m a naughty boy for being a bit savage on my accelerator but once we got past the awkward talk and the dishwater coffee it was alright, though of course we had to spend a ridiculous amount of time introducing ourselves like we were on a shit gameshow.

Anyway – I’ve paid it, so I’m just going to sulk about it all night now. Here’s a recipe for any spare chicken you may have sitting around – it’s not exciting, it is just chicken and chips…but still! To make it a little more Slimming World friendly, chuck in some crunchy veg with the chicken. This is the kind of thing we have when we don’t want to cook – it’s just make a sauce, pour on, fry off. Easy!

to make sticky chinese chicken, you’ll need:

and to make sticky chinese chicken, you should:

  • mix all of the ingredients except the chicken together in a bowl
  • heat a large frying pan over a medium-high heat and cook your meat according to how you like it – add vegetables towards the end if you have some
  • when everything is cooked, pour the sauce mixture over and bring it to a boil – this may only take a few seconds!
  • turn the heat down slightly and let the mixture boil and reduce
  • when everything is nicely coated and sticky, remove from the heat and serve immediately

Serve with chips, rice, veg…anything. Go for it!

no fussin’ tomato soup

Watching old episodes of 999 instead of doing what I’m supposed to do tonight, and I love this classic bit of British understatement. A chap who was a passenger in a stunt plane had a calamity when, at 10,000ft, during a loop-de-loop, his chair worked loose and he FELL OUT OF THE PLANE. He survived, and the show cut to him talking to camera where he says ‘I realised something had gone wrong when I wasn’t in the plane anymore’. You think?! Jeesus. If that was me you’d have been able to spot me across three countries as my carcass, and the stream of faeces where I’d shit myself, fell to Earth.

A friend in our facebook group pointed out something today – we’ve been going for OVER A YEAR. We started this blog on September 20, 2014 – quick, go back and look at our lack of humour and earnest WE WILL LOSE WEIGHT THIS TIME prose. The first post is right here. Looking at the blog stats, we’ve published 250 posts and I’ve had over 2,000,000 views – that’s averaging over 5,000 views a day, and recently, it’s been sitting around the 7,000 – 8,000 mark. We’ve got twenty two thousand followers on Facebook, 7,000 or so in our group and over 3,800 folks who have actually signed up to let me enter their inbox on a daily basis. If the average post is around 1,000 words which is what I am for, that means I’ve sat here and typed out 250,000 or so words about us two fat buggers who don’t really do anything at all. 

To me, that is absolute fucking insanity. I’ll tell you why. 

We never see anything through. Our house is a shrine to unfinished projects, passing interests and enthusiastic but ultimately pointless endeavours which have bubbled away to nothing – for example, we have:

  • a £200 GPS receiver which we bought to go geocaching and then put in a drawer when we realised we didn’t have the batteries for it – never been used;
  • ten disco caches – essentially kooky little containers that we were going to hide all over Newcastle…and didn’t;
  • a second computer which we bought to help us enter competitions faster when we were going through our comping phase;
  • a £450 stand mixer when I was going through my ‘baking’ phase (although to be fair, I’d love to bake, it just makes me too fat);
  • two wonderful pairs of walking boots which still have the tags on;
  • see above, but with wellies;
  • see above, but with trainers, gym kit, a gym bag;
  • a scrapbook which contains two Metro tickets and a receipt for M&Ms;
  • a year long contract with David Lloyd which we used for a month – though in our defence we quickly grew tired of pipe-cleaner men strutting around the place looking at themselves in the mirror;
  • a pair of brand new bikes;
  • jigsaws, after Paul saw a nice one in a dentist’s reception and thought he’d give it a go;
  • a full suite of decent DIY equipment, which we studiously ignore…

…and so on. We started the blog with the aim of rattling off a few recipes and giving me an outlet to practice my writing (I used to have another blog about health anxiety called shake, rattle and droll, a title I was so proud of it was almost a shame to cast off my health anxiety and thus stop using it), and here we are a year later with over 200 recipes and lovely folk all around the UK, and indeed outside the UK, sending us lovely messages and reading about Paul’s helmet on facebook. It’s a mad world. 

Anyway, the reason for all this babble is just to say – thank you. Seriously. I’d write and chuckle away to myself even if no bugger in the world read what I wrote but the fact that so many do really cheers my butter-filled heart. I might come across as a brassy, bolshy, confident tart on here but I’m actually quite shy. Put me in a lift with strangers and I’d prefer to stick my finger in the exposed wiring than make ‘polite conversation’. So each comment, each like, each share, each thank you – that makes it worthwhile. OH GOD I’M WELLING UP.

to make syn-free tomato soup:

  • as many ripe and squishy tomatoes as you can get – go to a market at the end of the day and you can pick up crates of the buggers for next to nowt;
  • one strong onion;
  • one small potato;
  • two cloves of garlic

And that’s it! All you need to do is to slice the onion, fry it in a little oil, add the cubed potato and grated garlic and then chop up all the tomatoes and throw them in a pan. You don’t need to add stock, the tomatoes will have enough liquid in (if they are ripe) to make a soup – and leave to cook low and slow for as long as you can. Better it takes four hours on a low heat than one hour on a hot ring. Haha, ring. Just keep an eye on it. When it comes to serving, just blend it with a stick blender and if you’re boring or you don’t like your poo to look like a sesame bun, sieve it to get rid of the seeds and skin. By adding nothing but simple things, it tastes so much nicer.

amazing ham, cheese and pea gnocchi

I know what you’re thinking. James, you promised me a post a day, and here we were yesterday crying into our Margaret Miles-Thingy tea-towels and waiting all night long. Well listen, it’s not the first time I’ve left someone unsatisfied long into the night and it won’t be the last.

See, I’m trying to be more social. Remember me saying how lazy I am a few posts back? That also applies to social events. I get asked to go to various things and usually decline because I’m a) shy and b) incredibly fond of lying on my sofa with a cat in my back hair and Paul squeezing my feet. It’s what I live for. But see I could die tomorrow and I don’t want people remembering me as the person who was always “washing his hair”, despite having roughly the same amount of hair found on my head as you’d find in a Phil Mitchell tribute annual.

So in the spirit of socialising and trying not to die alone surrounded by cats and a stuffed Paul carcass grinning lopsidedly at me like a boss-eyed Humpty Dumpty, I went along to a pub quiz with a couple of friends from work and two other ladies, who turned out to be lovely. I’m glad I went, not least because it was hilarious.

For a start, it was awash with teams taking it far too seriously. I love this. It’s a fucking pub quiz – you’re answering questions about Miley Cyrus, if you get it wrong you’re not going to be taken outside and shot by the Gestapo. The prize was £47! Even so, there was table after table of people in dire need of a wash and some love furrowing their brows and furiously debating which two countries has the most nuclear reactors. For the record, we got that answer correct – USA and France. I watch a lot of Discovery Channel.

That said, we didn’t win. We came…second from last. We did however win an extra point for having the best team name: Bender and the Jets. I think you’ll agree that is awesome, and I’m allowed to say bender, I’ve earned the right – I’ve quite literally taken one for the team on that front. Or back. It’s certainly better name than We’re The Winners or Quizmasters. Neither of those teams won anyway, so egg on their face. It’ll go well with the cum stains on their trousers.

Oh, I also totally pulled. Now it goes without saying that I wouldn’t anyway, but even if I’d been tempted by the suggestion, his face put me right off. Some drunken arse, easily into his sixties and with a face like a smashed crab, asked me if I wanted to know the answer to who sang ‘The Joker’ and then licked his lips lasciviously at me like he was the best offer I’d get all night. I’d get more aroused getting chatted up by the cigarette machine. Seriously, he looked like that guy from The Fully Monty who was in Corrie with a perm:

I wouldn’t care, we got the answer wrong, so maybe I should have just succumbed to his greasy wiles. Boke.

Finally, our group got ‘hushed’ and then told to be ‘bloody quiet’ by some gangster granny with a nicotine fringe and a mean look about her because we had the temerity to talk DURING THE INTERLUDE. She was trying to play card bingo like the top prize was a couple of extra month’s on a drip – I’ve never seen playing cards turned over with such ferociousness. She turned around again and said ‘AH’M TRYING TO HEAR THE ANNOUNCER’ (I could barely hear her through all the phlegm in her voice trying to scramble out) and we were kowtowed into silence. I wouldn’t care, it’s not as if we were tuning up a brass band or felling trees, we were just talking normally (perhaps with a slight bit of shrieking from me, I’d had liquor). Mardy cow. Oh! And she was cheating. She had her phone out during the countries round. The temptation for me to lean over and whisper ‘Do you mind not cheating so loudly, I’m trying to hear the announcer’ was almost too much.

Card bingo, by the way – you get given a few playing cards, the Quiz Man has a full deck (unlike some of the audience), he announces them randomly and when you’ve turned over your lot, you win. Well, you don’t win. You lose. EVERYONE loses at bloody card bingo.

In all though, a really good night! 

Oh – we lost 4lb between us at class, but that’s almost an afterthought these days. But let me tell you what ISN’T an afterthought – this recipe. It was amazing – it couldn’t have been better even if it had been served of the bumcheeks of the fatter brother from Prison Break. Easily one of our favourite recipes yet!

ham and cheese gnocchi

It doesn’t look so pretty on the plate, and that cheese top looks like the kind of knee-scab you’d pick off in the bath and secretly eat. I know what you’re like, don’t try and gussy yourself up for me.

you’ll need these:

  • 250g of syn-free ham – we used the thicker cuts you can buy in a pack from the supermarket, but really any old shite will do
  • one chopped onion
  • 250g of quark (taste the flavour!)
  • clove of garlic (minced) (yep: get one of these!)
  • 100g of frozen peas
  • 1 x HEA Mozzarella
  • 1 x HEA strong cheddar
  • 400g of gnocchi (6 syns, and this serves four) 

and you’ll need to do this:

  • gently cook the onion in a large pan over a medium heat in a little oil until soft
  • add garlic and stir until it starts to turn golden
  • add the ham to the pan and cook until warmed through
  • add the frozen peas to the pan and stir
  • add the quark and continue to stir until it loosens and makes a thick, creamy sauce – add a few tablespoons of water if it becomes too thick
  • add the gnocchi and simmer for 2-3 minutes
  • once the gnocchi is soft, remove from the heat and evenly spread out the cheese over the top
  • place under a medium grill until the cheese turns golden
  • serve!

Now, what we did at this point was to put it in the oven, with the oven still warm from the grill but not switched on, and left it to sit for an hour or so whilst Paul came and bundled me into the car. When we came back, the gnocchi was almost broken down and the sauce really sticky – it was delicious. However, that might not tickle your buds as it were, so feel free to stick to the script.

Technically, you should probably serve with a salad full of superfree stuff. But hell if you can’t let your hair down every now and then…

spiced lamb mince and potato aloo kheema

Firstly, a massive and genuinely heartfelt thank you to everyone for the lovely comments yesterday in response to my article about my nana. I can’t reply to them all but please know that they were read and enjoyed greatly. She’d have hated (but secretly loved) all the fuss. She was one of those people who would say she didn’t want anything for Christmas and then sit there with a face like a slapped arse until you got her present out. I’ll miss her at Christmas – we used to joke on amongst ourselves that she was like Dr Who – always regenerating at Christmas despite us saying for a good ten years that ‘we’d better not go away this year, it’ll be her last’. Ah well. Your comments were delightful, inspired and so very kind, and it made me feel better that I was able to encapsulate even the smallest bit of what she meant to me. That said, if she wasn’t currently on ice down at the morgue, she’d be tunneling halfway to China now spinning in her grave at what I’m about to show you.

I have literally become the thing I hate most. Just look.

I’m drinking a mixed drink from a fucking jamjar, like some pretentious rah-yah in one of those bars where they take a perfectly affable building, cover it in veneers and turn off all the lights so you have to read the menu by the cherry of a liquorice-papered, prison-thin American Spirit roll-up. You’ll note however that the jamjar is a proper Kilner licenced jar and I even doubled down and got the awful paper straws to go with it. Paper straws though, really – the liquid equivalent of trying to dry yourself with a cloud. Five minutes in and it’s already collapsed, so I end up sucking like I’m giving the world’s worst blowjob to both parties concerned. Don’t worry, it’ll be back to George pint glasses soon enough and we’ll only wheel out the posh stuff when it’s going on Twitter, like the Christmas china.

That’s the next point – we’re now on Twitter. The observant amongst you will doubtless have spotted the little widget there on the right displaying pictures and other such nonsense. The aim is to get you lot sharing these recipes wherever you can, plus, it gives me an outlet for my bile for when I can’t be bothered sitting at the computer trying to type with a particularly needy cat clawing away at my genitals. Along similar lines, I’ve just noticed that we’ve sailed clean past 2000 members, which when you think I was only bleating on about having 1000 members back in January (and take a look at that page, I shit you not when I say it’s one of our best recipes), is pretty incredible. Like we always say – Paul loves cooking (he’s learnt to, Little Mo has nothing on him) and I love writing, so this is the perfect outlet for us. The fact that so many of you like hearing our nonsense and swearing only gives us a reason to try harder! With that in mind, know that we are going to be back to full speed pretty soon – recent events have knocked us a little, but we’re still doing a new recipe a day, and you’ll get the benefit of that. We’ve got breakfast ideas, themed weeks and oops – we forgot about Europe. What are we like. So bear with us, and until then, enjoy this:

lamb kheema slimming world

Tasty. And check out the presentation, I felt like I was in a Newcastle Wetherspoons. I mean, I knew I wasn’t because I have a full set of teeth and a career, but still*.

to make the spiced lamb mince you will need:

500g of lean lamb or pork mince (or beef, for that matter – hey listen, I’m not judging you), 500g of potatoes (use new potatoes if you can get them) cut into thumb sized chunks, 1 red onion finely chopped, 2 big juicy red tomatoes (i.e. don’t be buying a pack of cheap tomatoes, God is watching and he despairs of your watery orange balls of nowt), and then the spices:

You’ll also need a drop of oil for the onions. If you prefer, use Frylight, but like I always say: don’t.

This recipe only took us about 30 minutes to make and most of that was the pot sitting on the hob. So what’s your excuse, eh?

ingredients for the sides: a pitta bread each (HEB if you use a wholemeal Weight Watchers pitta, which has all the taste and wonder of a side of Artex), an onion, tomato, cucumber and red chilli for the onion salad and fat free natural yoghurt, cucumber and fresh mint (or mint sauce if you’re common) for the raita. 

FULL DISCLOSURE: I don’t know if this is extra-lean lamb mince. See, it was at the back of our freezer and we did buy a load of extra-lean mince from our butcher back in the day. I think it is. If it is, then the dish is syn free. If not, use extra lean beef or pork or even turkey. OH THE EXCITEMENT.

OK, so the recipe:

  • make up your side dishes
    • add yoghurt, mint and grated cucumber together and chill
    • toast pitta bread
    • chop up onion, tomato, cucumber and finely chop chilli – combine and add a pinch of salt
    • set aside
  • get your best pan out of the cupboard – heavy bottomed (that’s the pan, not you, cheeky)
  • add the cinnamon stick, bay leaf and cumin seeds and get it on a medium high heat until they sizzle
  • add the chopped onions, cook until golden, add the ginger and garlic paste
  • add the turmeric, chilli and coriander powder and let it sweat for a moment or two before chucking in the mince and potato
  • allow to brown for a few minutes and then add the chopped tomatoes – two big tomatoes should produce more than enough water once you put the lid on and turn the heat down to a medium
  • cook until the meat is cooked and the potatoes tender – chuck in the garam masala and cook down for a moment or two more
  • serve.

chicken, orzo and tomato risnotto

Not a typo. The dish is a bit like a risotto but tastes a bit more substantial – tasty though and only uses one pot. Hooray.

But weigh-in tonight, and it’s VERY good news. You may remember that in between getting caught noshing in the hot-tub by a farmer and running caravans off the road, we managed to put on a total of 13lb between us last week? Well, we knuckled down a bit but as you can see from the recipes, still ate like pigs…and we’ve lost:

james – 7.5lb

paul – 5.5lb

Haha! A total weight of 13lb – or, for those who might be a bit touched in the head, we’ve managed to lose exactly what we put on (Paul losing .5lb more than what he put on and me losing .5lb less)! Brilliant, not least because I can’t be bothered to change the ‘total’ image on the right of the blog.

Hey I tell you what though – and this is in no way a disparaging comment against other classes I’ve visited, but what a difference a consultant makes. We’ve worked our way back to our very first consultant and she’s a genuine laugh – we were in that church hall digging those bloody awful church chairs out of our back-fat for a good two hours but it flew by. Reason? It wasn’t just ‘weight loss – well done – weight loss – well done – weight loss – well done’ which holds no allure for us. It felt like a proper class! If you get the right class, you stay, and if you stay, you learn. SIMPLE AS.

Now listen, weigh-in nights are normally a chance for us not to post a recipe but instead spend the evening ped-egging each others feet and tormenting the cat.

Well, we’ve been doing that, see?

But lo, in the spirit of giving, here’s a recipe! Gosh!

chicken orzo moonblush tomatoes risotto

Firstly, the recipe uses sundried tomatoes normally, and feel free to substitute them for the moonblush tomatoes I’ve used in the recipe (sundried tomatoes are around 2 syns for 25g), but moonblush tomatoes are very easy to make and syn free. Perhaps half a syn at most per serving, anyway. I nicked the idea from Nigella Lawson and what that woman doesn’t know about cooking you could write on the side of a rolled-up twenty quid note. To make moonblush tomatoes, first whack your oven up to its highest possible temperature. You want it glowing like an Englishman’s shoulders in Benidorm. Next, cut a load of cherry tomatoes in half and chuck them in a bowl. Add a tiny drop or two of olive oil, a good glug of balsamic vinegar, salt, dried oregano, bit of thyme, pepper. Mix gently so the tomatoes are covered but try not to squash the tomatoes. Next, tip them onto a baking tray with the cut side facing up – pack them in tightly. Once the oven is at the highest temperature and you could light a fag off the vapours, turn it off, open the door, quickly throw the tray in and leave it overnight. The hot air will dry your tomatoes out – not completely, but that’s fine – you want them a bit squishy. Syn-free and full of taste! Make it even more interesting by using a range of tomatoes of all shapes and colours. If you DO insist on using sundried tomatoes in oil like a filthy slattern, hoy them in a sieve and pour boiling water on them – gets rid of the oil, see.

OK, so you’ve got tomatoes – either moonblush (overnight) or sundried (jarred – philistine). So…

to make chicken, orzo and tomato risnotto, you’ll need:

two chicken breasts cut into chunks, 200g tomatoes, tiny drop of oil, 1 large onion sliced finely, three garlic gloves, 400g of orzo pasta (or rice), 3 dollops of tomato puree, 900ml of chicken stock, 1/2tsp of oregano, 1/4tsp of thyme, 1/4tsp of lemon zest and 1/2tsp of balsamic vinegar. Basil leaves, black pepper and parmesan to serve.

to make chicken, orzo and tomato risnotto, you should:

  • fry the chicken off in a tiny bit of oil or a squirt of frylight (bleurgh!) – chuck in a bit of salt and pepper to swoosh it along – once cooked through, set aside
  • chuck the onions into the pan now and saute gently until they go transparent and sticky – add the garlic for a moment or two
  • add the rice and fry along with the onion for a minute or two
  • add the tomato puree, tomatoes (chopped if particularly big, otherwise just tip in), all the herbs and the balsamic vinegar, plus the chicken
  • now cook gently, on a medium heat, adding stock one ladle at a time and stirring – don’t leave it to stick, and eventually, it’ll go nice and gloopy and thick – tasty!
  • serve in a big bowl with a smashing cheesy grin on your face.

Just a note – buying a whole lemon just for the zest is a bit silly. So use whatever you need to, then pop the lemon in the freezer – you can use it next time you need zest! Failing that, cut it in half, put it in a tiny bowl of water and microwave for thirty seconds or so, then use it like a sponge to clean your microwave. Gosh we really ARE the gift that keeps on giving tonight.

diet coke chicken

Just a quick post tonight as very tired – so here’s the picture and a recipe. It’s another Slimming World classic, may god have mercy on our souls.

This is a recipe from SW’s own website – and well, if you follow their recipe, you’ll end up with that old favourite of SW, watery sauce and no taste at all. How do they do that so consistently – take decent food and add water and sweetener? The mind boggles. So I’ve modified it just slightly (increase the cooking time, reduce the heat) and what comes out isn’t actually half bad.

to make diet coke chicken, you’ll need:

ingredients: touch of oil, one onion, red and green pepper, 2 garlic cloves, 2 chicken breasts, 2tsp of Worcestershire sauce, 4tbsp of tomato puree, half a carton of passata, 1tbsp of dark soy sauce, 1tsp of dried mixed herbs,, 330ml can of diet coke, 200ml of chicken stock and 200g of sugar snap peas.

and to make diet coke chicken, you should:

recipe: chop up the onion, pepper, chicken and garlic. Fry gently, add the liquid and spices, and cook low and slow. The original recipe says to cook it quick for fifteen minutes but you just end up with too much liquid. Serve with rice.

Is it nice? Meh! It was alright, but it just tastes so…Slimming World-y!

mushy pea curry

Where to start? Firstly, if you’re here for the recipe, have a good scroll down and you’ll find a recipe for good old mushy pea curry, which although it does look like someone’s already eaten it for you, is tasty, cheap and slimming. Trust me. If you’re here for the long haul, enjoy the first part of my rambling about our recent few days away in Ireland…

You may remember me mentioning that we had no plans and were planning a last-minute holiday away wherever we could find a cheap deal to a decent place? Well let me tell you – don’t bother. The only available flights were to places which you just know will be full of bald English men with red shoulders reading The Sun and eating full English breakfasts at 4pm. Bleugh. I don’t like flying – the thought of flying somewhere with such little reward just ruled going abroad at last-minute completely out. So, the night before we set off, we booked a holiday cottage in the absolute middle of nowhere in the Ring of Kerry, Ireland, and at 5pm the next day our car was packed, Paul had been picked up and we were on our way in no time at all. I normally hide away the sat-nav for reasons below but intrigue got the better of me as to how far I had to drive and the sat-nav was plugged in and on the dash within ten minutes.

Sat-navs are great in principle but I always end up putting mine sulkily away in the glove box after approximately five minutes. We bought a proper fancydan version in the sales but see, I hate being told what to do when I’m driving and struggle with the authority it commands in the car. I always have good intentions of listening to it and indeed, it’s never failed to guide us where we need to go, but I still have an inherent distrust and because Paul always sides with the sat-nav, it causes arguments. Plus, it only has two male voices, Daniel and Kevin. Kevin is a sarcastic knobhead so he immediately gets turned off but Daniel has been upgraded to this weird breathy version who almost whispers the commands at us like some robotic milk-tray man. I don’t know how appropriate it is to have a semi whilst clumsily navigating around the Bangor ring-road but there you have it.

We arrived in Bangor at around ten and, due to being full of wine gums and other sweets, went straight to bed. We’d elected to stay at a Premier Inn but this is always a mistake – not because they’re uncomfortable, quite the opposite actually – I’ve always had a great night’s sleep at a Premier Inn – but rather I spend all night scheming and plotting about how I might make my money back under their ‘Guaranteed Good Night’s Sleep’ promise.  The problem with that is, I’ve always found the staff so nice and disarming that I immediately become charming and submissive and don’t dare mention any perceived problem with the room. Bah. We sped down towards Holyhead in the morning and we were at the dock in plenty of good time to sit and wait in the gales and mist before it was time to board the ferry.

Oh! Before I carry on with the tale, let me mention Paul’s idea of breakfast. As we didn’t have time to hoover up an all-you-can-eat-breakfast at the Premier Inn, I bustled him into Holyhead ASDA with the direction of getting a breakfast snack for us. This is what he came back with.

Haway. In case you can’t make it out, it was a little packet which contained a cheesestring, a wrap so dry I could have shaved my three-day-stubble with it, a sachet of knock-off tomato ketchup and (unlike in the picture above, which I’ve nicked from somewhere to illustrate my post) some sliced rolled chicken. It was unspeakably vile. I opened the packet and I swear it hissed when I pulled the lid back. The car smelt like someone had shit out a corpse on the back seat. We got fifty yards down the road before I pulled over and Paul, now with a considerable flea in his ear, had to dispose of the ‘meal’ in the nearest bin. Honestly Holyhead, get your act together. I had tears in my eyes as we drove past McDonalds to the ferry port, let me tell you. Anyway…

You know what I love about the English? The very second they perceive anyone to be at any sort of advantage to them, they start bitching – and this is compounded if they’ve paid extra. Let me explain. Paul and I paid an extra £10 each way on the ferry to be given priority boarding, disembarkation (is that a needlessly clumsy word or what) and access to the Stena lounge. It is the ferry equivalent of first class and we only bought it because the seats in the lounge looked moderately comfortable and there was promise of free snacks. Accordingly, when we drove into the port, we were asked to drive into one of two ‘Premium’ lanes. We parked up and had the windows down only to hear the whisker-faced woman, putting the Tena in Stena Line, in the Audi (shock! horror!) to my right immediately start bitching to her husband that ‘they had paid extra’ and ‘why where we in the second premium lane and they weren’t’ blah blah. He looked amazingly henpecked. She went on and on and on about the perceived injustice of people boarding ahead of her and only stopped when I put my window back up and we both started laughing at her. I think her mood soured further when we did indeed board first – a whole lane ahead of her – and I gave her and her watery-eyed husband a dainty handwave as we drove past. Stupid old mare that she was – it’s not as if those in Premium were going to sailing over on the fucking QE2 and the rest of the passengers were sailing on a floating door.

Once we were loaded onto the ferry, we dashed up the stairs to be the first couple into the ‘Stena Plus’ lounge. Part of the ‘premium’ booking is access to this lounge which is controlled by a surly miss and a set of glass doors. We had to give our surname and were ushered in to avail ourselves of the free snacks, which consisted of those little packet of shortbread that you get in cheap hotels and a few cans of Diet Coke. There were some bottles of wine available for those who were already shaking and slurring at 9am in the morning, plus tea and coffee. Once they had allowed all of the steerage passengers onboard and shut them behind the metal gates, we were on our way.

And good lord, what a crossing. We were warned by the captain (via the ship’s loudspeaker, not personally – I mean we’d only paid an extra tenner and that had to cover the forty cans of Pepsi that I’d secreted away into my rucksack) that the crossing was going to be rough due to the strong winds and turbulent seas, and he wasn’t kidding. The Stena Plus lounge is situated at the front of the ferry and the waves were cresting over the top of the prow as it bobbed up and down. It was awful – it was all I could do to eat my cooked breakfast and fret about whether I’d put the handbrake on, envisioning my car rolling around on the car deck and the weight of our car-snacks causing a frightful Herald of Free Enterprise incident. It was a long four hours – I spent most of it snaffling snacks and gambling in the arcades. Oh and another moan! If you have kids, you don’t automatically have the right to use any machine you want or to have people who are altogether more sensible than you to get out of the way just so your crusty-faced little shitmachine can ‘have a go at driving’. I know, awful, but some pompous little knobhead with a bristly-little tache and his child took a look into the arcade, saw Paul and I playing Mario Kart Arcade Edition and said to his child ‘DON’T WORRY DARLING, YOU’LL BE ABLE TO HAVE A TURN ON THESE KIDS MACHINES WHEN THESE FULLY GROWN MEN HAVE FINISHED’. Honest to God, fully grown men. It was all I could do not to pick up his child and toss him into the Irish sea. I wouldn’t mind but we all know that children don’t actually play the machines, they just sit making silly noises and taking up space. Frankly, parents should be made to lock their children in the car and they can spend the ferry crossing on the car-deck, well out of the way. The ferry journey passed, eventually.

Now we managed to get all the way to the Ring of Kerry via Holyhead, a ferry and seemingly eight years of twisty roads absolutely fine and without incident, and we were a mile away from our cottage when it all went wrong. We arrived at the right ‘area’ and that’s where we were told to switch off the sat-nag (typo intended) and open up the owner’s own directions which would guide us merrily to our cottage in enough time to get the hot-tub going and allow us an hour to flick disdainfully through her CD collection and make snide comments about her glassware.

Well, did they fuck. For a start, she had worded the directions as though as we were in Lord of the Rings, all ‘go over the brow of the hill and make a turn (which direction? which hill?)’ and ‘drive on until you feel a chill’. They were crap. You need to understand how remote the area was – imagine in the pitch black trying to find a remote cottage with not so much as a blinking light anywhere to be seen. It took us three hours – THREE HOURS – of steaming around the countryside along farm tracks screaming and swearing at the perceived injustice of it all. I like to think what the poor horse in the field nearby thought of it all when he saw our car appearing over the crest of a hill for the eightieth time and the last few syllables of a swearing tirade against the Irish, Tom Tom, cottages, Citroen, Enya and Guinness as we sped past. No wonder he got his revenge later in the holiday (that’ll be in part 2).

Completely lost and on the verge of driving the car into a peat bog and setting it on fire, we found an isolated little cottage with a light on and knocked on the door. Now imagine that. You’re a lady, alone, cooking your evening meal, when two burly bald blokes come mincing up your track and braying on the door asking for directions to ‘Cum Bag’ (which was our approximate pronunciation of the name of the cottage, which was in Gaelic). The poor lass probably thought she was starring in her own Vera adventure. She took an age to find directions but eventually, helpfully, she sent us on our way. Buoyed with confidence, we shot off and within five minutes we’d taken another wrong turn, driven the car up a forty-five degree incline into a farmer’s field and were left spinning the car around in the mud in the pitch black, with Paul outside of the car bellowing directions on where I should reverse and me unable to hear him as I was revving the engine so hard out of sheer, unadulterated anger. Haha. Just to add a cherry on top of this my reverse sensors were blaring away making out there was an obstacle behind me until we realised it was mud on the sensor.

Aaah. We headed back to the road, sulked for a good fifteen minutes and then decided to go back to the start and try following her directions one final time. We were at the cottage, parked up and steaming, within ten minutes. God knows how, why or what we were doing wrong, but we managed it without a hitch. I was fizzing and it seems like a good point to stop the tale and move onto the recipe…

Mushy pea curry. Yes, I know, it sounds revolting, but most people will eat a chickpea dahl and this is quite like that. I’ve added chicken, somewhat unnecessarily, but that’s me all over. It’s syn free and you’ll be able to get a good few chapters of my book completed as you sit on the thunderbox firing this out for the next two weeks.

Delicious.

to make mushy pea curry, you’ll need:

two tins of mushy peas, one tin of baked beans, a few mushrooms, a tin of chopped tomatoes, two onions, three garlic gloves (minced), a chicken breast, a red pepper, 1tsp of hot chilli powder and two tbsp of curry powder, as hot as you like. You’ll also need a decent pan. You’ll also need a drop of oil and some salt.

For the rice, you’ll need long-grain white rice. Duh.

to make mushy pea curry, you should:

  • slice the onions nice and thin – use a mandolin! My mandolin has dropped again in price – now only £10, and it’ll save you hours. Plus, who needs the end of their fingers anyway? EH?
  • do the same with the pepper
  • cut the chicken up into small pieces and the mushrooms into slices
  • put the tiny drop of oil into the pan and chuck the onion, mushroom and peppers in there with a bit of salt, and on a medium heat, leave them to sweat down a little
  • after ten minutes or so, pull maybe a quarter of the onion/pepper out and set it aside in a dish – you’ll use this for your rice;
  • throw the chicken into the hot pan and cook it hard and fast on a high heat;
  • now throw in everything else (bar the rice and the quarter of the onion mix, obviously) and mix well – leave it to simmer for half an hour or so
  • for the rice, add a cup full of rice (literally a cup full – take a cup out of the cupboard, fill it with rice, tip that into a pan with the onion/pepper you set aside, using the same cup add two cups of water into the pan, bring to the boil, turn it down to simmer and leave it for around fourteen minutes – covered with a tight-fitting lid – on a gentle simmer. Tasty, fluffy rice
  • serve when thickened and tasty!
