droptober recipe #12: oompa poompa one-pot

Just a recipe post for oompa poompa one-pot tonight folks because your poor writer has hurt his arm – I say I, no, Paul decided that what I needed was for him to lie on my arm all night long. Paul’s a big guy and whilst I’ve got strong arms, it really bloody hurts. Don’t worry, I took the liberty of pulling out a couple of individual bum hairs of his to make up for the pain. Oh I’m a stinker. Plus, Bake-Off. I’ve got a nice article queued up for tomorrow so no need to shit the bed just yet.

I’m calling this oompa-poompa-one-pot because Christ almighty, you’ll be oompa-poomparing all night long. It involves sauerkraut, a sort of pickled cabbage, and although that might sound disgusting and you might shriek into your hands at the very thought, it actually adds a lovely note of flavour. Leave it out if you want – you’ll still be shouting ‘…HOLD ON MR BROWN, WE’RE SENDING HELP’ long into the night. This makes two big bowls of loveliness.

oompa poompa one pot

to make oompa poompa one-pot you will need:

  • 6 sausages (the sausages in our Big Meaty Package are perfect!) (3 syns)
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 large carrot, slices and halved
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp oregano
  • 500ml chicken stock
  • 200g basmati rice
  • 1 tomato, chopped
  • 450g sauerkraut

to make oompa-poompa one-pot you should:

  • heat a large casserole dish over a medium-high heat, spray in some oil (use this – it’s cheaper and better than Frylight!) and cook the sausages until done – then remove from the pan, leave to cool a bit and slice into discs)
  • in the same pan, add a little more oil and then the onion, garlic and carrot and cook until softened
  • add the salt, pepper and oregano to the pan and give it a stir
  • next, add the stock, rice and chopped tomato to the pan and give another stir
  • cover and cook over a low heat until the liquid has evaporated and the rice is cooked – about 10-12 minutes or so
  • remove from the heat and stir in the sauerkraut, allowing it to heat through and bubble off some of the vinegar in it
  • serve and enjoy immediately!

droptober recipe #11: peanut butter and caramelised banana toast

Just a recipe for peanut butter and caramelised banana toast tonight as we’re too busy putting our Musclefood box away and farting on with our new TV. See, this would be one of those days when we just wouldn’t post but because we’ve committed to this Droptober thingy, I feel like I can’t let you down! Breakfasts on Slimming World are either oaty affairs, a bit of fruit or that bloody fry-up picture which has been haunting the lifeline journal since time immemorial. Peanut butter is one of those things which sounds like it should be full of syns and, fair enough, it’s not syn-free, but as long as you’re sensible and don’t slap it on like Jordan slaps Canestan on her minnie-moo, you’ll be fine. 1 level tablespoon is 4 syns which you can easily spread between the two tiny Shreddies-sized slices of bread that Slimming World allows as your HEB.

to make peanut butter and caramelised banana toast, you’ll need:

  • well I mean, it’s pretty obvious, no?
  • one banana
  • one tablespoon of peanut butter
  • whatever toast or thin you want to use
  • pinch of cinnamon if you dare

to make peanut butter and caramelised banana toast, you should:

  • toast your bread and get your peanut butter on it whilst it is hot – the heat will make it spread further
  • Christ, it’s a bad job when we’re having to eke out our peanut butter like we’re working from a ration book, isn’t it?
  • slice your banana and drop the slices into a hot, non-stick pan to toast them off and give them a bit of colour
  • top the toast

Just saying, but if you were feeling daring, you could totally add a drop or two of honey to the whole affair and really get going. If you’re going to be Lieutenant Anal about the whole syn thing, you should ‘technically’ syn the banana according to SW rules as it is cooked. However, it’s syn-free if you eat it uncooked and as you can see from the above, you’re doing nothing more than toasting it. If it makes you feel better, don’t toast the banana, just keep glaring at it until it toasts of its own accord. THAT WAY NO SYNS AM I RIGHT. Jeez.

droptober recipe #10: rainbow superfood salad with yoghurt dressing

I bet you’re all clammy with the thought of a rainbow superfood salad, aren’t you? Who could blame you? Let’s be honest, none of us got to where we are by eating edamame beans and rare grains, did we? Not unless they were deep-fried and served as a garnish on a kebab. If that’s the case, what type of bloody kebab shop are you going to, you fancy fucker? Our local is Kebabylon and a meal isn’t complete unless you’ve pulled enough of the cook’s back-hair out of your dinner to make a tiny brillo pad to scrub the grease off your chins. But er, yes, the recipe will follow, but first some unimaginable nonsense.

Today has me sat in the house waiting for our Sky engineer to come and fit us a new Sky Q box. Why this requires a) an engineer visit and b) me to take a day off work is an absolute mystery. I do have someone coming to finger my guttering at some point in the afternoon but really, when don’t I? I semi-dilate when anyone with rough hands and a beard drives past the house. Paul sent me a text message ten minutes after leaving the house this morning to say “no need to suck the engineer off, we’ve already arranged a sizeable discount on the Ultra HD package”, which I think is a bit below the belt. I mean, he’s got a point – I’m a cheap bastard and I’d do full unprotected anal if it meant free fibre broadband for a year, but still. Give me some credit. Oh and speaking of Sky, it’s lucky I checked the ‘before we visit’ letter which mentions the need to know our Wifi password. Our Wifi password, as it turns out, was WELOVEBIGCOCKS8669! – I’ve just changed it to something entirely innocent – fancyafelchyouhunkybucketofspunk apparently didn’t meet the security requirements. Who knew? I did toy with leaving it unchanged for a laugh but felt that it would look like a clumsy attempt at a come-on – long-time readers must recall that this is one of my fears with having workmen in the house, that every sentence sounds like I’m trying to set away some cheesy porn-style scenario. I’m such a clutz, I can barely pass over a cup of tea without putting my cock in it. Aaaah well. We’ll see what time he turns up.

It’s also a very sad day in our house. For years we’ve been saying we need to buy a Roomba to replace the old Roomba that broke and went beetling into our garage, never to return, when we moved house. But they start at £400, we’ve got a fancy Dyson Digital vacuum anyway AND we have a cleaner, so we couldn’t really justify it. Until last Thursday night when we were pissed out of our nut on Waldhimbeergeist and lemonade (I don’t know either: it was a random bottle of something from Lild – could have been industrial bleach for all we knew, but it tasted nice and had a raspberry on the front so we rolled the dice and got smashed). It’s amazing how alcohol changes your justification for spending money and as a result, we had a Roomba delivered by the good folks from Amazon on Saturday morning. How we gazed admiringly at it, knowing it would scoot about during the day time terrorising the cats and pulling the odd bit of hair and crushed cat treat from our carpet. We could finally relax with the gentle hum of the robotic whirring to sing us to sleep.

Nope.

Turns out Roombas can’t function on black carpet. Our house, bar the kitchen, is either black carpet or black tile (don’t worry, it goes tastefully with the Misty Mountain grey on the walls: may I remind you we are homosexual) and as a result, the Roomba senses these black patches as ‘cliffs’, throws a bit of a strop, spins a bit and then beeps forlornly. Putting him down on the living room carpet must feel like, to him, being hurled into a black hole of no escape. We placed him into the kitchen for a laugh (our kitchen floor being black and white square tiles – our kitchen has an American diner theme, it’s very fancy) and it was hilarious – I’ve never seen a robot actually have a fit but the poor fucker was jitterbugging and stuttering all over the place. I had to put a small pile of ground Diazepam down on the white tile just to calm him the fuck down. Anyway, back into the box and returned to Amazon with a naturally furious email about there being no mention of the Roomba’s sense of existential dread.

Perhaps it’s a good thing. Our house is too connected. One of my colleagues expressed some reservations about our ‘House of Connected Things’, citing concern about security and the ability for folks to hack our home. Really, I know it’s more a pressing worry that I’m not going to turn up at work of a morning because I’ve been killed in my sleep by Amazon Alexa instructing a rogue Roomba to come and hoover all of the oxygen out of my lungs whilst I sleep. We buy our gadgets and nonsense because we don’t have children to spoil and they’re great, but I did think to myself as I walked into the house, said clearly “Alexa, please turn on the lights” only for her to turn one light on and start playing Bill Bryson, how much time are we actually saving here? It’s a novelty being able to turn our heating on from the sofa by telling Nest to ‘turn the hallway down to 9 degrees’ but again, it’s no hardship at all to get up and turn the thermostat down. Actually, that bit is a lie – we get these things because we’re bone-bloody-idle, so anything that minimises our movements is no bad thing.

I have discovered one excellent thing about Amazon Echo though – I can say “Alexa, play The Archers” whilst I’m having a crap and it’ll start playing the latest episode through the house speakers. An episode of The Archers is just the right length to enjoy when you have a shaggy brown dog scratching at the back door. However, as we don’t have a speaker in the bathroom, I have to “Alexa: turn it up” about eight times until it gets loud enough for me to satisfactorily hear it from the bathroom. The downside to this is that the Alexa gets so loud that once I’ve finished my business and moved back to the living room it is playing too loud to hear me shouting “Alexa: shut the fuck up” at it, meaning I get locked in an increasingly loud, shrill and vicious circle trying to make myself heard over the sound of POOR OLD HELEN ARCHER fussing about her joint bank account. I can’t imagine, in the entire history of The Archers being on air, anyone ever seeming to react so violently to Rob being slow-clapped off the cricket team. My poor neighbours must think I have the most exciting time paying my sewer-tax with all the yelling and middle-class braying that goes on.

Ah well. On that classy note, let’s sign off for the day. I’ve just discovered that you can play the original Rollercoaster Tycoon on the Mac so I thoroughly expect to be hearing this for the next eight hours. Does this take anyone else back?

Now let’s take a look at today’s recipe, shall we? Rainbow superfood salad. It’s a salad idea for lunch. These usually go down like a shit in a lift but please, give it a go – it’s easy enough to make and, for a salad, tastes bloody good. The dressing is syn free, as you’d expect, and the whole bowl is full of crunch and goodness. As with all of our recipes, do mix it up – if there’s stuff in here you don’t like, just swap it for something else. Can’t be arsed finding farro? Don’t blame you (though it’ll be wherever the quinoa or couscous is in your supermarket), swap it for another grain or leave it out entirely. Not a fan of feta? Then you’re a sick bastard and you should be ashamed: feta is lovely! Pfft. This recipe is a hybrid of one that I found here and a Marks and Spencers superfood salad which I had to stop buying because each visit to the supermarket at lunchtime was becoming more dangerous: I was one shuffling old biddy fumbling about the meal-deals away from mass genocide. Enjoy!

rainbow superfood salad

to make a rainbow superfood salad, you’ll need:

  • 100g of farro (before you all send me messages saying what’s farro: it’s like quinoa’s fatter cousin and can be found in the same place in the supermarket – feel free to swap for couscous)
  • one small red onion
  • one red pepper and one yellow pepper
  • half a box of edamame beans (you can buy these in Tesco’s fruit and veg bit – or swap them out for chickpeas)
  • half a small red cabbage chopped up nice and fine
  • pomegranate seeds (either from a fresh pomegranate – which I really struggle with as I’m mildly trypophobic, or buy them from the supermarket in a little pot)
  • 45g of feta (which is one HEA)
  • for the dressing, just mix some mint sauce into natural fat free yoghurt – I know, we’re not fancy here

to make a rainbow superfood salad, you should:

  • cook the farro according to the instructions on the packet – but you don’t want to cook it to mush and you definitely want to make sure you’ve washed it well afterwards so it doesn’t go all starchy
  • I cook my farro in chicken stock because I’m a cruel, murdering meat-eating bastard, but feel free to use veggie stock – it just adds another note of flavour
  • chop everything up into small chunks and then scatter through the cooked farro
  • season with salt and pepper if you so desire
  • see above for the dressing
  • this will keep cheerfully in the fridge for up to three days, but only as long as you don’t dress it – once it has been dressed, get it eaten

Done! I’d love to think this rainbow superfood salad wasn’t dismissed out of hand because it’s a bloody gorgeous lunch – don’t be put off by the ingredients, just swap them out for stuff you don’t like, but if you’ve never tried edamame, pomegranate, cabbage or farro in a salad, give it a whirl! droptober recipe #9: chicken cakes

Chicken cakes? I know, it sounds as appetising as sleeping face-down in the cuddle-puddle after a hot session with orange shitbag Donald Trump, but please, bear with me. You can have fishcakes, yes? Well these little buggers are gorgeous, trust me. Like a chicken nugget only you’re not spending ten minutes afterwards thinking about whether you’ve just eaten a bumhole, eyelid, or combination of both.

Only a recipe tonight, mind, as we’re busy working on something exciting. Well, I am, Paul’s busy ironing. WHAT AN EXCITING LIFE EH. This recipe makes about eight or so cakes, and I’m synning them at half a syn each rather than the 0.75 syns that it should be. Don’t tell Mags, eh?

OH one thing. We’ve had word that there’s a Slimming World group in Cornwall somewhere where one of the members is printing off the recipes and selling them as a booklet. Please, don’t do this. We do this for free and we want it to stay that way. If you want to profit from our hard work, at least ask. Don’t be a fucknugget about it.


chicken cakes

to make chicken cakes you will need

  • 500g chicken (or turkey) mince (or chicken breasts, whizzed up in a food processor)
  • half a red, yellow or orange pepper, diced
  • 1 onion, finely chopped
  • 1 pinch chilli flakes
  • half a chicken stock cube
  • 2 garlic cloves, minced
  • 4 tbsp extra-light mayonnaise (2 syns)
  • ½ teaspoon salt
  • ¼ black pepper
  • 2 shakes Tabasco sauce
  • 25g panko (4½ syns)
  • 1 egg, beaten
  • 2 tsp dijon mustard (1 syn)

to make chicken cakes you should:

  • in a large pan, spray in some oil over a medium-high heat and add the onions, pepper, chilli flakes and crumble in half the chicken stock cube, and cook together for about 3 minutes
  • add the garlic and cook for another minute
  • add HALF of the raw chicken mince (you read that right – trust me) to the pan, and cook until cooked though – it’ll take about 3 minutes
  • remove from the heat and set aside to cool
  • in a large bowl, mix together the mayonnaise, salt, pepper, tabasco, panko, egg and dijon mustard
  • add the cooked chicken (wait until it’s cool enough to hold) and the remaining raw chicken (it’ll be fine! honestly!) and mix really well together
  • divide the mixture into 8 balls and flatten each one into a burger shape (this burger press is only £3.50 and will do the job nicely)
  • plonk onto some greaseproof paper so they don’t stick and pop in the fridge for about half an hour to let them firm up – pour yourself a gin
  • spray a large frying pan with oil and whack on to a medium-high heat
  • using a spatula, add the chicken cakes to the pan (you might need to do it in batches) and cook for about 4 minutes per side until cooked through
  • serve and enjoy!

droptober recipe #7: italian sausage and chicken risotto

I can’t begin to tell you how much I love our risottos, especially this Italian sausage and chicken risotto because it is simplicity itself! Italian sausage is usually sausage with fennel, so we’ve cheated a bit and used plain, syn free sausages and added fennel seeds. Yes, it’s that type of sassy thinking and cunning that got us where we are today. Bit of a long entry tonight but first, for the last time (well maybe tomorrow) an advert BEFORE IT RUNS OUT.

Paul and I have been thinking about switching slimming world classes. Not because our current class has anything wrong with it, it’s absolutely the best one in the area, but we’ve been going off and on for almost seven years. It’s easy to fall into a rut and we’re not staying to class anymore, so perhaps a new face and a new bank of folks to look at with my eye glaze over whilst they chunter on about 1/2lb here and there is exactly what we need. As I was mulling over this decision in the car on the way home, I started thinking about my perfect Slimming World class and what I’d do if I was a consultant.

Incidentally, we get so, so many people telling us they’d come to our class if we became consultants, but we offered our services to Slimming World way back when we were just starting out and didn’t get a phone call in return. Which, frankly, was foolish – we’ve got plenty of disposable income and a very carefree approach to spending it. My house could have been more Hi-Fi bar than brick. But anyway. So here’s how my dream class would go if I was a consultant. If you’re a consultant, feel free to nick my ideas, but be sure to have a framed photo of us with a candle burning in front of it, like people do when someone’s died in a car-crash.

For a start, let’s not be tight with the venue. I’m sick of sitting on rock hard chairs in draughty church halls, getting piles and backache. Let’s have the class in the back of the local pub, so people can pay lip service to losing weight and then get straight on the beers, wine and crackling, like EVERYONE WHO GOES TO FAT-CLASS does. The heating would be on but sensible – I’ve noticed classes are either so hot that you lose two pounds in sweat just sitting in your chair shallow-breathing or so fucking cold that you can open your third box of Hi-Fi bars with your diamond-level nipple.

I’d serve proper coffee and proper tea. There’s no excuse for people to people to fork over £5 and then get hit with coffee so weak you can see the bottom of the cup through it, or tea that tastes like it was brewed up in 1957 and left to stand. Yes, it’s a bit more pricey, but let’s class the joint up. I’d ban sweetener though because I’d get tired of people mooing at me about SINZ PLZ.

It would be mandatory for everyone to have the right change or a countdown when it came to paying. Let’s be honest: we’ve all been in the queue, inwardly seething and wishing death on the poor bugger at the front of the queue fumbling around in the depths of their Michelle Cors handbag for 10p. Think of it like a bus: turn up, pay, bugger off to the seats. Weighing would be the same – it would be mandatory, punishable by death, to be ready to get on the scales. No holding up the queue whilst you take off your support knickers, bra, false-teeth, clit-ring, fanny-chandelier, built-up shoes and pleatherette belt. Get on, get weighed, ten seconds only of your fake surprise act or blustered explanations, then on your way to the naughty seats ready for class.

Now the most important bit: the chat. I have quite a booming voice when I want to so being heard wouldn’t be a problem. I’d want the class to be full of laughter, fun and chatter, but if you’re the rude arsehole who insists on chatting to your mate all the way through whilst people are shitting themselves from straining so hard to hear who is talking, Paul will nip outside and put your tyres down. We’d open with weight losses – but not the 56 minute long affair of ‘and Mary has lost ‘arf a pound how have you done that Mary’ (repeating the name a lot so it looks like you are invested in your members but haway, it’s on your little screen).

Here’s the cruel truth – this bit adds absolutely nowt unless it sparks a discussion about weight loss. The fact that Bob from Greggs has lost two pounds, his foot has turned less black and he’s lost eight pounds overall in eighteen years means very little to most people unless you know them. No, we’d beetle about the room, giving out the stickers because let’s be fair, everyone likes a sticker, congratulating people in groups (so all the 2lb losses would get named, then the 1lb losses, then the stayed the same) – much quicker and easier. Plus, you don’t have to wrap your hands in gauze afterwards to stop the bleeding from clapping so fucking much. We’re adults, not seals desperate for people to throw us a fish.

Then, 45 minutes or so of chat, decent recipe swapping and funny stories. Make it an hour where you’d actually want to contribute and make it more like conversation between friends, instead of 60 disparate chubbies all fretting and cringeing until the moment their name is called.  I’d want to hear people laughing more than hearing people sigh and yawn into their hands. More focus on eating – that’s one thing I find so confusing about the groups – there’s surprisingly little focus on good things to eat and ideas. I’d bring technology into it – have a decent sized TV in the background with recipes on it, changing every now and then. Naturally, being us, we’d slip the odd slide in of a giant bouncy cock for half a second, just long enough to think you’ve seen it before onto a risotto recipe. There’d be jokes and genuine admiration. Aaah.

Slimmer of the Week wouldn’t win a basket of fruit that’s pretty much already turned into wine, no, the winner would get to take part in my game. I’d get my dad to build a massive wheel-of-fortune stand-up wheel with different segments and prizes – a free week, a box of Hi Fi bars, a tiny sliver for a free countdown, another for a big cuddle from the fattest person in the room, even the odd penalty to add a bit of risk – they have to put the chairs back at the end of the class, or come back to mine and cook us a delicious tea. Paul could mince on in a glittery dress like Debbie McGee’s morbidly obese twin, we could make a proper spectacle of it. Much better than ‘here’s a bunch of black bananas, a sweet ‘n’ sour mugshot and some unidentified fruit with half a WHOOPS sticker on it.

Raffle would be for useful things that people can use to cook with – a decent pan, a set of scales, spoons. Every now and then we’d think fuck it and put a box of chocolates on there. Guarantee we’d have far more raffle tickets being bought then! As for contact during the week, none of the mushy stuff – texts saying ‘Yeah, the chocolate might taste nice, but do you not fancy seeing your fadge again’ or ‘Try the mushy pea curry: you’ll be shitting for England but you’re sure to get that shiny star’ or even just the plain old threatening ‘Elnetta-MB has your details now. She knows where you live. DON’T EAT A PIE’. My facebook group would be full of rude jokes and recipe challenges and yeah, you’d still get stickers and certificates, but you’d also get arbitrary stickers like ‘Can open a Mars bar without getting breathless’ and ‘managed to see the end of her toes’. Make it fun, make it entirely non-serious, make it good.

Aaaah a boy can dream, eh? I know the practicalities of money, time and corporate branding would put the kibosh on all of the above, but hell, we could give it a bloody good go before SW cracked the whip.

Right, let’s get to the recipe, shall we? This makes two big bowls of delicious tasty stodge.

italian sausage and chicken risotto

to make italian sausage and chicken risotto you will need:

to make italian sausage and chicken risotto you should:

  • heat a large frying pan over a medium-high heat and add a splash of oil
  • add the sausages to the pan and cook for five minutes until browned but not fully cooked
  • remove from the pan, leave to cool for a bit and then slice and keep to one side
  • add the fennel seeds to the pan and stir around the pan for about a minute
  • add the leeks to the pan and cook for another 4-5 minutes, until starting to brown
  • mix the tomato puree with 1 tbsp water and add to the pan, along with the apple juice, garlic and spice mix
  • cook for a few minutes until most of the liquid has evaporated, about 3 minutes or so
  • add the rice and stir until well mixed and coated
  • add the chicken to the pan, lob in the sausages and stir again
  • add as much stock as you can to the pan – if you can’t get it all in just add what you can and keep topping it up
  • stir the mix every couple of minutes or so until the liquid has been absorbed, which’ll take about 20 minutes
  • serve!

There you have it – if you’ve ever fancied having an Italian stallion sit heavy in your stomach, you’ve just found one!

droptober recipe #5: egg, pastrami and cheese loaded sandwich

Yesterday it was a portion of pie, today an egg, pastrami and cheese loaded sandwich- if you’re sitting there with an itchy gunt and slaver on your lips thinking it’s going to be diet-friendly chocolate ice-cream with added cake tomorrow…you’ll be disappointed. But I must say, I’m somewhat enjoying these more ‘naughty’ recipes – are you? But mind, before we get to the egg, pastrami and cheese loaded sandwich, you know what’s coming…more of my words poured into your ear like the sweetest of all the honey. Let’s wrap up Glasgow.

There’s not an awful amount to say – not because it wasn’t useful (it was) or lovely (of course) but because my week consisted of me going to my temporary work, learning lots, coming back, eating lots, sleeping. Even I’d struggle to eke 1000 words out of that, but hey, that’s never stopped me before! Some random thoughts then.

When I checked in I was offered a room with a view of the river – sounds great, right? I immediately snapped it up only to be told it cost an extra £25 a night for this view. I did enquire as to whether there was going to be a flotilla of rare boats I could gaze at or perhaps a Scottish take on the Oxford/Cambridge rowing, but no – which is a shame, as I love nothing more than watching cox thrusting away – it was just a letterbox window view of the Squinty Bridge. I’m ashamed to say I took it anyway despite the extra charge and actually managed to sweet-talk the charge off my bill later in the week.

Glasgow seems surprisingly amazed by the Squinty Bridge. I mean, it’s nice, for a slightly-vagina shaped bit of metal, but I’ll see your Squinty Bridge and, quite literally, raise you our Millennium Bridge:

Our bridge moves! I gazed out of the window for ages thinking that your bridge moved, but alas, it never did. Plus, I only spotted fifteen bodies floating down the river during the five days I was there – Taggart lies. Our bridge lifts up to allow ships to enter (it seems fitting for Newcastle, actually: a giant, hard beast that opens up to allow easy access for seamen) and is ever so fancy.

The room itself was nothing to write home about, which was lucky because who wants to receive a letter stating ‘bed clearly damaged by too many people rutting on it’ and ‘bathroom tiny but fine, who knew being able to shower and shit at the same time would be such a luxury’. Weirdly, there was no main light, meaning every moment before bed was spent turning off about 100 lamps and drawing the curtains against the glow of the lights outside.  Just what you need before bed, a fucking bleep test. I missed Paul most of all when I was sleeping. I just can’t get a relaxing night’s sleep unless I’m sleeping with half an ear cocked for him finally being drowned by his own neck-fat. Ah well.

Is there a more fraught, tense feeling in life than having a white hire car and not taking out the damage insurance that covers scratches and dents? I swear I spent a good two hours a day gingerly driving my car a foot in various directions, terrified that if I parked next to another car their careless owner would come back and scrape their denim-clad arse all down the side of my car, leaving me with a ridiculous bill to pay. I’ve never felt such stress behind the wheel – I had to go for a colonoscopy just to calm down. There will be footage in some tedious collection somewhere of me trying to park perfectly within the lines of a bay in a perpetually empty car-park. Worse, I had to move my car at one point as I’d parked it directly under the Finnieston Crane and, being ever the worrier, I had visions of dead seagulls plummeting from on high and cracking the window. You know what makes this just the worst though? Anyone watching would automatically assume I was a braying arsehole who didn’t want his precious Audi scratched – to be clear, it was all fuelled by me being a tight-arse.

Speaking of being a tight-arse, after one particularly taxing day, I made my way back to the hotel and stopped by their gaily-named little pantry for a snack. I snaffled a Crunchie and a can of coke and the lady behind the desk charged me £2.90. I was conflicted. As a fat bastard, I wanted the Crunchie. As a sarcastic sod, I wanted to ask whether she was confused and perhaps she thought I was asking her to accompany me up to chew the Crunchie and share the coke. As a Geordie I wanted to be outraged, bellow something about rip-off Britain and stot it off her noggin. Naturally, my elegant, fat, British side won out, and I took my Crunchie and coke and grumbled about it to myself all the way back to the room.

Weirdly, that’s about the only things I have to say on the trip – as it was for business rather than pleasure there wasn’t a lot of shenanigans to be had! I used Deliveroo for all of my evening meals. For those that ‘div nat knaa’, as it were, this is a service which picks up delicious food from local restauarants and cycles it round straight to your location. It’s a great idea in principle and, judging by the sheer amount of hipsters who almost run me over every time I cross a street in Newcastle, seems to be doing well. My limit for each evening meal was £25 and I found a voucher for £10, meaning, because I like to get the value from these things, I ordered £35 every night. Mahaha. I know, it’s shocking, but see it meant I could keep some for breakfast (though dolmades at 7am is a tough call) and stock up on drinks, so there was method in the madness. I did have to make a ‘oh my other half is starving’ crack every time the Deliveroo driver turned up to try and justify the huge bag of food he was bringing. He knew though. He knew.

And that’s that! Let’s get to the recipe for egg, pastrami and cheese loaded sandwich before bake-off starts, eh? It’s four syns per sandwich. The photo below shows one half of the sandwich as we’ve cut it in two for the picture. Dur.

to make egg, pastrami and cheese loaded sandwich you will need:

  • 2 slices of your Healthy Extra B choice bread
  • 2 tsp mustard (1 syn) (use the mild mustard, the bright yellow stuff, as opposed to anything too hot, unless you want a steaming hoop later)
  • 3 slices of gherkins
  • 5 slices pastrami
  • 1 egg
  • 15ml skimmed milk (½ syn)
  • half a 25g bag of light baked crisps (2½ syns) (this adds a nice crunch)
  • 2 slices of light cheese (1x HeA)
  • 1 tomato, sliced

to make egg, pastrami and cheese loaded sandwich you should:

  • toast the bread to however you like it and once the toast is done, put mustard on
  • scramble the eggs by whisking with the milk, and cooking in a small saucepan over a medium heat (don’t stir too often!)
  • layer everything
  • add the top slice of toast and enjoy

Canny! I’m more surprised than anyone, trust me. We’re going slow and steady but after the week of naughtiness I had last week, I thought I’d put on for sure. Just shows: you should still go to class even when you can barely catch a breath because your mouth is so full of pie crust. Yes, last week then. See, I was sent up to Glasgow on a sort-of business trip to learn some new skills and socialise – both of which I’m terrible at. Had I been single I would have been up there so fast my shadow would have only appeared an hour later – Paul and I both love a Scotsman and between you and me (because who reads this, honestly) the biggest willy I’ve ever seen belonged to a Glaswegian. I didn’t know what to do with it – I’m surprised he didn’t pass out from lack of blood on the brain when he got an erection. It looked like a sausage casing stuffed with two cans of Carling Black Label. I didn’t know whether to laugh, cry or smash a bottle of champagne off the side of it. But those days are behind me (though I still whistle like a keyhole in a haunted castle) and so I didn’t have that to look forward to.

It also meant a whole week without Paul – I know. Before you’re all sick in your mouth (although, think of the weight-loss) please understand that we haven’t been apart for more than a week in the totality of our almost ten year relationship. I was fretting at the thought of being unable to sleep without the smell of death being blown across my nostrils at five-minute intervals. I shivered at the thought of being able to occupy more than 10% of the bed without Paul’s wandering hands, feet and knob poking and prodding me. There are nights I feel like a stress-ball. But hey, it had to be done, and it was with an aching heart and a threatening arsehole (we’d had easy peasy beef curry the night before, and whilst delicious, it was making a dramatic reappearance throughout the morning) that we schlepped off to pick up my hire car on Sunday.

I could see I was in for an easy time when I got to the desk and was assigned a car-rental-spokesperson who I wasn’t entirely convinced wasn’t dead. I’ve made more responsive omelettes. He didn’t look up from his keyboard once – perhaps he was trying to find the ‘wake the fuck up’ key but if so, he failed miserably. He didn’t check my insurance details, didn’t check my payment details, didn’t check my lyrics, nothing. I’d have had a more fruitful chat if I’d turned and had a discussion with the leaflet stand. I was going to ask him about fuel but I rather thought I’d need to fetch a defibrillator to just bring him back into some form of sentience, and well, my ankles were already hurting from having to concertina myself into Paul’s tiny Smart car. He did perk up when he remembered he could sell me an upgrade, and, remembering the Ford Boredom we’d been given last time, I asked him what he could offer me. First a Skoda – no. Then a Fiat 500 – no. Then his trump card (honestly, his eyes nearly opened with the shock) – he had an Audi. Did I want an Audi? I leaned over the desk and tried to explain that I’d be unable to take an Audi because a) I know how to use indicators and b) I’m not a middle-aged, impotent, prematurely-balding twat, but he’d pretty much already signed the card for me and was back to looking like he was trying to remember to breathe in and out. Resigned (and a fair few pounds lighter) I went to pick up my car.

Well, I’m not going to lie. It was lovely. I wanted to hate it, really I did, but it drove well and was comfortable for a long drive. I still wouldn’t buy one on sheer principle and I still think every single Audi driver – bar you and any of your charming family and friends, I’m sure – is a minge, but I can definitely see the appeal. I thought I’d do my best to be a decent Audi driver so I spent the first sixty miles or so driving gently and letting people out at junctions before a transformation took place and I was flooring it. You know how the Incredible Hulk turns green when he gets angry? I turned violet. In my defence I was stuck behind a little old dear doing 40mph on a single carriageway designed for 70mph and because I’m a nice guy deep down, I couldn’t flash my lights, but by god was I raging. I had to stop at the next services just to have a McFlurry and calm myself down.

I drove on, loving every second of having the car to myself for a long drive. I could sing along to my music without any protestation from Paul and there was no Alanis Fucking Morrisette to contend with, which was lucky as I don’t think my Budget Special Povvo Insurance would cover deliberately driving into the back of a petrol tanker. As I drove past Lockerbie the tyre pressure warning light came on. Horror! I pulled over, walked around the car kicking the tyres because I’d seen someone do it on the TV, then spent twenty minutes reading up on how to change a tyre. I have no clue. I know that I should have acquired this skill by now but really, I’m very much a pay-someone-else-to-do-it sort of guy (i.e. lazy). I didn’t want some oily-handed mechanic to come and tut at me on the hard shoulder whilst I tried to make crass jokes about helping him with his tight nuts or jacking up. I waited a bit and kicked the tyres again and they seemed hard enough, so on I went.

You may recall I’m somewhat of a catastrophic thinker – well, this meant that I couldn’t relax for the rest of the journey. That tiny light with the deflated tyre haunted me like the Telltale Heart, burning away at my retinas as I tried to think about anything else than my tyre exploding and sending me ricocheting into oncoming traffic. Imagine that – being found buckled into a shoebox cube of metal with the Audi rings imprinted on my forehead, with some coroner declaring me dead due to my lack of manliness. The last sixty or so miles into Glasgow were tenser than the last round of The Cube – I reckon there’s still a fingernail wedged into the steering wheel. However, after navigating my way down to the Clyde (via the road system, as opposed to plummeting off the A74 in a fading shriek of ABBA Gold) I arrived at the hotel, the not-especially-salubrious Garden Inn Hilton.

Alas, Paul just minced in from the kitchen to inform me dinner will be ready in ten minutes, so I’m going to plough straight on with tonight’s recipe and finish this story another time! This makes enough for four massive portions, so we’re going for comfort food here folks, not grace…

cheesy caramelised onion and bacon pasta bake

to make cheesy caramelised onion and bacon pasta bake you will need:

  • 6 bacon medallions, chopped

We use some of the bacon from our fantastic freezer filler deal – 24/26 chicken breasts, a load of bacon medallions, 5 big portions of extra lean beef mince and two portions of beef chunks – get yourself stocked up for Autumn by clicking here – it’ll open in a new window!

to make cheesy caramelised onion and bacon pasta bake you should:

  • heat a large frying pan over a medium heat and add a splash of oil
  • slice the onions into 0.5cm slices and add to the pan, coating well
  • leave to cook in the pan for half an hour, stirring only when the edges start to brown, scraping up any bits sticking to the pan
  • when the onions are nicely browned (after about 15-20 minutes) add the balsamic vinegar, stir well to coat and continue to cook until it has evaporated off
  • meanwhile, preheat the oven to 190°c
  • fry the bacon in another frying pan over a medium-high heat until crispy
  • bring a large pan of water to the boil and cook the pasta according to the instructions, minus a minute or two so it’s still firm to bite into
  • in a large bowl, mix together the quark, creme fraiche, garlic powder and a little salt and pepper to taste
  • stir in the cooked bacon, chopped red pepper and half the grated cheese
  • stir in the drained pasta and caramelised onions and mix well to combine
  • slop out into a large baking dish and top with the remaining cheese – yes that’s right, we use words like slop out in our recipes – some might say gently transfer, but we’re not that kind of blog, fuck no
  • bake in the oven for 20 minutes, and finish off under the grill for 2 minutes until golden and the cheese is bubbling – we were terrible and crunched a stray packet of BBQ kettle chips that we had lying around over the top (six syns, so that’s 1.5 syns extra per person – you don’t need to do it but man, was it good)
  • serve!

droptober recipe #2: pepper, herb and feta salad with roasted mushrooms

It’s been a long day. Not content with filling our house with buttons that automatically buy our shopping, we’ve invested in an Amazon Echo – essentially an always-listening little personal assistant (like Siri) who can automatically turn our heating up, turn our lights off, play music, that sort of forward-thinking thing. However, because it’s voice-activated, my day has been spent listening to Paul bellow incoherently at the Echo: ‘ALEXA: TELL ME A JOKE’ was good, ‘ALEXA: WHAT’S THE WEATHER LIKE’ was even better, but ‘ALEXA: Siri thinks you’re a snotty slaaaaaag’ yielded little worthwhile result and when I shouted ‘ALEXA’ and farted into the speaker, it just shut itself off.

I do like to imagine that somewhere deep underground there’s a team of Evil Amazon Folk listening to our every move, because frankly, unless they like lots of shrieking over Forza Horizon, copious amounts of farting, ancient Janice Battersby impressions and arguments about who was the best Doctor Who, they’re in for a disappointing time.

We received lots of helpful suggestions for our October idea – i.e. where we post one recipe a day all through October – but Droptober was the one that won out above all others. Whether you’re looking to drop some weight, drop some baggage or just drop a load of steamy piss through your knickers due to laughing and age, we’ve got you covered. Now remember, some of these will be lovely short posts like this, so no leaving moaning comments for the lack of text!

This works very well as a lunch – make it the night before and it’ll keep until the morning. Normally whenever I do a veggie post people treat it as if I had admitted I’d murdered a child and completely blank me, but please, do actually give this a go – it’s very tasty! This made enough for two lunches once served with some cooked bulgur wheat.

to make pepper, herb and feta salad with roasted mushrooms, you’ll need:

  • a packet of any mushrooms you like – I used chestnut mushrooms but only because they were the first ones my languid, tired body fell upon in Tesco
  • either a jar of those roasted peppers in brine or two large sweet peppers
  • a massive handful of mint
  • a lemon
  • 130g of reduced fat feta (which is 2 x HEA, but this serves two remember, so calm yer tits)
  • salt, pepper, worcestershire sauce (which I know isn’t technically veggie, but I’ve been told (by some pallid, shaking, wincing from the sunlight vegetarian that you can buy a veggie-friendly equivalent) (I’m kidding I’m kidding, she had to write it down and even then her fingers snapped like breadsticks when she tried to grip a pencil)
  • bulgur wheat, quinoa or couscous cooked however you fancy it

to make pepper, herb and feta salad with roasted mushrooms, you should:

  • cut your mushrooms into quarters and tumble them about in a couple of spoonfuls of worcestershire sauce, with a pinch of pepper and salt
  • stick them in the oven for about twenty minutes on say 190 degrees until they’re nice and roasted and all of the mushroom juices (urgh) have leaked out
  • whilst the mushrooms are cooking, chop up your mint – get all of the leaves together and wrap them into a cigar shape – then finely slice – much easier
  • if you’re roasting your peppers, cut them in half, stick them under the grill and cook until blackened – or – be a good dear and buy the jar from Tesco – cut into chunks
  • crumble your feta any old how – you’re making a salad here, not a work of art
  • toss the peppers, mint and feta in with a tablespoon or two of lemon juice from your lemon and a pinch of salt and allow to marinate whilst the mushrooms roast
  • once the mushrooms are done, it’s a quick assembly job – cooked quinoa or what on the bottom, peppers and cheese next, hot roasted mushrooms on the top

Done! If you’re not a fan of mushrooms, swap them out for a plain chicken breast. You monster.

smoky sweet potato and bacon hash

Here for the smoky sweet potato and bacon hash? I won’t keep you! Well, that’s a fib, there’s the usual twochubbycubs’ guff to wade through…

Only a quick post tonight as we have a lot to do – I’m away all next week and we’re trying to spend some nights together. D’aww. Listen, in the almost ten years we’ve been together we’ve probably slept apart from each other less than ten times. Not bad eh! I don’t know if I can drop off without the sound of him choking on his fat-collar during the night and I’m sure he’s equally concerned that sleep will elude him if he doesn’t have the stench of last night’s dinner blasted in his direction in five minute intervals. Paul doesn’t sleep at night, he just passes out from holding his breath for so long. I might have to get room service to wrap a vending machine in 95% polyester and place it on the bed next to me just so I can relax.

In other news, we’ve finally secured tickets to the biggest show in town! Ahem. We applied at some point last year and they’ve finally found us a seat in the audience of…Question Time! No, of course not. We’re going on Judge Rinder. I know! I’m actually very much looking forward to it – it’s all a bit of a nonsense but he does make me laugh and he can do a mean dance, I’m told. I mentioned it in our facebook group and a few people are asking if we can make a sign so they know it’s us. Now come on – just wait for the complaints to OFCOM to roll in about the sofa-sized man with two heads nodding sagely in the background. That’s how you’ll know it’s us. We did apply for the Jeremy Kyle show but once they realised we had our own teeth and didn’t have ALL COPS R BASTURDS tattooed on our faces, we never heard from them again.

I’d love to go on TV, though – it would need to be the right vehicle, however. I certainly couldn’t be part of Geordie Shore for example, given I don’t look like a lump of mahogany varnished with jism. I’ll reiterate what I’ve said before: these people are not real Geordies. They’re barely real people. I’ve applied to go on The Chase but that’s only so I can make coo-eyes at Mark or Paul, but knowing my luck I’ll get The Governess and she’ll make me shit myself live on air before I get through the opening round. That’s not a slight against her, mind, I think she’s absolutely fabulous – she just reminds me too much of Miss Trunchbull from Matilda for comfort.

Paul just stuck his head in from the kitchen (I knew that pump would pay off!) to say he was once on Trisha! GASP. I didn’t know that about him. See, knowing his family as well as I do, I immediately imagined his mother throwing a chair across the studio and wheezing through nicotine-lacquered lungs about infidelity, but actually it turns out he was in the audience. Turns out that a) it’s a very long, boring business and b) Trisha is a right moody cow. Who knew? We’ve been advised that we can’t wear any sporting tops or anything with a big logo emblazoned across the front. I had to stop the chap on the phone right there – we buy our clothes from the garden centre, the worst thing that’s going to be stuck on our jumper is ‘40% OFF OUTSIZE FASHIONS BY STEFAN DENNIS’.

Now, remember our Christmas challenge? Lose 2lb a week until Christmas and that’s two stone lost? We’re both doing it and I’m glad to tell you that Paul lost 3lb and I lost 2.5lb. To say I’m seething is an understatement but don’t worry, I’ll have the last laugh when I’m spooning powdered glass into his Ovaltine later. Look, we went and coloured in our graph!

RIGHT. So tonight’s meal – smoky sweet potato and bacon hash. This was bloody amazing! You can make it all in one pan or actually, you can do it all in an Actifry too! So either way is fine. This makes enough for breakfast for four people or a main meal for two.

smoky sweet potato and bacon hash

to make syn free smoky sweet potato and bacon hash, you’ll need:

  • six thick rashers of bacon, with the fat removed
  • two large sweet potatoes
  • 1 large red onion
  • 1 large red pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of salt
  • four large eggs
  • a few sprays of oil

to make syn free smoky sweet potato and bacon hash, you should:

  • it’s really a matter of prep: cut your sweet potatoes into 1 inch slices and then into nice diced chunks – doesn’t need to be anything perfect, so just fart about with the knife
  • pop into the oiled pan (make sure it’s oven-proof) and let it cook gently for a little bit
  • slice your onion into reasonable chunks and chuck that in
  • and the pepper, of course, and add that
  • grill the bacon until crispy and then cut that into chunks too and put that into the pan with the paprika and salt – stir
  • on a medium heat, gently saute everything – add a bit more oil if things are running dry
  • you want everything to soften nicely
  • once everything is beginning to soften, take the pan off the heat, make four wells in the mixture and crack an egg into each one
  • cook in the oven on 180 degrees for about 15 minutes until everything is soft, golden and amazing!

Very easy!

ACTIFRY RECIPE: we did ours in the Actifry up until the point where it needed to go in the oven, but actually, we didn’t need to decant it into a pan after all…so if using an Actifry…

  • chop up your sweet potato, onion, pepper, salt and paprika and throw into the Actifry with the paddle in and a few squirts of oil for about 16 minutes until everything has softened nicely
  • take out the paddle
  • crack four eggs into wells you’ve made in the potato mix
  • turn the actifry back on and allow to cook for another 6 minutes or so until the egg is cooked through

We love our Actifry – it can be a bit moody sometimes but it makes perfect food every time. It’s available on Amazon for the lowest I’ve seen it for a while, hence me mentioning it. Click here for that!

Let’s face it, breakfasts are a proper ball-ache on Slimming World. Yeah, you can have a fry-up the size of a multi-storey car-park, we know that, but who has time for that in the morning between getting ready for work and a forty minute crap? Honestly. That said, we’ve made some absolute classics in our time and here’s another to add to the list: a spinach, egg, tomato and feta wrap. Apparently this is a big thing in the United States, but so is Donald Trump, so what do they know? I kid, I love America. Anyway, a quick glance at the massively user-friendly and totally-worth-the-money syns calculator…

…reveals a Starbucks wrap comes in at 22 syns! Well butter my tits and call me Sally, no wrap is going to be worth that! So naturally we’ve made our own and you can find that all the way down at the bottom of the page. Because, naturally, I have shenanigans to discuss.

A friend of mine received a speeding ticket over the weekend and it made me think of the speed awareness course I went on. I’ve touched on it before but I recently found my hand-written diary and the notes I put down put some putting together – I essentially scribbled ‘whistler, bald, Posh Spice, 80s’ on the back of my ‘naughty boy admission’ card and frankly, that deserves fleshing out. That’s how I remember things, by the way – I’m forever jotting down nonsense on the back of things and then putting them away somewhere to get lost forever – if I ever die suddenly and they can’t find Paul, they’re going to be really confused when they open my desk drawer and a load of ASDA receipts with ‘cock, gingivitis, farting am-i-right and spiraliser’ on the back come tumbling out.

I was made to go on a speed awareness course after committing the heinous crime of doing 55mph in a 50mph zone at 6am on a motorway. I know what you’re thinking, it’s amazing that I didn’t kill anyone. To be fair, it was probably more to do with me caterwauling and screeching away to Smooth FM than anything else, probably knocked a sleeping policeman out of his slumber. The last time that happened was Raoul Moat and look how that ended up – that could have been me crouched all roided-up in a ditch in Rothbury, shouting at the police helicopter until I decided it was time to clean my ears with a sawn-off shotgun. But hey, a crime is a crime and I was speeding so it’s a fair cop, guv. I received a letter calling me a tinker in the post and was offered a speed awareness course or points on my licence.

Naturally, I chose that, and I was ordered to attend a course in a Holiday Inn near my home. A Holiday Inn, I might add, that’s slap-bang in the middle of a gay cruising ground, because who doesn’t like looking out over two carpet salesman furiously frotting away whilst they learn about road-signs? Incidentally, you know why they call it a Holiday Inn? It’s actually short for ‘Fuck me, I’d rather Holiday Inn anywhere but this shithole’. At least the one at Seaton Burn is. With a heavy heart, I turned up in the morning and was made to sit around a table with various men, all at various degrees of baldness (in my ideal world I would have stood up and rearranged them like matryoshka dolls) and each one, to an absolute fault, with appalling coffee-breath. I didn’t feel I knew them well enough to offer up chewing up or a hydrochloric rinse either, so I was stuck crinkling my nose all morning.

One guy was late, bursting in through the door 20 minutes after the course had started and we’d all done our introductions (“Hi, I’m James, I was speeding because I was too engrossed in the harmonies on Boyz II Men’s End of the Road, ironic, am I right?”) and explained that he had been stuck in traffic. I made a gag – my one and only of the day – that he should have put his foot down, but that was met with a few people sucking air over their teeth and the guy leading the class looking at me like I’d wiped out a bus full of children. His very next sentence was that ‘we needed to show we had the right attitude or we would fail the course’ and it wasn’t so much pointed as me as lubed up and rammed up my arse. I bit my bottom lip and tried to look as solemn as possible.

You know what though, despite my reservations that we were going to get shouted at by someone with bad teeth and glasses as thick as my wrists, it was actually really interesting. I’m not going to lie and say the day passed in a blur like a visit to Disneyworld, but I didn’t die of terminal boredom, not least because of the instructor’s tendency to add horrific detail into the most innocent of sentences. I’d be slumbering my way through a bit about junctions when he’d casually mention that he’d found a decapitated head once in a layby and shock us all back in the room.

We paused for coffee at about 11. I say coffee, it was some brown water that was dispensed sputtering from a machine first used in the Sufi monasteries in Yemen back in the sixteenth century. I can’t make small talk, not least with people whose only common denominator was that they were heavy on the accelerator, so we all sat in silence looking at our phones, a pointless endeavour as they didn’t give us the Wifi password and the mobile reception couldn’t get through the asbestos. Anyway, it didn’t feel right to check into Facebook on a speed awareness course, not least because I didn’t want my mother finding out and ringing with an earbashing. I’m 31, by the way.

Perhaps the most unusual part of the day was the little video where we learned all about stopping distances. All very sobering and factual – I’ve never looked so intently at a chart full of numbers since my doctor weighed me and told me it would be kinder just to push me into the sea and have done.  No, what made this unique was the fact they used a cardboard cut-out of Posh Spice as the target for the speeding car. Even now as I speed merrily along the motorway the sight of Posh Spice bouncing off the bumper of a Nissan Sunny and crumpling under the tyres will creep into my thoughts and make me slow down. Maybe that was their plan all along!

Anyway, after we all promised to be good and signed a form saying how naughty we were, we were released back to the car-park. There’s a bit in the Simpsons where they all leave the road-rage camp at the same time and everyone is unfailingly polite. Don’t worry, it was the same for us, which made me screeching past the waiting Audis much easier. I’m kidding, I spent so much time waving people out that my wrist sounds like a cement mixer.

Right, that’s quite enough guff. Let’s do the breakfast wrap. That sounds like the worst dance craze, doesn’t it?

to make a spinach, tomato, egg and feta wrap, you’ll need:

  • one BFree Foods Multigrain Wrap, Wheat & Gluten Free – currently a HEB, but do check for others
  • two eggs OR if you’re feeling decadent, three egg whites instead (we buy those egg whites in a carton, super easy)
  • a bag of spinach
  • a few dehydrated sun-dried tomatoes – not the ones in oil but the ones you rehydrate in water – now SW say this is 2 syns per 25g, but you use 10g at most – if you want to syn it, you can, but frankly, it’s a dried tomato, not a bloody Wispa)
  • 45g of feta (HEA)
  • a tablespoon of Quark – not a fan? Use Philadelphia Lightest – it’s 1 syn for 25g and again, you’re not using 25g so…

Now with this, customise it however you want. We used egg-whites but you can use the whole egg. Add garlic. Add peppers. Take out the tomato, it’s all good.

to make a spinach, tomato, egg and feta wrap, you should:

  • start by rehydrating your tomatoes by putting them in boiling water, or just chopping up some normal tomatoes
  • add the spinach into a large dry pan over a medium heat and let it wilt right down
  • once that’s done, drain and squeeze your tomatoes and spinach to get all the water out, then chop finely
  • using your spinach pan, drop the beaten egg or egg whites into the pan on a medium heat, cover with a lid and allow to cook for a few minutes
  • chop up your feta in the meantime
  • then it’s just a case of assembly – a smear of soft cheese, some chopped spinach, some chopped tomato, a chunk of omelette and a sprinkling of feta – go ahead and add some black pepper and salt too, why not?
  • roll, serve, turn into poo.

Rolling a wrap is easy enough. If you imagine the big round wrap as a face, you want to put your filling where the mouth would be. Definitely just below the middle of the wrap. Tuck the sides in, fold the bottom up over the filling and then roll it!
