Just a quick post tonight – we’ve got far too much ironing to be fannying on with, and a whole sky box of Jeremy Kyle waiting for us. Don’t fret though, because we’ve got an absolute belter lined up for you which is another notch on the bedpost for a snack, taster night idea AND for a proper meal! I know, I know, we spoil you. Speaking of spoiling, we spent a lovely few hours today out and about at Brysons in Gateshead which is a great local animal shelter – if you’re in the area and looking for a new pet, please do give them a look – they take wonderful care of all their animals and provide a great service. We took the handsome Harvey out for a walk around Eighton Banks and were mesmerised by his wobbling bum. I think any animal becomes a hundred times cuter when they’re a little chubby. We also spent some time getting our hands on some pussy which, believe me, we don’t get to say very often. Our own cats are now in a massive sulk with us and insist on only coming near us to fart. The dirty buggers.

Today’s recipe, then – we got the idea from/ripped it off from one of those videos you see looping and making you shit yourself when the sound starts going off on Facebook – full link here if you want to take a look for yourself. We’ve adapted it slightly to make it more Slimming World friendly. A doddle to make, taste fantastic and a new, interesting way to tart up mince. Oh I know that they’re not especially photogenic, but not everything needs to look like it’s come out of Smug Fucker magazine.

This makes nine. 1.5 syns for the lot.

  • preheat the oven to 180 degrees
  • carefully cut the slices of ham to make 9 thin slices – they don’t need to be neat, no-one is standing behind you tutting and this isn’t Art Attack
  • in a bowl, mix together the mince, salt, pepper and onion granules
  • divide the mixture into nine and roll into balls
  • loosely wrap the ham around the ball to make a ‘collar’ – making sure the two ends overlap
  • gently push your thumb into the middle and pinch the edges to make a cup shape – do this for all nine
  • place the cups into a large baking tray or yorkshire pudding tin
  • drop a slice of jalapeno into each cup, a small dollop of passata and top with a chunk of mozarella
  • cook in the oven for about twenty minutes

Serve with speed foods, or, if you’re normal, chips. These can also be stuffed in a tupperware box and eaten cold at a taster session. But listen, that’s a lot of meat to be sharing with people who have probably only brought in a rotten banana or made a Mug Shot in the kitchen. Fuck ’em, take a bag of Snack a Jacks instead.

chilli and cheesy fries pizza

I know, chilli and cheesy fries pizza. I’m about two steps away from my recipes being ‘tip everything in the fridge into a Nutribullet, blend, drink’. Even then I’d get someone with lips like a balloon-knot furiously messaging me to tell me that a blend of bacon, the cat’s ear medicine and seven bags of forgotten/ignored kale has syns because Margaret Mags says so in that little book of dreams. But see we had a tub of leftover chilli from the time we made slow-cooked pulled pork chilli and we haven’t done a pizza for a long while. Aside from the Dominos we had the other night, but listen, Paul had come on or something and needed something to comfort eat. It’s either that or have Lil-lets tumbling around in my bathroom. This is the type of tea you need at the end of an emotional or busy day – something stodgy, admittedly not full of speed food, but something that feels naughty and has the added bonus of invariably smearing all down whatever shirt you’re wearing. I’m not even joking, it’s gotten to the stage where we almost undress one another before a meal so we don’t wreck another shirt. It creates an odd image for a curious neighbour, who might glance through our kitchen window from afar and think two shaved bison are mincing about taking pictures of fucking risotto. Meh, let them drool I say.

Anyway, it’s exactly the type of food I could do with today – I had two ‘OH SHIT’ moments at my work. You know that awful feeling when you’ve cocked something up and your heart sinks and your bumhole starts unpicking the seams of your trousers? That clamminess of the brow and the shooting pains down your left arm? That’s happened twice today. First time I was looking at a deadline for an important piece of work and worked out that I’d missed the filing deadline by three days. I’ve only been in my current role for three months but surely that’s long enough to be packed out of the door with a flea in my ear? I took myself to the gents toilet down a few floors, took a few deep breaths to compose myself (and learn this readers – never, ever go to a busy shitter to take a deep breath – it’s a pretty safe bet that I’ve got advanced mesothelioma as a result) and work out my apology. Ashen-faced, I made my way back to my desk only to realise that it’s June, not fucking July, and that I have a whole five weeks to crack on with things. Phew. I nervously laughed and carried on with my day, with my heart-rate only taking three hours to return back to it’s normal thwomp-thwomp-stutter-seize-thwomp pattern. Thank Christ I’m defibrillator trained, though I reckon they’d frown upon self-use. Plus the smell of my burning chest hair would condemn the building.

Oh, and the second time? I thought I’d missed out on a cupcake. Christ, I almost booked a meeting room out for a good cry.

Anyway come on, let’s get cracking.

This makes enough for one wrap – just double up. Credit for the original idea for the recipe goes to realfoodbydad, we’ve tweaked it to make it SW friendly!

to make chilli and cheesy fries pizza you will need:

  • 6 tbsp leftover chilli, spaghetti bolognese, pulled pork or whatever you’ve got
  • 1 BFree Multigrain Wrap (HeB) or whichever other wrap you find that is a) your HEB and b) doesn’t taste like a verruca sock (if you don’t want to use your HEB, this wrap is only 4.5 syns)
  • 50g reduced fat grated mozarella (HeA) (again, swap out this for any cheese you like, or syn some, hey, I’m not fussy – if you don’t want to use your HEA, 50g of mozzarella is 6.5 syns)
  • two good handfuls of Slimming World chips (an Actifry is your best bet for this job – buy one and never look back!) (and yes, you can use leftovers – leftover chips haha, like any of us have trouble breathing unassisted at night because we leave leftovers)
  • 2 tbsp of sliced jalapenos
  • 1 spring onion, sliced

to make chilli and cheesy fries pizza you should:

  • preheat the oven to 240 degrees
  • spread over your base sauce over the wrap, leaving  gap of about 1cm around the edge
  • spread the chips out over the wrap, as evenly spaced as you can manage whilst you’re cramming them into your mouth
  • sprinkle over the cheese and top with the jalapenos and spring onion
  • bake in the oven for about 5 minutes, or until the cheese has melted

Easy, really. Now of course we’ve made some wonderful pizzas before, you see…

cheese and onion pasties

Right, not going to lie, this isn’t a cheese and onion pasty any more than a eight-eggs-mixed-with-an-options-and-microwaved is a bloody cupcake. IT’S NOT IT’S A CHOCOLATE OMELETTE. But let’s persevere. Just a very quick post tonight because we’re looking at booking our December holiday to Las Vegas. Las Vegas! I love to gamble but I’m crap at table games, so no doubt I’ll be turning tricks by the side of the strip in a torn dress by the third day. More on that in another post, perhaps. You may recollect my previous experience trying to make a steak bake following the recipe flying about on facebook – it tasted like disappointment and regret. Actually, it tasted like what I bet my cat’s bumhole tastes like, although given how much he’s always licking it to a fine shine, perhaps that’s not as bad as I think. I won’t be trying it and I’ll certainly not be doing a recipe.

Anyway, I love nothing more than a pasty from Greggs. Here in Newcastle they use Gregg’s outlets like one might use a drainpipe – attached to every major building. I swear we’re about three shops away from Inception-Greggs where you go in for a steak bake and never leave, every time you push out through the exit door you tumble back in from the rear entrance, like some dodgy version of the stairs scene from Labyrinth. Though, if it means I get to gaze admiringly at the late David Bowie’s moose-foot whilst I reach in for my oval bite, so be it. Still, we had a couple of those sandwich thins to use up and some leftover mash, so why not?

to make a cheese and onion pasty, you’ll need:

  • one Kingsmill wholemeal sandwich thins, which I’m reliably told by SW’s own website is a HEB. Invariably it won’t be, so if you need the syns, it’s 5
  • any leftover mash
  • bit of cheese
  • onion powder (classy!) or gently soften some onions (before you start emailing me like you did when I used bloody panko that one time, onion powder can be found wherever the jars of herbs and spices are in your supermarket)
  • one egg, beaten to within an inch of its life so it won’t bloody do it again

to make a cheese and onion pasty, you should:

  • now come on, really?
  • add your HEA of cheese into your leftover mash, tonnes of black pepper, teaspoon of onion powder or some proper onions and salt
  • spread it into your thins
  • cover and pinch the edges together
  • wash with some beaten egg (the thin that is, not your body)
  • it bothers me that I even need to add that qualification
  • cook in the oven for around 15 minutes on say, 170 degrees – you want the top to crisp a little

For the true Greggs experience, pop it in the mouth of a child who can barely gum a rusk whilst you fumble around in your Paul’s Boutick bag looking for your Richmond Superkings.

six slimming smoothies

Here for the six slimming smoothies? Of course you are. But first…

It’s too hot. It’s too hot for a long post so damn it, I’m going to post the recipe for the six smoothies and go lie down in our air-conditioned bedroom, wailing and calling for Paul to turn me away from the sun.

I hate the hot weather. I really do. I can’t be done with it. I’m sweating like Josef Fritzl on Through the Keyhole / a nun picking cucumbers / a cat burying a shit on a concrete floor. Yes, that’s tasteful enough to put in. You should have heard the three I didn’t put in. I’ve always been envious of those folk who can seemingly bask in sunlight and thoroughly enjoy it. You have no idea how much I want to take my shirt off and eat ice-cream in the centre of town, but I genuinely think it would cause a riot. Whilst I’m not a huge fan of the type of bloke who goes topless the very second the ice warning dings off in his car, it must be a nice feeling. Perhaps I should get a copperplate-writing tattoo on my neck and turn my shoulders red. It ruins every aspect of anything enjoyable – good hearty stews get pushed to one side and replaced with salad, more salad, salad with a bit of salad on the side and salad-salad. I can’t face toiling in the kitchen for hours – even by proxy, given Paul is the one who does the cooking – so meals tend to get repetitive. Sex becomes a chore with everything sticking to each other like pulling warm bacon rashers apart. The roads become full of stupidly big cars trundling along at 25 miles an hour with a big plastic shitheap being towed behind them. I know it’s terribly fashionable to hate on caravans but look, they’re bloody ugly things and almost (unless YOU’RE a driver, you’re fine) always pulled by the type of people you know read the Daily Express, furiously circling the word immigrants in thick red pen with spittle on their lips. The men who are more nose-hair than bellend.

Pub gardens become full of braying donkeys taaaalking like thaaas and coughing at people for having the temerity to light up a fag. Beaches become awash with badly parked Dacia Dusters, dog poo and poorly buried Poundland BBQs with a half-life longer than Tellerium-128 just waiting to slice your foot open. You can’t open the windows because all of the neighbours are cutting their grass to the exact millimetre meaning the air is so thick with pollen I’ve only got to sniff daintily at it to make everything inside my face swell-up and turn me into John Merrick’s fun-house reflection. Birds singing from 3am in the morning until 2.58am the next day means only one thing – endless half-chewed birds being dragged through the cat-flap and deposited somewhere where I’m absolutely guaranteed to stand during the night when I get up for a piss. You’ve never known revulsion until you’ve felt half a sparrow crunch under your toes in a twilit bathroom.

But you know what really fills me with unbridled fury? When people say ‘OH BUT YOU’LL MISS THE HEAT WHEN WINTER COMES’. No! No I absolutely fucking won’t. I have never turned around in December and said ‘well yes Marie, this Christmas vista is quite charming but it could only be improved with the top of my head being sweaty, extensive chub-rub on my legs and sinuses like cocktail sticks’. I bloody love the winter! If I’m cold, I can put a jacket on. Well no, I’m Geordie, so I might deign to put a thin t-shirt on if the ends of my fingers turn black. There’s nothing you can do when you’re too hot except gripe, moan and whinge about it, even when you say you’re not going to do a long post. But god it felt good getting all that off my chest.

Let’s get to the six slimming smoothies, shall we?

BEFORE WE BEGIN – and partly because I’m feeling all bolshie from my moan about the heat – it’s up to YOU whether you decide to syn these smoothies. I don’t. Slimming World’s argument is that you should syn fruit if it is blended but there are no syns if you eat it raw. Ostensibly this is due to ‘changing the filling factor of the food’ or creating a situation where you might over-eat calories. Fine. That rule applies if you want to make orange juice – you couldn’t sit and eat eight oranges but you could easily neck the juice of eight oranges in one go. I keep reading from people in SW groups who say that blending releases the natural sugars, as though the strawberry is a spirit level bubble filled with syrup. Pfft. Perhaps that’s true. I don’t know. All I know is this: none of these smoothies use any more fruit than you could cheerfully and comfortably eat in a fruit salad. If it makes you feel better, don’t blend the fruit in a Nutribullet or similar, push it all in your mouth with your sausage-fingers and frantically chew it up before spitting it into a glass. Technically, according to SW, that makes it syn-free. PFFFFT. I’ve covered my thoughts on this tweaking nonsense before, too.

Anyway, because I’m a kind, loving blogger, I’ll give you the syns option IF you think you need them. These smoothies are lovely for a quick breakfast and full of health and wonder. Plus, they make a pretty range of colours! Let’s get started.

All of these smoothies have the same basic ingredients – half a small banana (2 syns), a few tablespoons of fat-free yoghurt and some ice. They make a delicious, thick smoothie. If you want it a little runnier, add almond milk (100ml is 1 syn, usually) or milk from your allowance. Adjust to taste. I’ve been very generous with the amount of fruit too below, so chances are the smoothies will come out lower syns anyway. Plus, you know, it’s fruit. There’s absolutely no bollocksy way that a HiFi bar is a better option at 6 syns. Bah! Remember: it is YOUR choice to make, not mine! Why not have the odd smoothie and see if it troubles your weight loss?

We blend all of our smoothies in a Nutribullet – they have a range on Amazon you can find right here!

So, left to right, the six slimming smoothies are:

strawberry, cherry and raspberry – a handful of strawberries – (50g is 0.75 syn), a handful of raspberries (50g is 0.5 syn) and a handful of cherries (50g is 1.5 syns) = syn total including the banana is about 4.5 syns

peach, carrot and apricot – one apricot (50g is 0.75 syns), one peach (50g is also 0.75 syns) and one carrot (free) = syn value overall including the banana is 3.5 syns

mango and pineapple – 50g of mango is 1.5 syns, 50g of pineapple is 1 syn = syn value overall including the banana is 4.5 syns

spinach, mint and choc chips – 25g of dark chocolate chips (we used Dr Oetker which are 6 syns, so 1.5 syns a serving), 80g of uncooked spinach, 40g of mint leaves = syn total overall including banana  is 3.5 syns

blueberry – pretty obvious, chuck in a whack of blueberries (75g blended is 1 syn) = syn value including the banana is 3 syns

beetroot and blackberry – 0.5 syn for 50g of blackberries and I threw a tiny wee pre-cooked beetroot in there. Tell you what mind, don’t be alarmed when you go to the netty later and it looks as though you’re bleeding. You’re not. Promise. Syn value including the bloody banana is 2.5 syns.

Enjoy! I reckon these are a much easier way of getting fruit in at breakfast.

fresh spring rolls and dipping sauce

Was it my fresh spring rolls and dipping sauce that caught your eye? Well scroll on down, you filthy buggers. Fair warning, tonight’s entry is a little saucy.

Before we get to the recipe, I’m going to do something unusual. See, in the facebook group that accompanies this blog are a load of funny buggers, each more crass and hilarious than the last. I can rattle off a blue joke and a knob gag no worries, but well, I struggle to get women’s problems correct. It’s all so complicated, and well, if you get it wrong, you’re liable to end up with a clit around the ear and a flap in the face. Wah-wah.

Anyway, I decided it would be a gas to ask people if they wanted to write an ‘article’ for the blog – no catches, write what you want, and if I have a recipe but can’t be buggered to type up one of my usual why-use-one-word-when-forty-paragraphs will do, I can post one up! If you’re interested in having a go, let me know in the comments. sweatbox: a tale by Clarabell

Now, we’re all used to the candid craic from James and Paul about douche bulbs, all things in the downstairs department, and of course the post that mentioned bukkake…which I had to google. On a work laptop. Upon which I forgot to delete the history. Cheers guys! So I figured that with a gaggle of MAINLY female readers that my post would have to be about some nether region tale of the female variety. Something we’ve probably all experienced at one point. Perhaps not James and Paul. (James edit: NOT TRUE! I’ve been there and it was all very charming, but not for me. That’s what keeps the world interesting, different opinions, apropos of nothing I don’t like potted ox tongue either).

I’ve been fed up lately, I’ve been getting bouts of cystitis, antibiotics, thrush, cystitis….repeat. I’ve had a scan and there’s nothing wrong with me other than I don’t drink enough water, and have self-created this cycle of misery.

Resigned to buying the thrush cream, after the standard tactic of ‘ignore it and it might not be there’ stopped working, off I went to the local shopping centre, my purse hovering on the thick air in front of me. I’m in Asda but I can’t see what I want on the shelves, and I’m quickly narked that the chemist is the other side of the centre, only because when your regions are on fire, that’s a long walk to do, simultaneously avoiding the urge for a scratch, and walking like there’s stones in your shoes. But! In a flash of delight, I remember that they took out half of the checkouts, to make an optician that no-one goes in, and…. a PHARMACY! Whoop! There’s nothing like the delight of knowing you can get minge cream at the same time as your linguine.

I’d like some Canesten Oral Duo” I say bravely– pointing to the bottom shelf. Worryingly, he looks like he doesn’t have a clue what I’m asking for. He follows my finger to the bottom shelf, and picks up some Sea Legs, examines box, puts it back and repeats – he does this a few times with a box of Rennie, and some headlice solution, and eventually comes across the thrush ‘range’ glowing on the shelf like a barber’s pole in full red and white glory. I’m wondering at this point if he is the pharmacist, or whether he’s mugged the rightful medicine man of his Asda badge and strolled behind the desk in the manner of an imposter, hoping to get first nab of the nearby ‘Whoops’ range, but he comes across the requested item at last. Not literally, you’d really struggle to pick the box up if he did that.

“Is it for you?” he asks. Christ on a bike…look mate, it’s fifteen flaming quid…I am not about to raffle it off in the Slimmer of the Week basket I don’t say this, instead I go with “yes” and 100% resting bitch face. Oh but he isn’t finished, “have you used it before?”…panic! What’s the correct answer to this? ‘Yes’ and appear like some serial offender, someone who can’t control their rancid ways and lifting minnie?! Or ‘no’ and risk a declined purchase, or worse, some sort of lecture on best application practice and/or side effects?! I go with “yes” quickly followed up with “a while ago…” He gives a small nod. He knows I’m baking bread. Phew, home and dry, which is good because another customer has joined me and she has the smug privacy of a prescription, which is her ticket to a no question transaction.  What is it with these useless questions?

However, there can be none more useless than the question I once got asked buying antihistamines for hayfever, “drowsy or non-drowsy” I was asked! Really?! Erm..let me check my diary…nope, nothing on the afternoon, drowsy for me please, I’m fine to lounge around spaced out and sleepy, I was not planning on driving and the only ‘machinery’ I’ll be operating will be the telly, so yup, drowsy will do just do fine…ah wait, no consuming alcohol? Poop.

Anyway, Ahmed walks to the till, and promptly stops and stands above it doing jazz hands, and of course he just remembered he doesn’t know how to use it. Suddenly, “Doreen!” he shouts WAVING THE CANESTEN BOX IN THE AIR! “Doreen, can you ring this in for me please”! I swear the smug-prescription-holder does the smirking shimmy, that tiny little wobble that comes only with an inner titter.  I throw her some side-ways shade, which is code for ‘look lady, we’ve all been there, and you will one day (maybe soon after that prescription for antibiotics teehee!) also have to stand here and deal with this lovely bloke, showing the world his arm pit sweat patch whilst at the same time holding aloft the solution to your itchy snatch’.


Goodness me! I once had a flatmate who had perpetual thrush, brought on by the fact her extra-endowed boyfriend  seemed hellbent on hammering her cervix over her back-teeth. Not even kidding there, she showed me a photo he’d sent and what I thought was his arm holding the camera definitely wasn’t. At one point our fridge was more cranberry juice than anything else. I still can’t have a cranberry sour without thinking of her undercarriage. I remember we once had a full stand-up row over the fact I refused to boil tea-towels in a saucepan on the hob to sterilise them. Awfully judgemental for someone with a little too much glue on their envelope.

Now listen, before anyone starts writing their ‘ANGRY OF TUNBRIDGE WELLS’ letters and getting themselves in a tizz, don’t. I know it’s perfectly natural and I know people get all sorts of things but do you know, if we can’t laugh at ourselves, what can we do? Let’s not live in a joyless vacuum.

Right, to the food!

These are one of those tasty little dishes that look complicated to make, but they’re really not. We used Blue Dragon Rice Pancakes for these which SW say are one syn each (ridiculous) – you can buy rice pancakes from any Asian supermarket too. The joy with these is that you can ram them absolutely chock-full of speed vegetables and lovely free things.

to make fresh spring rolls, you should:

  • get a plate and fill it with warm water, you’ll obviously not need a lot
  • chop all your veg up – this is where a mandolin will save you so much time and make everything neat and wonderful – click here to buy one of those
  • get everything ready to hand
  • take one pancake, push it into the water, allow to rehydrate a little
  • take out, shake off the water and lay it on a tea-towel or better, a nice clean worktop
  • if you imagine it in thirds, you want to place a big amount of filling at the top of the bottom third – or really, just below the middle of the pancake
  • fold in the sides
  • fold in the bottom
  • roll – keep it nice and tight with your hands (fnar fnar)
  • place on a chopping board and cut with a very sharp knife

You’re done! We served ours with a dipping sauce where we took low sodium soy sauce (6 tbsp), a couple of tablespoons of hoisin (4 syns), a few chilli flakes, a drop of honey (1 syn) and some passata. Stir and serve!

Although these are a syn each, these fresh spring rolls are very, very filling and a brilliant way of getting fresh veg into you. I’m a big fat pig and only managed four! If you wanted to keep it vegetarian, swap out the meat for cooked egg or mushrooms.

Come on man straight in there with a bloody meringue joke, there’s literally one meringue joke in existence and that’s it. I’m not even sorry!

Tonight is a super-quick post because it’s Friday, I want to sit back, put my cankles up and rest my weary hide. I’m lucky in that I enjoy my job, god knows what it must be like if you hate it. Paul watches a lot of How It’s Made on the TV (really getting the use out of our Sky subscription, because who doesn’t want to know how pencil sharpeners are made or how they deliver 24,000 cherry bakewells a day?) and you’ll often see, amongst the fantastic machinery and wonderfully clever mechanical systems some little old dear spending eight hours troubling her sciatica and screwing toothpaste caps on or holding over a sheet of pastry. I’m not knocking anyone’s job because well, a job is a job, but goodness me, how do they do it? I get bored if I have to type the same word twice – I treat my emails like a round of Just a Minute. No repetition, hesitation or deviation.

I confess myself a little ticked off because I went to fill the car and promptly filled it full of Supreme Diesel. My car is diesel, so what’s the problem? Well, it offends my meanness to pay extra for something that I can’t see the benefit of. Nevertheless, I went in, handed over my monthly pay and the cashier, clearly sensing my distress, offered me a free copy of the Sun. He was clearly having a bad day. I took one, but only to be polite, the way someone at a buffet may take a spoonful of potato salad that the host has made only to drop it into a plantpot when their back was turned.

What a rag, though. Read what you like, it’s your life, but look at the front cover today – it’s not filled with the sad news that a plane crashed into the Mediterranean killing 66 poor buggers in what could be another frightening turn of terrorism, oh no, it’s got a mock-up of an olive-oil filled paddling pool with the frothy headline ‘The Day Free Speech Drowned’ and a couple of subheadings about how it goes against common sensibility. That should tell you everything you need to know about this shitrag.

We all know who it is, so please don’t be a funny bugger and comment on this saying ‘OMG ITZ THINGY’ because, well, don’t. What I can’t fathom is why anyone cares. The visual is troubling enough but can anyone genuinely say that the fact some happily married man and his husband had sex with another man? Why is it news? No-one was hurt (although they’ll be smelling like a greek salad left out in the sun for a few days), no laws were broken, it wasn’t even a Boy George whoopsy-daisy-chained-an-escort-to-a-wall moment. Some mouthbreathing anus from (I think) The Sun was on Radio 4 on this morning saying that it’s in the public interest because this artist is in the public eye. Well, here’s the thing, unless he’s felching someone out on my front lawn, I couldn’t give a toss – and even then I’d only mind because he’d be flattening our new grass. The journalist went on to say ‘AND HE HAS KIDS’ like having kids immediately renders it illegal to have sex and fun with your partner, which is ridiculous, and there was more than a hint of the kids being exposed to their seedy lifestyle.

Of course, the media printing the name of the children’s fathers and explicit, in-depth detail of their olive-oil-orgasms isn’t exposing them, oh no no no. That’s in the public interest. 

Honestly, they’re a bunch of twats. Feel free to print that, you Tiddler-Riddler-haired witch.

Oops! So yes, let’s get to the lemon meringue overnight oats, shall we?

to make lemon meringue overnight oats, you’ll need:

  • 40g of Quaker or store-brand oats – we use Quaker because we like them
  • fat free natural yoghurt
  • one lemon
  • 2  lemon mini meringues from Marks and Spencers – it’s 7 syns for the whole 35g packet and you get about 14 in there, so let’s hedge our bets at 1 syn for 2, feel free to add more, I don’t care, go wild in the aisles darling
  • lemon curd (1 tsp is 1 syn, I used two)
  • a pretentious serving jar or any old container

to make lemon meringue overnight oats, you should:

  • finely grate the lemon – not all of it, into the yoghurt – for once, this is something I can really say a microplane grater is great for – you get all the rind without all of the pith! Buy one here, you’ll use it lots and lots!
  • it’s really just a case of layering – lemon yoghurt on the bottom, then half the oats, then a spoonful of lemon curd, a crushed up meringue, yoghurt, lemon curd, oats and meringue
  • I like to squirt some of the lemon juice into the yoghurt because I’m a rebel, plus I’m used to the taste of sour yoghurt splashing on my tongue
  • once you’ve taken a picture, cooed over it and thought well isn’t that a treat, mix it all up and put in the fridge for the morning OR, eat it straight away like I did

Looking for taster night ideas? There’s SEVEN recipes down below. I’m not surprised you want inspiration, nothing seems to strike fear into slimmers at Slimming World more than ‘we’re having a party next week, bring something along‘. Well, perhaps the words ‘let’s split the room in half, someone keep points, we’re going to do group activities‘. God I hate that. I’m too antisocial at the best of times but being forced to come up with a witty team name and shout out speed foods makes my throat hitch. For those not in the Cult of Mags, a taster night is where everyone is expected to bring along some food to share with the rest of the class and usually results in about twenty quiches and a box of grapes bought from the Co-op over the road by the lady who forgot it was on.

I struggle with taster nights because, as previously mentioned, I don’t like eating food when I don’t know how clean the kitchen it’s coming from is. Luckily I’m in a class now with people who do look familiar with a bottle of Ajax, but Christ, some of the sights I’ve seen in other classes, well I wouldn’t eat what came out of their kitchens even if it contained the antidote to a life-threatening poison I’d accidentally ingested.

Oh! A quick word. When a buffet is served up in class, try and allow the meek amongst us access to the food. A couple of years ago, in a class in Wakefield no less, Paul and I didn’t get any food because half the class – not the better half – dashed forward as soon as the ‘party’ began and formed one giant body of impassable bulk. It was like the Berlin Wall, only smelling faintly of chips. I’ve never seen food shovelled and devoured with such ferocity and I’ve seen Sicilian wild boars being fed. All I wanted was a (nothing-like-a) Ferrero Rocher and a few ‘JUST LIKE DORITOS’ crisps that I could have planed a door with. I had my revenge anyway – the wasabi peas that I put on the table thinking they were syn-free were actually about eight syns a handful. What can I say? My knowledge of the Mandarin language is a little rusty.

So, with all the above in mind, we decided to do a post on snacks, also fuelled by the fact it was Eurovision last night and we like to have a trough of food to work through whilst we watch our entry get annihilated. Before anyone says the UK will never win because ‘it’s too political’ and ‘no-one votes for us because of the war’, that was relevant maybe ten years ago and certainly isn’t now. Russia almost won it and well, that Putin’s been a bit of a tinker this year, has he not? We don’t win because we send absolute shite – po-faced, dreary, period-pain music with insipid staging and crap tunes. No doubt that Aldi Jedward can sing a tune and strum a guitar but they lost a singing competition where literally tens of people voted for someone else to be a winner. Why would that translate to success in the Eurovision Song Contest? EH? We need to send something amazing, with a massive chorus and an uplifting melody, not a song that would barely make its way onto the second CD in the Now That’s What I Call White Noise 87 compilation.

Anyway come on now, let’s get to the recipes, shall we? This is the spread.

Three caveats that I’m going to throw in before we begin:

TWEAK

  • some of these recipes are ‘tweaks’ in the truest sense of the word – especially the crisps – and it’s up to you whether you follow the rule of synning them or not – tweaks being when you use an ingredient in a way it isn’t intended to be used, such as slicing a sweet potato to make crisps. I will mention it where appropriate. My own view (which you can find here) is that it’s better to be eating something made from a healthy ingredient than a processed packet of crisps. It boils down to this – 100g of sweet potato is around 85 calories, 100g of Walkers crisps kicks in over 550 calories. I’ll be fucked if I’m synning sweet potato crisps at the same rate as normal crisps. If you feel the need to be all frothy and leave a comment castigating me for my temerity, please save yourself the finger strain, wipe the spittle from your lips and simply don’t bother – personal choice;
  • a couple of these recipes you’ll have seen before if you’re a long-time follower, but I thought it would be handy to put them all in one place; and
  • as usual, I’ve given syn values for a normal portion and I’ll mention when it uses up a HEA/HEB. If you’re eating the entire buffet, you’ll need to think about how many HEB/HEA’s you’re using! It’ll make sense as we go along. Basically, each recipe stands on its own. Right? Right.

to make the sweet potato crisps, you’ll need:

  • a couple of big sweet potatoes
  • spray oil – a few squirts of Filippo Berio’s olive oil is only half a syn, and that’s all you need
  • chinese five spice

to make the sweet potato crisps, you should:

  • to make the crisps, use a microwave, it’s much easier
  • get a big old sweet potato and cut it to uniform thin slices – this is where having a mandolin slicer comes in very handy, because it’ll take no time at all to do the slices – buy one here and never look back, not least because it makes your food look great when it’s all uniform
  • arrange the slices on a plate, squirt with some spray oil, dust with chinese five spice (or indeed, any flavouring you want) and rub it in
  • microwave on full power – it usually takes about six minutes, but keep checking every couple of minutes, and once they start to look dry, turn them over
  • keep a proper eye on them mind, because they can burn easily once they dry out
  • once done, take them off the plate, set aside, and do the next batch

to make the four way houmous, you’ll need:

  • a few small tins of chickpeas
  • garlic cloves
  • fat free cottage cheese
  • a lemon or two
  • sea salt

to make the four way houmous, you should:

  • the basic houmous recipe is simple enough – for enough to fill one of those little square bowls above, you’ll want to use one small tin of cooked chick peas (syn free), a nice round tablespoon of fat free cottage cheese, a garlic clove, pinch of sea salt and some lemon juice. Blend it together, adding a little more lemon juice if you like it runny or keeping some back if you prefer it chunky. It’s up to you. You will save yourself so much time if you get yourself one of these little express choppers that Delia Smith was always going on about between tumblers of Scotch – you can find one here – it’ll make houmous in no time
  • to make the different variations, you just add a few ingredients:
    • lemon and garlic (add an extra couple of garlic gloves, a squidge more lemon juice and decorate with finely grated lemon peel) (don’t take the pith, literally, as that is very bitter – just the top layer, please)
    • basil and parmesan (10 torn basil leaves, 10g of shaved parmesan, bit of salt) – up to you if you want to syn such a tiny portion of parmesan but bearing in mind you’ll be getting what, 2.5g of it, I wouldn’t bother
    • pickled red cabbage (just a few chunks of pickled red cabbage and some of the pickling vinegar added to give it colour
    • paprika and sun-dried tomato – I chucked in 1tbsp of sundried tomato paste (1.5 syns, but again, through the laws of dilution, it’s up to you if you syn it)

Easy! Of course, if you don’t want to fart on making the crisps, just chop up some peppers, carrots and cucumber and use them instead to dip into your houmous. If you want our little serving dish, you guessed it, it’s on Amazon!

This makes enough for 36 sticky teeny tiny teriyaki tasters (fnar fnar), if you make them bigger, adjust the syns per ball. There’s 12 syns in the overall recipe.

  • in a large bowl mix together the pork and the beef mince with the egg yolk
  • using a tablespoon, scoop out a spoon-size ball and roll into meatballs – do this for all of the mixture (you’ll need about 36 – if you want, you could weigh out each ball at around 27g each…but life’s too short)
  • heat a large pan over a medium high heat and add a couple of squirts of spray oil or, urgh, Frylight, bleurgh
  • cook the meatballs until browned all over and cooked right through – you WILL need to do them in batches
  • place cooked meatballs onto a baking sheet and place in the oven to keep warm whilst you cook the rest
  • when done, mix together the soy sauce, white wine, sherry, honey and ginger in a small jug and pour into the same pan you used to cook the meatballs and reduce the heat to medium
  • cook for a few minutes until the sauce has reduced and thickened
  • add the meatballs back into the pan and stir carefully to coat – I find it easier to tumble the meatballs in and then pick up the pan and gently slosh them around rather than trying to stir with a spoon
  • serve on cocktail sticks and sprinkle over the seeds – don’t sweat it if you can’t find these, you could easily leave them off and that brings the syn count to 1 syn for six – even better – but they look so pretty with the seeds on

  • 500g turkey mince
  • 1 onion (grate half of it, chop the other half)
  • 1 carrot, grated
  • 3 spring onions, finely sliced
  • 2 cloves garlic, minced
  • 2 tsp fish sauce
  • 2 tbsp soy sauce
  • 2 tsp of sriracha, (1 syn) (you can use any old hot sauce)
  • 1 egg
  • 25g panko (4.5 syns) (or use breadcrumbs from your HEB allowance)
  • ½ cucumber, thinly sliced
  • 5 radishes, thinly sliced
  • 1 tsp rice vinegar
  • 100g quark

to make Bánh Mì balls with a spicy dip, you should:

  • preheat the oven to 200 degrees
  • in a bowl, mix together the turkey mince, onion (grated and chopped), carrot, spring opnions, garlic, fish sauce, soy sauce, 1 tsp of sriracha, egg and the panko until combined
  • roll into 1″ size balls and place on a baking sheet lined with greaseproof paper
  • cook in the oven for twenty minutes
  • meanwhile, in a small bowl, mix together 1 tsp rice vinegar, 1 tsp sriracha and the quark to make a dipping sauce
  • slice the radishes and cucumbers as thinly as you can and skewer one of each onto a cocktail stick with the meatball

No need for a full recipe here, really. Take whatever bread you want from your HEB – we use Kingsmill Crustless Wholemeal bread, which you can have three slices of. Cut nice circles out of them, remember you eat with your eyes.

  • for the egg salad, boil up four eggs, break them up with a fork, add a tablespoon of quark, lots of black pepper, a chopped tomato and some spring onions
  • for the tuna – well, we’re old school, we just like tuna mixed with vinegar and served with cucumber. You could splash out and add a bit of Quark to bind it, I suppose…

to make baked new potatoes, you’ll need:

  • 1.5kg small salad-type potatoes
  • 100g fat-free fromage frais
  • 30g parmesan (1x HEA)
  • 4 rashers of bacon, all visible fat removed
  • 4 spring onions, sliced
  • chives

to make baked new potatoes, you should:

  • preheat the oven to 200 degrees (or an actifry with the paddle removed is just as good – Amazon are selling them for £125 at the moment too!)
  • prick the potatoes with a fork, spray with a little frylight and bake in the oven (or actifry) for about 45 minutes
  • grill or dry-fry the bacon until crispy and chop into small pieces
  • mix together the fromage frais, parmesan and spring onions and set aside
  • when the potatoes are cooked, leave to cool for about ten minutes
  • make a cross in the top of each potato and squeeze the bottoms to open them up
  • spoon in a little of the fromage frais mixture and top with bacon pieces and chives

Please note: that’s an old photo, it’s actually now 4 syns for all the balls, but you’re not going to eat them all yourself anyway, surely? I’ll nip back in time and change the photo later.

Not worth making a full recipe breakdown for this, because it’s so, so easy. I use two packets of Ainsley Harriott’s spicy sensations couscous, which come in at 2 syns per pack made up with water (so don’t be adding butter, you cheeky buggers). Add the appropriate level of water (whatever it says on the pack) and leave to absorb. Fluff with a fork. Beat an egg and mix it into the couscous, then squeeze as many balls as you can out of the mixture. Pop onto a tray and stick it in the oven on 150 degrees for an hour or so – you want to ‘dry’ them out. Cooked low and slow, you’ll be laughing. For a dip, make tzatziki – greek yoghurt (I use Tesco Finest 0% fat – no syns) mixed with cucumber cut into tiny cubes and mint. Stir, chill, eat.

Again, no need for a full recipe. We mixed 25ml of gin with a glass of diet tonic, poured it into a cheapy ice-lolly mould like this £3 from Amazon and added a slice of cucumber. Between six, it’s half a syn each. Of course, it’s easy to customise this, put your pint of whisky in, add lime, add fruit, don’t add alcohol, do what you like!

You have no idea how much I love a good pun, so chilli stuffed easydillas – as in a really easy version of a quesadilla, really tickled my hoop. If you’re looking for the recipe, just scroll that mouse-wheel or finger your screen and you’ll be there in no time.

We’ve finally been back to weigh-in and after spending eight years waiting in the queue cursing under our breath, we’ve been weighed, shamed and course-corrected. Nowhere to go now but down…

…and speaking of going down, let’s discuss Cornwall, shall we? I’m going to do it a little differently – a series of different thoughts, rather than one big monologue – I need to give my poor fingers a rest and anyway, unusually, I didn’t keep notes. So bear with me…

Why Cornwall? Well, naturally, we were attracted to the endless walks, the wonderful surfing opportunity and the chance to lay on a beach and sizzle. Pfft, as if. Let’s get this clear – the only surfing I did was via my iPad to find out when the local Tesco planned to shut off our clotted cream supply. No, we always tend to holiday out of England when we stay in the United Kingdom, but we thought to hell with it, let’s try somewhere different.

And boy, was that a bloody struggle. Seriously – I’ve said it before, there is a massive market out there ready for milking for holiday cottages built for young, professional couples who don’t have sticky-fingered kids, moulting dogs or an extended family travelling with them like fleas on a cat. We spent hours looking for places to rent for a week away and probably found about four cottages that matched what we were looking for. Everywhere else looked like the type of place you’d see on TV in a documentary about someone who got eaten by their cats or drowned in newspapers. Who has ever looked at a room and thought ‘yes, this will do, but we must add more beige’? Eh? I want a cottage full of modern features, tasteful decoration, fun touches and unusual things. Not somewhere where I could see myself stumbling out into the garden to die of terminal boredom, face-down in a Chat magazine with taupe carpet fibres on my tea-stained jumper. 

This was the first cottage we considered.

Admittedly, it looks dull as dishwater inside but heavens, look at the view. I could comfortably see Paul and I as masters of the lighthouse – let’s be honest, if there’s one thing we’re both good at it’s guiding seamen into a safe place – but sadly, they were booked up. Naturally. I’m sorry to be sore about it but I hope Jeremiah (venture capitalist, impotent), Lucinda (yahmy-mummy blog writer) and little Tarquinidad and Labia-Bell (conceived via a rough car mechanic called Trent) had an awful holiday with all those steps to climb. Mahaha.

Our second option, pictured above, up at the other end of the land, was Croft 103 – take a look and tell me that doesn’t look gorgeous. Sadly, again, all booked up. By this point I was beginning to grind my teeth and make plans for a European break when Paul found Two Bare Feet via Google, a cottage down in sunny Cornwall. We booked via uniquehomestays.com – who were excellent, very efficient and a pleasure to deal with (25% off next booking please) and we were on our way. We’ll address the cottage in the next entry.

Now, Newcastle to Cornwall is a bloody long drive – just shy of 450 miles, fact fans. We could have flown, but it’s Newcastle remember – the only flights available that weren’t a vomit-express to Malaga didn’t leave on the days we needed. Plus, I needed to work on our day of departure, so we decided to drive halfway after work and stop in a Premier Inn somewhere in Bumhole, Birmingham. I might have made that name up.

What a drive though – the glamour of the A1, the majesty of the M6. We elected to take my car rather than Paul’s Smart car as we needed to take more than two lightly-folded t-shirts and a plimsoll, so his boot wouldn’t have worked. Paul, having driven an automatic now for many months, gave me such a start as he lurched out, over-revving and kangarooing and generally being over savage with my clutch, but luckily we escaped certain death once he didn’t have to slow down or be gentle. That’s unfair – I’m just as bad driving his Smart car. But that’s because I’m six foot of man pressed into a Quality Street tin sized car interior. It remains the only car I can simultaneously pop the bonnet with one knee and open the boot with the other. That’ll be me banished from ever driving it again. Imagine my distress.

There is something about long car journeys at night that I love – and it’s not that it usually ends up with me getting holes in the knees of my jeans in a layby somewhere, because that simply isn’t true. No, it reminds me of my childhood, when holidays involved my parents shepherding my sister and I into a battered Ford Escort at 3am in the morning in order to get a good start driving up into Scotland to “beat the traffic”, as though the A69 at Warwick Bridge was the equivalent of the roundabout at the Arc de Triomphe. Invariably it would be too cold to have the windows down so the first few hours of the drive would be spent coughing and spluttering whilst my parents hotboxed us to death via endless Lambert & Butlers. We’d get out for a desultory Olympic breakfast in a Little Chef on an industrial estate outside of Lockerbie with blue lips and a faint golden patina of nicotine. No wonder my sister and I always used to fight in the back of the car – my dad would barely have backed down the drive before punches were being thrown, ankles were being kicked and hair was being pulled – but see that was my sister all over, so I never hit her back.

Gosh, I might do a few blog posts about earlier holidays actually, I love reminiscing of times when I used to be a) skinny b) far less cynical and c) more easily impressed. Let’s get back into the fast-lane though and talk about our current excursion.

I’ve mentioned on previous occasions how much I love stopping at service stations. I find them exciting! Everyone is going somewhere – normally to the cash machine to get £20 out to pay for two coffees and a side of abysmal customer service – and everyone has a tale.  Travelling does something to my sphincter that invariably means I want to stop for a poo at every opportunity, so our short four hour drive took about six hours in the end. Our stops ended up costing us £260 because I was so taken with a Deal or no Deal fruit machine that, when I came home, I ordered one for the games room. I’ve told Paul it’ll help us save money and it will, not least because seeing Noel Edmonds face all lit-up in the corner of our games room will make me so nauseated I’ll not want takeaway. We did have a hairy moment when we turned into Trowell Services at midnight and unpacked our brie and grape baguettes only to have a procession of chavs in their acne-carriages turn up and start doing spins in the car-park. It was Fast & Furious 9: Roaccutane Rush. Listen mate, you’re not impressing anyone by sticking a ‘RIP Paul Walker’ sticker on your nana’s haemorrhage-purple 02-plate Micra. 

We left them to it, driving with a contemptuous sneer of our own which was somewhat diluted by the fact the Archers Omnibus theme-tune was playing through our car speakers as we glided past.  At least it wasn’t Yes Sir (I Can Boogie) which was the song of the holiday. Anyway, our moment of happiness turned into despair when, after a bit more driving, we were informed that the motorway was shut and that we had to find our way to the Premier Inn on our own steam. This was past midnight, remember, and I was tired – I hadn’t managed to finish my baguette either. Paul took control and used a new app on his phone that acts as a sat-nav. Brilliant!

NOT brilliant. No, somehow, those last 25 miles seemed to take an eternity, taking us down all sorts of country roads, private lanes, farm tracks and tiny B-roads. I was cursing the whole time (remember, I don’t trust Sat-Navs) but Paul was adamant we were going the right way. Because I wanted to listen to the end of Brain of Britain, I shut my hole, and carried on. It took us over an hour to reach our destination and it was only then Paul discovered he’d effectively selected the ‘scenic’ route option, avoiding major busy routes. My language was as blue as the bedspread was purple. Our Premier Inn receptionist booked us in, taking a moment to ask Paul ‘who are you?’ before realising that he was the ‘Mrs’ on my booking, and we sank into bed, top layer of skin burning and crisping nicely in the far-too-hot-bedroom. Ah, what a start.

Right, so clearly I can’t just write the odd thought, I do need to monologue. Sorry! I’ll get to Cornwall in the next entry! Let’s do the recipe! Here – this looks complicated and a fart-on to put together, but it really isn’t. So calm your knickers. The picture below shows two portions mind. If you want the lot, you greedy bugger, you’ll need to syn an extra wrap – 4.5 syns. But really, it was almost too much for us, and we’re very confirmed fatties.

to make chilli stuffed easydillas you will need:

for the spice mix:

  • 1½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp chili flakes

for the sauce:

  • 300ml passata
  • 3 tbsp white vinegar
  • ½ tsp cumin
  • ½ tsp chili flakes

for everything else

  • 4 BFree Foods Multigrain Wrap, Wheat & Gluten Free (1x HeB per person) (don’t worry, they’ve left the taste in)
  • 400g minced beef (you get a fair few portions of 400g mince in our freezer filler deal with Musclefood, so why not take advantage? Eh? What’s your excuse? Click right here to take advantage of that before we change our deals!)
  • 1 onion, chopped
  • 1 red onion, chopped
  • 2 tomatoes, diced
  • 1½ tsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp chili flakes
  • 2 tbsp tomato puree
  • 2 cloves garlic, minced
  • 2 tins mixed bean salad, drained
  • zest of half a lime
  • 1 tsp lime juice
  • 30g grated reduced-fat cheddar (HeA)
  • 25g sliced black olives (2 syns)
  • 4 tsp quark

to make chilli stuffed easydillas you should:

  • preheat the oven to 200 degrees
  • in a small bowl mix together the ingredients for the spice mix and set aside
  • in a small saucepan heat the ingredients for the sauce together over a medium heat and stir frequently until thickened (this will be towards the end)  
  • meanwhile, heat a large frying pan over a medium-high heat and spray with Frylight
  • cook the onions for a few minutes until soft
  • add the beef and cook until browned
  • add the tomato puree to the pan along with the garlic and the spice mixture and stir well, remove from the pan into a large bowl 
  • using the same pan, add the mixed bean salad and allow to cook for a few minutes until warmed through
  • mash roughly – you can add a tbsp of water if it looks too dry – then remove from pan from the heat and set aside
  • spray another large frying pan with frylight and place over a high heat
  • add one of the tortillas to the pan and cook for 30 seconds – flip over and cook for another 40 seconds, then flip over again and cook for another thirty seconds 
  • place on a wire rack to cook and repeat the process for the rest of the wraps
  • spread half the bean mixture onto one of the wrap and top with half of the meat mixture – leave about a centimetre gap around the edge so it doesn’t seep out – and place another wrap on top. do this again for the other one
  • spoon 2 tbsp of the sauce on top of each wrap and top with the diced red onion, diced tomatoes cheese and olives
  • bake in the oven for about 5 minutes or until the cheese has melted
  • add 2 tsp of quark to the top and serve

 

syn-free crisps and dip

Here for the crisps and dip? They’re a wee bit lower down, but you won’t have so much to read through tonight to get to the recipe because, to use a Geordieism, I’m STOTTIN’ MAD. It took me two hours to exit the multistorey car-park this evening – not because I fell down the stairs or I got lost trying to find my car, no, because some bumhole thought it would be a smashing idea to block the one-way road off with roadworks and then not put any provisions for people wanting to leave in place, leading to about 300 office workers all trying to leave at once from eight different directions down a one way street. All it would have taken is some preferably-fit bloke in a hi-vis to guide the traffic out or indeed, a set of traffic lights, but no.

To make things worse, I got into my car at 5.05pm and needed a piss by 5.07pm. Of course, I was in a completely static line of traffic so I probably had enough time to get out, go home, have a piss, send that away for testing, discuss why it sometimes smells of coconut with a doctor and then begin a course of antibiotics, but I couldn’t take the risk that as soon as I stepped away and nipped to the gents that the line of traffic wouldn’t start up and I’d end up with a ticket for abandoning my car. 

Have you ever had to look around your car and gauge what you could realistically piss in? I have, and let me tell you, in a reasonably clean DS3, there’s not many options. There’s an ashtray and an oversized glove box, and neither of them are waterproof. A Doritos bag seemed like the only option but even then, I’d need both hands to turn the tight corners and I didn’t want a crisp packet of urine balanced on my dash. I knew there was an empty Orangina bottle in the boot but I couldn’t remember if it was glass or plastic, and well, I’ve spent my life avoiding getting a gash on my helmet, let’s not start tonight.

Nevermind, I managed to hold it in, and after an extended period of muttering away to myself in a very British fashion and embarrassing my friend on the radio, I managed to get away, although not after losing my temper with some doddery old bugger who pretty much reversed into my car in his haste to try and cut in front of me. It’s surprisingly awkward when you shout at someone and then have to sit in front of them for another forty minutes, trying desperately not to meet the eye of the old bugger you yelled at in haste. 

Anyway, I’m home now. I did win £400 on a slot machine so that takes the edge off. You may or may not remember that I practice safe gambling through Quidco. More on that here, but I remind you that if you’ve got an addictive personality, it’s not a good route to go down. I’m a tightarse Geordie so no chance of me getting a gambling addition!

I’ll pop this here, see the bit about tweaking below, but remember, this is how we feel about tweaking.

TWEAK

to make crisps and dip, you’ll need:

  • a few big potatoes
  • whatever flavouring you like – I used Worcestershire sauce but you can use salt and vinegar
  • 250g tub of fat-free cottage cheese
  • a few big dollops of quark
  • parmesan – use your HEA allowance
  • chopped chives
  • salt and pepper

Honestly, slicing potatoes evenly is a fart-on. Buy a mandolin slicer, it’s one of the things we use most in the kitchen for slicing up veg and it’ll save you a tonne of time. They’re here and cheap. Tight-arse.

to make crisps and dip, you should:

  • slice your potato nice and thin and even, like Good King Wenceslas did (and I bet he didn’t have a load of people having a shitfit at him over whether it’s a bloody tweak!)
  • season them – few sprays of olive oil, worcestershire sauce, salt
  • place in the oven but keep an eye on them – rather than lying them flat, place them standing up between the ‘rungs’ of a cooling tray, that way you don’t need to clart about turning the buggers
  • once they’re nearly done, take them out, leave to cool and then put them in the microwave in a couple of batches – keep an eye on them though, they can burn quite quickly, you’re just trying to dry them out
  • blend the cottage cheese, parmesan and quark together – I use my Nutribullet for this, but you can just use a hand blender, you don’t need owt fancy (though I use my Nutribullet a surprising amount)
  • top the dip with chopped chives
  • serve

Are these a taste explosion? No, not at all. Whilst they were decent enough, I’d prefer to syn crisps. Should you class these as a tweak? Depends. If you’re chopping one potato up, then I wouldn’t bother. If you’re slicing up a sack of potatoes bigger than a taxi, then yes, it’s a tweak, and yes you should syn. Slimming World will tell you to syn this – it’s up to you how you want to play it.

chocolate cake filled pastel eggs

Happy Easter, all – I’ve been forced to make a nice Easter recipe for chocolate cake filled pastel eggs, saying as I can barely hear my TV for the sound of members crying into their children’s Easter Eggs and shallow-breathing around the empty Mini Egg packets. It’s pretty to look at and I suppose it could be fun to make these with children, but not for me, as I dislike children. Snotty-nosed little poo-machines. Every day I run the risk of deliberately crashing my car into the central reservation when the ‘child of the day’ calls in on Radio 2 at half seven. They’re always so achingly middle-class it enrages me. ‘What are you doing today, little Randolph?’ ‘WELL CHRASS UM IT’S MY PICCOLO EXAM AT HALF SEVEN UM AND THEN I’M MAKING ARTISAN PARST-AARGH WITH THE HELP’. Pfft. At 11 I was too busy counting my pubic hair to worry about exams.

Pah. Sometimes I’d welcome the sweet caress of death. 

Speaking of death, I got told off for being rude by a group of old ladies in Waitrose today for having the temerity to say ‘excuse me please’. I know, shocking behaviour. No, listen, I was making to leave when seemingly every elderly lady in a ten mile range of Ponteland Waitrose decided to meet and hold an impromptu W.I. meeting right in the store doors. Seriously, the automatic doors were stuttering back and forth whilst they gossiped and clucked in one giant lavender mass. I waited for a few moments, clearing my throat, tapping my foot, cocking my shotgun, but no. One old love looked me straight in the eyes (I assume, her cataract was haunting her vision) and then carried on chatting. Eventually I caved, collapsed forward into their huddled mass, sending copies of the Daily Mail flying and hips popping like popcorn in the microwave. 

No, I said ‘excuse me, please’ and waited for the mass to disperse, which it didn’t. It took me asking three times, in increasing pitch and volume, before they deigned to let me past, but not before some wizened old crone with lipstick bleeding into her almond-esque skin clutched my sleeve and told me to ‘respect my elders’. Pfft. It was all I could do not to pick her up and post her into the charity token bank, hopefully into something ironic like Age Concern. Instead I smiled my most ingratiating smile and said ‘terribly sorry Sir’ and walked past. I assume she’ll have sat bolt upright in her Medichair about ten minutes ago with a look of anger.

It didn’t help that as I was leaving I was pounced on by some chap who felt it necessary to proper tell me off for apparently going the ‘wrong way around the one way system’ which ‘could lead to serious accidents’. Undoubtedly I was in the wrong, but in my defence I hadn’t spotted the lettering on the road indicating it was one-way until I turned the corner and had it in front of me. I’ll get a periscope fitted to the car just as soon as I can. He was needlessly officious about the whole thing despite my genuine apologies, banging on about those serious accidents. Serious accidents? If I had been going any more than 5mph I’d have been surprised – I was overtaken by a flock of grannies itching to get to the door for their meeting, for goodness sake. We weren’t about to repeat the M4 motorway disaster. I wiped the flecks of his spittle off my coat and carried on, suitably chastised. I did notice that he wasn’t doing jackshit about all the massive, perfectly spotless, ridiculously oversized Range Rovers parked up on the double yellows to the side of the store though. Wonder why.

Anyway, I couldn’t have been in Waitrose for a more middle-class reason if I tried – I was after white eggs. Not boring old normal eggs, but white eggs, because they take the dye a lot easier for the recipe below. You can use normal eggs though, just leave them in the dye for a bit longer.

There’s a myriad of ‘Slimming World desserts’ which are, without exception, disgusting. You can’t make a good dessert because all the delicious tasting things are rammed in syns – caramel, sugar, flour, butter, cream, chocolate, toffee….no amount of stirring an Options into a friggin’ bowl of fromage frais is going to fool your tastebuds into a food-orgasm, is it? Nearly all of the desserts seem to be the same – take more eggs than is decent, decant a jar of sweetener into it and then add something to give it a flavour, like a Rolo or some apple. That’s not a cake. It tastes like a fart and looks like a scabby knee. It’s no more a lemon drizzle cake than I am a successful heterosexual with fabulous flowing hair. 

Now, don’t get me wrong, I see why people try these things – because the idea of being able to eat cake and diet is a wonderful one, but personally, I think it’s a con. I’d be amazed if any successful slimmer has managed to get to their ideal weight and then carried on making these eggy abominations. You’re given 15 syns for a reason – to have the extra bits you fancy, to enjoy yourself and not feel like you’re on a diet. Use them!

So with that in mind, the recipe:

to make chocolate cake filled pastel eggs, you’ll need:

  • 12 eggs (white if you can get them, so much easier – normal eggs are fine though)
  • 60 ml milk (take it from your healthy extra)
  • 1 tsp vanilla extract
  • 100g plain flour (19 syns)
  • 1 tsp baking powder (0.5 syns) 
  • 110g unsalted butter (21 syns)
  • 1 tbsp vinegar (for each dye you use)
  • 125g granulated Stevia (closest you can get to normal sugar)
  • 1 cup hot water (for each dye you use)
  • 50g dark chocolate (13 syns)
  • 2 eggs (taken from 2 empty shells)
  • various food colouring (I use Wilton dye gels, but you can use anything with a strong colour)
  • 25g cocoa powder (4.5 syns)

Assuming you’re going to make six different colours, you’ll need six different containers to hold the dye. Obviously. Or do two, rinse the container, and repeat. You’ll also need icing bags or freezer bags.

To me, that makes 58 syns for the lot, or just under five syns per egg. Worth it. You can sit and peel them like a hard-boiled egg too, then eat the dense chocolate cake within. Oh yes! Fair warning – this recipe isn’t difficult, but it does take time to do the various stages.

to make chocolate cake filled pastel eggs, you should:

  • fill a big bowl with warm water and some salt
  • to prepare the shell, poke a hole into the top of the egg with something small and thin, like a chopstick, and then widen the hole with your finger, fnar fnar, yeah you know what I mean
  • let the yolk and white slip out – now, rather than wasting it, you could make these ham and egg breakfast bites at the same time – just empty the egg into one of these – easy, and no waste
  • repeat this twelve times
  • wash out each egg with cold water AND take a moment to poke something sharp gently around the inside of the egg, you’ll often get a tiny sac of air at the top of the egg which will make them float in the dye later and cause confusion
  • place all twelve washed out eggs into the warm brine and go pick your bum for thirty minutes or so

Then…

  • once you’ve scratched that itch, it’s time to dye the eggs
  • rinse out the shells with cold water
  • fill your dye container with enough boiling water to cover the eggs you are planning to die, add a teaspoon of vinegar and a good splash of dye – then submerge the eggs
  • if they float, scrape the insides again – if there’s no air, they’ll sink see
  • now, leave them for as long as you want – if you want a pastel hue and you’re using white eggs, a couple of minutes will do, but you might need longer if you don’t have strong dye or you’re using normal eggs
  • pick them out and let them dry in an egg box, hole facing down
  • repeat for all the other eggs and shades – remember, hot water, vinegar, dye, egg…

Then…

  • prepare your cake batter – now, I’m a lazy, stylish sod, so naturally we have one of those fancy Kenwood mixers that Nigella uses (this one), but you can do it by hand just as easy
  • weigh out all your ingredients and get everything ready to go
  • butter and sugar first – into the mixer or bowl and beat like crazy until it’s pale and fluffy – thinking about stopping? Don’t – that’s where so many people fall down – this bit is essential
  • beat in the two eggs and a drop or two of vanilla and 
  • mix in the flour, cocoa and baking powder
  • CONFESSION: though you’re not strictly supposed to, I just throw everything into the mixer and stick it on high, never had a complaint about my cakes yet
  • break up the dark chocolate and microwave for thirty seconds, stir, and another thirty seconds, stopping when it’s melting but not completely melted – the residual heat will melt the rest, just stir it away and allow to cool for a minute or so, then tip into the mixture
  • give everything a final good stir
  • get a muffin tray and some tin foil and create nests in each muffin hole – enough tin foil to hold your egg in place (and make sure it can’t tip over – easy to do
  • tip the lot into icing bags or a sandwich bag (twist it up then cut a tiny bit of the corner off, same thing) and gently pipe it into the dyed eggs – you want about three quarter full – better to fill them up to this level and not have enough for a couple of eggs then to try and be get an equal amount in each one
  • place tin foil over the top and put into the oven for fifteen minutes
  • after these fifteen minutes, take them out, pick off any overflow (easy to do when it’s hot) and put them back in without the foil on top for another ten minutes or so
  • allow to cool, then peel and eat!

It’s a dense cake, nice with milk. It’ll really scratch the chocolate itch too. If you’d prefer to use caster sugar rather than Stevia, add another 22.5 syns or, for the sake of argument, another two syns per cake.
