I know, chilli and cheesy fries pizza. I’m about two steps away from my recipes being ‘tip everything in the fridge into a Nutribullet, blend, drink’. Even then I’d get someone with lips like a balloon-knot furiously messaging me to tell me that a blend of bacon, the cat’s ear medicine and seven bags of forgotten/ignored kale has syns because Margaret Mags says so in that little book of dreams. But see we had a tub of leftover chilli from the time we made slow-cooked pulled pork chilli and we haven’t done a pizza for a long while. Aside from the Dominos we had the other night, but listen, Paul had come on or something and needed something to comfort eat. It’s either that or have Lil-lets tumbling around in my bathroom. This is the type of tea you need at the end of an emotional or busy day – something stodgy, admittedly not full of speed food, but something that feels naughty and has the added bonus of invariably smearing all down whatever shirt you’re wearing. I’m not even joking, it’s gotten to the stage where we almost undress one another before a meal so we don’t wreck another shirt. It creates an odd image for a curious neighbour, who might glance through our kitchen window from afar and think two shaved bison are mincing about taking pictures of fucking risotto. Meh, let them drool I say.

Anyway, it’s exactly the type of food I could do with today – I had two ‘OH SHIT’ moments at my work. You know that awful feeling when you’ve cocked something up and your heart sinks and your bumhole starts unpicking the seams of your trousers? That clamminess of the brow and the shooting pains down your left arm? That’s happened twice today. First time I was looking at a deadline for an important piece of work and worked out that I’d missed the filing deadline by three days. I’ve only been in my current role for three months but surely that’s long enough to be packed out of the door with a flea in my ear? I took myself to the gents toilet down a few floors, took a few deep breaths to compose myself (and learn this readers – never, ever go to a busy shitter to take a deep breath – it’s a pretty safe bet that I’ve got advanced mesothelioma as a result) and work out my apology. Ashen-faced, I made my way back to my desk only to realise that it’s June, not fucking July, and that I have a whole five weeks to crack on with things. Phew. I nervously laughed and carried on with my day, with my heart-rate only taking three hours to return back to it’s normal thwomp-thwomp-stutter-seize-thwomp pattern. Thank Christ I’m defibrillator trained, though I reckon they’d frown upon self-use. Plus the smell of my burning chest hair would condemn the building.

Oh, and the second time? I thought I’d missed out on a cupcake. Christ, I almost booked a meeting room out for a good cry.

This makes enough for one wrap – just double up. Credit for the original idea for the recipe goes to realfoodbydad, we’ve tweaked it to make it SW friendly!

to make chilli and cheesy fries pizza you will need:

  • 6 tbsp leftover chilli, spaghetti bolognese, pulled pork or whatever you’ve got
  • 1 BFree Multigrain Wrap (HeB) or whichever other wrap you find that is a) your HEB and b) doesn’t taste like a verruca sock (if you don’t want to use your HEB, this wrap is only 4.5 syns)
  • 50g reduced fat grated mozarella (HeA) (again, swap out this for any cheese you like, or syn some, hey, I’m not fussy – if you don’t want to use your HEA, 50g of mozzarella is 6.5 syns)
  • two good handfuls of Slimming World chips (an Actifry is your best bet for this job – buy one and never look back!) (and yes, you can use leftovers – leftover chips haha, like any of us have trouble breathing unassisted at night because we leave leftovers)
  • 2 tbsp of sliced jalapenos
  • 1 spring onion, sliced

to make chilli and cheesy fries pizza you should:

  • preheat the oven to 240 degrees
  • spread over your base sauce over the wrap, leaving  gap of about 1cm around the edge
  • spread the chips out over the wrap, as evenly spaced as you can manage whilst you’re cramming them into your mouth
  • sprinkle over the cheese and top with the jalapenos and spring onion
  • bake in the oven for about 5 minutes, or until the cheese has melted

Easy, really. Now of course we’ve made some wonderful pizzas before, you see…

best ever spaghetti bolognese

Yes! The best ever spaghetti bolognese! Well no, you can do so much better by adding things like bone marrow or bacon or delicious dates but I don’t want to be responsible for any weigh-in-ladies getting slapped around the chops, so this is the best you can do within a reasonable amount of syns. We have done a syn free version way back when which you can find here.

Anyway, we weren’t going to post today but see we were discussing in bed this morning our old crushes. Everyone has them – that one celebrity that makes you damp and uncomfortable in the minnie-moo area. Because Paul’s common, most of his were characters from Eastenders because seemingly that was all that was on in the smokehouse where he grew up. Mine are a little more cultured. Pffft. Without further delay:

What can we take from this? Well, it certainly explains why he calls me Sonia during sex and makes me do a little turn on the trumpet to kick things off. It also demonstrates that, if you were lucky enough to have teenage Paul rub one out over the thought of you, you are blessed with immortality and NEVER AGE. Seriously, aside from the chap on the bottom who has upgraded his weirdly phallic beard into a decent sculpted affair and Sean from 5ive looking slightly more boss-eyed, no-one has changed!

Bonus mentions for: the fat Di Marco from Eastenders (who I couldn’t put into the pictures because there’s not a recent photo of him – luckily he hasn’t died. Well no, his acting career has. Bitch). Reese from Malcolm in the Middle.

James’ old crushes – then and now

Mine are a little more obvious, no? I ummed and aahed over that picture of Tyrone there – just to be clear, the actor is two years older than me so I’m SURE he’s over age then. AND I WOULD HAVE BEEN LIKE 16, SO GIVE ME A BREAK. Anyway Paul and I both agree he’s aged well and we were both aghast and stiff when that evil walking Afro was setting about his nethers with the hoover extension. Bears and BDSM, what can I say. Viktor Krum was quite possibly more a case of being in love with his red jacket and furry muff than anything to do with those strong, Slavic eyebrows and jaw. He does however seem to have aged into someone you’d see on the front page of a local paper being sentenced for ripping off old ladies for bogus roof repairs. Pity. Oh and Travis Fimmel – now there’s an interesting one. I just can’t think what attracted me about the top left picture as a young’un – I remember I used to pass a giant billboard for Calvin Klein’s Crave on the way to college and there’s just something that caught my eye. That kind of look is the antithesis of the type of man that Paul and I find attractive – which makes it all the more curious that he now looks like someone we’d both let sit on our face and pedal our ears. Eee, isn’t lust fun.

Bonus mentions: Rhino and Shadow from Gladiators. I swear they’re about 60% responsible for my homosexuality. Not because of their looks, as such, but rather their costumes. Good lord. Thank goodness we didn’t have 3D TV’s back in the day – we would have needed to move the settee back a good half a foot. I vaguely remember liking Toadfish from Neighbours but a quick look at google images reveals that this couldn’t have been true given he used to look like a tiny version of Penn from Penn and Teller – or, nineties fans, the Head of the Witches Council from Sabrina. I never had much time for the dreamboats like Harvey from Sabrina or Billy Kennedy from Neighbours. Too pretty. I used to enjoy Janice’s bit on the side in Coronation Street (Dennis?) – he’s a bit of a gay icon! Oh and Krycek from The X-Files. And Mulder! And poor Pendrell! I’d go on, but it’s too difficult to type with the keyboard constantly being nudged away from me. So let’s do the recipe!

I’m putting this recipe up so you have a reason to use up the rest of the wine you might have used for our previous recipe for dirty macaroni. But come on. We both know you drank it, you filthy lush.

  • bring a large pan of salted water to the boil and cook the spaghetti according to the package instructions – although for fucks sake, it’s spaghetti – boil it, eat it – if you can’t manage that, perhaps it’s time to give Dignitas a call
  • meanwhile, heat a large pan over a high heat and add a little oil

Just jumping in for a second – we get asked a lot about what pans we use that are non-stick enough not to need loads of oil. Now, I know there’s loads out there made from ceramic or teflon or whatever, and they’re probably alright, but we bought some Le Creuset casserole dishes a few years ago and genuinely use the big casserole dish every single day – without anything sticking and (gasp) we clean it in the dishwasher. They are expensive – very expensive – but absolutely and utterly worth it. Buy cheap and buy twice, after all. Amazon currently have a discount – why not treat yourself?

  • add the mince and cook until browned
  • remove the mince from the pan using a slotted spoon into a bowl and set aside
  • in the same pan quickly cook the onions for 3-4  minutes
  • add the chopped garlic and cook for another 2 minutes
  • add the chicken stock to the pan to deglaze (i.e. get your wooden spoon and scrape all the tasty bits off the bottom of the pan) and stir the onions often until the stock has reduced by half
  • add the wine to the pan and do the same again
  • add the bay leaves to the pan and the passata, bring to the boil
  • reduce the heat slightly and cook until it has thickened slightly, which will take about 6 minutes or so. add salt and pepper to taste
  • remove the bay leaves, add the mince and the spaghetti to the pan and mix to combine
  • serve with lots of black pepper, parmesan from your HEA and some basil leaves

taster night ideas for Slimming World

Looking for taster night ideas? There’s SEVEN recipes down below. I’m not surprised you want inspiration, nothing seems to strike fear into slimmers at Slimming World more than ‘we’re having a party next week, bring something along‘. Well, perhaps the words ‘let’s split the room in half, someone keep points, we’re going to do group activities‘. God I hate that. I’m too antisocial at the best of times but being forced to come up with a witty team name and shout out speed foods makes my throat hitch. For those not in the Cult of Mags, a taster night is where everyone is expected to bring along some food to share with the rest of the class and usually results in about twenty quiches and a box of grapes bought from the Co-op over the road by the lady who forgot it was on.

I struggle with taster nights because, as previously mentioned, I don’t like eating food when I don’t know how clean the kitchen it’s coming from is. Luckily I’m in a class now with people who do look familiar with a bottle of Ajax, but Christ, some of the sights I’ve seen in other classes, well I wouldn’t eat what came out of their kitchens even if it contained the antidote to a life-threatening poison I’d accidentally ingested.

Oh! A quick word. When a buffet is served up in class, try and allow the meek amongst us access to the food. A couple of years ago, in a class in Wakefield no less, Paul and I didn’t get any food because half the class – not the better half – dashed forward as soon as the ‘party’ began and formed one giant body of impassable bulk. It was like the Berlin Wall, only smelling faintly of chips. I’ve never seen food shovelled and devoured with such ferocity and I’ve seen Sicilian wild boars being fed. All I wanted was a (nothing-like-a) Ferrero Rocher and a few ‘JUST LIKE DORITOS’ crisps that I could have planed a door with. I had my revenge anyway – the wasabi peas that I put on the table thinking they were syn-free were actually about eight syns a handful. What can I say? My knowledge of the Mandarin language is a little rusty.

So, with all the above in mind, we decided to do a post on snacks, also fuelled by the fact it was Eurovision last night and we like to have a trough of food to work through whilst we watch our entry get annihilated. Before anyone says the UK will never win because ‘it’s too political’ and ‘no-one votes for us because of the war’, that was relevant maybe ten years ago and certainly isn’t now. Russia almost won it and well, that Putin’s been a bit of a tinker this year, has he not? We don’t win because we send absolute shite – po-faced, dreary, period-pain music with insipid staging and crap tunes. No doubt that Aldi Jedward can sing a tune and strum a guitar but they lost a singing competition where literally tens of people voted for someone else to be a winner. Why would that translate to success in the Eurovision Song Contest? EH? We need to send something amazing, with a massive chorus and an uplifting melody, not a song that would barely make its way onto the second CD in the Now That’s What I Call White Noise 87 compilation.

Anyway come on now, let’s get to the recipes, shall we? This is the spread.

  • Bánh Mì balls with a spicy dip

  • sandwiches filled with syn-free egg mayonnaise and tuna and cucumber
  • sweet potato crisps with four different types of houmous
  • baked new potatoes with cheese and bacon topping

Out of sight:

  • spicy couscous balls
  • gin and tonic lollies

Three caveats that I’m going to throw in before we begin:

TWEAK

  • some of these recipes are ‘tweaks’ in the truest sense of the word – especially the crisps – and it’s up to you whether you follow the rule of synning them or not – tweaks being when you use an ingredient in a way it isn’t intended to be used, such as slicing a sweet potato to make crisps. I will mention it where appropriate. My own view (which you can find here) is that it’s better to be eating something made from a healthy ingredient than a processed packet of crisps. It boils down to this – 100g of sweet potato is around 85 calories, 100g of Walkers crisps kicks in over 550 calories. I’ll be fucked if I’m synning sweet potato crisps at the same rate as normal crisps. If you feel the need to be all frothy and leave a comment castigating me for my temerity, please save yourself the finger strain, wipe the spittle from your lips and simply don’t bother – personal choice;
  • a couple of these recipes you’ll have seen before if you’re a long-time follower, but I thought it would be handy to put them all in one place; and
  • as usual, I’ve given syn values for a normal portion and I’ll mention when it uses up a HEA/HEB. If you’re eating the entire buffet, you’ll need to think about how many HEB/HEA’s you’re using! It’ll make sense as we go along. Basically, each recipe stands on its own. Right? Right.

taster night ideas #1: sweet potato crisps with four different types of houmous:

to make the sweet potato crisps, you’ll need:

  • a couple of big sweet potatoes
  • spray oil – a few squirts of Filippo Berio’s olive oil is only half a syn, and that’s all you need
  • chinese five spice

to make the sweet potato crisps, you should:

  • to make the crisps, use a microwave, it’s much easier
  • get a big old sweet potato and cut it to uniform thin slices – this is where having a mandolin slicer comes in very handy, because it’ll take no time at all to do the slices – buy one here and never look back, not least because it makes your food look great when it’s all uniform
  • arrange the slices on a plate, squirt with some spray oil, dust with chinese five spice (or indeed, any flavouring you want) and rub it in
  • microwave on full power – it usually takes about six minutes, but keep checking every couple of minutes, and once they start to look dry, turn them over
  • keep a proper eye on them mind, because they can burn easily once they dry out
  • once done, take them off the plate, set aside, and do the next batch

to make the four way houmous, you’ll need:

  • a few small tins of chickpeas
  • garlic cloves
  • fat free cottage cheese
  • a lemon or two
  • sea salt

to make the four way houmous, you should:

  • the basic houmous recipe is simple enough – for enough to fill one of those little square bowls above, you’ll want to use one small tin of cooked chick peas (syn free), a nice round tablespoon of fat free cottage cheese, a garlic clove, pinch of sea salt and some lemon juice. Blend it together, adding a little more lemon juice if you like it runny or keeping some back if you prefer it chunky. It’s up to you. You will save yourself so much time if you get yourself one of these little express choppers that Delia Smith was always going on about between tumblers of Scotch – you can find one here – it’ll make houmous in no time
  • to make the different variations, you just add a few ingredients:
    • lemon and garlic (add an extra couple of garlic gloves, a squidge more lemon juice and decorate with finely grated lemon peel) (don’t take the pith, literally, as that is very bitter – just the top layer, please)
    • basil and parmesan (10 torn basil leaves, 10g of shaved parmesan, bit of salt) – up to you if you want to syn such a tiny portion of parmesan but bearing in mind you’ll be getting what, 2.5g of it, I wouldn’t bother
    • pickled red cabbage (just a few chunks of pickled red cabbage and some of the pickling vinegar added to give it colour
    • paprika and sun-dried tomato – I chucked in 1tbsp of sundried tomato paste (1.5 syns, but again, through the laws of dilution, it’s up to you if you syn it)

Easy! Of course, if you don’t want to fart on making the crisps, just chop up some peppers, carrots and cucumber and use them instead to dip into your houmous. If you want our little serving dish, you guessed it, it’s on Amazon!

This makes enough for 36 sticky teeny tiny teriyaki tasters (fnar fnar), if you make them bigger, adjust the syns per ball. There’s 12 syns in the overall recipe.

  • in a large bowl mix together the pork and the beef mince with the egg yolk
  • using a tablespoon, scoop out a spoon-size ball and roll into meatballs – do this for all of the mixture (you’ll need about 36 – if you want, you could weigh out each ball at around 27g each…but life’s too short)
  • heat a large pan over a medium high heat and add a couple of squirts of spray oil or, urgh, Frylight, bleurgh
  • cook the meatballs until browned all over and cooked right through – you WILL need to do them in batches
  • place cooked meatballs onto a baking sheet and place in the oven to keep warm whilst you cook the rest
  • when done, mix together the soy sauce, white wine, sherry, honey and ginger in a small jug and pour into the same pan you used to cook the meatballs and reduce the heat to medium
  • cook for a few minutes until the sauce has reduced and thickened
  • add the meatballs back into the pan and stir carefully to coat – I find it easier to tumble the meatballs in and then pick up the pan and gently slosh them around rather than trying to stir with a spoon
  • serve on cocktail sticks and sprinkle over the seeds – don’t sweat it if you can’t find these, you could easily leave them off and that brings the syn count to 1 syn for six – even better – but they look so pretty with the seeds on

to make Bánh Mì balls with a spicy dip, you’ll need:

  • 500g turkey mince
  • 1 onion (grate half of it, chop the other half)
  • 1 carrot, grated
  • 3 spring onions, finely sliced
  • 2 cloves garlic, minced
  • 2 tsp fish sauce
  • 2 tbsp soy sauce
  • 2 tsp of sriracha, (1 syn) (you can use any old hot sauce)
  • 1 egg
  • 25g panko (4.5 syns) (or use breadcrumbs from your HEB allowance)
  • ½ cucumber, thinly sliced
  • 5 radishes, thinly sliced
  • 1 tsp rice vinegar
  • 100g quark

to make Bánh Mì balls with a spicy dip, you should:

  • preheat the oven to 200 degrees
  • in a bowl, mix together the turkey mince, onion (grated and chopped), carrot, spring opnions, garlic, fish sauce, soy sauce, 1 tsp of sriracha, egg and the panko until combined
  • roll into 1″ size balls and place on a baking sheet lined with greaseproof paper
  • cook in the oven for twenty minutes
  • meanwhile, in a small bowl, mix together 1 tsp rice vinegar, 1 tsp sriracha and the quark to make a dipping sauce
  • slice the radishes and cucumbers as thinly as you can and skewer one of each onto a cocktail stick with the meatball

to make little sandwiches, you’ll need:

No need for a full recipe here, really. Take whatever bread you want from your HEB – we use Kingsmill Crustless Wholemeal bread, which you can have three slices of. Cut nice circles out of them, remember you eat with your eyes.

  • for the egg salad, boil up four eggs, break them up with a fork, add a tablespoon of quark, lots of black pepper, a chopped tomato and some spring onions
  • for the tuna – well, we’re old school, we just like tuna mixed with vinegar and served with cucumber. You could splash out and add a bit of Quark to bind it, I suppose…

taster night ideas #5: baked new potatoes with a cheese and bacon topping:

to make baked new potatoes, you’ll need:

  • 1.5kg small salad-type potatoes
  • 100g fat-free fromage frais
  • 30g parmesan (1x HEA)
  • 4 rashers of bacon, all visible fat removed
  • 4 spring onions, sliced
  • chives

to make baked new potatoes, you should:

  • preheat the oven to 200 degrees (or an actifry with the paddle removed is just as good – Amazon are selling them for £125 at the moment too!)
  • prick the potatoes with a fork, spray with a little frylight and bake in the oven (or actifry) for about 45 minutes
  • grill or dry-fry the bacon until crispy and chop into small pieces
  • mix together the fromage frais, parmesan and spring onions and set aside
  • when the potatoes are cooked, leave to cool for about ten minutes
  • make a cross in the top of each potato and squeeze the bottoms to open them up
  • spoon in a little of the fromage frais mixture and top with bacon pieces and chives

taster night ideas #6: spicy couscous balls:

Please note: that’s an old photo, it’s actually now 4 syns for all the balls, but you’re not going to eat them all yourself anyway, surely? I’ll nip back in time and change the photo later.

Not worth making a full recipe breakdown for this, because it’s so, so easy. I use two packets of Ainsley Harriott’s spicy sensations couscous, which come in at 2 syns per pack made up with water (so don’t be adding butter, you cheeky buggers). Add the appropriate level of water (whatever it says on the pack) and leave to absorb. Fluff with a fork. Beat an egg and mix it into the couscous, then squeeze as many balls as you can out of the mixture. Pop onto a tray and stick it in the oven on 150 degrees for an hour or so – you want to ‘dry’ them out. Cooked low and slow, you’ll be laughing. For a dip, make tzatziki – greek yoghurt (I use Tesco Finest 0% fat – no syns) mixed with cucumber cut into tiny cubes and mint. Stir, chill, eat.

Again, no need for a full recipe. We mixed 25ml of gin with a glass of diet tonic, poured it into a cheapy ice-lolly mould like this £3 from Amazon and added a slice of cucumber. Between six, it’s half a syn each. Of course, it’s easy to customise this, put your pint of whisky in, add lime, add fruit, don’t add alcohol, do what you like!

brussels sprout and bacon risnotto

Ah yes, good old brussels sprout and bacon risnotto – it’s our way of making risotto without having to stand over your pan stirring furiously and blinking back hot tears of lament over what your life has become. For me, life is just too short to stir stock. Who else is going to sit simmering with rage at another advert with a twee vocal cover version of a song? Bloody Battersea Dogs’ Home and their I Only Want To Be With You shite. Bah!

No time for length tonight as it’s been a long day sorting out presents for Old Mother Hubbard. 

Actually, my poor mother gets a lot of stick on here, but she’s really quite wonderful. Helpful, pleasant, decent haircut – all words that she’s used to describe me at times. We’re not one of those families that sit around over dinner every Sunday laughing gaily and talking about the neighbours, but we’re close and I couldn’t do without either of them. So: mother, I’ll put this on here because you’re too tight to buy your son’s book – happy mother’s day. Enjoy it, and remember to smile, for it is I who chooses the care-home.

Tonight’s meal uses a much-maligned vegetable – the sprout. It’s a shame these little balls of farts don’t get more love – they’re great for you, cheap to buy and very versatile. Yes, they smell like a church cushion when they’re cooked and admittedly, they look like the Jolly Green Giant’s haemorrhoids, but still, make do. If you’re not a fan still give this dish a go – it doesn’t taste like sprouts, but their nutty flavour seeps into the dish. 

This recipe very easily serves four. You’ll need a decent pot to cook it in though, or at least a good non-stick pan. I’m telling you, buy a Le Creuset casserole pot. Yes, they’re expensive but we use ours every single day and it remains entirely non-stick and wonderful to cook with. Plus, lifetime guarantee AND you get to be a Barry Big Bollocks when anyone comes around. What price can you put on that? Actually, £110, reduced from £170, right here at the time of writing. It’s quite honestly the best thing in our kitchen.

to make brussels sprout and bacon risnotto, you’ll need:

  • 250g of peeled brussels sprouts (we just buy them ready done from Tesco, oh the extravagance!)
  • eight medallions of bacon (did you know you get fabulous, lovely bacon in our Musclefood deal? Why not have a look? No seriously, come on, look!)
  • one large white onion
  • one minced garlic clove
  • as many peas as you dare
  • 350g of risotto/arborio rice
  • 900ml of chicken or vegetable stock
  • pepper and parmesan (taken from your healthy extra at the end)

to make brussels sprout and bacon risnotto, you should:

  • prepare the sprouts by slicing them thinly, whether you use a knife, mandolin slicer or a food processor
  • slice the onion and bacon into small chunks
  • tip the onion, bacon, sprouts and garlic into a good, solid non-stick pan and put on a medium heat, allowing everything to cook and sweat nicely
  • once your onions are golden and the bacon is cooked, tip in the peas and the rice
  • stir the rice through the juice of the onions and bacon, but don’t over-stir, you’re mixing delicate flavours and good wishes, not cement
  • pour in the stock and immediately cover the pan – cook for twenty minutes on a medium heat (8 on our induction hob, which goes to 15) – don’t lift the lid to peek, don’t cheat
  • after twenty minutes take a look – if you feel it needs a bit longer, go for it, but remember it’ll cook away for a bit without any heat
  • serve with pepper and parmesan
  • if we’re feeling particularly filthy, we’ll stir in our HEA allowance of soft cheese or a good dollop of mustard

Right, secondly, couple of boring admin things – we get asked a lot how many servings our meals will do – unless we say otherwise, assume four. We’re very big eaters, always have been, and our meals could comfortably serve four unless we go out of our way to say it’ll be six or two or whatever. I’ve got no time for tiny portions whether during mealtimes or sex. Also, we’ve got so many lovely, warm comments in our comment queue, we’re going to try and get through them today. Please don’t be disenheartened that it takes such an age to clear them – we read each one as it comes in and it touches us right in our special no-no places. To give you an idea how much admin that is, there’s 156 comments waiting for us to approve and comment on, and I only cleared the queue before we went to New York! Goodness me!

So yes, today’s recipe is designed for all those people who spill their vowels down their front and ask us ‘WOT CAN I TAKE TO TASTA NITE‘. I’ll include some more links at the bottom for other snack suggestions, but seriously, if you take these bad boys to class, I’d be surprised if your consultant doesn’t give you Slimmer of the Year right there and fill your book with so many stickers it looks like a Panini 1998 World Cup album, only with Mags playing centre forward instead of Les Ferdinand. God I’d pay good money for that.
Buffets as a rule leave me cold, but these have put me in mind of a recent visit to a carvery. See, before we set off anew on this diet a few weeks ago, we had a little list of things to cram down our necks before we had to be strict again and exist on kale and misery (recipe for kale and misery stew will be online shortly, prep your tears now). They included something delicious from McDonalds (an abstract thought if ever there was one), all manner of beige nonsense from Iceland and a visit to a carvery – perhaps more precisely, a Toby Carvery. I’ve never been, but I feel I’ve been vicariously through all the frothy-mouthed praising I’ve seen people on the internet do. Apparently they’re delicious, the sort of place you would go for a final meal, a Sunday dinner done right at any time of the week – having seen the fervent delirium that swims over the eyes of their fans I was half expecting to be fellated under the table as I worked my way through my roast.
 
Well, that didn’t happen. We stumbled into the Kingston Park Toby Carvery and although the staff were pleasant, the food was awful and most of the customers were clearly determined to get the value out of their £5.99 and to hell with decency. Listen, I’m a fat bloke, but show a bit of restraint man – people were coming back to the table with plates piled so high with heat-lamp warm veg that their glazed-over eyes were barely visible over the top of them. I think it’s a very British thing, confusing quantity with quality, but it made me feel a bit queasy. Just because you can eat as much as you like, doesn’t mean you should. It’s not a challenge, you’re not on the Krypton Factor or up against a timer – they’ll still let you out if you’re capable of breathing under your own steam.
 
The food wasn’t all that, considering the rapturous praise it seems to elicit from various people online. The meat was so leathery and tough that I could have reheeled my shoes with it. The mash and roast potatoes were so dry that I almost asked for a bowl of those little silica gel balls for dessert just to grab a bit of moisture. Because the food is kept under heatlamps and customers are allowed to ‘help themselves’, everything ends up slightly mixed together so you get cauliflower cheese mixed in with the peas and queasy droplets of horseradish blobbing on the top of the gravy. Finally, their famous Yorkshire puddings? I could have sanded a brick wall with the buggers. Bah! The staff were lovely, mind.
 
I see the same thing when I walk down Stowell Street in Newcastle to my car, which is awash with all-you-can-eat Chinese restaurants with the same folk piling their plates high with all sorts of salty nonsense. I can put it away myself, don’t you worry, but I’ve never felt it necessary to combine starter, main and dessert on one plate, especially when you can go back up if you want more. It always ends up tasting the same and I can’t bear seeing people eat without actually tasting the food they’re pouring into their maw. They look like cows in a field chewing the cud, quite possibly with the same levels of methane barrelling out of their arses.
 
Admittedly, I’m being slightly hypocritical. I don’t mean to be. I’d love to make a pig of myself at a buffet but I suffer from buffet-anxiety, or premature mastication if you prefer. I’ll go up, fill my plate with about two thirds of the amount I actually want, and then cry inside at the sight of everyone else’s plate, which is normally full of the things I wanted but didn’t dare pick up in case some snotty cow yelled ‘SPOON OF MINIATURE TRIFLE EH? WITH YOUR TITS?’ or similar. We’ve all been there.
Moral of the story? Calm the fuck down at buffets.

teeny tiny teriyaki tasters

This makes enough for 36 sticky teeny tiny teriyaki tasters (fnar fnar), if you make them bigger, adjust the syns per ball. There’s 12 syns in the overall recipe.

to make teeny tiny teriyaki tasters, you’ll need:

  • 500g lean pork mince
  • 250g lean beef mince
  • 1 egg yolk
  • 60ml light soy sauce
  • 60ml white wine (2 syns)
  • 2 tbsp sherry (1.5 syns)
  • 1 tbsp honey (2.5 syns)
  • 2 tsp freshly grated ginger
  • 15g of a mix of black and white sesame seeds (6 syns, as 25g is 8 syns – and to be honest, you’ll not use all of these because a lot will end up on the chopping board, but let’s err on the side of caution)

to make teeny tiny teriyaki tasters, you should:

  • in a large bowl mix together the pork and the beef mince with the egg yolk
  • using a tablespoon, scoop out a spoon-size ball and roll into meatballs – do this for all of the mixture (you’ll need about 36 – if you want, you could weigh out each ball at around 27g each…but life’s too short)
  • heat a large pan over a medium high heat and add a couple of squirts of spray oil or, urgh, Frylight, bleurgh
  • cook the meatballs until browned all over and cooked right through – you WILL need to do them in batches
  • place cooked meatballs onto a baking sheet and place in the oven to keep warm whilst you cook the rest
  • when done, mix together the soy sauce, white wine, sherry, honey and ginger in a small jug and pour into the same pan you used to cook the meatballs and reduce the heat to medium
  • cook for a few minutes until the sauce has reduced and thickened
  • add the meatballs back into the pan and stir carefully to coat – I find it easier to tumble the meatballs in and then pick up the pan and gently slosh them around rather than trying to stir with a spoon
  • serve on cocktail sticks and sprinkle over the seeds – don’t sweat it if you can’t find these, you could easily leave them off and that brings the syn count to 1 syn for six – even better – but they look so pretty with the seeds on

Get used to people going OOOOOH and slapping you on the back. Hell, you’ve earned it.

easy peasy beef curry – weigh in week two!

Normally I’d just shove the old cock thermometer onto a post but you know what, we’ve had so many lovely comments from you lot that we’re actually putting a recipe on too. But no chat. What is this, a knitting group? I read about a knitting group in America called Stitches and Bitches and do you know, I almost took up knitting just so I can set up the same. I’m forever thinking of names for businesses that Paul and I could establish – a gay wine bar called Bottoms Up, a café of Slimming World meals called Guntbusters, a cigar shop called Buttsuckers…list goes on. It’s how I entertain myself in between screaming wildly at Audi drivers on the A1 (I smile, with murder on my mind) and dreaming about a double page spread in Pick Me Up with my giant trousers held aloft.

Before I get to weigh-in, a curious thing. A couple of weeks ago I was walking to my car along Stowell Street in Newcastle when I noticed what looked like a binliner just chucked on the pavement. Once I was closer and my boss eyes has focussed, it turned out to be a young lad, lying on his back, eyes rolling to the back of his head. Of course, me being first aid trained, I immediately set about dithering and flapping and fussing, asking him what was wrong, no response, turning him over, no response, then calling for an ambulance. No sooner had I asked to speak to the ambulance service then he leapt to his feet and ran off, albeit somewhat shakily. Odd. Perhaps it was the thought of my bristly top lip brushing the top off his coldsores during mouth to mouth that managed to ‘revive’ him. Who knows. But see, I received an email a few months ago warning me (and others, I’m not that important) about a fella who would pretend to be unconscious up until the point he heard you call an ambulance, then he’d fuck off like Usain Bolt. No attempt at nicking your stuff, no rudeness or threatening behaviour, just lying prone, pretending to be unwell, then shooting off. I didn’t think anything more of it until it happened personally to me.

The reason I mention this is because it happened again today. Sort of. As I was walking back to the car, I noticed someone lying on the ground. Everyone walking past him – probably a good twenty or so people, despite him lying right in their way. I actually had to umm and aah a moment before I went to help, but luckily, someone got there ahead of me. They wrapped him up in a coat, and I took my leave. I’d be interested to know whether it was just another scam. What I can’t understand is the people who walked past. Now look, I’m a realist, I know some people are out to scam and others are unpredictable and wild, but for goodness sake, surely we’re not at the point where we can’t give a prone body lying in the street the benefit of the doubt? I actually saw two people step over his legs like he was rubbish. Maybe he’s done it to them before, maybe they’d been warned, or maybe it was some poor sod taking a bad reaction to god knows what. Made me feel a bit sad, though. Still a human being.

Eeeh well. I feel better for getting that off my chest.

Ah yes! Considering we were aiming to lose 2lb a week, we’re quite happy with how this is going, thank you very much. Unusually, Paul lost more than me, but I put that down to the fact I had two pints of Guinness yesterday. Tsk. Paul got his half stone award, I’m 2lb away from a stone award. We’re doing well – that cock thermometer will be spurting in no time! 

Tonight’s recipe, then – easy peasy beef curry. We had a pack of the beef chunks left over from our Musclefood box and this seemed like an appropriate place to use them. I do love a curry, but if you don’t like it super spicy, don’t worry – just leave out the chilli pepper and use the mildest chilli powder you can find. Or even leave it out, give that a try. This serves four, very easily.

to make easy peasy beef curry you will need:

  • 1kg diced beef (why not use some beef from our big box? You know that’ll leave you satisfied and smiling. Click here for a look at our excellent meat deal!)
  • 250ml beef stock
  • 2 tbsp tomato puree
  • 2 tbsp ground coriander
  • 1 tsp ground cumin and one of turmeric
  • 2 tsp grated ginger (not ground!)
  • 3 garlic cloves, minced (for both the garlic and ginger, you can use your fabulous microplane grater, oh what fun! Seriously though, one of the best things you can get for the kitchen – click here)
  • 2½ tsp lemon juice
  • ½ tsp ground pepper
  • 1 tsp chilli powder
  • 1 chilli pepper (optional)
  • 1 big old beefy tomato (optional)
  • 1 handful of rocket or spinach (optional)

to make easy peasy beef curry you should:

  • in a small bowl, mix together all the dry spices and the lemon juice into a paste and set aside
  • heat a large pan over a high heat and add a little oil (GASP) or frylight (BOO)
  • add the beef, stir and cook until brown (you might need to do this in two batches) (for once, browning your meat is a good thing)
  • remove the beef from the pan, turn the heat down to medium, let it cool a little, add the spice paste and stir around the bottom of the pan for about half a minute
  • return the beef back to the pan and stir for about a minute so that it’s well coated with the paste
  • add the tomato puree, beef stock and chilli pepper (if you’re using it), bring to the boil, then reduce the heat to low and cover
  • cook for 1 hour and 45 minutes
  • optional: about fifteen minutes before the end, cut your tomato into chunks and chuck that in, with however much rocket or spinach as you dare
  • remove the lid and cook for another fifteen minutes to thicken

We served ours with brown rice and peas – cook the rice, but chuck peas in at the same time. Couldn’t be easier!

slow cooker lasagne

Do you know, I’m never comfortable typing lasagne. I dither for ages as to whether it’s lasagne or lasagna and whenever I type it into google my eyes glaze over through boredom and I give up. So, take your pick. 

Super quick post tonight as we’ve only just got back from returning the Smart Car. Paul loves it. I hate it with the passion of a thousand suns. Admittedly, it was surprisingly roomy (but not roomy enough for any backseat shenanigans…not least because it doesn’t have a backseat, unless you fancy singeing your arse cheeks on the engine and having the Mercedes logo branded above your nipsy) but it was so…I hate to use the word lame, I’m not in Mean Girls, but yes, lame. I’ve never heard a car wheeze before. Paul stepped on the accelerator and it ‘shot away’ from a junction like a stubborn poo round a u-bend – going, but just. It did give the neighbours something to look at however and turning around at the top of the street was great fun as it can seemingly turn on a penny, but no, no, we’re not getting one. Sorry Paul! I embarrassed him today by parking outside the Smart car dealership whilst he was inside handing back the keys and putting the Black Beauty theme on loud. 

Tonight’s recipe, then – slow cooker lasagne. This serves six and only uses one 400g portion of extra lean mince, the type that you can buy from our Musclefood deal by clicking here. Just saying! You can bulk this out as much as you like by adding carrots, courgette, peas – any old shite you happen to have floating around in the back of the freezer. Also, this can easily be made vegetarian by replacing the beef mince with Quorn or similar. But ew, right. I hope they’ve improved Quorn mince since the last time I tried it – it was like digesting loft insulation. This lasagne is pretty much the same method as a normal lasagne. The pasta cooks slowly and is so soft, it’s almost like another sauce. Sounds like I’m having a joke but honestly, it’s good. That’s why it is essential to make your mince sauce as tasty as possible, it carries the dish! 

We served ours with roast potatoes and some steamed broccoli. Oh how fancy. 

SLOW COOKER LASAGNE

Looking good! Right. So…

to make slow cooker lasagne, you’ll need:

  • 400g lean beef mince
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • tin of chopped tomatoes
  • 500ml passata
  • 2 tbsp tomato puree
  • 280g lasagne sheets (about 2/3rds of a box)
  • 340g fat-free cottage cheese
  • 250g quark
  • as much reduced fat mozzarella cut into chunks as you like – 65g is one person’s HEA, and this serves six
  • whatever speed food you have about

to make slow cooker lasagne, you should:

  • in a large frying pan heat a little oil/Frylight over a medium high heat, add the onions and sweat down
  • add the garlic and the mince and stir occasionally until no pink meat remains
  • add the chopped tomatoes, passata, tomato puree and any other speed veg you are using into the pan and stir well, cook for a few minutes
  • meanwhile, add all of the cheeses into a bowl and mix together
  • spoon a quarter of the meat mixture into the slow cooker, top with a few lasagne sheets (break them up if you need to) and then spread over the top a quarter of the cheese mixture – repeat this three more times to make layers
  • cook on a low heat for 5 hours with the lid on

This freezes well, you’ll be glad to know. We portioned some up, put it in the freezer and got them about again 15 minutes later to eat. That’s portion control for you!

one-pot sausage gnocchi bake

Recipe for sausage gnocchi bake below. You’re going to love it.

OK, so only a quick one tonight – and I’m not entirely sure we haven’t already posted this. But look, it doesn’t matter. It was wonderful, and frankly you can forgive me any old shite when I’ve covered it in melted cheese. Half of  our dishes come out of the oven looking like a burnt knee, but through the wonders of careful photography and judicious cropping, you just never know. Perhaps if I presented it on one of those fancy Slimming World plates you can buy, where someone has scribbled all over a nice white plate with some felt-tips to show ‘what you should eat’ – a concept immediately defeated when you then proceed to cover the plate with your dinner, I presume. I don’t understand the concept of drawing out ‘what I should eat’ on my plate. It’s the foodie equivalent to scratching the TV guide into the glass of your television screen.

Actually, I saw one of these plates advertised on a facebook group the other day and asked what she meant by ‘for show only’, given I was envisioning someone having it on their mantlepiece like a decorative clock or one of those god-awful ‘jumping dolphins rendered in plaster of paris’ statues that everyone had in the nineties. She advised me that it meant it couldn’t be washed or indeed, eaten off. To me, that breaks the two fundamental rules of a plate. It’s definitely not something you’d keep for best. 

Before anyone starts, I’m not knocking the lass for being entrepreneurial and flogging a few plates – all the very best and good luck to her! Nothing but chipperness for those who make their own way in the world.

But honestly, Paul, if you’re reading this, I’m telling you now: if I get a decorated plate, bloody chalk-heart board or a food diary with a cupcake and twattish inspirational message on the front for Christmas, I’m going to bite your cock off and set it on fire.

Speaking of nonsense items that I’d sooner throw into the sun than have in my house, we seem to be locked in a battle of wills with our local Kleeneze distributor. Every few weeks he pushes a tatalogue of nonsense through our door with the passive aggressive note that he’ll be back within a few days to pick it up. We immediately put it somewhere out of sight so we don’t succumb to temptation and end up buying all manner of plastic shite for the kitchen or a portable urinal. A portable urinal for men. Haway. The WORLD is a portable urinal when you’re a guy. Fair enough a shewee allows a lady to have a dainty tinkle instead of grunting around a ditch squatting like a shitting rhino, but a male version? I once, in my more athletic and skinny days, pissed out of a moving car because we were late for a ferry. Don’t worry, we weren’t boarding the ferry at the time. And I wasn’t driving. Dangerous when I think about it – an errant branch whipping into my knob at seventy miles an hour could have really changed how my life turned out. 

Anyway, he always ends up knocking on the door and asking for his tatalogue back, and thus begins a hunt for the offending item and a request that he doesn’t deliver to us anymore. But he never listens. Each time we spend a bit longer looking for it, but he still doesn’t get the message. I’m not enough of a bastard to rip the catalogue up (plus our shredder is on the blink – I wonder if Kleeneze sell those awful scissors with four blades that ‘replace a shredder…maybe I should look…just once) – after all, it’s someone’s business, but I’m telling you now, if it continues, I’ll be putting a VERY passive aggressive terse note on their facebook page. It’s the very British thing to do. He needs to be careful – remember we’re always naked in this house (seriously, it’s like the video for Sweet Harmony by The Beloved viewed through a heat shimmer), next time he does it I’m going to put the offending tatalogue in my bumcrack and poke it around the door.

 

Ah well. Listen, here’s tonight’s recipe, before I get carried away. This makes enough for four if you’re serving it with a side, or two geet big fatties like us.

sausage gnocchi bake

to make sausage gnocchi bake you’ll need:

  • 6 sausages, casings removed (you can use the Slimming World sausages if you MUST, but why not save them for what they’re really for – sucking every last bit of moisture from the air and summoning evil? Bloody awful things. GO TO MUSCLEFOOD INSTEAD MAN)
  • 400g gnocchi (6 syns, so between four, 1.5 syns)
  • 1 garlic clove, minced
  • tin of chopped tomatoes
  • 1 tsp mixed herbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 75g Quark
  • 140g light mozarella ball (HexA x 2)

to make sausage gnocchi bake you will need:

  • heat a large non-stick frying pan over a medium-high heat, using a bit of oil or your Frylight
  • add the gnocchi and fry gently until the sides are golden – keep them moving though, they can catch easily. This will take about eight minutes or so, then remove from the pan and set aside 
  • in the same pan, add the garlic and the sausage meat and cook until browned – remember to keep breaking it up (a masher works well for this) and then remove from the pan and set aside – I like to put it in the same bowl/plate as the gnocchi to keep it warm
  • in the same pan again add the diced tomatoes, mixed herbs, salt and pepper and cook for about seven minutes, stirring occasionally until it’s thickened down
  • reduce the heat and add the quark to the pan, as well as the gnocchi and sausage meat and stir well to mix
  • scatter the mozzarella over the top and keep on the heat until it has melted – you can also put it under the grill for a little bit if your pan can handle it to get it nicely browned and bubbling
  • serve

Before we start and I get to the recipe for meaty pizza fingers, a message for the chap who found this blog by searching for “local herbs to bewitch and win local elections” – I’m sorry if my recipe for red lentil dahl wasn’t quite what you were looking for. But all the very best to you.

Gosh, all terribly exciting this morning in Newcastle. Looked out of my office window to see a big column of black smoke billowing into the air and my first thought was sheer stricken terror at the thought it might have been Paul’s mother arriving.

Just kidding, don’t strike me off the Christmas list yet.

No, a great fire was busy raging at one of a shop in Newcastle and it looks like it has completely gutted the building. An awful thing to happen, and they have been unable to account for the whereabouts of one chap. Hopefully he’ll be found. Watching the local press heralded such treats as ‘there is a smell of smoke in the air’ and ‘the firemen are putting water on the fire’. Really? Not petrol? Perhaps hurl a chip pan through the window and see if that’ll calm the flames? Christ.

It made me realise how cosseted and safe my job is, and how frightening it must be to be a fireman. Imagine having to enter a building where you can’t see, the structure is unsafe and IT’S ON BLOODY FIRE. I get nervous turning the thermostat up, let alone having to battle an inferno to rescue someone from being roasted alive. I just can’t imagine it. I used to be absolutely terrified of fire. No wonder, looking back, with three memories sticking in my mind like smouldering ashes.

Firstly, chip pans. To watch 999 and the like you’d think a chip pan – a proper one mind, full of fat and bubbling on the hob – was akin to a grenade sat there with the pin taken out. Because we were Northern and geet hard we’d have chips for nearly every meal, and my parents were forever putting the pan on and ‘having a lie down’ in front of Countdown, or taking the washing out, or driving over to the next village for a twenty deck of Lambert and Butler, leaving me sat in the living room just waiting for the invariable explosion and the feeling of my skin melting off my face. Clearly they knew what they were doing but good lord, I used to be terrified. Never quite put me off eating the chips afterwards, mind.

Next, anyone have a coal fire? For those who aren’t a fan of bringing coal in from the outdoors and developing COPD over the course of a childhood, you often needed to make the fire ‘blaze’ at the start – essentially you’d cover the fire up with a solid object / covering, which in turn caused the air from the chimney to pull through the fire and ‘get it going’ (or, indeed, to go all Tim Healy-haway-Pet on you, ‘take ahad’). One morning whilst we were playing at a friend’s house (I remember the board game, it was a knock-off version of Frustration where you had to shake the dice yourself instead of popping the dome – probably called Inconvenient or For Fuck’s Sake) and her mother decided to light the fire. Being a proper countrywoman that took no time at all and she decided that instead of using something sensible to make the fire blaze, she covered it up with A SHEET OF NEWSPAPER. She couldn’t have chosen a more stupid material if she tried – I’m surprised she didn’t swap out the logs for canisters of Elnett. To put the cherry on the massive third-degree burns, the child-hating witch then left the house to go up the street to make a phonecall, presumably to her lover. Of course, simple physics took place, the newspaper set alight and promptly fell apart, scattering little burning embers into the air, onto chairs, in my hair, all over the living room, leaving us children to try and stamp them all out. We did, but that made my heart race faster than any game of bloody Frustration.

Finally, anyone who has grown up in the countryside will remember the colossal pyramids of round hay bales that used to be scattered around. Well, my sister and I were cheerfully ignoring my mother’s stern-faced admonishments about playing on the bales and sitting atop a gigantic pile when we heard a terribly loud WHOOMPH and the whole pile went up in flames. Well, you’ve never seen two pairs of Naf-Naf trainers move so quickly. Turns out that tightly-packed hay holds a LOT of heat and only needs the slightest encouragement to burst into flames. Who knew? We certainly didn’t – we were only ever worried about being crushed under the weight of the bales, and well, that never stopped us rolling them down the field and crashing them through the fences at the bottom and into the stream. Oops. Turns out that it was a small broken bottle focussing the sun’s rays onto the hay which started the fire. We were just the little dirty-faced urchins who just happened to be nearby.

I realise that my descriptive ways of talking about anything from my childhood makes it sound like we were the rough family from every single Catherine Cookson novel but of course, I always add that slight air of exaggeration into my description. My dad wasn’t Robson Green and I don’t think I ever had pleurisy from working down t’pit. Here’s a little fact though – up until the age of…I dunno, whenever I discovered masturbation and thus had something else to occupy my thoughts alone in the night, I used to have a ‘procedure’ I had to do before I went to sleep to make sure the house didn’t burn down – blink eight times in a row, whirl my eyes around in my head and then shut my eyes and go to sleep. Interesting how a child’s mind works.

Anyway, enough puff and nonsense from me. Here’s tonight’s recipe. I agonised for ages over what on earth to call them – ‘twochubbycubs’ meaty fingers’ sounds like a sex toy, whereas bolognese burgers just sounds awful and like something you’d get in a Wetherspoons between your second pint and having your teeth kicked out by a walking collection of steroids and inadequacies. Confession – I found this recipe on the internet a while back and copied down the recipe but not the link, so if it’s yours, I apologise. I tweaked it for Slimming World though so I’ve done my bit. I put the word ‘longboy’ down on the page (I handwrite everything, I’m such a fusspot) which, upon further googling (googling which probably put me on some sort of Yewtree watchlist as soon as I typed “+longboy +meat +fingers” into google) sounds like the proper name. Who knows. 

This makes enough for four (two halves each).

to make meaty pizza fingers, you’ll need:

  • 4 wholemeal sub rolls (60g – HeA)
  • 50g panko (9 syns) – optional but dead tasty (before you ask: panko is a dried breadcrumb available from most supermarkets, you don’t NEED it, and if you don’t use it, drop the syns down to half a syn!)
  • 400g lean minced beef (we used a pack from our twochubbycubs’ meat hamper – just one pack, and it’s amazing meat)
  • 1/2 onion, diced
  • 1 tbsp worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1 tsp pepper
  • 2 tbsp tomato sauce (2 syns)
  • handful of chopped chillis
  • 30g low-fat cheese, grated (HeB)

Here’s the thing. We used mini submarine rolls instead of a ‘bun’. They’re exactly the same thing and ours weighed 64g instead of 60g. I refuse to syn them, and I’m using one as a healthy extra. If you’re going to be Captain Anal about it, use a normal wholemeal bun. No need to shit the bed. You get two ‘fingers’ each for 3 syns, or 0.5 syn if you don’t use panko.

to make meaty pizza fingers, you should:

  • preheat the oven to 230 degrees celsius
  • slice the rolls in half and place on a baking sheet, cut side up
  • bake in the oven for about 5 minutes – when finished, reduce the heat of the oven to 190 degrees whilst you complete the next step
  • meanwhile, mix together the minced beef, panko, onion, worcestershire sauce, thyme, garlic, egg, salt and pepper in a large bowl
  • spread the mixture onto the bread rolls – make sure it goes all the way to the edge to stop the bread from burning
  • mix together 2 tbsp of tomato sauce with 2 tbsp of water and brush over the meat
  • bake in the oven at 190 degrees for about 20-25 minutes
  • remove from the oven and scatter over the sliced chillis and cheese, and bake for another five minutes
  • finish under the grill for a few minutes to brown it all off
  • serve and enjoy!

garlic, bacon and chicken pasta

We’re both feeling quite melancholy as we witnessed something pretty awful today – a bloke having a massive seizure in the middle of IKEA and then screaming and thrashing as he came around. We’re both first-aid trained but when we got there, the staff were doing everything right and were bloody marvellous. What annoyed us more than anything, though, was the table full of old people practically snapping their necks to get a good look at the poor prone man on the floor. Not affording him any dignity or discretion, it was like they were waiting for the last number on their bingo cards. Vultures the bloody lot of them. Hopefully they were found face-down amongst the ANÖOS toys later on. Why are people so shitty?

So it brings me to two things, two pleas, really. And yes, it’s not the usual fun and games and piss-take that we normally bust out, but it’s so important. First – learn basic first aid. Take an hour to watch a few Youtube videos – you’ll find a whole raft of videos by the marvellous St John’s Ambulance right here. No-one is expecting you to give someone a tracheotomy or put in a catheter, but basic first aid makes all the difference. Would you genuinely know what to do if that bloke had been in a room with you and you alone and he had started having a seizure? What if a baby started choking or a kid came to you with a broken arm? We’re lucky – we’ve both been trained because of our jobs – but it’s such a frightening position to be in that I’d hate to have to do it without the facts. If you’re in employment, why not ask your HR if they’ll get you on a training course? You just don’t know when you’ll need it. It’s odd – the issue has come to our attention via the same disease – cystic fibrosis, with a friend of mine losing a good friend to it and one of our lovely lasses in our group posting on behalf of her friend who is slowly losing her lungs. I’d love to think that when I die, they take whatever they need from me. My eyes are fucked, so there’s no point there. Heart is probably shot and doesn’t beat so well, and lungs have been blackened by years of parents who thought nicotine was a suitable replacement for fresh air (I kid. Sometimes they used to wind the window down in the car). My skin is good, though, so graft away, and my brain – assuming it’s not being turned to sponge by some dastardly CJD prions (I ate a lot of cheap beef back in the day), is fairly sharp. They could take my balls if they wanted, they’re in decent shape, and hell if you want my willy, it’s there, though years of growing up alone in the country with nothing to do means it’s like a well-worn tyre now. I jest I jest. Trying to inject some levity. Go on. Sign up on the register. I promise you that if I die before you, and given my calorie intake and sloth levels of exercise, it’ll probably happen, you can take what you want.

OK. So let’s do the recipe.

chicken and bacon pasta

 

to make the garlic, bacon and chicken pasta, you’ll need:

  • 400g pasta of your choice
  • 1 red onion, finely chopped
  • 4 bacon medallions
  • 2 chicken breasts
  • 6 cloves of garlic, chopped
  • 50oml passata
  • ½ tsp paprika

 

to make the garlic, bacon and chicken pasta, you should:

  • cook the pasta according to the instructions – drain and rinse with cold water and set aside (this is a trick I learnt recently – works a treat!)
  • in a large frying pan heat some oil over a medium-high heat, add the onions and cook until softened, stirring frequently
  • meanwhile, chop the bacon and chicken into small pieces and add to the pan, reduce the heat slightly and cook until they meat is browned all over
  • add the paprika and garlic to the pan and cook for about thirty seconds, stirring constantly
  • add the passata to the pan, stir and cook for about fifteen minutes until the mixture has thickened
  • add the pasta back to the pan, stir through and heat for about three minutes
  • serve!
