First, a question – does anyone else make the car dance around when they’re driving along and a particularly good song comes on. I almost crashed before coming back from Tesco making the back of the car boogie along to Funkytown. Honestly imagine that on my death certificate – cause of death ‘Lipps Inc’s infectious grasp of beats’. Mortifying.

Hey, we’ve been gardening today. Outside of our kitchen is a square of soil that nothing other than the rosemary beast seems to grow in – it’s exceptionally thick clay and well, I can’t be arsed to treat it. So, we dug everything out, buried these nice coloured plant pots, filled them with compost and have replanted the rosemary, bay, thyme and chives and added garlic, mint, parsley, oregano and sage. We’ve then covered the soil around the buckets with bark. It needs levelling out and the bricks pressure washed and the fence painted (that’s for the gardener to do) but it got dark and we got lazy, but it doesn’t look too bad!

Anyway, I forgot to mention yesterday that we actually went back for our weigh-in to our NEW group – Saturday morning. We did try a couple of others during the week but they’ve either been too big or don’t quite marry up with our availability. Problem is…it’s 8.30am in the morning! The plan is that it’ll encourage us to use up the remainder of the Saturday instead of languishing in bed until 1pm and then sitting naked until one of us ventures to the shop for breakfast.

So how did we do? Well, badly!

paul – 1lb on.

Fuck. Well actually no. It’s not suprising – I’ve been eating all sorts of crap at work given I’ve been working crazy hours (almost 90 hours overtime in two weeks) – I’m actually pretty chuffed it’s only 2lb! I’ve had Wagamamas, a Chinese, Dominos pizza, more chocolate than I know what to do with (and wait until you see tomorrow’s post). I’ve been eating healthy at home, and I can only presume that Paul has been comfort eating through the lack of my wobbly arse blowing around the house. Plus, without wanting to be crass, both of us had brown dogs scratching to be let out but hadn’t had time to free them, so there’s probably a good 1lb for the each of us right there. I do think the damage could have been so much worse if we’d been eating crap at home too.

However, we’re not going to be able to weigh in next week because…we’re going on holiday! Here’s the twist – we have absolutely no plans. We both finish work on Friday at 5pm and then we have ten days off. We could end up absolutely anywhere – the only thing that we’ve done is set a budget. We might turn up at the airport and jet off, we might hire a campervan, we might get a train into Europe, who knows? Given our maximum level of adventure is normally eating an after-eight mint at half seven, this is new grounds for us. OH and before anyone thinks of burgling our sweet little home, my cousin is staying here for the week to look after the cats. SO THERE.

So our next weigh in will be Saturday 5th – but with a week of holiday AND my birthday, it might be catastrophic. But after that, we’re doing our Nuclear Week (see the 7777 banner above) and we will still be posting recipes until we go away – and if you’re really good, I might even queue up some recipes to come on when we’re away!

Speaking of recipes, this was a beauty – pork carnitas made in the slow cooker. It’s pork cooked slowly in orange and lime juice, with a blend of spices and a little bit of stock. Tasty and although GASP you’ll need to count syns, you’re only using…1.5 SYNS. Call the motherfucking police!

to make spicy pork in a citrus sauce, you’ll need:

four pork chops with all fat removed and cut into little strips, two medium onions (diced), 4 garlic cloves (minced – how many times have I told you about these? Get one!), 1 tsp of cumin, 1 tbsp of chilli powder, 1tbsp of chipotle mix (we found ours in Tesco), 1tbsp of finely chopped oregano from your herb garden or dried from the cupboard like a pleb, 1 tsp of salt and one of pepper, 100ml of chicken stock, 4 tablespoons of lime juice (microwave your lime for 5 seconds and then squeeze, you’ll get shitloads more juice) and 250ml of Tropicana 50/50 orange juice (1 syn for 100ml – so 2.5 syns for this, which serves two).

NOTE: Batchelors Super Rice is now 2 syns a packet. Boo. But haway.

to make spicy pork in a citrus sauce, you should:

chuck everything into the slow cooker, stir, and whack on high for six hours or low for eight. Then, scoop the pork and onions out and shred the pork with a fork. Set the juice aside. Put the shredded pork back in the slow cooker on high for fifteen minutes just to dry out a smidge and put the juice into a pan and heat on a medium to high heat for that fifteen minutes to thicken the sauce. Combine the lot and serve with rice! We were lazy and used Batchelors Super Rice which is syn free.

We’ve been looking at holidays and have discovered that Thomson have a specialised ‘side business’ selling ‘gay holidays’, called Freedom Holidays. It seems like a load of patronising guff but they’re well-meaning so I’ll forgive them. Being gay is becoming less and less of an ‘issue’ now. Indeed, Newcastle is such a liberal, progressive city that I actually forget how lucky I am sometimes. I’d feel comfortable walking around holding hands with Paul, or buying rings together, or discussing frotting and cottaging over a frothy cappuccino on The Green. I don’t even think about it. I’m sure that’s partly because of the thriving and varied gay scene. which is littered with lots of different bars catering to all sorts of happy, cheerful people whose only common thread is that they enjoy a bit of cock. Or indeed, a bit of quim if they’re a lady. That said, we tend not to venture out on the scene – not least because we both feel old and our knees hurt and neither of us can dance. Camp shrieking is heavy on the ears and well, music isn’t what it used to be. That said, back in my youth (fucking hell you’d think I was 70, not coming up to thirty) I had some good times on there, dancing (well, more ‘fitting’ in tune to the music) and trying to hide my man-tits.

This sounds like stereotypical fiction but I can assure you, on the life of my poor old nana, that it’s true – I once got in a fight with a lesbian over whose turn it was to use the pool table. It gets better – there was previous bad blood between us because I interrupted her Anastasia marathon to put the Grease megamix on the ‘Choose Your Own Music’ jukebox. The whole situation couldn’t have been more stereotypical unless I had thrown my campari over her and she’d come at me with a powertool and dungarees before we settled it with a dance-off. Along very similar lines, my ex-boyfriend once had a chair thrown at him by a raging lady who (genuinely mistakenly) thought he was taking a picture of her across the pub. He was actually taking a picture of me trying to carry drinks whilst pissed, not her – he didn’t have his wide angle lens for one thing.

The Eagle is about the only bar where we’d be welcomed with something other than a pair of pursed lips and a snide comment about our attire, but it’s not really for us. Admittedly, we both go for the more ‘manly’ type (hence we found each other) (because I’m so masculine it hurts, naturally) and we’d be in our element in a bar like that, but of course, because it’s a manly bar, it’s instantly all about sex and it is incredibly seedy. There’s a gloryhole in the gents, for goodness sake. For those unfamiliar with what a gloryhole is, it’s essentially a hole drilled into the side of a cubicle wall where someone might pop their dingaling through in the vain hope of satisfaction. Well honestly. The only thing I want popping into my peripheral vision when I’m using the lavatory is a fresh, cooled roll of Quilted Velvet for my nipsy, not some angry looking willy with its owner hidden from sight. I’d be tempted to stick the toilet roll on it and use it as a dispenser. Still, each to their own. There was a tale that used to go round that some vengeful ex took a knife in there and sliced off his partner’s schlong as he popped it through. It all goes on!

Tell you what else goes on? This pork chilli! Onto your fork! Well that was a shit segue but you get the idea.

We used pork but there’s no reason you couldn’t be a decadent whore and go for chicken, turkey or beef mince.

This’ll serve 4.

to make pork chilli, you’ll need:

500g pork mince, two tins of chopped tomatoes, one tin of kidney beans, two tins of Pinto beans, 400ml chicken stock, one chopped onion, one diced yellow pepper, 4 cloves of garlic, ½ tsp salt, ½ tsp pepper, 1tsp paprika, 2 tbsp chilli powder, ½ tsp oregano, ½ tsp cumin

to make pork chilli, you should:

spray a large pan with Frylight (use Frylight if you must, but I always think it’s better to use a tiny drop of oil and syn it, unless you want your pans to look like Jodie Marsh’s cervix), and add the mince over a medium-high heat until nicely browned. Add the onion, diced pepper, salt, garlic and black pepper, and cook for a further five minutes. Then add the chilli powder, paprika, oregano and cumin, stir well and cook for another minute. To the same pot, add tomatoes and chicken stock with the tin of drained kidney beans and one can of drained Pinto beans. Bring the mixture to a boil, put the lid on and reduce it to a simmer. In a small bowl, drain the remaining tin of Pinto beans and mash with a fork – this can be done a bit sloppily if you like, it doesn’t have to be perfect. Add this to the chilli and stir well, and then re-cover. Cook for about thirty minutes or until it’s at the desired consistency. Remove from the heat, and serve! For a bit of ‘coolness’ you could add a blob of fromage frais or yoghurt to the top. We didn’t because we were so hungry the thought didn’t occur to us.

syn-free sausage and tomato bake

You’re not just getting a blog post tonight, you’re getting a whole new page and a recipe! Gosh we spoil you. You can find the new page by clicking here and unusually, I’d LOVE feedback – any possible questions, things I’ve got wrong, the usual guff. In the meantime, as a treat for us forgetting to post last week, here’s another recipe – it’s just a sausage and pasta bake but it’s the perfect vehicle for any old shite you have leftover in the fridge.

Firstly, a reassurance – if you DON’T have pasta that is shaped like giant, shaven, tidy vaginas then do not worry – you can use any pasta at all in this. Use a mixture, use the drags from the back of the cupboard with the weevils crawling on it for added protein, use spaghetti, noodles, the works! It’ll be syn free as long as you use your healthy extras for the cheese (70g reduced fat parmesan) and the bread bun.

to make syn-free sausage and tomato bake you’ll need:

ingredients: pasta, two tins of tomatoes, Slimming World sausages (syn-free, but if you want, get some very low-syn sausages and syn accordingly), an onion, garlic, reduced fat cheese, quark and a wholemeal bun whizzed up into breadcrubs.

to make syn-free sausage and tomato bake you should:

recipe: cook your pasta in water so salty it would be a sailor cry, drain and set aside. Meanwhile, chop your onion and garlic, fry it off gently in a drop of oil, add your tinned tomatoes and let it simmer down. Grill your sausages and cut into discs.

Now – for our bake, we added sliced peppers, half a bag of wilting rocket and some jalapenos that were floating around in the fridge. Add whatever you like!

Combine everything in a great big pan and stir it like crazy. Get it all mixed up. Chuck it into a pyrex dish. Add the quark on the top, followed by the cheese and breadcrumbs, and pop it in the oven for thirty minutes. Finish it under the grill for another five to get it crunchy. Serve!

This makes four massive portions and like I said, is perfect for using up any leftover veg or pasta. It’s a very cheap and filling dish and even if you left out the sausages, would still serve as a lovely midweek meal.

I’m absolutely gutted, you know. I had a 3000 word (usual length only 1000, but it’s not the size of the post, it’s how many tears it brings to your eyes) post, I thought I’d clicked save, and nope. Disappeared. All those witticisms (it was the fourth part of our trip to Germany, which I forgot to finish) vanished into the digital ether, scattered to the wind like posts about Big Brother 5 and Connie Clickit. Bah! So, a quick improvised post about shoes.

I’m sure Paul would tell people that if I dropped a pound, it would land on the back of my neck as I bent down to pick it up. That’s unfair. I just hate spending money when I don’t need to, and my shoes illustrate this perfectly. I use the same Chelsea boots for everything – walking across the town moor, gardening, walking dogs, office wear, hammering in nails, scratching my back, smoothing icing – and they’ve finally given up the ghost, with the back heel actually falling off halfway through my trot into Newcastle last week, meaning I had to spend the day listing to one side like a badly loaded ferry. I was gutted – not just because I loved those shoes, but because it meant buying more, and that money could always be better spent on a nice bowl or a videogame. However, thriftiness saved the day, as I just took Paul’s old work shoes that we had wedged under our bed to stop the cats getting into the drawers. Obviously. Comfortable, didn’t smell like death like his shoes usually do – I was set for a good day. Until about 2pm when, obviously inspired by the break for freedom that my boots made, the entire sole of the shoe came away. Brilliant! Two years of Paul’s pitted keratolysis (and for fuck’s sake don’t google that – if you don’t know what it is, you’re better off) had clearly acted like an acid wash and ruined the fuckers, meaning I had to schlep around the office looking like Barry Tramp for the afternoon.

Anyway, whilst I’ve got you all here, Paul and I have been chatting and we have some news. We’re going to make a couple of small changes to the blog just to give it a bit of structure – we currently struggle to post every day just because of work commitments and other boring nonsense. So we’re committing to five posts a week, all five of which will have a new SW recipe. The aim is for 1 weigh-in post (Tuesday), 1 quick-post (which is usually just where I post a recipe but I always end up gabbing on anyway) and 3 regular posts where you get plenty of sassy writing and anecdotes. To be quite honest, I’ll more than likely end up posting every day anyway, but I might be posting shorter updates occasionally. Both Paul and I work full-time in front of computers, and sometimes the last thing I want to be doing when I come home is typing out my usual flimflam! Plus, it takes time to prepare the photos and type out the recipe. It’s gotten to a point where I feel bad if I have a night off from writing and that’s a trifle silly.

I tell you what isn’t silly, though…these!

I very nearly became a Slimming World consultant, you know.

I say very nearly, it was as near as most of my other fleeting fancies, but I made the effort to make contact, drop in my details, attempt to find out more. I had plenty of cold hard cash ready to be handed over gladly to Magic Margaret and her Synning Sisters but alas, despite chasing three times, I got one phone call which was rearranged and then totally ignored. Ah well. Part of me remains disappointed because I think I’ve got the sassy people skills to really get a group moving. But most of me thinks that my money (well, our money) is better off in my pocket and that’s that.

I’ve been going to Slimming World classes on and off for over ten years now, and they’ve never changed. Which is clearly a good thing, because the results speak for themselves and I’ve been lucky – I’ve never been to a bad class. Actually, tell a fib, yes I have – I had to sit through twenty minutes where the class gave advice to someone with piles – what best to eat for soft poo. Plus, if you get a boring consultant, the class drags something chronic, although I haven’t had one of those in a long, long time. I did have some great ideas – Paul stepping in as my Debbie McGee in a glittery bikini on the payment counter, a wheel of fortune to win something decent other than a banana that fell off the side of the ark and a Mugshot, interactive recipes…the works. But it wasn’t to be.

The reason I’m bumbling on about classes is because of our recent decision to move to a different class – it’s primarily so that we can stay to class as I feel we get a lot more out of it, not least because I get to blabber on about recipes and make smutty jokes. When we get weighed and go out the door, we almost lose a sense of responsibility – that although we are following the diet, we’re only paying lip service to it. So, we needed to find a class that works for us in terms of times, and although ironically we have managed to miss tonight’s because of a late finish at work, Tuesday evening will be our new weigh-in.

Finally, as an aside, I made a post in a FB SW group about people not being able to say please or thank you. It’s always the same – some blurry, off-brand yoghurt thrust too far to the lens on their phone with a comment like ‘HOW MANI SINS’ and it does my nut in. I’ll personally help anyone if I have the time, but I can’t bear bad manners. Thankfully, and somewhat reassuringly, most people have weighed in with complete agreement, with only the odd little dolt kicking up a stink at someone having the temerity to ask for manners. Well. The day I take criticism who has Inside Soap listed as a ‘favourite book’ on their facebook page is the day I shut my bollocks in a car-door. MANNERS MAKETH THE MAN.

Tell you what else maketh the man? Meat. And pizza. And cheeseburger. Well, look at this for goodness sake. You might as well jog on if you’re one of those people who won’t use syns on their dinner, despite THAT BEING EXACTLY what they are for…!

so, to make bacon cheeseburger pizza:

This is six syns for a quarter, but it makes a big pizza, and served with chips will fill the hole nicely. Put it this way, if you were to have a big pizza from Dominos, you’d be racking up syns in the sixties and seventies. Treat this as a treat…

ingredients for the crust: 125g of strong white bread flour, a packet of yeast (7g), 75ml of lukewarm water and a pinch of salt

ingredients for the topping: use a HEA for each of you – so 65g of mozzarella is one HEA, and 40g of grated light cheddar is the other. You’ll also need lean mince (5% or under), gherkin slices and a few medallions of bacon. Hoy some chilli flakes on too.

recipe (which I’m going to split into bullet points from now on for this blog – step by step):

  • make the crust – put the flour into a mixing bowl or a stand mixer, add yeast on one side, salt on the other, water in the middle and knead it together using your hands (wash them first, I know where they’ve been) or a dough hook (infinitely easier). When you have a big lump, stop, cover the bowl in cling film and leave it to prove for an hour or so;
  • prepare the toppings – grate your cheese, fry off your mince in a tiny drop of oil and some onion powder, fry off your bacon and cut into strips, cut your gherkins, do a little dance, make a little love, get down tonight;
  • stretch your dough, hoy some tomato puree over it, add cheese, add mince, gherkins, tomatoes if you want them, bit more cheese, bacon;
  • cook in the oven for twenty minutes and serve with chips.

Tasty!

Only a little preamble tonight, because the recipe is a corker and I need my wordcount for that. BUT remember my Muller yoghurt letter? There’s a new (well, old) letter to read below…

I visited Poundland today – all I wanted was a money-tin, all I got is my eyes opened. I’ve said many times before that I’m not a snob but do you know, maybe I am. I’m snobbish about good manners, for one thing – asking me to do something without saying please is as bad in my eyes as taking my packed lunch and crapping in my salad roll. The reason I mention manners is the amount of people zombieing around Poundland, death-rattling and spluttering and sniffing was beyond the pale. Since when did it become acceptable to cough without covering your mouth, or sneeze right in someone’s face without attempting to cover it? At one point I went to pick up a pack of Haribo only for some wispy-chinned gasbag to cough the bottom of her lungs right across me and THEN keep on moving without so much as a backwards glance. Poundland? I almost pounded her head off a shelf full of knock-off Elsie and Anal Frozen figurines.

What makes Newcastle’s Poundland more interesting is that it is right next door to Waitrose, so you get people coming out of Waitrose, all full of puff and OH LOOK AT ME BUYING MY QUINOA AND DOLPHIN TEAR SALAD quickly nipping into Poundland to buy some cheap batteries, and people coming out of Poundland going into Waitrose to get a free coffee and finger all of the posh fruit. I’m not a huge fan of Waitrose, it’s absolutely rammed full of yah-yah-mummy students and people who think they’re the Big I Am. Have you tried any of Heston Bloominghell’s nonsense food from there? I can safely say I’ve tried most of it and thought it was all overpriced piss. Just because you can coat bacon in mushy pea puree and the hope of a orphan doesn’t mean you should.

Anyway, what YOU should do is try this recipe, it was bloody delicous – and only the coleslaw is synned, so you could leave that out and have a syn-free dinner that looks a treat! It’s your normal meatloaf recipe, but with three ingredients in the middle – sweet potato, shaved sprouts and very finely chopped mushroom.

to make the hot and spicy coleslaw you will need:

 100g of red cabbage, 100g of radishes, 100g of white cabbage, one carrot large enough to make your eyes water, 100g of fat free natural yoghurt, salt, pepper and 1tbsp of horseradish sauce (1 syn but it makes enough to feed six, so your choice but I’ll say syn free).

to make rolled stuffed meatloaf you will need:

900g of a mix of lean pork mince and lean beef mince, 1 large red onion, two garlic gloves (grated) PLEASE, get a microplane grater. Like this one on Amazon. It’ll make it so much easier! You’ll also need two large eggs, 2 tablespoons of parsley, 2 tbsp dried mustard powder, 1 tbsp of thyme (fresh or dried, see if I’m bothered), 1 tbsp coriander seeds crushed (can leave these out, I won’t tell), 1sp of onion powder, some salt and pepper, and a tiny bit of baking powder.

For the stuffing, you’ll need 3 sweet potatoes, half a bag of sprouts, half a pack of mushrooms and an onion.

to make hot and spicy coleslaw you should:

Finely grate your cabbage(s), radishes and carrot into a bowl. Add yoghurt, horseradish, salt and pepper and mix well. Put it in the fridge.

to make rolled stuffed meatloaf you should:

Then the meatloaf mix – combine the meat, chopped onion, garlic, eggs and all of the spices and seasoning and mix it in a bowl until you get one lovely lump. Too wet? Add breadcrumbs. One wholemeal roll is a healthy extra – blend and add as much as you think you need. You’re aiming for a well mixed lump. Put it in the fridge to cool.

Next, pierce and microwave your sweet potatoes for around 15 minutes. Once cooked and cooled, scoop out the flesh into a bowl and add salt. Eat the skins, they’re fucking tasty. Next, finely chop the mushroom and onion. I used my Kenwood chopper here. It does make things a lot easier, even Delia says so. Mind it does nothing that a sharp knife can’t do but you are looking for finely chopped. Put into a pan, cook for five minutes or so on a medium heat to draw out the moisture. Set aside. Next, very thinly slice your sprouts. You can again use a knife or if you’re a fan of speed and danger, use a mandolin. This is mine, and it’s only £11. Stick the sprouts in a microwave bowl, cook for two minutes so they soften just a little, and set aside after draining and getting as much liquid out as possible.

Now, assembly. Hoy the oven onto 180 degrees. Get a loaf tin and grease the sides. You’ll then need to get some parchment paper or greaseproof paper or anything but the Daily Mail and line the tin. Doesn’t have to be precise, you’re not on the Krypton Factor and I’m not Gordon Burns. Next, get a flat sheet (preferably a baking sheet, it’ll make it easier for you) and line that with greaseproof paper. You want to be able to form a rectangle of around 8″ by 13″. Here’s a tip, don’t let a man measure this for you – the amount of men I’ve met in my life who think 5.5″ is 8″ is surprising. Dump your meat into the middle and flatten down to create an even rectangle, nice and flat. Take your time.

Now, spread the sweet potato over the top, nice and thin – don’t worry if it’s a bit patchy, but take your time to keep it smooth. Add the sprouts, then the mushroom and onion.

This is the tricky SOUNDING part, it’s actually quite easy.  You want to roll the meatloaf. Start by getting hold of the parchment paper at one of the short ends of the rectangle and slowly roll the meat over itself – tight, but not ridiculous. Peel off the paper as you go. It’ll make sense when you do it, trust me. Take your time, rolling and peeling, rolling and peeling, until you’re left with a lovely roll of meat. Oooer etc.

Next, lift carefully into your loaf tin – remember it must be lined. Place the meat seam side down. Decorate the top with tomatoes or bacon or whatever.

In the oven for fifty minutes, take it out, drain the excess liquid away carefully, put back in oven for fifteen minutes, then crack the door open and turn the heat off and let it sit for 15 minutes. Cut and serve with chips and coleslaw and a big fuck-off smile on your face. Well done!

guinness pulled pork with colcannon rosti

For week three, we’re going to…the Republic of Ireland!

Listen, I shit you not, that was the third country on the list – we’re not just doing easy recipes! Luxembourg is next week. Goodness. Our recipe is perhaps a bit obvious but, no word of a lie, one of the nicest I’ve ever done on Slimming World – Guinness Pulled Pork with a colcannon rosti and minted peas. But before we get there…

I don’t know if anyone watches The Middle but there’s a character called Sue who is permanently happy – the very antithesis of me. She conducts an experiment where she smiled at people to see if a smile was as contagious as a yawn. It WASN’T. But, you know, we don’t smile enough, so I thought I’d do the same thing – smile at random people as I trundled around M&S before work this morning. Well, fuck me, that whole stereotype of Geordies being a friendly bunch couldn’t be further off the mark – at least first thing on a rainy Tuesday morning. At best, most people reacted like they’d seen their own bumhole and didn’t care for the colour, at worst I felt like I was at considerable risk of being stabbed in the beck. It doesn’t help that I don’t have a natural smile, one of those egregious, winning grins that can melt the stoniest of hearts and set gussets aflutter – it’s more a lopsided leer that looks like I’m simultaneously dropping off my yoghurt and trying not to fart. No wonder no-one smiled back save for one lady, and she had a better beard than I did.

But isn’t that a shame? I love it when people smile heartily at me or engage me in idle chit-chat. Put me in a room where I’m supposed to socialise and I’ll stand there like the world’s gayest hat-stand, all mute and agog. Stick me next to an old biddy in a bus-stop and I’ll be waxing lyrical in no time, revelling in her bawdy tales of bus delays and the minutiae of her family tree. I can chat away to the checkout assistant in a supermarket until the cows come home, are milked, that milk sold for negative value and put back in my trolley for me to go ‘OOOH the price of milk’ at the cashier. Interestingly, I’ve had it pointed out that my accent changes depending on who I talk to – I got out of a taxi the other day and it took me about five minutes to stop talking like Jimmy Nail shouting a warning across a quarry. I find that if I’m in a situation where I’m not sure how someone is going to take my sexuality (up the arse, generally), I’ll ‘man up’ the voice a bit – not that I sound like some lisping Monroe-esque harlequin you understand, but because I don’t want to be found with my face caved in on an abandoned industrial park. You never know.

The problem with doing this is that it then invites some pretty bleak persiflage between me as a passenger and them as a driver. The last taxi driver I encountered asked me what car I drove – when I answered with ‘White, DS3’ he immediately dismissed it as a pussy car and told me to get a decent motor to ‘attract the lasses’. Because, you know, his Skoda Octavia in syphilis yellow was clearly a clit-magnet. Nothing says sex machine like a beaded seat cover, poorly-masked body odour and Smooth FM playing over the speakers. Moron. Not the worst taxi driver I ever had mind – I once got the offer to ‘pay my fare’ an alternative way with the altogether more direct result of the taxi driver pulling over two hundred yards from my front door and getting his knob out – I wouldn’t have been as offended if there had been miles on the clock but he’d only driven me around the town moor – two miles at best. I’m surprised he’d had time to turn his indicators off. I politely declined – well, as politely as you can when someone offers to effectively pay you £4.40 for oral sex – and threw a fistful of coins at him. Plus, on a purely shallow note, it looked like he had half a smoked cigarette sticking out of his zip. I mean make it worth my while, honestly. It looked like the whistle on an aeroplane lifejacket.

How the hell did we get onto that from smiling at people? Course correction needed! Have a recipe! Guinness pulled pork with Colcannon rosti!

GUINNESS SLIMMING WORLD PULLED PORK

It’s going to be easy for me to break this down into the colcannon and the pork one at a time. For the peas, you want a tin of peas and a bit of mint sauce. If you can’t figure out how to make those work, then god help us all.

to make the Guinness pulled pork you will need: 

500ml bottle of guinness (9 syns), good hunk of pork (I use shoulder, but take the fat off it – normally enough to serve 6), one big red onion. Make a rub of 1tbsp paprika, 2tsp of salt, 1tsp of garlic powder and 1/2tsp of freshly cracked black pepper. Rub it all over the meat, slice the onion, put the onion into the slow cooker, followed by the Guinness, followed by the lid and cook for 10 hours on low. If, at the end of the cooking, you want to thicken the liquid a little, just sprinkle in an oxo cube and whack it on high for half an hour.

to make the colcannon rosti you will need:

 half a bag of spring greens, 800g of potatoes (peeled, cooked and mashed), bacon with the fat cut off, 200ml of milk (use some of your healthy extra allowance but remember this serves 4 so you’re not using much at all), tsp of wholegrain mustard (1/2 syn, but again…between four), bit of oil. Cook the mash, push it through a ricer so it’s nice and smooth. Don’t have a ricer? Get one here and thank me later.Leave aside to cool. Boil the spring greens in the milk with some mustard mixed in. Drain when cooked and chop finely. Cook off the bacon in little chunks. Add the potato, cabbage and bacon into one mixing bowl and season very well. Shape into discs and put into a dry NON-STICK frying pan. Cook on both sides for 5 minutes to get a good crust. Serve!

This isn’t authentic colcannon – there isn’t lots of cream and butter, the creamy taste is achieved by using a ricer, but a good amount of mashing by hand will do the same thing!

There we have it. Not very authentic but fucking tasty and reasonably easy to make. If you can’t be arsed making the rostis, just chuck the lot into a pyrex dish and cook in the oven for a bit!

full english breakfast savoury oats

BUGGER: we thought oats were syn free! Not sure why – so we cooked the breakfast below without thinking and thoroughly enjoyed it, but it was only when an eagle-eyed reader (hello Lisa!) pointed out our mistake that we realised! So this comes out at 12 syns a portion. Good lord. Tasty mind…very rare we cock up but oops!

Oooh has there every been a more dramatic, more twist-filled, more suspenseful storyline than Eastender’s Who Killed Lucy plot? Yes, many times. Anyway, everyone knows she was killed by some livid fashion designer who grew tired of her wearing that awful grey bloody suit.

Paul broke The Rule today. We both agreed that we wouldn’t buy each other a Valentines gift because we’re saving up for something big, and for once in my life I decided to stick to it. Normally I roll my eyes and buy a gift anyway whenever people do that – my nana is a particular bugger for it – ‘OOOH DON’T MAKE A FUSS ETC’ but if you turned up on Christmas Day with a card, well-wishes and lack of present, she’d sit there like you’d swapped her sherbet lemons for hard-boiled piss. But no, this year I stuck to the rules, and Paul promptly presented me with a new bottle of Tom Ford’s Grey Vetiver – my favourite scent in the whole world. He’d done well, soaked in all my hints in the car journey on the way home from work, gone to John Lewis and promptly forgot the name and scent – managed to find it by describing it to the perfume lady and through scent alone! Normally I smell like chips and shame, so it’ll make a change to smell all classy like. In my defence, I did ask him whether he’d want a Vivienne Westwood necklace that I’d seen, but he replied by saying that it was a bit too gay. It’s as if the last eight years of sodomy and frotting never happened.

Nevertheless, I had a trick up my sleeve. I’ve secured a white t-shirt out of the wardrobe, hastily printed a picture of Barack Obama on it and turned it into my ‘YES, WE CAN’ shirt, meaning that if he asks me to do something, the answer will automatically be yes. It’s fun and it’s free – what price dignity? I’m glad we don’t own a pool though, a day like this can easily end up turning sour (the “Barrymore Effect”) and the last thing I want is to be found face-down in a swimming pool with a bumhole like a windsock and ‘anal trauma’ on my death certificate. So lord knows what I’ll end up doing today, but at least I’m not The Worst Husband in the World anymore.

Mine’s printed on recycled ice-lolly sticks, meaning I’d already given Paul wood by the time we had got out of bed this morning, which I’m sure you’ll agree is incredibly efficient. I only noticed one of the whales had lipstick and mascara on when I got the card home, but that’s alright, we’re both confident young men who are at ease with our roles.

Speaking of roles, or rolls, you want to lose some – so here’s today’s breakfast recipe. I wanted to do something nice for breakfast that hasn’t been done yet, and this hits the target. If you’re a fan of overnight oats, give this a whirl – it’s a savoury use for the oats, and creates a thick, stodgy but delicious breakfast, using all the main bits of a full cooked breakfast!

to make full english breakfast savoury oats you will need:

400g normal oats that you’d use for porridge but not ones with added sugar – you’re allowed 35g for a HEB, so I worked out that if everyone was using their HEB, that leaves 260g of oats, which is around forty five syns each – so for the sake of argument, that’s around 11.5 syns per portion, two stock cubes made into 800ml of stock with a tsp of soy sauce added, 2 onions very finely chopped, a pack of Weight Watchers Cumberland Sausages (4 syns per pack, this serves four, so these will be half a syn) – take four and take the skin off, crumble the sausagemeat into a bowl, and set the other four aside, two eggs, a handful of cherry tomatoes quartered, bacon medallions cut into thin strips, salt, pepper, chilli flakes.

to make full english breakfast savoury oats you should:

get everything chopped and ready to go. You’ll need two frying pans here. In one, cook off the onion and bacon until nice and soft and cooked through, then chuck in the sausage meat. In the other pan, gently fry off the sausages (or you can use an Actifry for this). Let the sausages in both pans cook through, add the tomatoes to the onion and sausagemeat, still cook. Once the whole sausages are cooked, set aside and chop into discs when cool. To make the savoury porridge, tip the oats and soy/stock into a microwaveable bowl, cook for about two minutes until it goes nice and stodgy, then chuck the lot into the bacon and onion and tomato mix and cook off on a medium heat to dry it out a bit. Whilst that’s occuring, fry off two eggs in your other pan that had the sausages on. Assemble on a plate, add the sausage discs, fried egg and lots of black pepper and salt.

extra-easy: well, no – there’s not 1/3 superfree in there, but you could have a few pieces of fruit during the day to counter it. Let your hair down, it’s Valentines Day.

Listen, seriously now – try this. It was delicious – almost a bit haggis-like. You could add chilli sauce, use different sausages, add peppers, all sorts. It’s stodgy, filling and very tasty!

By the way, it was totally Abi who killed Lucy, with Max helping to cover it up. Cheers.

For week two, we’re going to…FRANCE!

But before we get started, I come bearing good news. I’m sorry, that never normally happens, I’ve been under pressure, it’s that time of the month, I’m just keen etc. No, remember our bathroom problem where Paul and I were down to one tiny bulb in our bathroom, turning every trip to brush our teeth or wipe our bum into a perilous adventure fraught with tension that we’d be plunged into absolute darkness mid-pinch? Well worry no more! Our wonderful, marvellous and above all else hella-manly plumber/electrician has saved the day! But mind it took something else breaking before we called him in. Our extractor fan has clearly become so affronted and overworked trying to waft away the smell of so many rich Slimming World infused motions that it went into overdrive and refused to turn off – not even using the switch would stop it – we had to take out the fuse for the lights throughout the house before it finally shut off. Which wasn’t ideal. A plea was made to the chap who originally did our bathroom and he has been this morning and not only replaced the fan, he’s only gone and replaced all the lightbulbs! Best part is, I wasn’t even there when he did it so I didn’t need to feel all emasculated and embarrassed that we had let ourselves down so badly.

One thing I’m a smidge alarmed about is that we’ve gone from one 30w bulb in the bathroom to six 50w beauties – if I happen to find an interesting magazine article whilst I’m on the netty I’ll probably come out with a tan. It’ll make brushing my teeth like being on a mediocre game-show – I’ll just need Dale Winton mincing around behind me explaining my brushing technique to an imagined audience. Perhaps I’ve thought too much about this. Let’s move on.

It was only a short post yesterday as I was at the cinema seeing Kingsman: The Secret Service, with Phillipa who you may know from the poorly-spelled insults she occasionally leaves on the blog. Great film and heartily recommended – we laughed, we cried, she spilt her popcorn – the usual, and that was before we’d even sat down. Colin Firth plays an absolute blinder, really branching out from his upper-class-English-fop role that was all I associated him with. I admit to being distracted nearly all the way through by the girl in front of me and her shovel-faced boyfriend. She’d clearly come dressed for a bet but that’s by the by – it was her haircut which was distressing me. She’d tried to fashion it into a bun but instead ended up with this weird bowl, where, if I had been feeling bitchy enough, I could have easily have parked my 35-gallon-Diet Pepsi there to prove a point. It was upsetting purely because of my OCD – I hate things being messy. If I didn’t think I would have been either stabbed by a needle hidden in her hair or glassed by her dead-eyed lamp-post of a mate I would have reached over and tidied it up. To make things worse, the popcorn was disgusting – it tasted like they’d washed it alternately in Charlie Red and the North Sea. Didn’t stop either of us eating it though, though I had to stop once my lips started turning inside out like a slug. Luckily, Phillipa had her hunger satisfied by the ice-cream, pick and mix and salty popcorn and I wasn’t sent out to get a pig on a spit for afterwards. I do love going to the cinema and now that I can’t have my usual settee-cushion of popcorn and binbag of pick-and-mix, I don’t even need to fret about taking out a mortgage to cover it.

So: where are we on the Two Chubby Cubs European Tour, eh? Somewhere exotic, warm and unusual? No. We’re in France. I half-toyed with taking a picture of a crepe with a Gauloise stubbed out in the middle of it, but that’s not embracing our trip. It’s not like I don’t care for France, I’ve been many times and always enjoyed myself, but I once got ripped off outside the Eiffel Tower by a caricaturist and I’ve never quite forgiven the country for that. It wasn’t so much that I paid a ridiculous amount for the drawing, it was the fact that the drawing made me look like John Prescott examining his pores in a Christmas bauble. Nevertheless, here we go…

to make beef bourguignon you will need:

100g of bacon medallions cut into strips, 400g small shallots, 700g stewing beef with all fat removed (although I used proper scrag-end beef that I found in the back of the freezer – beef you can pumice your feet with), three garlic cloves sliced thin and chopped finely, 150ml of red wine, 425ml beef stock, tomato puree, fresh rosemary and fresh thyme (use your herb garden or use dried, I’m not judging), 1 bay leaf, 50ml of vegetable stock, bit of nutmeg. I cooked this overnight in a slow cooker but you could easily do this in a casserole pot. Cook low and slow. I chucked in a few whole shallots and some pepper too because I’m just that random.

to make beef bourguignon you should:

fry off the shallots and bacon until they start going brown – chuck in the beef and get a bit of a seal on the meat. Add everything else bar the swede. Bring to the boil, then either tip it into a slow cooker and cook low and slow for eight hours or in a casserole pot in the oven for two hours. Really, the longer you leave it cooking, the more the flavours will develop and, especially if you use cheap meat, the more tender the meat will become. Mmm. Remove the bayleaf and serve with swede mash – use my singing swede method for that.

extra-easy: yes, if you serve it with the swede mash. Superfree and all that shite. Delicious!

cheese and bacon soufflé

Tonight is the only night this week where both Paul and I are in the house together for the evening, so I’m going to dash off this recipe and be on my way. See readers, even when I’m on a promise, I’ll give you something…

I have to say – it came out the oven like a air-filled cloud, but I spent that long fannying around trying to take a picture that it went ‘foooooooooootpth’ and deflated. Still tasted fine.

to make cheese and bacon soufflé, you’ll need:

ingredients: drop of olive oil, 100g lean bacon cut into chunks, chopped chilli, eight spring onions diced very finely, six eggs (separated into yolk and white), 6tbsp of chives and dill, 100g parmesan cheese, 1/2tsp mustard powder, lots of salt and pepper – and serve with wedges and salad.

tip: to seperate the eggs, you’ll need to crack them into your hand, let the white fall through your fingers and hope that the two don’t mix. Get one of these little buggers. You crack the egg into a bowl, pop this little rubber man over the yolk, squeeze him and he’ll suck the yolk into himself and drop it wherever you want it. It’s absolutely amazing. No yolk. Haha.

to make cheese and bacon soufflé, you should:

recipe: let’s do this quickly. You’ll need four ramekins. Heat the oven to 180 degrees. Prepare a bain-marie by filling a roasting pan a third full and put it into the oven. Oil the ramekins gently. Fry off the onion, bacon and chilli in a pan until cooked through and dry – and pay it dry. Then hairdryer it. YOU WANT IT DRY. Set aside. Hoy the egg whites into a mixer (or use a hand mixer but you’ll be absolutely buggered) and whisk whisk whisk until they’re stiff. In the other bowl, beat the egg yolks, add the bacon and onion and three quarters of the cheese. Then – tip the whisked egg white into the yolks and fold it gently with a metal spoon – nice and gently, keep the air in, until fully incorporated. Spoon into ramekins almost to the top, add the rest of the cheese and then cook for twenty minutes. Serve with chips and salad.

extra-easy: 3.5 syns a serving. Serve with superfree salad and you’re laughing.
