I’d just like to say this is a total lie and in fact it’s bloody James that does this! I’m totally amenable to going anywhere (as long as it’s not a shithole). In fact, I can think of at least ten places I suggested that were kicked off the list for daft reasons; “too hot”, “too cold”, “we’ve done a city break already”, “they won’t like fat people”, “that’s the kind of place your mum would go”. My suggestion initially for the ‘big holiday’ was Las Vegas but that was knocked back because it was too ‘gambly’.

Honestly. I bit my tongue so hard that it gave me piles. But then, James has always been the neurotic one – we’ve written before about how he is convinced that every electrical appliance in the house is waiting for us to leave so each one can spontaneously combust into flames. Even the smoke alarm is in on the act. Have you ever known someone take out the batteries when they go away on holiday?! He will however happily leave the Mac running 24 hours a day so now those two little bald men at the top are actually burned into the screen.

So that, dear readers, is the truth. And you can rely on it being the truth because I’d never lie to you. Unlike Fatty McFat-tits. Now that’s out the way, let’s move back onto marital bliss, and this absolute belter. slow cooker pork and apple stew

to make slow cooker pork and apple stew you will need:

  • 500g diced pork
  • 300g baby carrots
  • 1 tbsp gravy granules (2½ syns)
  • 1 onion, diced
  • 2 sticks of celery, finely sliced
  • 175ml apple juice (3½ syns)
  • 150ml chicken stock
  • 2 tsp thyme

A slow cooker is essential if you’re following Slimming World! You don’t even need to spend much money, a cheap one will do the job just as well! You can pick one up from Amazon for peanuts and help to send a few pennies our way!

to make slow cooker pork and apple stew you should:

  • switch on the slow cooker to the LOW setting
  • spray a little oil into the bottom of the dish (Fry Light tastes shite. Get this instead!)
  • chuck everything (bar the gravy powder) into the slow cooker, pop on the lid and leave to cook for 8-9 hours
  • once you’re ready, take everything out with a slotted spoon and slop the sauce into a pan – add the gravy powder, whack the heat up and thicken that sauce
  • serve with a bit of mash for perfection

slimming world chips: a definitive guide

What a formal title for what is a load of potatoes. It’s possibly one of the most common things people ask for – how to do good Slimming World chips. There’s a tonne of recipes out there, some more convoluted than the friggin’ Macarena (boil the chips, put them in a microwave, take them out, tumble them, put them in the microwave, take them out, aput them in the oven, die a little bit inside) and actually, I’ve always found the Slimming World way of parboiling them to be a pain in the arse too. So below, find the easiest and guaranteed way to make decent chips.

But before I get to that, I want to answer a couple of questions that we’ve been asked by newer members – and well, it never does any harm to reiterate a few important messages!

We’re not Slimming World consultants!

We get asked this all the time – admittedly, it would be hilarious if we had to run a class. I reckon we’d get about seven minutes in before Paul said something mortifyingly offensive and I compared the shrinking HiFi bars to a cold cock. Right at the very start of this blog we made enquiries about becoming Slimming World consultants – never heard back. Pity: we’re fabulous – though I won’t lie, I prefer dealing with people from behind a keyboard as opposed to face to face, and there are days when I can’t be arsed with all the fake bonhomie. So, if you have a proper Slimming World question, have a gab with your consultant – it’s what they are there for, after all! If you’re on the fence about going to a class, we say give it a go: yes, it’s not the most exciting way to spend two hours (sorry, Mags, but it isn’t) but you’ll usually meet good people and enjoy the support.

Are your syn values accurate?

They’re as accurate as Slimming World’s own syn calculator – that is, we run everything through the syns checker if we don’t know how high in syns they are. We’re fully paid-up members who attend a class and so we’re up to date with the latest changes. But if you have any concerns, check them yourself!

How many folks do your recipes serve?

It depends, honestly. It’s usually four people, but if you’re a greedy fat bastard like us, then sometimes just two. But four portions. Does that make sense? If you’re the type of greedy person who will suck your toothbrush dry rather than rinsing it under the tap, then you’ll be on bigger portions and thus two. But listen: you’ll never go hungry with our recipes. Sometimes we do smaller or larger recipes and if we do, we usually say when it serves more. So if you can’t see a comment about servings, assume 4.

Can we freeze your recipe / swap an ingredient for another / is it suitable for me and my allergies?

We’re two fat blokes from the North. We work in offices, not laboratories. We don’t mention you can freeze recipes unless we’ve done it ourselves and haven’t shat the world from our arse the day after. If we said you could freeze it, then made you seriously ill, we couldn’t live with ourselves. Same goes for allergy / gluten free posts – we don’t have enough of an understanding about it in order to make concrete comments. I know, it’s a shame, but at least we’re honest!

What makes your blog different from other SW blogs out there?

There’s some fantastic blogs out there, pumping out recipes and resources like someone shelling peas. That’s grand, but we like to be different. I can’t bear all the cutesy-poo language, omg-you-can-do-it, inspirational-quote-a-matic bollocks that surrounds dieting. Dieting isn’t fun, it isn’t interesting, it isn’t a gas. You’re never gonna burst into peals of laughter over a salad, after all. That’s why we started twochubbycubs – so we could post real recipes but also make light of this awful struggle. Yes, our language is coarse and the content can be raunchy, but we need to have fun to do this! We also try to be honest: if we recommend a product, it’s because you genuinely need it for a recipe. But 99% of our recipes can be made with stuff you’ll buy from the supermarket and use several times over. Being on a diet is expensive: why should you have to buy a ridiculously over-priced sweetener on top of that when a bit of honey will always nearly do? It’s bollocks. You can always rely on us to be honest – which leads me to the next point.

We have a very strong policy on this: if you see a link, it’s because we own the product and enjoy it. We turn down a lot of requests to monetise this blog by shilling products. If those products could be useful, we will try them and recommend them only if we actually like them. We’re always open and honest if we’re paid to promote a product. Alongside that, we’re happy that we’ve been running for three years and still only have a couple of discreet adverts on the page. We’ve got to have them – it’s what pays for the blog – but we’d rather you didn’t have to battle through pop-ups, pop-unders, background ads, scrolling ads and all that shite to see us. To give you an example of what I mean, I just loaded up another blog of similar content and our Adblocker counted 19 adverts on the page. Ours has three. Hmmm.

Your recipe didn’t work!

Listen, we can take constructive criticism. Our recipes all work for us, otherwise we wouldn’t post them – and we use the ingredients we say we use, instead of cooking using all sorts of delicious synned ingredients for the sake of a gorgeous photo. If they don’t work for you, I apologise, but something clearly went awry, and please let us know if you think it is our fault. Let me give you an example: we had someone crashing their gash at us the other day because they made our perfect carbonara and it was ‘runny raw egg shite*’. When we responded that she must have added the egg when the pasta was cold – despite our three clear warnings that the pasta must be hot in order to cook the egg – we got a ‘omg u can’t take criticism*’ remark. We can but remember, a bad workman blames his tools.

*I’ve improved her comment by adding vowels – she didn’t seem to think it was necessary.

CHIPS. LET’S DO THE SLIMMING WORLD CHIPS JESUS CHRIST ALMIGHTY

We’ll do a non-Actifry route and an Actifry recipe. Because we’re canny. They boil down to the same outcome anyway.

to make perfect Slimming World chips using an Actifry, you’ll need:

  • about 900g of potatoes – now, any type will do but if you want REALLY nice chips you’re better off going for a ‘buttery’ type, or Maris Piper
  • oil – again, any type will do. We use olive oil, but rapeseed works well too.
  • flavouring – optional, but it really does make them so much better. Our favourites are stock cubes (lamb or beef), Steak seasoning, or good old fashioned sea salt.

to make perfect Slimming World chips using an Actifry, you should:

  • chop the potatoes however you like them (there’s no need to peel). We like them quite chunky. They don’t have to be exact, slice each potato 2-3 time across, and then each slice into 2-3 slices again. You can use a chipper if you like, but a good, sharp knife does the job just as quickly (especially when you’ve done it a few times).
  • tip the potatoes into the Actifry (don’t bother patting them dry or parboiling)
  • add the oil – you can either drizzle a tablespoon of oil (6 syns) over the chips, or use a sprayer (syn free) if you’re feeling more angelic. Avoid Fry Light if you can because it’ll clag up your machine and ruin the non-stick coating. Instead, try getting one of these and filling it with your own oil
  • If you’re spraying, spray the oil over the chips for about 6-8 sprays – you don’t need a lot. If you’re making loads of chips, maybe give them a shake in the pan and spray a bit more
  • next, sprinkle over whatever flavouring you’re using. If you’re using a stock cube (our fave!) make sure to crumble it well
  • close the lid and switch it on
  • if you want realllly tasty chips, try turning the machine off for ten minutes halfway through. I’m not sure how it works but it really does make them tastier!
  • switch the machine back on again until cooked
  • eat!

to make perfect Slimming World chips in the oven, you’ll need:

  • about 900g of potatoes potatoes
  • oil
  • flavouring

to make perfect Slimming World chips in the oven, you should:

  • preheat the oven to 240ºc
  • chop the potatoes however you like them
  • tip the potatoes into a large bowl
  • next, either drizzle over your oil or spray it over
  • tumble the potatoes well to make sure they’re evenly coated – the reason you often see blistered and crappy looking SW chips is because the oil is distributed unevenly! sprinkle in the flavourings too and give a good mix
  • next, tip the chips onto a non-stick tray and spread out into a single layer
  • bake in the oven for fifteen minutes, turn, and then bake for another fifteen minutes
  • eat!

Now, if you want really tasty chips without any of faff you really need to grab yourself a Tefal Actifry. Halos, Airfryers, Towers, Halogen ovens just don’t do the job as well at all (in our opinion)! Now mind, we’re not getting paid by Tefal for this. If you want consistently decent chips that taste almost like the proper thing, it’s the Actifry you want! You can make loads more than chips in it as well, just click some of the other recipes below that we’ve knocked up in our Actifry!

steak and ale pie: low syn and delicious

Steak and ale pie. No look, I’m not even going to waffle on for 1000 words about not being able to tie my shoelaces or an hilarious encounter in the office lift. You’re here for steak and ale pie, and we’re the ones to give it to you. Now let’s make one thing clear though – no amount of fancy recipe is going to allow you to have pastry all the way around the dish like a proper pie. Other blogs might suggest you use a Weight Watchers wrap instead of pastry but that’s like using a dildo instead of a toothbrush – it’s just not the same and you’ll chip your teeth. A wrap is bread. Pastry is delicious fat and flour. So, because we’re big fans of the old ‘a little of what you fancy does you good’, we say use proper pastry, use proper ale, and enjoy your dinner. Eat properly, not Frankenfood. You’re allowed 15 syns a day for goodness sake, don’t save them for some rotten homemade Hari-no jelly sweets and fifteen Muller Lights. It’s your body. Let’s do this.

This makes enough for four ‘pies’. The filling is very rich, as you’d expect, and the pastry creates a lovely thick lid to mop up the sauce. You’ll need four pie dishes or small vessels. Or just make a big one and eat it all yourself. Serve with whatever veg you like! Oh and a heavy casserole dish is better, rather than a bog-standard pan, but either way is fine.

to make a steak and ale pie, you’ll need:

  • about 1kg of braising steak – now, you don’t need to spend a massive amount here because it cooks for long enough to make it tender, but don’t go buying the Tesco Value shoe-leather steaks because you’ll be chewing it come December
  • one large white onion
  • two cloves of garlic
  • two fat carrots sliced into discs
  • a pinch of chilli powder
  • two beef stock cubes made into 600ml of stock
  • a 330ml (small) bottle of whatever ale you want – because we’re Geordies divvent-ya-knaa we use Newcastle Brown Ale. Couldn’t get more Northern if Sting came and made the stock for us. I’m glad he didn’t, because he’s a self-aggrandising arrogant prick, but sssh (6 syns)
  • two tsp of thyme (if dried) or a good pinch if fresh
  • a tin of marrowfat peas, or if you prefer, a good handful of frozen peas
  • optional: button mushrooms cut in half
  • 100g Jus-Rol lighter puff pastry (16 syns) (and actually, although you use 25g each for the lid, that’s being very generous – you’ll probably find yourself using less)
  • one egg
  • pinch of salt and pepper

If you’re wondering where we got our fancy dishes from – they’re actually soup bowls from Le Creuset, which you can still buy on Amazon – just saying!

to make a steak and ale pie, you should:

  • roughly chop the onion – you’re not going for presentation here so don’t take your time
  • cut up your braising steak into small chunks – postage stamp sized is good enough (get rid of any bits of fat) (I know, it hurts)
  • use a few sprays of oil, get the pan nice and hot and then sweat off your onions until golden
  • add the meat chunks – now, this is important – don’t keep moving them around in the pan relentlessly. Let them sit for a bit – they shouldn’t burn, but they’ll get a bit of a crust on them which is far nicer – trust me
  • whilst that’s cooking, mince your garlic and add it in along with the chilli powder, thyme, a pinch of pepper and salt
  • once your meat is browned, whack the heat right up for a moment and then pour in the ale – you want the pan hot so the ale bubbles up, then get a wooden spoon and scrape the bottom of the pan to get all the tasty crunchy bits up into the sauce
  • next goes the stock, the carrots, the peas and mushroom if you’re using them
  • now just let this bubble gently on the hob for as long as you can – the longer you cook, the softer the steak and the thicker the sauce, but feel free to add some gravy granules if you want to thicken it quicker
  • when it comes to making the pies, get your pie dishes ready, ladle in a load of the mixture and then cut out a lid (using 25g of puff pastry)
  • pop the lid on top of the mixture – nice and snug – and then wash the pastry with beaten egg and a good pinch of both salt and pepper
  • cook in the oven for about 20 minutes or for as long as it takes for the pastry to go golden
  • enjoy!

Honestly one of my favourite meals – no surprise that I do indeed eat all of the pies. OH BONUS RECIPE!

We served ours with a wee little caramelised leek, parmesan and Marmite stack! Easy – thinly slice a couple of leeks, sweat them down forever with a pinch of salt and sugar (honestly, low heat, an hour) – they’ll reduce right down. Near the end, add a dollop of Marmite and your healthy extra Parmesan, then shape into little stacks!

Black pudding bolognese: for when you’re not quite satisfied with the amount of killing done in the name of your meal. Well, we needed to counter the vegan recipe from yesterday didn’t we? I’m jesting, of course, but I’m taking the view that if you’re a meat-eater, you probably don’t mind a bit more ghoulishness. Anyway, this is a Thomasina Miers recipe I’ll have you know, and what that lady doesn’t know about cooking you could write on a flapping winnit.

Just the recipe post tonight because, due to a shitstorm of car alarms, alarmed cats and Paul’s fat ham arms hitting me every time he turned over, I had an abysmal night of sleep. When you’re still awake at 4am, desperately listening to Radio 4 trying to sleep, you know it’s going to be a rough day. So forgive my brevity, but know that I do it in the name of making sure you lot have a lovely new recipe to try. This makes enough for four generous bowlfuls. Christ, I hate that term. A generous bowl. Puts me in mind of a bowl that reassures you that no, you’re not fat, you’re pretty, honest, as your tears tumble over your dinner.

to make black pudding bolognese with cheesy mash, you’ll need:

  • 500g of extra lean beef mince
  • two onions
  • one large clove of garlic
  • 1 tsp of smoked paprika
  • pinch of cinnamon
  • 100g of black pudding (10.5 syns – goodness!)
  • two tins of chopped tomatoes
  • 1 tsp of red wine vinegar
  • 3 sprigs of thyme if you have it, half a teaspoon of dried if you don’t
  • enough potatoes to make as much mash as you want
  • 40g of extra mature lighter cheddar

  • chop your onions finely and sweat them off with a few sprays of oil until nice and sweaty
  • add your garlic (minced) and cook for a minute more
  • add your mince – rather like I often say to Paul, you want your meat browned
  • once your mince is cooked through, add the cinnamon and paprika and then crumble in the black pudding and stir
  • add the tomatoes, vinegar, thyme and vinegar and allow to simmer and mingle for as long as you like – a good hour on low is perfect
  • once you’re starving and chewing your fingernails to stumps, make your mash – boil the potatoes, put them through a ricer (you can pick up a ricer from Amazon for just over a tenner and it really will change your life), add a whole egg and 40g of extra mature lighter cheddar
  • serve with some parmesan if you’re feeling tasty!

cheesy potato cake – goodness me, it’s good

Do you know, I very nearly called this post Potato Cakes (I Just Don’t Know Know) but had I typed that out, the song Baby Cakes would enter my head. Should this happen, the only reasonable course of action would have been to step outside, nip into our garden shed, tip the lawn mower on its side, douse myself in the petrol that runs out and set myself on fire because I ABSOLUTELY HATE THAT SONG. I hate it! Not just in a ho-ho-how-silly way like most people hated on that Crazy Frog song but in a ‘whoops, there goes the skin on my back, cascading over my skull as I cringe in on myself like an alarmed tortoise’ fashion.

You know what’s the real icing on this particular shitcake though?

The stupid head-bobbing action of the frosted-tipped Matalan-shirted, pouting primadonna on the right, pursing his lips throughout the whole thing.  You’ve got no idea what black, boiling rage he stirs up inside me. Everyone has their Moriarty – I didn’t expect mine to be dressed like an fired ice-cream salesman.

Anyway, that’s all entirely by the by – I have every intention of this post being a quick recipe post, so let’s get straight to it. I happened across this recipe in a book by Antonio Carluccio – naturally his recipe calls for all sorts of butters and cheese so we’ve had to dial it back, but this is still a bloody taster dinner or, even better, leftovers-the-next-day meal. It sounds interesting, but honestly, make it and you’ll never look back. I do like Antonio Carluccio and it’s-sad-that-he’s-died-isn’t-it-mate – I love men with those big bushy eyebrows. I feel he’s what I’ll eventually end up looking like, although my eyebrows are already doing that awful thing where a couple of hairs on each side branch out looking for independence from the rest, pointing straight out in front of me just enough to get in my field of vision. Bastards.

The cheesy potato cake then. This is a load of carbs and cheese, but listen, that’s OK sometimes. Sometimes you need something heavy to sit on your stomach, and I’m not always available. This serves six very generously, so don’t balk at the amount of cheese. Trust me: I shagged a doctor once.

to make a cheesy potato cake, you’re going to need:

  • about 900g of potatoes, peeled, boiled and mashed – or use leftover mash
  • 200g of mozzarella – we actually used a smoked mozzarella from Tesco called Scamorza, which was tasty, but any will do (4 x HEA)
  • 80g of extra mature lighter cheese (2 x HEA)
  • I used about 250g of chopped wafer ham, but you could use bacon, boiled ham, chicken, anything you want
  • three eggs
  • a good pinch of salt and pepper
  • a bag of rocket, chopped nice and fine – use spinach if you want
  • one whole leek

top tips for a perfect cheesy potato cake

  • this is a good recipe if you’re making the creamy green veg medley that I posted yesterday – any leftover leek, chuck it in here
  • this recipe isn’t an exact science by any stretch – you can add anything you like into this – think of it as a ‘leftovers’ cake
  • get a potato ricer, for the love of God – mashing potatoes is a ballache and you invariably end up with lumpy mash – not with a ricer. Pop the cooked potato in, push it through and you’ll have perfect creamy mash (oh, and if you want to be super fancy, throw in an egg when you beat the mash together – lovely)! You can pick up a ricer from Amazon for just over a tenner and it really will change your life
  • we topped our cake with 25g of panko (dried breadcrumbs) (4.5 syns) for a bit of crunch – I’m trying to re-use ingredients in our recipes so you’re not left with any waste! You could just blitz a breadbun but honestly, worth getting some panko – most major supermarkets stock it
  • if you’re not planning on getting intercourse for a week, you could roast a whole garlic bulb and mash that in with the potato – oh I say!
  • the cheese is the thing that’ll make this dish – go for strong, bold flavours – trust me

to make a cheesy potato cake, you should:

  • if you haven’t already, peel, boil and mash your potatoes (preferably using a ricer, but I won’t shit the bed if you want to do it by hand)
  • heat the oven up to 185 degrees and get a cake tin out of the cupboard, lamenting that you’re not making something with butter, flour and sugar – I know babes, fkn snakes the lot of them
  • chopped up your cheese into little tiny cubes, chop up the ham into rags, chop up the rocket, thinly slice that leek – throw all of this into the pan with the mash, add the three eggs, a really good pinch of salt and pepper and stir
  • stir it like buggery! Stir it with all your might!
  • slop it into the cake tin with all the style and grace you’d ordinarily reserve for a crap behind your car door by the side of the road
  • smooth out the top, coat with breadcrumbs if you want, add more grated cheese if you dare
  • cook for a good forty minutes – though watch the top doesn’t burn
  • once it’s solid (it’ll not be rock solid when it’s hot mind, so use your common sense) take out of the oven and allow to cool
  • once cool, slice and serve – and this is lovely the next day

We just served ours with a simple green salad and Dynorod on standby to handle the inevitable carb-drop.

stuffed yorkshire pudding: beefy or cheesy!

Gosh, that’s a mouthful of a sentence, isn’t it? Yorkshire pudding canapés: aye, I know it’s not really a canapé, but listen, it beats eating mystery meat or hydrogenated tomato flavoured dust from Iceland, no? For all those uncultured swines out there who think a canapé is what a Geordie might say when the bailiffs turn up to take his telly away, it’s actually a wee decorative food served to whet the appetite before someone brings out the chips. The Internet is awash with ideas but they’re all spectacularly frou-frou and pointless. Shirley Conran said that life was too short to stuff a mushroom and she’s absolutely correct so you’ll be glad to know that these can be made in two shakes of a lamb’s tail – instant ingredients turned into something nice.

We’re cheating, of course: we’re using Aunt Bessie’s tiny Yorkshire puddings from Asda. We’re not getting paid to promote the red-faced old bag, don’t worry: I just resent making Yorkshire puddings unless they’re big enough to be considered as a second car. Go large or go home. They’re £1.50 for 30 and it saves clitting about in the kitchen using ground up oats (really) or having to buy a special whaddya-know-it’s-an-Amazon-link muffin tray. Just saying. Buy these and you’ll have enough time to sit and scratch your minnie.

By the way, we’ve been away. That whole schtick about a Christmas clear-out? It was bollocks – we were spending a glorious ten days in Stockholm, Oslo and Bergen. There’s going to be some cracking holiday entries in the New Year but if I can give you one eye-opening revelation about the whole thing, it’s this:

Benny from ABBA! I had absolutely no idea he was such a DILF back in the day! Good heavens. Of all the places I expected to be walking around with a badly-hidden semi, the ABBA museum was not high up on the list. Does Your Mother Know? She does know, I called her to tell her I wish I’d been born in the seventies. He could lay all of his love on me, oh yes – he’d definitely not end up Slipping Through My Fingers either. I’d be the winner who took it all, for sure!

Listen, I tried desperately to make a pun about it being ‘The Day Before You Came’ but I just couldn’t. Anyway, HELLO. Perhaps not now though – he looks like Bill Bryson scratching through bins for a sandwich.

Anyway, that’s quite enough of all that – I’m all moist. Let’s get straight to the recipe, such as it is. You could make these for taster nights, or a spectacularly depressing party (sometimes the two aren’t mutually exclusive), or do as we did and make thirty and sit and eat them in front of The Apprentice. No-one’s judging you, bar me. This makes thirty – fifteen of each, with plenty of mix left over. Once the two fillings are made you can freeze them for another time. Gosh!

to make the yorkshire pudding canapés, you’ll need:

  • one bag of mini Yorkshire puddings – you’ll find them in ASDA – £1.50 for 30 – half a syn each
  • an icing or sandwich bag

for the beef and horseradish:

  • good quality sliced beef
  • 200g of quark (trust me, if you think it’s vile, don’t worry: the horseradish masks the taste – but you could always use Philadelphia Lightest instead – 110g is a HEA!)
  • two tablespoons of horseradish sauce (3 syns)
  • good pinch of salt and pepper

So that’s 3 syns to make enough filling for 15 puddings – up to you if you syn the 0.2 syns! You could maybe argue that each filled pudding is a syn, but hey, it’s Christmas. I’m going for 0.5 syns, because I’m a decadent winter whore. Same if you’re going to measure that sliver of HEA!

for the sausage and cheesy mustard mash:

  • any leftover mash (syn free) or Smash original (syn free) made up as instructed – probably need about a small packet
  • two tsp of wholegrain mustard (1 syn)
  • 50g of Mattessons Smoked Pork Sausage (4 syns) cut into 8 discs, then halved (eat the spare)
  • 30g of extra mature cheddar (1 x HEA)
  • good pinch of salt and pepper

That’s 5 syns for 15 puddings. For ease, with the Yorkshire pudding added in, let’s call it a syn per pudding. But again, that’s over-estimating…

to make the yorkshire pudding canapés, you should:

  • well, this is embarrassing – it’s as easy as cooking the puddings for four minutes on 200 degrees fan
  • make the fillings by combining everything together
  • stuff the pudding by slopping the filling into your sandwich bag, snipping off the corner and piping the filling on top – decorate with sliced sausage or the beef sliced curled up like an unsightly labia

introducing the low-syn Greggs style festive bake

Oh god, we’ve succumbed. We’re giving in to the tidal wave of barely-literate posts about using Weight Watchers wraps for all sorts of things, from Cornish pasties to incontinence knickers, and making our own recipe for the Greggs festive bake. Well: a Slimming World friendly take on it. If you’re not familiar with what a Greggs festive bake is, let me clarify for you: it’s what mothers who are more earring than human push into their toddler’s mouths instead of a sausage roll at Christmas-time. You’ve got to make an effort for the bairns, after all. If that analogy is a little too mean-spirited for you, swap it out for this one: Greggs is responsible for at least 93% of the crumbs you see stuck in the corner of Northern folks’ mouths. Barely a sentence can be finished in Newcastle without someone opening their mouth and:

  • Greggs opening a new shop in there; or
  • half a stottie falling out.

To put that into perspective, there’s over 29 Greggs stores in Newcastle alone. Hell, there’s even an outlet shop on the West Road that sells their leftover stock off cheaply. I mean, that’s commitment to earning a crust, no?

Anyway, the Festive Bake – a combination of stuffing, chicken, cranberry, pastry, heart disease and I think onion, superheated until it is hotter than the surface of the sun – causes much excitement up here. People talk about the arrival of the festive bake as if it’s the second coming of Jesus – my facebook is awash with people getting a froth on when they go on sale because it heralds the arrival of Christmas. We don’t buy into it – no disrespect to Greggs, but I refuse to go in since they stopped keeping things warm.

Nevertheless, we’re all about giving you what you want, so please, find the recipe below. Before we get to that, though, I wanted to draw your attention to this:

We absolutely nailed it – our revised target was £3,000, and we’ve done it – if we can get it up to £3,200 that means that, with Gift Aid, we’re donating £4,000 to a charity that means the world to us! If you can find a spare quid to donate, please do! As an addendum to that plea, just a word of FUCK YOU to the person who left us a comment bemoaning that we are asking for money. You don’t need to donate, you don’t need to share, you don’t need to do diddly-squat – but we’re not getting a penny of this money, we’re not doing it for us, and anyway, it’s our blog. If you have a problem with the infrequent (and only temporary) Christmas charity requests, you can kiss the most tainted part of my ring! We’re never going to apologise for doing good.

Anyway, hush. No negativity! The recipe makes enough for four.

to make a Greggs style festive bake, you’ll need:

  • two big fat chicken breasts;
  • a nice pack of bacon medallions;
  • one big fat white onion;
  • 330g of Philadelphia lightest (3x HEA) (you might want to use Quark, but please, have some dignity)
  • 4x Weight Watchers white wraps – can’t find them in the shops? No need for tears: just swap out for wraps of near enough the same nutritional content – 1 wrap is a HEB choice
  • 1 tsp dried sage if you’re common, or, if you’re as bent as a butcher’s hook like me and have a herb garden, a few leaves of fresh sage
  • 1 tsp of garlic powder
  • 2 tbsp of cranberry sauce (we use the Tesco Finest cranberry because we’re classy, which works out at 4 syns)
  • Paxo stuffing mix – we use 25g of made-up stuffing in this recipe – to be honest, with the added sage, you could cheerfully leave it out, but we’re all about being authentic – 25g is 1.5 syns

So, assuming I haven’t had a mild brain injury, that works out at 5.5 syns. For the sake of argument, we’ll call the bakes 1.5 syns and get on with it.

to make a Greggs style festive bake, you should:

  • oven on to 190 degrees, please
  • dice up the chicken, bacon, onion and fingertips – you want everything roughly the same size
  • can’t be arsed with all that knife work – then throw it all in a blender and roughly pulse – you want uniformity, you do not want a puree
  • squirt a few squirts of oil into a hot pan – use Frylight if you must, but honestly, you’re better off using Castrol 4-Stroke than that muck
  • cook everything off, adding the garlic and sage as it heats through, until the chicken is cooked, the onion softened and the bacon a bit crispy
    • if you’re using fresh sage, just chuck the leaves in whole but remember to take them out before you stuff the pasties
  • once all is cooked, stir in the Philadelphia, plenty of salt and pepper, stuffing (if using) and cranberry sauce on a low heat – it’ll soften down and bring everything together – maybe add a touch of chicken stock if you think things are a bit claggy,
  • allow to cool – we actually put ours in the fridge overnight to settle but that’s not necessary
  • stuff your wrap: put the wrap in front of you, place the filling in a rectangle in the middle, then fold in your flaps so the meat doesn’t fall out
  • brush with egg or milk, top with some black pepper and if you’re feeling saucy, a grating of Parmesan, throw them onto a non-stick baking tray then stick in the oven to cook for maybe 25 minutes – keep an eye on them to make sure they don’t burn
  • serve with an ambulance on stand-by

Delicious! These freeze really well too!

You’re here for the sausage, egg and cheesy hash brown breakfast stacks, aren’t you? Who could blame you – they’re quite something, though I feel bad luring you in for such a simple recipe.

But first (isn’t there an always a but first with us…actually, not always, sometimes I’ll start by working the balls) I wanted to follow up my last blog post, which dealt with the nasty side of the Internet and the disadvantages of giving chavs a keyboard that isn’t connected to a Speak ‘n’ Spell. No sooner had I put up a 1,500 word moan about the idiots kicking off at Tesco then something lovely happened. Allow me to explain, first with a wee picture…

I know, right? I ought to work for Saatchi and Saatchi, not least because think of all that delicious food Nigella would have cooked me over the years. I’m gayer than cum on a moustache but you better believe I’d happily spend my life with Ms Lawson. Any women who will cheerfully fry a sandwich in butter in her best dressing gown is a keeper, surely?

Can you remember last year when we asked you all to send us a Christmas card? Boy, did you come through for us – we received cards from all around the world and for once, the postman wasn’t being euphemistic when he came to our slot and emptied his bulging sack. Oh stop it: I know, it’s like Julian Clary is guest-writing the blog tonight. I think the grand total was over 1,500 and we read each and every one, not least because we thought you may have squirrelled away a fiver or two in there. It was great fun and we planned to do it again but, in a rare moment of genius, Paul suggested we raise money for our local cat and dog shelter, Bryson’s.

How could I resist? So we stuck our donation request online and within 36 hours, we’d managed to raise £1,300 – it now stands at £1,500! Pretty incredible and we couldn’t be more chuffed. Bryson’s are an amazing little shelter up in Gateshead who take in all manner of waifs and strays and never put a well animal to sleep – if they can’t find a home for them, it doesn’t matter, they’ll stay at Bryson’s until the end. Their staff was dedicated, kind volunteers and look, we can’t say enough about them: anyone who lets us two come in and cuddle their cats can’t be anything but amazing. Ha! Now, finally, let’s do the recipe, such as it is…this makes enough for two ‘stacks’.

to make sausage, egg and cheesy hash brown breakfast stacks, you’ll need:

  • Kingsmill wholemeal bread thins (1 x HEB per thin)
  • two good eggs
  • a potato
  • Quorn sausage patties (0.5 syn each), or cook some pork sausages and slice in half lengthways
  • 60g of mature cheese (2 x HEA)
  • 1 tablespoon of oil (we used chilli oil because we like it hot!) (makes about five, so let’s call it a syn each)

I know there’ll be folks out there now not bothering with the recipe because it uses six syns of oil (1 tablespoon) – reconsider. The oil binds the potato and makes it like a proper hash brown. You could make your own vibrator from filling a cigar tube with bees, doesn’t mean you should. Spend the syns!

to make sausage, egg and cheesy hash brown breakfast stacks, you should:

  • hashbrowns are a doodle – grate your potato and then squeeze the living hell out of it – you want the shredded potato to be as dry as an old bajingo – then mix in the tablespoon of oil and the grated cheese, add a tonne of black pepper and a bit of salt, then press into yorkshire pudding or muffin trays – really pack it in mind you – then bung them in the oven for about 30 minutes to crisp up and brown – this actually ended up making about 5 hash-browns so keep any spare for eating later
  • it’s OK – I laughed at the concept of spare food too
  • then…well, really not sure what there is to say for the rest – grill your sausage patties and fry the eggs
  • we use a chef’s ring (he doesn’t mind, we buy him a drink after) to keep the eggs nice and round but really, you don’t need to do so
  • we use the same ring to cut a circle out of the thins but you know, why waste the extra bread? Just whack it in
  • serve with a disc on the bottom, hash brown, sausage and egg, then disc on top

If you’re one of these people who can’t fry an egg, worry not – it’s easy. Hot pan, few sprays of olive oil, crack the egg in and shape it a bit with a spatula – pop the lid on the pan once everything has started to firm up and it’ll cook nicely in the steam. Fresh eggs help. We get our eggs from my mother – you’d think she would have stopped laying them now she’s approaching 94 but hey.

six slimming world sandwich fillings

Now, it’s been a while since we did a load of recipes on one post, and, although you might think that this is a holiday blog dotted with the odd moan about Mullers, we’re a recipe blog first of all! So, here’s a helpful wee post of Slimming World sandwich fillings that frankly wouldn’t justify a post of their own. Sandwiches are the one thing I truly miss on Slimming World – that and not measuring my worth by mass-produced shiny weight-loss stickers.

These fillings, with the addition of chopped lettuce, veg or whatever the hell you want, make for great fillings for wraps and bread. But, as you know, we’re huge fans of the broghie here – 1 syn each, they’re like giant crackers which act as the perfect platform for whatever nonsense you want to top them with. I’d rather have four of these buggers for four syns than blow it all on a sandwich. You can buy them in Iceland across the country, so no excuses! But, no time for flim-flam, let’s go to the recipes…

egg and cress – syn free

  • pretty simple, this one – boil an egg for ten minutes, peel, mash with a fork and mix with 2 tablespoon of natural yoghurt, with plenty of salt and pepper and, if you’re feeling sexy, add a dash of mustard

chinese chicken – 1.5 syns for the lot

  • make the pulled chicken by sticking four chicken breasts in a slow cooker overnight with 250ml of stock, or even better, put them in an Instant Pot with 250ml of water, cook on high pressure for 12 minutes and then shred – easy!
  • once cool, mix with 2 tablespoons of hoisin sauce and 2 tablespoons of natural yoghurt and a tiny bit of five-spice, together with cubed cucumber (not the seeds, use the flesh) and sliced spring onion – easy!

ham and pease pudding – syn free

  • spread pease pudding onto your bread, broghie or wrap and layer with slices of wafer thin ham and tomato – yeah, not much to this one, but I just want to put a special plea out there that if you haven’t tried pease pudding, give it a go. Yeah, it looks like baby poo, but it tastes damn fine

cheese savoury – syn free

  • to make enough for two, mix together your HEA of Red Leicester (30g) with their HEA of 40g extra mature lighter cheddar, add thinly sliced red onion, cubed pepper with enough fat-free natural yoghurt to bind it together

beef with red onion and mustard – barely a syn

  • layer slices of beef (or you could use leftover pulled beef from our amazing bloody mary beef) with thinly sliced red onions, mini gherkins and 1 tsp American style mustard (1 tbsp, if you bother synning it)

houmous and crunchy veg – syn free

use one of our delicious syn-free houmous recipes and top with chopped onion and chopped peppers

You want a soup that’ll put hairs on that big old chest of yours and get stuck when you strain it through your Kevin Webster moustache. So here we are. Sorry for the lack of posts but well, you can probably guess that we’ve been away. Anyway, before we get to the fabulous leek, potato and cheddar soup, you’ve got the next part of our trip to Benidorm to smile politely through. You know, rather than prattle on about the last two days of the holiday, and bore you to tears with a 300 word monologue about the different types of toast we have, I’m going to do what we did with the Cornwall entries (good God the horror) and recount the memorable bits rather than go at it chronologically. I know what you’re thinking: James, you’re fabulous. Assume that the bits in between were taken up with us swimming in the pool, crisping in the sun or dozing.

Whenever we mentioned online that we were going to Facebook we were met with two things: aghast responses and ‘GO TO THE OLD TOWN’. I harboured a strong hope that the Old Town was actually Barcelona but no, apparently it’s the ‘nice part’ of Benidorm, in much the same way that the Isle of Arran is the nice part of Glasgow. Ah I jest, Glasgow, we love you and would move there in a barely-detectable heartbeat. So, hunger thoroughly satiated by way of the breakfast buffet (room 2002, two-thousand-and-two, dos-mil-y-dos, aaaah for fucks sake) and our hackles risen by the sight of our doubles mincing about the yoghurt station, we set off with the faint aim of walking to the Old Town, taking in what we could during the day.

Oh! Before I get there, can I quickly discuss this?

A lift that judges you.

The lift had a bastard ‘FAT PERSON’ monitor on it. When the two of us got in it went straight to cock-level, which sounds about right for us, until you realise the lift was built for ten people. I mean, we’re fat, but not quite that bad. I think if we had risked it after a particularly bountiful breakfast it may have started shrieking “¡ayudameMis cables!” in hysterical robotic tones. Anyway, the day was young.

It began with a crushing disappointment. We had seen no end of elderly couples whizzing around on double-seater mobility scooters, looking to all the world like particularly gelatinous takes on the future humans from Wall-E (only with far more fag-scorched winceyette). We wanted in on the action, if only because it would have made for an hilarious video of the two of us careering through the streets like the tank chase from Goldeneye. Completely unashamed we wandered into the first mobility scooter hire place and started trying out the various models. All good fun until some harried little Spanish lady came hurtling from out the back and started shouting at us in Spanish. I tried to placate her that, even though I’m hilariously obese, I’m not the easily forty stone or more that I’d seen the mobility scooters having to shuttle around outside. She has having none of it – apparently you need to be registered disabled (fair enough) or old (see previous comment) to hire a scooter. I caught a glance of Paul’s haggard face in the rear-view mirror of the Leviathan-shuttle nearest to me and wondered whether we could pass him off as over 55. Gloria Estefan wouldn’t have accepted it though, so we slunk away.

We carried on walking, dropping into the odd shop on the way. One thing I can’t understand is how all of the tatty shops selling cheap towels, tatty ornaments and fridge magnets and t-shirts with ‘I LOVE COK’ and ‘YOU DON’T HAVE TO BE CRAZY TO ENJOY BENIDORM BUT IT HELPS’ and other shite manage to keep going. There are hundreds of the buggers – probably one for each family that landed. Surely there can’t be a demand for it? I’d like to live in a world where there wasn’t demand for one of these shops, let alone a whole neighbourhood of them. But nevermind. We nipped into the cheap cigarettes store just to see how much baccy costs now – nothing confirms your decision not to smoke like seeing the fact that you’re spending more on tobacco than you do for a good dinner. Plus catching the yellowing eyes of the walking dead shuffling around buying their Lambert and Butlers, coughing out lung mist all the while. This was clearly ground zero for the coughing plague that would accompany us on the plane home. We did have a titter at the fact that the 200 Lambert and Butlers came with a free bottle of Jägermeister sellotaped to the front. Hey, know your market. Listen, we’re not being snobby about smoking – we once had a drawer in the kitchen that was full of tobacco and Rizlas, that’s how dedicated we were – but if you’re going to smoke, try something with a bit of taste. You never know, the Marlboro Reds probably came with a well-aged Châteauneuf-du-Pape attached. I tried taking a picture of the fags but got roundly reprimanded (again!) by the lady behind the till, who shouted ‘NO PHOTOS’ with such ferocity you’d think she was guarding the nuclear codes as opposed to a cancer factory. Pfft. We left empty-handed, but at least able to move more than twenty yards without our lips turning blue.

Fags.

Just round the corner from the cheap fag shops was a cheery little minigolf course. Five euros for eighteen holes – you can’t get vexed at those prices, can you? I confess we only went in because it looked as though there was a gay bears convention behind us in the queue, and hell, if there’s one thing we both enjoy it’s having several bearded men lining up behind us all desperate to sink their balls into an easy hole.

Oh I know, we’re so nasty. But seriously, they looked like they’d all just finished lumberjacking and fighting oil-rig fires. I could barely bend to pick up my ball without poking out my own eye.

As usual, things between Paul and I became immediately competitive – whereas I’ll always beat him at pool, Monopoly and growing a beard (he doesn’t so much grow a beard as frighten it away), he nearly always wins at minigolf. I just don’t have the patience, I hate golf. It’s so tedious and arbitrary and pointless. At least with rugby you run the risk of being accidentally penetrated in an especially violent scrum. With golf what’s the most exciting thing that can happen? Someone with pipe-cleaner legs, clad in whatever shite was heavily discounted at the garden centre, comes and primly tells you off for not wearing the right shoes? Pfft. I’m yet to meet anyone who has been seriously into golf who I haven’t suspected of being on some sort of register. Maybe I’m jaundiced because we have a golf course at the end of our street and I’m forever having to dodge Audis and BMWs piloted by triple-chinned moonface fuckheads not concentrating on their driving because they’re too busy thinking about their stroke / hypnotised by the rancid pattern on their trousers.

Action shot! I can’t recall the balls being quite so ovoid, though.

Anyway, I digress (if I ever become rich and famous and in need of an autobiography, that’ll be the title – and the book will open with me being born and then 1000 pages of bitchy comments about the hospital canteen and Paul’s mother). The mini-golf course was actually good fun – very much a file under ‘god bless, they tried’ sort of affair, but good fun none the less. Paul struggled with a tricky shot through a windmill which almost gave me a victory but I was distracted on the eighteenth hole by the sight of one of the bearded gentlemen bent over to tie his shoes and that was it for the day. Paul cruised to an easy victory and made sure I knew it. Personally, I thought it was a little churlish of him to gloat – it’s hard to concentrate on your stroke when you’re desperately trying to engineer a situation where you could feasibly fall over and expose your rear like a cat on heat. As we left Paul noticed a mechanical bull and asked if we should have a go. Fearful of the hydraulics wheezing asthmatically and then enveloping us in thick blue smoke, I declined. I bought us both a knock-off Spanish Magnum instead and we moved on.

Someone has to do it, I suppose.

We stopped briefly at an Ale-Hop shop (very much like a Tiger, if not a Tiger under a different name) where I desperately tried to find a hat to find my giant head. It’s my eternal struggle and one I’m yet to beat. I’m a reasonable looking bloke, I think, but I have a head like the Bloaty Head patients from Theme Hospital. Every hat I try on is always about four inches too small, sitting on top my balding expanse like a fey little affectation rather than the sun protection I so desperately need. When I was much younger I found a natty little Kangol bucket hat in a hedge that fitted perfectly – no idea where it came from (although it did have J. Merrick scrawled on the inside) but by god it saw me through so many summers, until one fateful day when it blew off my head into the English Channel. I like to think it served its purpose and moved on to rescue some other elephantine-bonced poor bastard. Mind you, for as much as I struggled to find a hat…

…Paul was suffering more trying to find a bra to protect his poor heaving busoms.

Poor guy. He’s a busty double-D, if anyone has one spare they can pass to him.

Right, here’s the thing. As usual, I started out with good intentions about keeping it succinct but I’ve actually managed to hit the 3000 word mark. This soup, then. You don’t need an Instant Pot to make it, you absolutely don’t, but it’ll make it so much quicker if you have one. Before you ask, yes, you probably could do it in a soupmaker too, though I’d have reservations about adding cheddar in case it sticks to the bottom. Your choice. The Instant Pot is currently pretty cheap on Amazon, mind you. This makes easily enough for six people.



to make leek, potato and cheddar soup you will need:

  • 3 leeks
  • 4 cloves of garlic, minced
  • 1½ tsp dried thyme (or two sprigs of fresh if you’re fancy)
  • 1½ tsp oregano
  • 2 bay leaves
  • 125ml light white wine (4½ syns)
  • 3 vegetable stock cubes
  • 4 medium-sized potatoes, diced into 2″ chunks
  • 110g Philadelphia Lightest (1x HeA)
  • 40g reduced-fat cheddar cheese (1x HeA)
  • 2 bacon medallions (optional, just if you’re feeling SUPER fancy)

Look, if you can’t find light white wine, just use any old slop you have kicking about. Use mouthwash for all I care. I’m not your boss!

But it’s just the thing for dipping and adding crunch – like a prawn cracker in consistency only without the oil and fat and fishiness that comes with it. We’re using them a lot for satisfying the crunch that we miss from bread – and they’re only a syn each. You’ll see them in a few of our recipes because we’re well stocked up – bigger Iceland stores sell them, and they’re popular in Ireland – just like I wish we were! We’re not getting paid to promote them, just something that I saw on Facebook and wanted!

to make leek, potato and cheddar soup you should:

  • wash and finely slice the leeks – if you’re not too clumsy, get one of these and do it in seconds!
  • press the ‘saute’ button on the instant pot and add a bit of oil
  • add the leeks to the pan and stir regularly until softened
  • add the garlic, stir and cook for another 30 seconds
  • turn off the instant pot and add the thyme, oregano, bay, wine and potatoes to the pan
  • dissolve the stock cubes in 1.25l of boiling water and add to the pan
  • give a really good stir, then cook on high pressure for 10 minutes
  • meanwhile, cook the bacon until it’s super crispy and chop up into little bits
  • when it’s finished, use quick release and stir in the philadelphia and cheese
  • use a stick blender to blend the mix until it’s smooth
  • serve in bowls and sprinkle over some of the bacon bits

If you haven’t got an instant pot don’t fret – you can do this on the hob just as easily. Chuck the leeks into a giant pan until soft, add everything else (except the cheese), bring to the boil and them simmer until tender, add the cheese then blend with a stick blender. Simple!
